The interactions of phytic acid with protein and minerals has been blamed to decrease the bioavailability of protein and minerals in soybean products. Tempeh, the traditional Infonesian fermented soybean product, was prepared to investigate the changes of phytic acid contents nesian fermented soybean product, was prepared to investigate the changes of phytic acid contents and its interactions with protein and minerals in the fermentation. The acceptability of tempeh were also studied by conducting sersory evaluation. 1) Phytic acid contents of cooked soybeans and of tempch were significantly lower than that of raw soybeans, indicating that cooking and fermentation resulted in the decrease in phytic acid content of soybeans. In tempeh the fraction of phytic acid retained after ultrafiltration was significantly lower than that in raw soybeans. 2) The total protein contents were not significantly different between raw soybeans and tempeh. Phytic acid contents per gram of protein retained ultrafiltration were significantly higher in raw soybeans than in tempeh. This result is interpreted as that raw soybeans contain higher amounts of phytic acid- protein complexes than tempeh. 3) Both of calcium and zinc contents were not significantly different among raw, cooked soybeans and tempeh. However, the retained Ca and Zn fraction after ultrafiltration were significantly lower in tempeh comparing with that in raw soybeans. Lower retention of Ca and Zn after ultrafiltration in tempeh may be the result of lower phytate content of tempeh, thereby less chance of forming mineral- phytate complexes. 4) Tempeh received the sensory evaluation scores between good and fair and the addition of garlic to tempeh significantly improved the odor, general desirability and total score.

This study is to compare food components and the sensory properties of common and functional Porphyra yezoensis, Pyroligneous liquor, Salicornia herbacea L. and Salicornia herbacea L. treated with oak charcoal. The samples used in this study were provided by a local manufacturer. We analyzed their proximate composition, mineral content, heavy metal content and amino acids. We conducted the sensory evaluation before and after grilling Porphyra yezoenis. Common components are more plentiful in functional Porphyra yezoenis than in common except for carbohydrate and crude fiber. In the case of mineral content, generally functional Porphyra yezoensis contains much more mineral than common except for magnesium and zinc. Especially Salicornia herbacea L. treated with oak charcoal contains abundant iron. Also, Salicornia herbacea L. contains a lot of calcium potassium, copper and sodium. There is a little more heavy metal except for chromium, cadmium and lead in Salicomia herbacea L. treated with oak charcoal than in common that contains a lot of chromium, cadmium and lead, although a wide difference was not discovered between them. In the case of composed amino acid, there are much glutamic acid, glycine, isoleucine and phenylalanine in both Porphyra yezoensis. Especially alanine and phenylalanine are trebled in functional Porphyra yezoensis. Also, there are far more serine and lysine in Salicornia herbacea L. and Salicornia herbacea L. treated with oak charcoal than in common Porphyra yezoensis and Pyroligneous liquor. In the case of the sensory properties, there isn't a big difference before grilling Porphyra yezoensis; however, after grilling, most functional Porphyra yezoenis had good sensory properties results, especially Salicornia herbacea L. were better than Pyroligneous liquor.

For the development of reference values and evaluation of water quality in various environmental conditions, we divided the coastal region around Korean peninsular into 5 distinctive ecological regions based on the influence of surface current, depth, tidal range, turbidity, and climate condition. We used national marine environment monitoring data collected by National Fisheries Research & Development Institute(NFRDI) from 2000-2009. For the reference values, we used maximum seasonal mean from 2000 to 2007 for DIN, DIP, and chlorophyll-a and minimum seasonal mean for secchi depth measured at stations without the influence of river runoff in each ecological regions. For the reference value of bottom dissolved oxygen saturation, we used minimum mean value of 90% calculated from minimal riverine influence stations of whole regions. We calculated enrichment score for each assessment criteria. The enrichment score of DIN, DIP, and Chlorophyll-a was 1 (=< reference value), 2 (< 110% of reference value), 3 (< 125% of reference value), 4 (< 150% of reference value), and 5 (> 150% of reference value). The enrichment score of DO saturation and Secchi depth was 1 (> reference value), 2 (> 90% of reference value), 3 (>75 % of reference value), 4 (> 50% of reference value), and 5 (< 50% of reference value). We calculated water quality index using weighted linear combination of five enrichment score for the comparison of whole regions. From the water quality index distribution calculated from all stations between 2000 and 2007 period, we classified into 5 grade based on the standard deviation calculated from total water quality index. We assigned grade very good(I), good(II), moderate(III), bad(IV), and very bad(V) when the water quality index was less than 23, minimum + 1 sd, +2 sd, +3 sd, and grater than minium+ 3 sd, respectively.
Fifty-five field experiments were conducted in order to find out some useful indices for the prediction of N-supplying capability(NSC) of soils under cultivation of corn in Pennsylvania over 3 years from 1986. Contents of $NO_3-N$, absorbance at 200 nm of the extract from soil with 0.01M $NaHCO_3$ were identified to be used as indices before planting. Methods for the estimation of organic nitrogen available later in the growing season(KCLA-N, PBBA-N, UV260 nm absorbance of $NaHCO_3$ extract) were not to be used as good indices individually, but when those are combined together with inorganic $NO_3-N$ showed a highly significant correlationship with the NSC. The year of an even distribution of rainfall, 1987, gave the highest significant correlationship between NSC and the indices. For soils of the same texture with slightly different physical properties, combined indices obtained from physico-chemical factors improved the degree of predictability when the grades of soil slope, depth of Ap were considered at the same time. More futher researches such as this need to be done before any conclusive result can be drawn.

Purpose: To date, studies of firearm and explosive injuries in the Korean military have been limited compared to its importance. To overcome this, this study examined the characteristics of musculoskeletal damages in soldiers who have suffered firearm and explosive injuries over the past four years. Materials and Methods: From January 2015 to July 2019, military forces who had suffered musculoskeletal injuries from firearms or explosive substances were included. The medical records and radiographs were reviewed retrospectively, and telephone surveys about Short Musculoskeletal Functional Assessment (SMFA) for this group were conducted. To compare the functional outcomes, statistical analysis was performed using a t-test for the types of weapons, and ANOVA for others. Results: Of the 61 patients treated for firearms and explosives injuries, 30 patients (49.2%) were included after undergoing orthopedic treatment due to musculoskeletal injury. The average age at injury was 26.4 years old (21-52 years old). The number of officers and soldiers was similar. Eleven were injured by gunshot and 19 by an explosive device. Sixteen were treated in the Armed Forces Capital Hospital and 10 at private hospitals. More than half of the 16 patients (53.3%) with a fracture had multiple fractures. The most common injury site was the hand (33.3%), followed by the lower leg (30.0%). There were 14 patients (46.7%) with Gustilo-Anderson classification 3B or higher who required a soft tissue reconstruction. Fifteen patients agreed to join the SMFA survey for the functional outcomes. Between officers and soldiers, officers had better scores in the Bother Index compared to soldiers (p=0.0045). Patients treated in the Armed Forces Capital Hospital had better scores in both the Dysfunction and Bother Index compared to private hospitals (p=0.0008, p=0.0149). Conclusion: This is the first study to analyze of weapons injuries in the Korean military. As a result of the study, the orthopedic burden was high in the treating patients with military weapon injuries. In addition, it is necessary to build a military trauma registry, including firearm and explosive injuries, for trauma treatment evaluation and development of military trauma system.
This study was performed to evaluate the quality characteristics and antioxidant activities of rice crispy cereal supplemented with dried laver powder. Reducing sugar content decreased in the dried laver-supplemented group. According to the Hunter color system, the L, a, and b values of rice crispy cereal decreased with an increase in the amount of dried laver. The LP5 (rice crispy cereal added with 5% dried laver) group showed the highest phycocyanin and chlorophyll contents, which tended to increase with increased amounts of added dried laver. Total phenolic and flavonoid contents increased with the amount of dried laver, as did 2,2-diphenyl-1-picrylhydrazyl (DPPH) and hydroxyl radical-scavenging activities. Intensity test results showed that the color, flavor, and taste of rice crispy cereal improved with the addition of dried laver. The LP5 group scored the highest on overall satisfaction. These results suggest that the addition of dried laver to rice crispy cereal improves sensory properties by increasing antioxidant activities.

손바닥 선인장(Opuntia ficus indica var. saboten)은 열대지역 유래의 다년초로서 열매와 줄기를 공복에 갈아 마시면 변비치료, 이뇨효과, 장운동의 활성화 및 식욕증진에 효능이 있으며, 선인장 줄기는 오래전부터 피부질환, 류머티스 및 화상치료에 이용되어 왔다 선인장 열매(prickly pear pulp)는 14.5%의 고형분 함량을 가지고 있으며, 0.21%의 단백질, 0.12%의 지방, 0.44%의 회분, 0.19%의 pectin 이외에 미량의 비타민 A와 C 그리고 여러 종류의 무기질을 포함하고 있다. 선인장 열매로부터 분리된 pectin 성분은 콜레스테롤 수치를 낮추는 효과가 있다고 보고된 바 있다. 본 연구에서는 손바닥 선인장의 소비 확대 방안의 일환으로 손바닥 선인장 열매를 이용한 겔타입 파우치 제품의 개발을 위한 최적의 제조조건을 확립하고자 하였다. 이를 위하여 손바닥 선인장 열매의 추출특성을 반응표면분석에 의해 모니터링하고, 최적조건에서 얻은 추출물을 이용하여 제조한 파우치 제품의 관능적 특성을 검토하였다. 그 결과 가용성 고형분 함량은 추출온도 82.7$0^{\circ}C$, 추출시간 118.98min 및 용매비 24.91 $m\ell$/g일 때 최대값을 나타내었으며, 총페놀성화합물 함량의 최대값은 578.96 $\mu\textrm{g}$/$m\ell$으로 추출온도 89.37$^{\circ}C$, 추출시간 144.77 min 및 용매비 22.81 $m\ell$/g일 때였다. 전자공여능은 추출 온도 97.26$^{\circ}C$, 추출시간 109.30 min, 용매비 19.73 $m\ell$/g일 때 최대값을 나타내었다. 손바닥 선인장 열매의 겔타입 파우치에 대한 관능검사 결과, 최대의 관능점수를 나타내는 배합비는 전반적인 기호도가 3.75점으로 xanthan gum의 함량이 0.11%, 당의 함량이 6.59%, 사과식초의 함량이 1.34%인 것으로 나타났다.

In order to improve the quality of kochujang, sea tangle was added to deep sea water kochujang and their effects on component analysis and sensory evaluation were investigated for 90 days of fermentation. Crude protein, crude lipid and carbohydrate of deep sea water kochujang was higher than general kochujang. The content of potassium among the mineral in deep sea water kochujang was also presented higher than the general kochujang. Total amino acid contents were 16,608.8 ng/mg in deep sea water kochujang and 14,943.2 ng/mg in general kochujang. Content of oleic acid had the highest value at deep sea water kochujang. Sensory evaluation of showed that deep sea water kochujang were more aceeptable than general kochujang in the taste and overall acceptability.

Various video services with networks are increasingly available as smart phones, computers and IPTV are widely used. However, transmission over networks may experience transmission errors due to traffic increases and noise. As a result, video quality may suffer. Therefore, quality monitoring emerges as an important issue. In this paper, we propose a video quality assessment method using bit stream information. The video quality metric is calculated using header information and ES (elementary stream) information. To assess performance of the proposed algorithm, subjective quality assessment tests are conducted (VGA resolution). It is shown high correlation between subjective result and the proposed method.
In order to assess the effect of pollution on marine ecosystem, we examined the plankton health assessment at 16 stations during summer season in Jinhae Bay. The organic and inorganic pollutant sources (dissolved organic carbon; DOC, chemical oxygen demand; COD and Chlorophyll a; Chl.a), including planktonic orangism such as enterobacteria Escherichia coli, heterotrophic bacteria (HB), autotrophic nano-flagellates (ANF), heterotrophic nano flagellates (HNF), ciliate and harmful algal bloom species (HABs) were used to characterize marine ecosystem health assessment. Of these, we tentatively selected those items Chl.a, HABs, HB and E. coli for plankton health index (PHI). Also, the scoring criteria for each metric were based on a statistical analysis and then, the grades are rated on four levels. As a result, the ecological assessment of these data reveals that PHI in Jinhae Bay is rated as "Good or fair" for overall conditions. The present study suggests that the PHI might be considered as one of important management tool to assess marine ecosystem health of Jinhae Bay.
