당뇨병성 족부질환 - 당뇨환자의 건강한 발 관리

  • 당뇨병이 증가함에 따라 당뇨환자의 발에 궤양(당뇨발)이 생겨 발을 절단하는 경우가 증가하고 있다. 이는 당뇨환자에게 심리적 문제나 경제적 비용뿐만 아니라 육체적 장애 및 사망의 주요 원인이 되고 있다. 그러나 당뇨환자의 건강한 발관리가 중요하다는 인식은 아직 미미한 상태이다. 당뇨발이 발생하는 원인을 잘 알고 미리 발 관리를 시행하는 것은 중요하다. 또한 당뇨발 증상을 조기 인식하는 것만이 발을 절단할 가능성을 줄일 수 있는 방법이다. 이 쳅터에서는 당뇨발 발생 위험요인에 대해 알아보고 당뇨발을 예방하기 위한 발 관리법은 무엇인지 살펴보도록 하겠다.

발아현미의 품질특성

  • 발아현미란 적당한 온도와 수분, 산소 등을 공급해 현미의 싹을 1~5 mm까지 발아시킨 것으로 현미의 영양과 기능을 극대화시키면서 식미는 현미보다 훨씬 부드러운 쌀이다. 발아현미 등 발아곡식이 주목받기 시작한 것은 1993년 독일의 한 식품연구소에서 곡식의 발아시 발아전에는 없던 새로운 영양성분이 생겨나거나 증가한다는 연구발표가 계기가 되었다. 현미에는 식물성 섬유질을 비롯한 각종효소, 비타민, 미네랄 등 영양소가 다량 함유되어 몸에 좋다는 것은 널리 알려진 사실이다. 그러나 현미가 갖는 뛰어난 효능에도 불구하고 백미를 주식으로 하고 있는 이유는 현미의 조리가 어렵고 부드럽게 씹히지 않고 꺼칠하여 식미가 떨어지기 때문이다. 이러한 현미의 문제점을 개선하여 풍부한 영양을 고루 섭취하고 간편한 취사와 부드러운 조직감으로 식미 기호도를 높인 발아현미가 등장하였다. 따라서, 찹쌀과 멥쌀 발아현미에 대한 영양성분과 품질특성을 조사하여 발아현미밥 및 가공제품 개발에 대한 기초자료로 제시하고자 한다. 4$0^{\circ}C$에서 20시간 발아시킨 찹쌀 발아현미(수분함량 15.45%)와 멥쌀 발아현미(수분함량 15.02%)의 품질 특성중 amylose 함량은 각각 4.9%, 17.9%, 환원당은 4.91%, 2.28%, 유리당은 찹쌀 발아현미가 glucose 0.42%, sucrose 0.15%, maltose 0.27%이고 멥쌀 발아현미가 glucose 0.59%, sucrose 0.50%, maltose 0.24%였다. 찹쌀과 멥쌀 발아현미의 색차값은 각각 L값 60.30, a값 2.12, b값 23.52과 L값, 59.51, a값 3.15, b값 23.04이다. 호화도는 1.67%, 5.21%이고, 조직감중 hardness는 7.53 kgf, 8.93 kgf로 멥쌀 발아현미가 높았다. 찹쌀 발아현미의 아밀로그램 특성은 호화 초기온도가 42$^{\circ}C$였으며, breakdown값은 94, set back값은 -48이었으며, 멥쌀 발아현미의 특성은 호화 초기온도가 7$0^{\circ}C$였으며, breakdown값은 0, set back값은 123이었다. 비타민 E 함량은 찹쌀 211.79 $\mu\textrm{g}$/kg, 멥쌀 310.59 $\mu\textrm{g}$/kg이고, 총식이섬유 함량은 4.21%, 3.17%이다. 발아현미 원곡간의 향기패턴은 차이가 나지 않았으며 발아현미 제조 후 찹쌀, 멥쌀 모두 이취 성분은 거의 없었다. 발아현미의 절단 내면 미세구조를 관찰한 결과 찹쌀 발아현미 cell이 멥쌀 발아현미보다 작았으며, 표면 구조도 찹쌀 발아현미가 더욱 조밀하였다.

Optimal Condition for Pollen Germination of Rare and Endangered Forsythia saxatilis (희귀.멸종위기 산개나리(Forsythia saxatilis) 화분의 최적 발아 조건)

  • Optimal condition for pollen germination was suggested as a basic research of flowering physiology in order to identify the characteristics of flowering and seed setting of rare and endangered Forsythia saxatilis Nakai. Pollen samples were collected during flowering time from the end of March to the beginning of April. First, a suitable germination temperature, medium sucrose concentration and germination time were determined for pollen germination and pollen tube elongation in vitro, and then an optimal pH of culture medium. Pollen germination and tube elongation were significantly different among the levels of germination temperature, sucrose concentration and germination time. Interactive effects were observed between germination temperature and time, germination temperature and sucrose concentration, germination time and sucrose concentration. Pollen germination was the highest at $10^{\circ}C$ and increased with the increase of sucrose concentration, whereas it had no relation with germination time. In addition, pollen germination and tube elongation did not increase at more than 15% of sucrose concentration and 24 hours later. Pollen germination was the highest at pH 5 (20.8%) and the lowest at pH 6 (3.8%). In conclusion, $10^{\circ}C$, 15% sucrose and pH 5 were proposed as the optimal condition for pollen germination 24 hours later of pollen culture.

Changes in Chemical Components of Pigmented Rice during Germination (유색미 품종의 발아 시 화학성분의 변화)

  • This study was conducted to use fundamental data about functional foods based on pigmented rice varieties-2 types of normal rice, 6 types of black rice-to analyze changes in chemical component activity during germination. The results are summarized as follows: Germination rates of the pigmented rice varieties were the highest at $30^{\circ}C$. There was a tendency for crude protein contents to increase under the influence of germination periods, and the crude protein contents were the highest on the $6^{th}$ day. Crude fat contents were the highest on days 6-8. Nevertheless, the crude fat contents in pigmented rice decreased during the first 2 days, and subsequently, the contents increased steadily. Crude fiber contents were the highest on the $8^{th}$ day. However, there was no meaningful tendency. Sucrose, glucose, and fructose contents in the pigmented rice increased during germination. In normal rice, glucose content increased up to the $8^{th}$ day. It was higher than that of brown rice. However, sucrose and fructose contents showed no meaningful tendency. There was a general tendency for GABA, alanine, glutamic acid, asparagine, aspartic acid, and lysine contents in the pigmented rice to increase under the influence of germination periods. Aspartic acid and asparagine contents were shown to decrease, compared with that in pre-germinated normal rice. In all varieties, lysine was detected from the second germination day onwards, and on the $6^{th}$ day after germination, its contents were 6.24 mg/100 g and 15.58 mg/100 g in normal rice and pigmented rice, respectively.

Changes in Isoflavones and Germination Characteristics of Eunhakong (Glycine max) by Germinated under Dark Condition (암조건에서 발아시킨 은하콩의 발아특성 및 아이소플라본 함량 변화)

  • This study was designed to investigate changes in germination characteristics and color as well as the content of isoflavones of Eunhakong germinated under dark conditions. The wet weight of Enhakong was increased as germination progressed. It reached $299.7{\pm}15.0%$ at 60 h after the beginning of sprouting. The relative dry weight was consistently decreased as germination progressed, and it reached $65.8{\pm}8.2%$ at 60 h after the beginning of sprouting. The length of sprout was rapidly increased at the latter stage compared to the beginning of germination. Most soybean seeds were successfully germinated at 60 h after beginning of sprouting. The L value was considerably increased at the early stage of germination and it reached $63.4{\pm}0.7$ at 60 h. The a value was rapidly increased at the beginning of germination and decreased thereafter. The b value was increased at the beginning of germination and did not changed thereafter. It was confirmed that the total isoflavone content, in which the m-genistin was highest followed by daidzin, and than slightly decreased.

Analysis of Seed Germinating Vigor, Germination Speed and Peak Time in 9 Fescues under Alternative and Natural Conditions at the Room Temperature (자연 실온 및 변온 환경에서 광엽 및 세엽 훼스큐 9종류의 종자 발아력, 발아세 및 발아 피크 기간 분석)

  • This study was initiated to investigate seed germinating vigor, germination speed, and establishment characteristics of Festuca species under natural conditions ($5-25^{\circ}C$). Germination rate was 62.0% in CRF 'Audubon' to 97.0% in TF 'Olympic Gold'. It was greater with TF over fine-type fescues, being TF>SF>CF, HF>CRF. The germination speed, measured as days to seed germination of 50% through 80%, was fastest with TF, medium to high with CF, medium with HF and SF, and slowest with CRF. However, it was approximately 4 days slower under natural conditions, as compared with that under alternative conditions ($15-25^{\circ}C$). Germination peak time was much faster with TF. It ranged from 0.73 to 1.84 days with TF, being 1.45 days in average. But it varied with 2.16 to 11.75 days among fine-type species. The peak time was longer in order of SFCF>SF>HF>CRF.

Germination of Artificial Seeds by Encapsulation of Somatic Embryos of Kalopanax septemlobus with Alginic Acid (음나무 (Kalopanax septemlobus) 체세포배를 이용한 인공종자 조제 및 발아)

  • Artificial seeds were produced by encapsulation of somatic embryos of Kalopanax septemlobus and investigated the effects of alginic acid concentration, size of somatic embryos, additives in capsules and nursery seedbeds for germination. The most suitable concentration of alginic acid was 3% for germination of encapsulated seeds. Germination was suppressed at higher concentration more than 3% alginic acid. For germination of artificial seeds, 1/2 MS medium with 0.02% activated charcoal was effective. There was no significant differences on the germination among the different size of somatic embryos. Additives in hydrated capsule was very important for germination and post-germinative growth of artificial seeds. Germination was severly inhibited in hydrated capsule containing only distilled water. Both sucrose and MS medium addition in hydrate capsule was effective for germination of artificial seeds. When artificial seeds were transferred to soilbed, germination rate was high in perlite containing 3% sucrose but very low in perlite with only water. These results indicate that nursery additives in both hydrate capsules and soilbeds was important for germination of artificial seeds in Kalopanax septemlobus.

Accelerated Germination of Orchardgrass(Dactylis glomerata) Seed Under Water Stress by Seed Pre-treatments (수분 장애시 종자 전처리가 오차드그라스의 발아에 미치는 영향)

  • It is important to improve the germination of grass seeds because they are poor germination under water stress. This experiment was conducted to investigate the response of seeds pre-treated individually with Polyethylene glycol 6000 (PEG) and growth regulators(GA$_3$, Kinetin, NAA) on the germination characteristics when two levels of osmotic potential (0, -5 bar) were put to seeds of Orchardgrass. In the untreated seeds, the total germination rate was decreased under water stress, and the mean germination time was delayed. Priming of Orchardgrass seeds using PEG or GA$_3$ resulted in improved germination under water stress(-5 bar), whereas the opposite was true of kinetin or NAA. The response of seeds primed in solutions of either -15 bar PEG or 100 ppm GA$_3$ was particulary marked compared with the untreated seeds. It is suggested that PEG and GA$_3$ may have positive regulatory effects in triggering the system for water stress alleviation. But the inhibitory effect of the water stress was not completely removed by allowing the seeds to pre-treat in solution of PEG or GA$_3$.

Study on the Germinability of Sesame Seeds at Lower Temperature (참깨 품종들의 저온발아성에 과한 연구)

  • The objective of this study was to test germinability of sesame (Sesamum indicum L.) varieties at low temperatures. Seeds of III sesame varieties representing different maturity groups and countries were tested at four different temperatures between $10^{\circ}C$ and $16^{\circ}C$. Average germination percentages of III varieties were 92%, 57% and 3.3% at $16^{\circ}C, 14{\circ}C$ and $12^{\circ}C$.respectively. The highest daily germination percentage was observed after 4 days of incubation at $16^{\circ}C$, while it was after 8 days at $14^{\circ}C$. A regression analysis indicated that $15^{\circ}C$ as the minimum temperature for satisfactory germination in field conditions. In general, Korean local collections had better germinability than introduced varieties from 6 countries at different latitudes. 'San dong', a Korean local cultivar. showed the highest germination percentage (24%) at $12^{\circ}C$ when the average germination percentage of all varieties was as low as $3.3^{\circ}C$. Early maturity varieties germinated better at $12^{\circ}C$ and $14^{\circ}C$ than medium or late maturity groups, but no difference was observed at $16^{\circ}C$. Although larger seeds showed better germinability within a variety, there seems to be no relationship between seed size and germinability in sesame.in sesame.
