Antioxidant activities of commonly used Brassica spp. sprout vegetables in Korea (국내 다소비 십자화과 새싹채소 추출물의 항산화 활성)

  • Brassica spp. vegetables have been known to have biological activities such as anti-cancer and anti-inflammatory activities. In this study, we investigated the in vitro physicochemical characteristics and antioxidant activities of commonly used Brassica spp. sprout vegetables such as kohlabi (Brassica oleracea var. gongyloides), red radish (Raphanussativus L. var. sativus), broccoli (B. oleracea var. italica), cabbage (B. rapavar. glabra Regel), rape (B. napus), radish (R. sativus), and tatsoi (B. campestris var. narinosa) sprouts. Our results showed that the vegetables with the highest total phenolics contents were the radish sprout ($24.40{\pm}1.24mg\;TAE/g$) and kohlabi sprout extracts ($23.97{\pm}0.46mg\;TAE/g$). Furthermore, the vegetable with the highest total flavonoid content was the radish sprout extract ($15.30{\pm}1.35mg\;CE/g$). However, the kohlabi sprout extract showed the highest DPPH radical scavenging value ($IC_{50}=1.95mg/mL$) and ORAC value (79.03 mM TE/g). In addition,the six kinds of Brassica spp. sprout vegetable extracts, except tatsoi, significantly inhibited the reactive oxygen species (ROS) production and showed that intracellular oxidative stress is closely related tothe accumulation of differentiated adipocytes and fat during the adipogenesis of 3T3-L1 preadipocytes. These results suggest that Brassica spp. sprout vegetables, especially kohlabi and radish sprout extracts, can be used to develop natural antioxidants.

Influence of the Food Intake Ability and the Number of Remaining Teeth on Oral Health Related Quality of Life in Some Elderly People (일부 노인의 저작강도별 음식섭취능력과 잔존치아수가 구강건강관련 삶의 질에 미치는 영향)

  • Eating supports to gain energy and nutrition and improves quality of life. Ageing affects the food intake ability due to loss of natural teeth and the progressive muscle degeneration. Our objective was to investigate how the food intake ability (FIA) and the remaining teeth could influence on oral health related quality of life in the elderly. This study was performed with 503 elderly subjects living in Daejeon, Korea. The questionnaire with the FIA with 30 Korean food and Oral Health Impact Profile 14 (OHIP-14) and oral examination were surveyed. The five groups according to cluster analysis of FIA had the different numbers of remaining teeth and functional posterior teeth with opposing teeth or prosthesis significantly: group 1, $21.78{\pm}8.27$ and $2.80{\pm}2.63$; group 2, $16.75{\pm}7.87$ and $2.16{\pm}2.44$; group 3, $14.68{\pm}9.77$ and $1.73{\pm}2.30$; group 4, $9.93{\pm}8.13$ and $0.78{\pm}1.68$; group 5, $10.18{\pm}8.37$ and $0.51{\pm}1.22$. The more foods the subjects could masticate, the better oral health related quality of life they had. The medium FIA, soft FIA and the number of remaining teeth could explain 46% of OHIP-14, but hard FIA could not in the multiple regression model. We suggested to develop the oral health program for the elderly to be able to eat the food with medium physical property at least be helpful to improve oral health related quality of life.

Kimchi Intake Patterns and Preferences among Elementary School, Middle School, and High School Students in Rural Areas - Focusing on the School in Chungbuk Province - (농촌지역 초중고 학생들의 김치 섭취실태 및 기호도 분석 - 충청북도에 위치한 학교를 중심으로 -)

  • The purpose of this research is to examine the awareness and preference for a variety of Kimchi and Kimchi intake patterns among the students living in Chungbuk province. Four hundred samples, consisting of elementary, middle, and high school students, were surveyed; and a total of 366 usable, completed copies of the questionnaire were used for the research. The collected data were statistically analyzed using SPSS 10.0. The results of the analysis were as follows: First, Kimchi was considered traditional (24.3%), nutritious (20.5%), fermented (l9.2%), and healthy (16.1%). Second, the main reason Kimchi was preferred was its "hot taste" (25.4%), "chewy texture" (17.4%), and "sour taste" (14.0%). The students preferred their Kimchi a little hot, moderately salty, and properly fermented with a moderate amount of seasoning and did not care much about any particular parts of Kimchi. Third, 75.4% of the students ate Kimchi more than twice a day, and 78.0% of the students consumed more than 3 pieces($2.5{\times}3.0cm$) of Kimchi per meal. Fourth, elementary students wanted the school foodservice to develop bite-sized Kimchi while middle school students wanted to eat their favorite parts of Kimchi without the fishy smell. High school students wanted to eat cool and fresh Kimchi. Finally, the students wanted Kimchi to contain the following fruit and vegetables: pears (48.9%), apples (34.2%), and pineapples (30.0%), young radishes (44.9%), turnips (37.5%), and sesame leaves (34.9%). This study concludes that it is necessary to educate young students about traditional Korean food culture, serve them various types of Kimchi, change the service style, and develop new Kimchi recipes to increase Kimchi intake in school foodservices.

Biological activities of Fusarium isolates from soil and plants (토양 및 식물체로부터 분리한 Fusarium속 균주들의 생물활성)

  • In order to select potent bioactive isolates, 70 Fusarium isolates obtained from soil and 21 plant species were screened by antifungal, insecticidal, herbicidal, and duckweed bioassays after culturing in potato dextrose broth and rice solid media. Eight (11.4%) of the 70 liquid broth cultures showed disease-controlling activities more than 80% against at least one of the 6 plant diseases tested. Fusarium sp. FO-68 isolate exhibited the most potent antifungal activity; it controlled rice blast, wheat leaf rust, and barley powdery mildew with control values more than 95%. Out of 70 solid cultures, 21 (30.0%) controlled at least one plant disease more than 80% and F. equiseti FO-68 isolate showed disease-controlling activities more than 95% against 3 plant diseases such as rice blast, tomato late blight, and wheat leaf rust. As for tile insecticidal activities, 2 liquid and 1 solid cultures showed potent insecticidal activities against pest insects more than 80%, Liquid cultures of F. oxysporum FO-61 and Fusarium sp. FO-80 isolates exhibited insecticidal activities more than 80% against green peach aphid and diamondback moth, respectively. The solid culture of Fusarium sp. FO-510 isolate had 80% insecticidal activity against green peach aphid. However, none of liquid and solid cultures of the 70 Fusarium isolates showed potent herbicidal activities against 10 upland weeds. As the results of duckweed assay, 3 liquid cultures showed 70% growth inhibitory activity at concentrations less than 1.25% of culture supernatants and 9 solid cultures had a potent inhibitory activity against duckweed growth. On the other hand, there was a significant correlation between antifungal activities and herbicidal activities against duckweed of both liquid and solid cultures of tile 70 Fusarium isolates.

Characterization of Biopesticides (Bacillus thuringiensis) Produced in Korea (국내에서 생산된 Bacillus thuringiensis 살충제의 특성)

  • Characteristics of the 5 biopesticides that included Bacillus thuringiensis and on the domestic markets were investigated. These products were contained different strains of B. thuringiensis, for examples; product A and E was B. thuringiensis subsp aizawai; product B was B. thuringiensis; product C was B. thuringiensis Berline var. kurstaki; product D was B. thuringiensis var. kurstaki. Number of active spores were counted because they could influence the bio-activity against target pests. Only product C are contained the fixed quantity as its label, however, product D and E were a tenth part, and product A and B were a hundredth part of their descriptions. The pHs of product A and B were measured 3.67 and 3.73, and C, D and E were 5, respectively. Typical bypyramidal crystals produced from B. thuringiensis was found in only product C under a phase contrast microscope. For the uniform formulation of products that conformed whether B. thuringiensis were equally spreaded on the crops, B. thuringiensis in the C, D and E were equally grown on the nutrient agar medium As a results, product A were more different from product C than any other products. When product A and C were bioassayed against different larval stages of diamondback moth, their mortalities with spraying application were showed 100% after 48 hours.

A Study on the Riboflavin Intake and EGRAC of Young Healthy Korean Women (한국인 젊은 여성의 리보플라빈 섭취상태와 EGRAC에 관한 연구)

  • This study was conducted to determine riboflavin status of young healthy Korean women. Eight subjects consumed general Korean diet for 3 weeks. Riboflavin intake was measured during the period and Erythrocyte Glutathione Reductase Activity coefficient (EGRAC) was analyzed at the end of experimental period. The subjects who showed EGRAC value above 1.20 were supplemented 6 mg riboflavin per day for 1 week. The average age of subjects was 22.1 years old, height was 154.4cm, weight was 49.2kg, chest circumference was 81.2cm, the sum of skinfold thickness of 3 parts was 79.5mm and Body Mass Index(BMI) was 20.6. Hemoglobin concentration was 13.0g/100ml, hematocrit value was 44.0% A/G ratio was 1.4, and the activity of sGOT, sGPT, alkaline phosphatase was 14.3, 11.0 and 6.5, respectively. The average daily intake of energy, protein and riboflavin was 1745kcal, 56.1g and 1.14mg, respectively. The mjor source of riboflavin were milk, egg, Korean cabbage, rice, beef and so on. The average EGRAC value was 1.2748. percentages of subjects who showed EGRAC value above 1.20 was 65.2%. After oral administration of 6mg riboflavin, the EGRAC value of all these subjects was returned to normal range. Riboflavin intake was correlated positively with energy as well as protein intake, and correlated negatively with EGRAC value. However, riboflavin intake per 1,000kcal was not correlated with EGRAC value.

Effects of Rosa multiflora and Rosa multiflora Complex on Lipid Content in Rats Fed a High-Fat·High-Cholesterol Diet (찔레꽃 및 찔레꽃 복합물 추출물이 고지방·고콜레스테롤 식이 흰쥐의 지질 함량 개선에 미치는 영향)

  • This study was conducted to investigate the effects of water extract from Rosa multiflora and Rosa multiflora complex on lipid metabolism in rats fed a high cholesterol diet. Experimental rats were divided into four groups, which were composed of normal diet group (N group), high cholesterol diet group (HF group), high cholesterol and 5% Rosa multiflora diet group (HR group), and high cholesterol and Rosa multiflora complex diet group (HRC group). Rosa multiflora complex is composed of Duchesnea chrysantha, Salvia plebeia R. BR., and Sasa borealis. The serum triglyceride (TG) content of the HF group was significantly higher than that of the N group, whereas that of the HRC group was significantly lower. Serum high-density lipoprotein-cholesterol contents of the HR and HRC groups were significantly higher than that of the HF group. The serum total cholesterol and low-density lipoprotein- cholesterol contents of the HF group were significantly higher than those of the N group, and especially the atherogenic index of the HRC group was significantly reduced compared to the HF group. The liver TG and total cholesterol contents of the HF group were significantly increased compared to the normal diet group, while those of the HR and HRC groups were significantly decreased compared to the HF group. Fecal total lipid and total cholesterol contents of the HR and HRC groups were significantly increased compared to the HF group. Uridine 5'-diphospho (UDP)-glucuronyl transferase activity of the HR and HRC groups were increased compared to the HF group. Total bile acid contents of the HR and HRC groups were increased compared to the HF group, and that of the HRC group was significantly increased compared to the HF groups. These results suggest that Rosa multiflora supplementation has powerful health benefits due to UDP-glucuronyl transferase activity, bile acid, and lipid metabolism.

Effects of Horticultural Therapy on the Improvement of the Self-Esteem and Sociality of Mentally Retarded Persons (원예치료프로그램의 적용이 정신지체장애인의 자기주장 및 사회성 향상에 미치는 영향)

  • This study was conducted to evaluate the effect of phased horticultural therapy(HT) program on the experience of psychologic therapy and the development of job and social integration in the mentally handicapped persons. In this study, the mentally handicapped persons participated in HT program were chosen in disabled person's welfare institute of Jeonnam. HT program was performed twice a week with 1 hour activity for 4 months. As a results, the mentally handicapped persons participated in HT program showed high interest of horticulture and improvement of self-respect and the high satisfactory degree of HT program. Therefore, the mentally handicapped persons were showed the experience of both physical and mental therapy, improvement of self-esteem scale and sociality in HT program. Also, the application of HT program with continuously interest will be showed high improvement of physical, psychological and sentimental. In the course of this HT program progress, horticultural therapist and social welfare officer were showed the limitation of role. Therefore the leaders of group for successful HT program be required the comprehensive plan of more efficient HT program and induced technique of continuously up-phased improvements in HT program progress.

Assessment of Nutrient Losses in Different Slope Highland Soils Amended with Livestock Manure Compost (경사도와 축분 부산물비료 시용에 따른 고랭지 밭의 양분 유실량)

  • Soil fertility of alpine soils in Gangwon-Do has been deteriorating because of heavy input of chemical fertilizers for intensive crop production. To reduce application of chemical fertilizers, use of livestock manure compost in alpine soils increases consistently. Soil loss and runoff due to heavy rainfall in alpine area cause nutrient loss from soil, and subsequently pollute stream water. Therefore, the objective of this study was to assess nutrient efficiency and loss in Chinese cabbage cultivated soil with different livestock manure composts in several slopes. As control, chemical fertilizer was applied at the rate of $250-78-168kg\;ha^{-1}$ for $N-P_2O_5-K_2O$. Each pig-and chicken manure compost was applied at the rate of $10MT\;ha^{-1}$. Chemical fertilizer + chicken manure compost was applied as same rate. Four treatments was practiced in 5, 20, and 35% filed slopes, respectively. We monitored the amounts of soil loss and runoff water after rainfalls, and we also analyzed the contents of nutrients in soil and runoff water through lysimeter installed in alpine agricultural institute in Gangwon-Do. T-N loss due to soil loss was much greater with increasing filed slops rather than different fertilizer treatments. T-N loss has positive relationship with field slopes, which showing soil loss (MT/ha) = 1.66 slopes (%) - 3.5 ($r^2$ = 0.99). Available phosphate and exchangeable cations showed similar tendency with increasing slopes. T-N and T-P losses caused by runoff water were highest in chemical fertilizer (NPK) + chicken manure compost treated plot, while lowest in chemical fertilizer treatment. T-N contents (2.13, 1.95%) in chinese cabbage treated either pig and chicken manure composts compared to that (2.65%) of chemical fertilizer were significantly less. This could be resulted from much greater T-N loss in soil treated with pig and chicken manure composts.

Manufacturing and Quality Characteristics of Puffed Black Bean Fermented by Lactobacillus plantarum Strains Isolated from Kimchi (김치 유래 Lactobacillus plantarum을 이용한 팽화 검은콩 발효물의 제조 및 품질특성)

  • The purpose of this study was to optimize the fermentation condition of black bean by lactic acid bacteria (LAB) and to evaluate the quality characteristics of fermented black bean. Lactobacillus plantarum SU22 isolated from kimchi was selected as a starter for the fermentation of black bean because the strain exhibited strong antimicrobial activity against pathogenic bacteria and did not produce biogenic amines or a carcinogenic enzyme, β-glucuronidase. Fermentation was performed with broth containing puffed black bean (PBB) inoculated with 1% (v/v) of L. plantarum SU22 at 37℃ for 48h. The viable cell count of LAB was over 9 Log CFU/mL in PBB (20%) broth fermented with L. plantarum SU22. Fermentation of alcalase-treated PBB (20%) broth with L. plantarum SU22 was found to be the optimal condition, increasing viable cell count of LAB up to 10.30 Log CFU/mL. Under the optimal condition, the total polyphenol content (94.02 mg GAE/g) and DPPH radical scavenging activity (92.50%) were significantly increased, compared to non-fermented control (87.74 mg GAE/g, 83.14%).
