1. 밀가루 반죽 내에서 유지류는 gluten의 수화를 감소시키고 따라서 glu1en의 망상 구조형성을 방해함으로써 연화작용을 하게 된다. 이 결과 pastry와 biscuit, cracker 류의 crispness를 증가시키고, shortened cake에 tenderness를 부여한다.2. 유지류의 shortening power는 가소성이 커서 밀가루에 잘 분산될수록, 유지의 사용량이 많을수록, 반죽 정도가 적당할 대, 반죽을 섞는 과정에서 액체 성분 첨가 후의 젓는 정도가 적을수록 커진다. 3. Yeast-raised baked food에서 shortening등 유지류의 역할은 빵의 용적, 탄성 및 기계적 내성을 증가시키고 노화를 지연시키며 질감을 좋게한다. 이러한 shortening의 기능은 밀가루 자체의 지방질과도 밀접한 상관 관계가 있다.
단단하게 마른 상태의 건조과일을 반죽에 넣으면 반죽의 수분을 흡수해 빵이 딱딱해질 수 있다. 뿐만 아니라 전처리 과정에서 설탕이 지나치게 많이 들어가면 고객은 과일의 맛과 향보다 단맛을 먼저 느끼게 된다. 이처럼 건조과일의 특성에 맞게 전처리를 하고 궁합이 맞는 리큐르를 배합해 과일 본래의 맛을 끌어올리는 것이 전처리의 관건이다.

We studied suitable dough formula for yeast-raised breadmaking using frozen dough prepared by straight no-time method, centering around breadmaking quality. The most suitable dough formula based on 1,000 g of wheat flours was as follows : compressed yeast ; 30 g, sucrose ; 50 g, salt ; 20 g, shortening ; 40 g, potassium bromate ; 75mg, L-ascorbic acid ; 200mg, yeast food ; 3 g, vital wheat gluten ; 30 g, calcium phosphate, monobasic ; 400mg, sodium stearoyl-2-lactylate ; 8 g, water ; 680 g. Breadmaking test employing this formula showed that gassing power and fermentation time were suitable and higher specific loaf volume was obtainable. By using much emulsifiers and dough conditioners, frozen injury of dough was controlable in spite of the addition of more content of water(68%) than that of water (62%) obtained from the farinograph data.
No-time dough process utilizing ascorbic acid as an oxidant was investigated. The farinograph absorption was increased as the amount of L-cysteine increased, while stability and peak time decreased up to 40 and 30 ppm of L-cysteine, respectively. Extensibility of the dough was increased with the increment of L-cysteine, but the ratio of resistance to extensibility was significantly decreased. At the same level of L-cysteine, the addition of ascrobic acid by 1.5 times decreased the farinograph absorption. However, the stability and peak time remained relatively unchanged upon addition of ascrobic acid. Extensibility and resistance of dough were respectively decreased and increased in the presence of both L-cysteine and ascorbic acid. In the range of 30-50 ppm of cysteine, the mixing time decreased and the baking absorption was increased by 1% as the cysteine was increased by 10 ppm. The ascorbic acid had no effects on absorption and mixing time. Bread produced by no·time dough process had no break and shred. The optimum concentrations of L-cysteine and ascorbic acid for no-time dough process were 40 and 100ppm, respectively.
The rheological properties of wheat flour and black rice flour dough were investigated in dough added with 0, 10, 20, and 30% of black rice flour (BRF). Increase in BRF concentration resulted in: decreases in protein and gluten contents, whereas ash content increased; decreases in water absorption, stability, development time, elasticity, and valorimeter value of the dough, whereas increase in weakness of the dough, as revealed through farinogram; low initial pasting temperature and temperature at peak viscosity, and decreases in viscosity at peak point and at $94^{\circ}C$, as revealed through amylogram; decreases in extensibility, resistance to extension, and energy, whereas increase in R/E ratio, as revealed through extensogram.
Effects of olive oil on rheological properties of wheat flour dough were investigated through farinograph, amylograph, and extensograph, and by measuring wheat flour dough fermentation volume. Farinogram showed development time, stability, elasticity, and valorimeter value of olive oil-added wheat flour decreased, whereas water absorption and stability were similar to control (shortening 4%). Gelatinization temperature and maximum viscosity of wheat flour dough with olive oil decreased more than those of control as revealed by amylogram. Extensogram showed wheat flour area increased, whereas dough volume decreased in olive oil-added wheat flour dough.
This was studied to evaluate the rheology properties of the Dumpling shell added chitosans(commercial and prepared from fungal), polyphosphate, guargum and tapioca. The physicochemical properties of fungal chitosans (FCs95 and FCs 40) were as follows respectively. The nitrogen was 6.71% and 6.9%, the solubility 99.05% and 99.13%, the viscosity 2.23cps and 2.21cps, the acetylation 12.0% and 12.7% and the molecular weight 3.12${\times}$10$\^$5/Dalton and 3.01${\times}$10$\^$5/Dalton. From the above facts, the components and physicochemical properties of two kinds of fungal chitosan had little difference. The addition of polyphosphate, guargum and tapioca showed effect on the texture parameters(hardness, cohesiveness, springiness and gumminess) of Dumpling shell dough and the optimum addition concentration wag 0.074%, 6.59% and 0.062%(w/w), respectively. In case of chiotsans addition, texture of the dough by added SCs, FCs95 and FCs40 showed effect.
Effect of barley bran flour on bread quality was investigated. With addition of barley bran flour, crude protein and ash contents of bread increased, and color of crumb and crust became darker than control group made with pure wheat flour. Content of dietary fiber in bread made with 5% barley bran flour was twofold higher than that of control group. Hardness of bread increased and volume decreased in proportion to bran content. Sensory qualities of 5% barley bran flour-added group and control group were not significantly different, but decreased in 10 and 15% barley bran flour-added groups, revealing optimal content of barley bran flour to be 5%.
Transglutaminase (TG) was prepared from Streptomyces mobaraensis to improve texture and self-life of food. In preliminary experiments, texture of the dough was not improved due to the interference in microbial TG reaction by proteases present in the crude enzyme. Among the cation exchange resins tested for the removal of proteases, MonoPlus S 100 was the most efficient. Further purification steps with a quaternary ammonia salt resin and gel permeation chromatography effectively removed proteases from crude enzyme. Molecular weight of purified enzyme was about 38,000 on SDS-polyacrylamide gel electrophoresis. Farinograph data showed the addition of purified enzyme to wheat flour gave higher stability and lower weakness values those that of crude enzyme.
