청국장과 된장의 생리활성효과에 미치는 감마선의 영향

  • 한국산 콩 발효식품인 청국장과 된장의 생리활성효과에 대한 감마선의 영향을 살펴보았다. 청국장과 된장은 시중에서 구입하였으며 5,10,20 kGy의 선량으로 조사하였다. 생리활성효과로 angiotensin converting enzyme inhibition, xanthine oxidase inhibition, tyrosinase inhibition과 전자공여능을 살펴본 결과 10 kGy 보다 낮은 조사선량에서는 어떠한 영향도 끼치지 않는 것으로 나타났다.

Optimization of Fermentation Condition for Onion Vinegar Using Acetobacter orientalis MAK88 (Acetobacter orientalis MAK88 균주를 이용한 양파 식초의 발효 최적화)

  • Acetic acid bacteria strains were isolated from a variety of fermented foods and fallen fruits. Among them, the strain MAK88, whose acetic acid fermentation ability, acid-tolerance, and alcohol-tolerance were high, was selected and identified as Acetobacter orientalis. A seed culture of A. orientalis MAK88 was inoculated into onion juice, and the optimum conditions of acetic acid fermentation was investigated. The optimum initial concentration of ethanol in onion juice was 5% (v/v) and in that condition, acidity was 4.31% at 144 h of fermentation. The optimum initial concentration of acetic acid was 1% and the final acidity was 5.32%. The optimum fermentation temperature was determined to be $28^{\circ}C$. The most appropriate preparation method of onion juice was to heat the onion at $121^{\circ}C$ for 15 min and produce juice with pressure followed by filtering, and then sterilization at $121^{\circ}C$ for 15 min. Prepared onion juice was used for fermentation without dilution.

  • 고추장은 장에서 유래된 식품으로 콩 위주의 장류인 간장, 된장 및 청국장의 변화에 의해 만들어진 것으로 우리나라의 대표적인 발효식품이다. 우리나라의 고추장에 대한 분야에서 특허를 검색한 결과(검색어 : 고추장) 1,889건이 특허로 등재되어 있었고 디자인 부분에서는 126건, 상표 등록으로는 7,626건이 등록되어 있는 상태이다. 우리나라의 전통식품 연구 분야에 대한 관심이 증대하고 있지만 전통식품 역사에 비해 기수적인 실용특허부분이 상당히 부족한 상태이다. 몇 가지 독특한 고추장의 관련 특허 내용을 알아보는 것도 상품 및 응용 기술 연구에 많은 도움이 될 것 같다.

Physiochemical properties of danyangju and iyangju prepared using uncooked germinated brown rice (무증자 발아현미를 이용한 단양주와 이양주의 이화학적 특성)

  • This study analyzed the physicochemical properties of Danyangju and Iyangju fermented using uncooked germinated brown rice. Total bacteria and yeast from Danyangju and Iyangju showed the maximal value on day 1 of fermentation, but their numbers decreased by the seventh day. On the seventh day, the total bacteria were higher in Iyangju than in Danyangju, but yeast was the lowest in Iyangju. Both Danyangju and Iyangju showed decreased whiteness in color, whereas redness and yellowness increased with fermentation. Sugar contents, reducing sugar, acidity, alcohol, and polyphenol contents increased during fermentation in both Danyangju and Iyangju; this increase was higher in Iyangju than in Danyangju. Iyangju and Danyangju showed gradual increases in α-diphenyl-β-picrylhydrazyl (DPPH) radical scavenging activity until day 5. The γ-aminobutyric acid (GABA) content increased with fermentation in Iyangju and Danyangju, and Iyangju showed over 10-fold increase after fermentation.

Effect of Millimeter Waves on Quality Characteristics of Cheonggukjang (밀리미터파 처리가 청국장의 이화학적 특성에 미치는 영향)

  • Millimeter waves are electromagnetic waves with frequencies of 30-300 GHz (wavelength 1-10 mm), and millimeter wave stimulation affects microorganism growth. The present study stimulated Bacillus subtilis with 60 and 70 GHz millimeter waves during cheonggukjang fermentation and characterized the effects on cheonggukjang quality. Cheonggukjang treated with millimeter wave irradiation showed no significant difference in total bacterial count but generated only 5.52-5.92% viscous substance. Irradiation with 60 GHz millimeter waves yielded bright and intense color values relative to 70 GHz millimeter waves. Examination of the amylase activity and reducing sugar content of finished cheonggukjang revealed that irradiation at 70 GHz inhibited amylase activity in cheonggukjang. Furthermore, irradiation at 70 GHz increased protease activity, whereas irradiation at 60 GHz inhibited the activity. Moreover, the amino acid content changed with millimeter wave irradiation.

  • Development of synthetic vinegar has been focused on the acidic taste typically caused by acetic acid. Recently, consumer interest in fermented vinegars which contain a variety of valuable nutrients increased growth of the beverage industry. Vinegar beverages made of a variety of foreign fruits such as pineapple, grapefruit, and aloe are being commercialized to meet market needs from female consumers interested in beauty. However, commercialization of traditional fermented vinegars using regional products such as rice has not been successful yet compared to fruit vinegar beverages. Systematic research for development and commercialization of functional value-added traditional vinegars made of regional agricultural products should be performed. In this study, type and manufacturing methods of traditional vinegar were reviewed based on classic literatures.

Manufacturing and Quality Characteristics of Puffed Black Bean Fermented by Lactobacillus plantarum Strains Isolated from Kimchi (김치 유래 Lactobacillus plantarum을 이용한 팽화 검은콩 발효물의 제조 및 품질특성)

  • The purpose of this study was to optimize the fermentation condition of black bean by lactic acid bacteria (LAB) and to evaluate the quality characteristics of fermented black bean. Lactobacillus plantarum SU22 isolated from kimchi was selected as a starter for the fermentation of black bean because the strain exhibited strong antimicrobial activity against pathogenic bacteria and did not produce biogenic amines or a carcinogenic enzyme, β-glucuronidase. Fermentation was performed with broth containing puffed black bean (PBB) inoculated with 1% (v/v) of L. plantarum SU22 at 37℃ for 48h. The viable cell count of LAB was over 9 Log CFU/mL in PBB (20%) broth fermented with L. plantarum SU22. Fermentation of alcalase-treated PBB (20%) broth with L. plantarum SU22 was found to be the optimal condition, increasing viable cell count of LAB up to 10.30 Log CFU/mL. Under the optimal condition, the total polyphenol content (94.02 mg GAE/g) and DPPH radical scavenging activity (92.50%) were significantly increased, compared to non-fermented control (87.74 mg GAE/g, 83.14%).

Antioxidant Properties in Microbial Fermentation Products of Lonicera japonica Thunb. Extract (금은화 추출물을 이용한 미생물 발효 생성물의 항산화 특성)

  • The purpose of this study is to investigate antioxidant properties in microbial fermentation products of Lonicera japonica Thunb extract. The bacterium Lactobacillus plantarum NHP1 was isolated from conventional fermented foods. Modern pharmacological studies show that Lonicera japonica Thunb and its active principles of wide pharmacological actions. For instance, they show a strong efficacy in antibacterial, anti-inflammatory, antiviral, anti-endotoxin, blood fat reducing, antipyretic, and antioxidant activities. The extract of Lonicera japonica Thunb was obtained by extracting dried Lonicera japonica Thunb using either hot water or 70% ethanol as a solvent. Fermentation was performed in a 2L fermentor containing 1.2 L of extractat conditions of $30^{\circ}C$ and 100 rpm for 48 hr. The amount of cholorogenic acid was $2.65{\mu}g/g$ in hot water extract. The total phenolic content (GAE, gallic acid equivalent) in hot water and 70% ethanol were $56.5{\pm}4.9$ GAE mg/g and $72.7{\pm}5.3$ GAE mg/g, respectively. After fermentation, the phenolic content increased to 30.2% in hot water and 12.9% in ethanol extract. In the same manner, flavonoid content increased to more than 75% regardless of extract solvent. ABTS (2,2-azino-bis-3-ethylbenzthiazoline-6-sulfonic acid) value noticeably increased to 50% after fermentation.

Enhancement of Antioxidant and Skin Cancer Inhibition Effects by Fermented Luffa aegyptiaca Extract (수세미오이 발효추출물의 항산화 및 피부암 억제 효과)

  • This study aimed to improve the production of bioactive materials with antioxidant activity using a fermented Luffa aegyripia extract and improve the anticancer effect by enhancing UV absorption and inhibiting melanoma cell growth. The total phenolic content (TPC) and antioxidant activity of the fermented extract were 30.23 mg GAE/g DM and 45.12%, respectively, which was 1.4 times higher than that of the hot-water extract (HWE). The fermented extract showed a UV adsorption rate of 53.9%, which was 1.5 times higher than HWE, and it was concluded that UV absorption was increased by TPC, which was increased through the fermentation of L. aegyptiaca extracts using Lactobacillus. In the anticancer effect test, fermented and HWE extracts had carcinogenic effects of 1.0 and 2.0 mg/mL, respectively. This suggests that the increased antioxidant activity due to the increase in TPC caused by fermentation contributed to the anticancer effect. The UV absorption rate of fermented extracts was 2.4 times higher than HWE, giving them potential use as cosmetics and pharmaceutical materials with high polyphenol contents and antioxidant properties and skin cancer prevention.
