In Korea, shiitake mushroom, Lentinula edodes, is cultivated on artificial medium containing oak sawdust and wheat bran. The annual production of spent mushroom substrate (SMS) of shiitake, a byproduct of the mushroom industry, is estimated to reach over 50,000 tons per year. This study aimed to improve the use of SMS as a novel bioresource. Hot water extracts of SMS after the first and third harvest were prepared and their bioactivities evaluated. Hot water extracts of uninoculated medium and shiitake were used as controls. Extracts of SMS showed higher radical scavenging of DPPH anions, ABTS cations, nitrites, and a higher reducing power than those of shiitake or medium extracts. After the first and third harvests at 0.5 mg/disc, SMS extracts showed no antibacterial or antifungal activities against the pathogenic and food-spoilage bacteria and fungi. However, they showed good inhibitory activities against ${\alpha}$-glucosidase at 0.5 mg/ml. In addition, SMS extracts had strong anti-coagulation activities via their inhibition of thrombin, prothrombin, and blood coagulation factors without platelet aggregation activity. Our results suggested SMS should no longer be perceived as a useless byproduct but should be understood as a novel bioresource, the extracts of which could be developed as antioxidant, antidiabetic, and antithrombosis agents.

Ten to thirty percent of ginko leaf pomace(GLP) were added to pine sawdust to investigate mycelial growth. Mycelial growth on the medium with GLP was 86~101(mm/28 days) and was slower than that of the control without GLP as, 102(mm/28 days). Mycelial growth time on medium of sawdust with 10 to 20% GLP was similar to the control without GLP as 29 days but that on medium with 30% GLP was delayed for 2 days. The time of pinhead formations of sawdust with 10 to 20% GLP was 7 days, the growth time to harvest was 11 days. These results were similar to those of the control without GLP. The sizes of pileus of treatments with 10 to 30% GLP were tend to be smaller compared with the control. The length of stipe of 10% GLP treatment was 98mm which was longer than that of the control with 91mm. The thickness of stipes of 10 to 30% GLP treatments were 45 to 48mm which were tend to be thicker than that of the control with 45mm. The hardness of stipe were 35,062($g/cm^2$) to 4,1065($g/cm^2$)) which were harder than that of the control with 32,156($g/cm^2$)). GLP treatments seem to be favorable to store or distribute. Yields per volume of GLP added treatments were 88.7g to 95.6g, which was increased 3 to 12% compare to 85.8g of the control without GLP.

BACKGROUND: For the food safety of cultivated mushroom, information on the safety of agricultural by-products imported as medium substrates for mushroom cultivation is urgently needed. Therefore, this study was performed to detect the presence of heavy metals, residual pesticides, and nutrient component in the imported medium substrates. METHODS AND RESULTS: Six kinds of medium substrates imported from nine countries from 2015 to 2017 were investigated. A mercury analyzer MA-2000 and an inductively coupled plasma spectrometer OPTIMA 7000DV were used to analyze mercury, lead, arsenic, copper, nickel and cadmium. All of these heavy metals were detected at lower level than heavy metal tolerance standard level of by-product fertilizer in Korea. When 246 kinds of residual pesticides were examined by GC and HPLC, imidacloprid, thiamethoxam and carbendazim were detected from Egyptian beet pulp, Indian cottonseed meal and cottonseed hull, respectively. The content of nutrient components (water, crude ash, crude fat, crude protein and crude fiber) varied among imported countries and the medium substrates. CONCLUSION:The presence of heavy metals and residual pesticides in imported medium substrates for mushroom cultivation was confirmed. For the safe production of mushroom, this study shows that imported medium materials for mushroom cultivation need to be managed through continuous monitoring.

During a survey of the activities of fungi in steamed sweet potato, stored garlic, agricultural by-products for mushroom cultivation media, and pinewood chips from a pinewood nematode-infected tree, numerous fungal samples were isolated and identified. This study identified five species that have not been previously reported in Korea, namely Geomyces pannorum, Neopestalotiopsis javaensis, Penicillium allii, Penicillium chermesinum, and Ophiognomonia setacea. For all identified species, the cultural features of colonies formed on growth media, their morphological characteristics observed by a light microscope, and their molecular phylogenetic relationships based on nucleotide sequences of the internal transcribed spacer rDNA region or calmodulin gene were described.
We inoculated a spent mushroom substrate from Flammulina velutipes (SMSF) with a microbial additive and assessed the effects on chemical composition, ruminal fermentation parameters, and total-tract nutrient digestibility. In Exp. 1, three cannulated Hanwoo steers were used in an in situ trial to determine the degradation kinetics of dry matter (DM) and crude protein (CP). In Exp. 2, three Hanwoo steers were randomly assigned to experimental diets according to a $3{\times}3$ Latin square for a 3-week period (2 weeks for adaptation and 1 week for sample collection). Experimental diets included the control diet (3.75 kg/d formulated concentrate mixture + 1.25 kg/d rice straw), SMSF diet (3.19 kg/d formulated concentrate mixture + 1.25 kg/d rice straw + 0.56 kg/d SMSF), and inoculated SMSF (ISMSF) diet (3.19 kg/d formulated concentrate mixture + 1.25 kg/d rice straw + 0.56 kg/d ISMSF). The chemical composition of ISMSF did not differ from that of SMSF. Microbial additive inoculation decreased pH (P<0.05) and improved preservation for SMSF. The percentages of DM, neutral detergent fiber (NDF), and acid detergent fiber (ADF) in ISMSF were slightly lesser than those in SMSF. Ruminal fermentation characteristics and total-tract nutrient digestibility were not affected by diet. Overall, microbial additive inoculation improved preservation for SMSF and may allow improved digestion in the rumen; however, the total digestible nutrients (TDN) of SMSF and ISMSF diets were slightly lesser than the control diet. The ISMSF can be used as an alternative feedstuff to partially replace formulated concentrate feed.

In this study, the physical properties of the medium and changes in the wood chemical composition of the sawdust were investigated during the cultivation of oak mushroom sawdust bags, and the following results were obtained. After inoculation, the weight of the medium decreased during the incubation period. It is determined that this is not due to evaporation of moisture containing the medium or decomposition of sawdust, but to decomposition of rice bran, a low molecular substance added to the medium. It was confirmed that the moisture content of the medium was steadily increased during incubation, and it was estimated that the organic substrates such as rice brane in the medium was decomposed by mycelium, and water, one of the decomposition products of organic substrates, caused an increase in the moisture content of the medium. Along with the increase in the harvest of oak mushrooms, the proportion of organic substances such as holocellulose and lignin, the main components of the wood cell wall of sawdust, steadily decreased. In particular, the degradation characteristics of the wood cell wall component of shiitake, which is a white rot fungi, were confirmed by higher lignin reduction rate than that of holocellulose. On the other hand, ash, which is an inorganic material, increased with an increase in the number of mushroom harvests. The increase in the amount of ash in the medium may have been due to the decrease in the organic matter content such as holocellulose and lignin.

This study investigates the changes in inorganic composition and the microbial counts during the process of fermentation of mixed domestic organic resources for the development of alternatives for imported oil cake, and examines the characteristics of mixed fermentation organic fertilizer (MFOF). The effect of the MFOF on the lettuce growth is investigated in order to evaluate the possibility of replacing the existing mixed oil cake with the MFOF. Six kinds of domestic by-product resources, which are rice bran, distiller's dried grains, sesame meal, fish meal, and spent mushroom substrate, are mixed by mixing ratio and the composition was analyzed during the fermentation process for 90 days under moisture content 30% and sealed condition. During the 90 days of fermentation, the pH change of the MFOF was little, and the moisture content was maintained at 34-35% until the 60th day of fermentation, and then decreased to 30-31% on the 90th day. Total nitrogen content remained unchanged during the fermentation period, but total carbon content showed a significant difference on the 21st day of fermentation. It was confirmed that the content of fertilizer composition (nitrogen, phosphate, and potash) of the MFOF was 8.7% or more, which is suitable for the minimum amount standard of the main nutrients to be contained in the organic fertilizer. During the fermentation process of organic fertilizer, the density of bacteria and actinomycetes increased until 60 days and 30 days, respectively, and thereafter little changes were shown, and fungal population showed an increasing trend. As a result of lettuce cultivation test in the greenhouse by applying the MFOF, the growth and yield were comparable to that of using the existing mixed oil cake fertilizer when 100% was applied based on crop standard nitrogen fertilizer level. The use of mixed fermentation organic fertilizer made with domestic by-product resources can be used for use in farms in the future and is expected to contribute to the stable production of environment friendly agricultural products.

A edible mushroom, Clitocybe maxima (Lentinus giganteusis) commercially cultivated in China and Taiwan. However, the researches of cultivation and cultural characteristics were not reported in Korea. In this study, we conducted on cultural characteristics and artificial cultivation of C. maxima. Six isolates were collected from China(3 isolates, commercial strain), Taiwan(1 isolate, commercial strain) and Korea(2 isolates, wild type). C. maxima and L. giganteus collected in China and Taiwan, respectively, are the same in China and are estimated to be of the same species as cultured characteristics. The mycelial growth of the collected strains was not significantly different in agar medium but it showed the best growth in YPMG in liquid culture. Optimum temperature for mycelial growth and induction of fruit body were 25℃ and 30℃, respectively. In order to artificial cultivation of C. maxima, cultural characteristics and artificial cultivation were carried out using agricultural by-products and forestry by-products materials. Mycelial growth was suitable in rice straw, cottonwood sawdust, corncob and rice seed medium, and it was selected as a cultivation medium. The suitable medium for artificial cultivation of C. maxima was selected to mixed medium 2(compounding ratio(v/v): 55% of hardwood sawdust, 5% of cottonseed pellets, 10% of cottonseed, 15% of beet pulp, 15% of swollen rice husks). It took about 30 days to be able to harvest, it was faster than oyster mushrooms. The cultivation period was about 30days. A isolate, CMA-002 was not initiation to fruit body primordiuma on the used cultivation substrate. Other 5 isolates were initiate and development to fruit body on the substrate used in this study. The strain CMA-003 was initiated to be fruiting body by 8~10 days after induction of fruiting body in all of the substrates. Isolate CMA-003 was generate to a bundle fruit body. Other isolates, however, were form fruit body individually. The CMA-003 strain was likely highly recommendable strains for farming. The optimum conditions for the induction and growth of C. maxima fruit body were 25~30℃, 8 hr illumination per day with white fluorescent lamp, 90~95% relative humidity, and 1,500 ppm of CO2 concentration in a cultivation room.
The results of series studies on the ratio of supplements, out-door composting and out-door fermentation induced by using the rice straw as a main substrates at the cultivation of Agaricus bisporus, and the cultivation of Pleurotus ostreatus using the rice straw bundles on its compost are as follows; When rice straw for cultivation of A. bisporus was used as the main substrates in synthetic compost as a carbon source, yields were remarkably high. Fermentation was more rapid than that of barley straw or wheat straw and the total nitrogen content was high in rice straw compost. Use of barley straw compost for cultivation of A. bisporus was shown of low yield compared with rice straw, but when a 50% barley straw and 50% rice straw mixture was used, the yield was almost the same as that using only rice straw. The total organic nitrogen on the compost were shown the positive relation to the yield of A. bisporus, but the ammonium nitrogen negative relation to the mycelial growth and yield of A. bisporus. When rice straw was used as the main substrate for compost media, urea was the most suitable source of nitrogen. Poor results were obtained with calcium cyanamide and ammonium sulfate. When urea was applied three separate times, nitrogen loss during composting was decreased and the total nitrogen content of compost was increased. The supplementation of organic nutrient activated compost fermentation and increased yield of A. bisporus. The best sources of organic nutrients selected were as follows: perilla meal, sesame meal, wheat bran and poultry manure, etc. Soybean meal, tobacco powder and glutamic acid fermentation byproducts which were industrial wastes, could be substituted for perilla meal, sesame meal and wheat bran as organic nutrient sources for compost media. During out door composing of rice straw for cultivation of A. bisporus, using of tuner, composter and tunnel system increased up to 13% of its yield, and also cut down 34% of production Cost. The cultivation of P. ostreatus and utilizing of rice straw and wheat straw was established and its yield was high on the rice straw pots. When the substrates 'Rice straw' was heated by steam at $60^{\circ}C$ for 6 hr. mycelial growth of P. ostreatus was moderately rapid and its yield was high.

This research was performed to analyze the characteristics of wood wastes from origin and to suggest grade-classification for them. Korean proximate analysis was conducted, and heating value, heavy metals and Cl concentrations were analyzed for gradeclassification. Wood wastes were sampled from forest, living, construction and demolition, and industrial areas with origin. Moisture content of most wood wastes was ranged in 5$\sim$10%. VS (volatile solids) and ash contents of them showed > 95% and < 5%, respectively. Most wood wastes except wood for growing mushroom permitted the standard (low heating value $\geq$ 3,500 kcal/kg) for refusederived fuel. CCA (Cr, Cu, As) concentration of wood wastes used in bench, wasted fishing boat, and railroad crosstie was higher than that of the other ones. Cl content showed approximately 1.3% in wood box for fish and $\leq$ 0.2% in the other wood wastes. Cl content of all wood wasted used in this research permitted the standard (Cl $\leq$ 0.2%, dry weight basis) for refuse-derived fuel. If the wood wastes were classified in 3-grade, plywoods would be in 2nd grade, and MDF (medium density fiber), wooden bench, painted electric wire drum, wasted fishing boat, and railroad crosstie be in 3rd grade.
