  • 건강한 식생활이란, 균형잡힌 영양소를 다양한 식품을 통해 골고루, 적절히 섭취함으로써 건강하고 행복한 삶을 영위하는 것을 말한다. 그리나 최근 언론 및 각종 매체에서 생활습관병의 원인이 축산물 섭취와 연관이 있다는 보도가 잇따라 축산물의 섭취 저하와 소비 위축을 초래하기도 하였다. 그러나 이는 축산물을 과잉 섭취할 때 일어나는 문제일 뿐 축산물의 적절한 섭취는 국민들의 건강한 삶을 유지하는데 꼭 필요하다고 할 수 있다. 이에 축산물의 영양적인 측면을 재조명해보고 축산물을 건강하게 섭취할 수 있는 방법에 대해 살펴보고자 한다.

Effects of Cucumber Beverage Intake on Fluid-Regulating Hormones and CRP in Amateur Marathoners (마라톤 동호인의 오이음료 섭취가 체액조절호르몬과 C-반응단백에 미치는 영향)

  • The purpose of this study was to investigate the effects of cucumber beverage intake on fluid-regulating hormones and CRP in amateur marathoners between the ages of 47~49. Among research subjects, 8 male middle-aged marathoners who have completed the full marathon course over 5 times and who have run for over 50 months were selected. In two marathon races, they received firstly water and secondly cucumber beverage: 10 ml before the race, 50 ml every 5 km, and 200 ml after the race, adding up to 10 drinks and 710 ml in total amount of beverage taken. For statistics, one-way ANOVA within the group was conducted through SPSS 12.0; for post-examination, Duncan was utilized; and for inter-group examination, an independent t-test was used. Before, right after, and after the marathon, the cucumber beverage intake group had a significantly decreased serum ADH concentration compared to the water intake group. Both the cucumber beverage and water intake groups had significantly increased serum rennin levels before, right after, and after the marathon. Both the cucumber beverage and water intake groups had significantly increased aldosterone before, right after, and after the marathon. CRP levels didn't show change. In conclusion, intake of cucumber beverage during a marathon race was found to help with fluid-regulating hormones. This research has attempted to continue to study the influence on hormones that control body fluids.

  • 사람 몸의 약 70%를 구성하고 있는 물에 대한 현대인의 관심은 줄어만 가고 최근 들어 늘어가는 카페들과 각종 재료를 첨가한 달콤한 음료들이 생활 속에 깊숙이 파고 들고 있다. 아침에 일어나자마자 마시는 것은 물이 아닌 커피, 식사 후 지인들과의 대화에 함께 하는 것 또한 물이 아닌 카페 음료들, 각종 패스트푸드 섭취와 함께 마시는 탄산음료들은 물이 설 자리를 빼앗고 있다. 이러한 생활 습관은 현대인들의 물 섭취량 감소를 촉진하며 건강의 적신호를 보내고 있다. 이 어플리케이션의 목적은 지금의 위험 상황을 자각하지 못하는 현대인들을 위해 다양한 서비스를 통해 자동으로 물 섭취를 권장하고자 한다. 개개인에게 맞춤형 서비스를 제공함으로써 체내의 물 부족 현상에 대한 자각심을 일깨우고 스스로 점검할 수 있게 한다. 멀티 테넌트 환경으로 구현하고자 BaaS 플랫폼을 통해 서버 구축, DB 설계, 서비스 기능 개발 연구를 진행하고 모든 리소스가 공유되어 사용자에게 물 섭취 기록, 기록을 볼 수 있는 타임라인, GPS 를 활용한 주변의 물 위치 정보를 제공한다.

Effects of Whey Protein Hydrolysates on Lipid Profiles and Appetite-Related Hormones in Rats Fed High Fat Diet (고지방식이를 섭취한 흰쥐에서 유청단백질 가수분해물의 섭취가 지질 농도 및 식욕 관련 호르몬에 미치는 영향)

  • This study was carried out to compare the effects of whey protein concentrate, its hydrolysates and macropeptide fractions obtained from papain treatment of whey protein on lipid levels and appetite-related hormones in obesity model rats induced by high fat diet. Four week-old male Sprague-Dawley rats were fed high fat (18% w/w) and low protein (10% w/w) diet for 4 weeks and then divided into four groups (n=8/group). Rats were fed high fat diets containing various nitrogen sources; 10% whey protein concentrate (10WPC), 25% whey protein concentrate (25WPC), 25% whey protein hydrolysates (25WH), and 25% whey macropeptide fractions (25WP, MW$\geq$10,000), respectively for 6 weeks. There were no significant differences in body weight gain and food intake among groups. A significant decrease of total lipid, triglyceride in serum was observed in 25WH and 25WP groups. Total lipid and triglyceride contents of the liver were significantly decreased in 25WPC, 25WH and 25WP groups compared with 10WPC group. However, in the liver, there were no differences in the contents of total lipid and triglyceride among 25WPC, 25WH and 25WP groups. The daily amounts of feces were significantly increased in 25WH and 25WP groups and the excretion of total lipid and triglyceride were significantly increased in 25WH group. Serum glucose and insulin concentration were significantly decreased in 25WH group. The concentration of serum ghrelin was significantly decreased in the 25WPC, 25WH and 25WP groups compared with 10WPC group. However, there was no significant difference in the concentration of serum leptin among groups. These results suggest that whey protein hydrolysates and macropeptide fractions may show beneficial effects on the lipid profile in serum and liver, appetite regulation and insulin resistance in obesity model rats induced by high fat diet.

전주지역 중학생의 음료 섭취 실태와 식생활 태도에 관한 연구

  • 본 연구는 중학생들의 음료기호와 빈도 등에 따른 음료 섭취 실태를 조사하기 위하여 실시하였다. 전주시에 재학하고 있는 중학생으로서 남학생 303명, 여학생 276명을 조사 대상으로 설문지 조사를 실시하였다. 음료섭취의 빈도와 이에 영향을 주는 요인은 다음과 같다. 물은 하루 평균 8.55회 섭취하였으며, 우유 및 요구르트 3.01회, 스포츠 음료는 2.13회, 탄산음료는 1.93회, 과일 및 야채 쥬스는 일주일에 1회 섭취하는 것으로 나타났다. 남학생이 여학생보다 탄산음료 및 스포츠음료를 더 선호하는 것으로 나타났으나, 물과 우유 및 쥬스와 전통음료에서는 남학생과 여학생이 유의적인 차이를 보이지 않았다. 학생들은 식사시 주로 물을 마시는 것으로 나타났으며, 그 다음으로 우유를 마시는 것으로 나타났다. 운동 실태에 따른 음료의 섭취는 규칙적인 운동이나 3시간 이상 운동 시 1시간 이하 운동시보다 탄산음료 또는 스포츠음료 및 우유와 요구르트를 선호하는 것으로 나타났다. 음료를 마시는 때는 주로 운동시였고 그 다음으로 쉬는 시간에 스낵과 함께 마시는 것으로 나타났다. 본 연구의 결과 잘못된 음료섭취에 대한 학생과 학부모를 대상으로 영양교육이 필요하며 학교차원에서의 정책적인 접근이 필요하다고 사료된다.

Anti-Obesity Effects of Foeniculum fructus Water Extract (회향종자(Foeniculum fructus) 물 추출물의 항비만 효과)

  • We investigated the anti-obesity effects of Foeniculum fructus water extract on body weight, epididymal adipocyte size, plasma lipid levels and activities of key enzymes such as lipoprotein lipase (LPL), acyl-CoA synthetase (ACS) in high fat diet-induced obese mice. Experimental groups were normal diet group (ND), high fat diet group (HFD), high fat diet with 0.05% orlistat group (HFDO), and high fat diet with 0.5% Foeniculum fructus group (HFDF). Eleven-weeks feeding with HFD resulted in significant increase in lipid levels, body weight, liver and epididymal adipose tissue weight, compared with the ND group. Diet containing Foeniculum fructus water extract significantly reduced plasma total cholesterol, triglyceride and glucose concentrations as well as body weight, liver and epididymal adipose tissue weights. Plasma LDL cholesterol levels were significantly lower in the HFDF group than those in HFDO group. LPL activities elevated by a high fat diet were significantly decreased by Foeniculum fructus water extract administration. ACS activities decreased in the high fat diet group and markedly increased in the Foeniculum fructus water extract administered group. All things considered, Foeniculum fructus water extract efficiently inhibits the inflow of fatty acid into the cell, and activates metabolic process that uses fatty acids flowing as an energy source. Thus, Foeniculum fructus water extract may have great potential as a novel anti-obesity agent.

Study on the Perceptions and Purchasing Realities of Consumers for Onion Hot-Water Extracts (양파열수추출물에 대한 소비실태 조사)

  • In this study, a survey was conducted to determine consumer perceptions and satisfaction for onion hot-water extracts. Among the study subjects, females (53.3%) were in greater number than males, and individuals in their 40s (35.1%) made up the largest group. Cocerning the detailed efficacy of onion hot-water extracts, most respondents (84.5%) were aware of their efficacy and females recognized this more than males (p<0.001). Most consumers (67.3%) purchased onion hot-water extracts from 'health food stores prepared using a double boiler', and many consumers (47.4%) received information on the extracts from families and relatives. Of the respondents, 51.8% said they purchased 'quantities for $1{\sim}3$ months' at one time, and 33.1% stated that the price of onion hot-water extracts was expensive. They considered 'health' the most important aspect when purchasing, and preferred 'pouch packs' (60.3%) and considered 'easiness to open convenience to drink, and safety' (42.0%) the most important product features. Also, 62.8% of the respondents consumed onion hot-water extracts, and many drank them $1{\sim}3$ times a week, with '70 mL' as one dose, and drank them 'regardless of time'. The consumers were satisfied with the listing of health effects, but were not satisfied with the 'taste', 'smell', or 'color' of products. Concerning advertisements for the efficacy of onion hot-water extracts, 72.5% replied 'I trust them a little'. And concerning the expanding onion hot-water extract market, many respondents said it is difficult to choose an onion hot-water extract due to many similar products at the market. They also requested improvements of taste and flavor.

Water intake and oral disease symptoms in adolescents : a cross-sectional study conducted in Korea in 2021 (우리나라 청소년의 수분 섭취에 따른 구강질환 증상 : 2021년 청소년온라인행태조사 자료를 이용한 단면연구)

  • Objectives: Water constitutes a majority of the human body and is essential for health. In addition, water intake can prevent dental caries by improving salivary lubrication and self-cleaning. This study aimed to determine the relationship between the amount of daily water intake and the symptoms of oral disease in Korean adolescents. Methods: We used data from the Korea Youth Risk Behavior Web-based Survey (KYRBS), conducted in Korea in 2021, and identified the relationship between daily water intake and oral disease symptoms in Korean adolescents. KYRBS is a nationwide cross-sectional survey conducted by the Korea Disease Control and Prevention Agency (KDCA), and a total of 54,848 participants were included in this study. Results: After adjusting for confounding factors, logistic regression analysis showed that tooth pain was more often experienced by those who drank less than two cups of water per day (odds ratio [OR]: 1.14; 95% confidence interval [CI]: 1.01-1.30) than those who drank five or more cups of water per day. Conclusions: A low daily water intake is associated with tooth pain, a symptom of dental caries. The results of our study suggest that increasing water intake may reduce dental caries. Therefore, adequate water intake may help prevent dental caries.

2020 Dietary Reference Intakes of water for Koreans: establishment and future tasks (2020 한국인 수분 섭취기준 설정과 앞으로의 과제)

  • Water accounts for the largest proportion of body weight and is an essential element for the physiological functioning of the human body. According to 2013-2017 Korea National Health and Nutrition Examination Survey (KNHANES) data, the average water intake of Koreans was 2,167.3 mL/day and 62% of them did not meet the Dietary Reference Intakes for Koreans (KDRIs) for water. However, the consumption of beverages is continuously increasing. KDRIs sets the adequate intake (AI) for water, but tolerable upper intake level (UL) and chronic disease risk reduction intake (CDRR) are not provided. Compared to 2015, the AI of total water from both food and fluids in the 2020 KDRIs slightly increased or decreased according to age. The AI for children 1-2 years old, boys 6-8 years and 9-11 years old, and girls 6-8 years old decreased by 100 mL/day, while that of boys 12-14 years old increased by 100 mL/day. The AI of total water was the sum of the water intake from food and fluids reported by the KNHANES, with an extra milk intake of 200 mL/day. Therefore, it is not appropriate to use the AI of total water intakes for the reference of beverage intakes. It is preferable to consume water or milk rather than beverages containing sugar and others including caffeine, sodium, etc. when drinking fluid water. We suggest the following improvements in the future KDRIs for water: improving the adequacy of the water content ratio of Korean conventional foods, supplementing the fluid water intake survey, reflecting the current water intake status by life cycle, setting KDRIs for water for the elderly considering the physiological changes, health status and dietary habits, and promotion of research on the relationship between water intake and health for Koreans.

Effects of Soybean Extract on Serum Lipid Contents in Fed Fat Diet Rats (대두 추출물이 지방식이를 급여한 흰쥐의 혈청 지질 성분에 미치는 영향)

  • The effects of soybean extracts on serum lipid contents were evaluated in rats. Ninety-eight male Sprague-Dawley rats weighing $100{\pm}10g$ were divided into fourteen groups and fed different fat diets for four weeks. The experimental groups were divided into; control, saturated fat diet, unsaturated fat diet and high fat diet respectively were fed 1% cholesterol group. The serum total lipid were higher in saturated fat diet group than in control group. The contents of total-cholesterol in serum of the saturated fat diet group was significantly higher than other groups. The contents of HDL-cholesterol in serum of the soybean extract group were higher than those other fat diet group. The contents of LDL-cholesterol in serum of the soybean extract group were lower than other fat diet groups. The soybean extract group of lipid was significantly lower in other groups.
