Effect of Chitosan on Emulsifying Capacity of Egg Yolk (Chitosan이 난황의 유화력에 미치는 영향)

  • 난황을 이용한 유화식품인 마요네즈 제조시 천연고분자 물질인 chitosan의 사용가능성을 조사하기 위하여 난황의 유화력과 유화 안전성에 미치는 chitosan의 효과와 마요네즈 제조시 chitosan 첨가특성을 조사하였다. Chitosan을 난황 무게에 대해 0.1% 첨가한 결과난항의 유화력은 약 10%증진되었으며 유화 안정성은 뚜렷이 증진되었다. 마요네즈 제시 0.1% chitosan 첨가에 의해 마요네즈의 유화 안정성을 증가되었으며 대조구의 첨가 대두유에 비해 40% 증량 처리구에 있어 유화 안정성 및 점도는 대조구에 비해 우수하였으며 색택은 비슷한 경향을 나타내었다. 마요네즈의 퍼짐서, 점성, 맛, 종합적 기호도에 관한 기호성은 0.1% chitosan 첨가구가 대조구에 비해 양호하였으며, 40% 증량한 경우 더욱 우수하였으며 60% 증량한 겨웅 대조구와 유사하였다.

High-Temperature Oxidation Behavior of Commercial Pure Titanium in Mixed Gases (혼합가스 분위기 중에서 공업용 순 타이타늄의 고온산화 거동)

  • The oxidation behavior of commercial pure titanium is investigated in the temperature range of $727^{\circ}C{\sim}950^{\circ}C$ in mixed gases. The weight change is measured by TGA during oxidation in mixed gases. The oxidation behavior indicated by weight gain or the growth of oxide layer is based on the linear rate law at high temperatures. The structure of the oxide scale formed during oxidation is analysed by optical microscopy, electron probe microanalyzer, scanning electron microscope and x-ray diffraction. Oxide scales have a $TiO_2$ structure, and are constituted with multi-layered or two layered porous external one and a dense internal one. Ti-O solid solution region is formed at the interface of metal and scale layer. The formation of oxide scale is influenced by the oxidation temperature, time, crystal structure and the condition of atmosphere.

Preparation of AI-21Ti-23Cr High Temperature Protective Coating for TiAo Intermatallic Compounds by RF Magnetron Sputtering (RF Magnetron Sputtering에 의한 금속간화합물 TiAI 모재위의 AI-21Ti-23Cr 고온내산화코팅)

  • Ti-48Al(at.%) specimens were coated with Al-21Ti-23Cr(at.%) film by RF magnetron sputtering. Ti-48Al specimen coated at 200, 0.8Pa and 573K showed the best oxidation resistance property in the isothermal oxidation test. Al-21Ti-23Cr film was amophous after depostion, but crystallized and fromed a protective ${Al}_{2}{O}_{3}$ layer on the surface during oxidation. Ti-48Al specimens coated at 573K have been sassessed by isothermal oxidation test for 100 hours at 1073K, 1173K and 1273K. The mass gain curves showed that parabolic stage continued at al tested temperature range in isothermal oxidation test, and the excellent oxidation resistance is attriutable to the formation of a protective ${Al}_{2}{O}_{3}$ layer on the surface of Al-21Ti-23Cr film. After oxidation test at 1273K, the matrix of Al-21Ti-23Cr film had transformed into TiAlCr phase due to the depletion of Al during oxidation and the diffusion of Ti from the substrate, and the extent of mass gain of the specimen increased compared with that of specimens tested at lower temperature.

  • The prevent methods of Alkali-Silica Reaction (ASR) are studying after the failure cases by ASR were reported in Korea. In this study, the freeze-thaw test and scaling test for premixed fly ash cement were performed. The ratio of fly ash and cement is 20 percent and 80 percent by weight of total cementious material. The results show that the dynamic modulus after 300 cycles the freeze-thaw test for most of specimen except the specimen have less 3% air was more than 90 % and the loss of weigh the specimen after 50 cycles scaling test was less than 1kg/$m^3$.

  • Effects of seed coating on establishment, early growth and herbage production were investigated in Pot, Soil box and Field experiments. Seed was coated with 60% Lime, 20% Phosphate and 20% Peatmoss(W/W), also finely sprayed 13% Arabic gum and 2% Methyl cellulose(W/V). Coating were generally 1:20, seed: coat(W/W). 1. In the general growth of the growing stages and different oversown species at 80 days, seed coated was promoted than none in early growth. (Table 2 and 3) 2. Stand counts at 60 days after oversown, seed coated was higher 15% than none, especially, there was advantage due to coating on the medium and large size seeds such as Orchardgrass, Perennial ryegrass and Kentucky bluegrass, but did not assist establishment of the large (Tall fescue) and small (Ladino clover) size seed. 3. Variation of sward composition was not quite different between two treatments, but seed coated was slightly increased the Percentage of sown grasses with advance of cutting time. 4. Total dry metter yield per unit area with seed coated was higher 17% than none in establishment year. 5. Variations in the chemical composition of the herbage and soil were influenced by coating materials in the coating regime (Table 8). 6. From these facts, seed coated also appeared that adequate seedling stands, early growth and herbage production could be obtained with higher than conventional overseeding method under a poor conditions.

  • The management of severe scoliosis remains a challenge to spine surgeons. The rapid intraoperative correction of severe scoliosis may increase the risk of perioperative complications, such as neurological compromise and implant failure. To minimize these risks, various preoperative traction methods have been employed to achieve partial correction before performing definitive corrective surgery. On the other hand, some studies have shown that one of the complications associated with halo traction could lead to cranial nerve palsy, with the sixth nerve (abducens nerve) being most commonly affected. To reduce the complications, gradual increases in the traction weight and detailed neurological examinations are needed, particularly for patients who have previously undergone brain or cervical surgery. The authors report a case of sixth cranial nerve palsy by preoperative halo-pelvic traction in patients with severe scoliosis who underwent previous decompression surgery for a Chiari I malformation with a review of the relevant literature.

Analytical Study on the Jehotang in Literature in Terms of Cooking Science (문헌 속 제호탕의 조리학적 분석 연구)

  • The traditional Korean drink "Jehotang", which is one of the most commonly prescribed drugs for treatment of the heat stroke accompanied by high fever, severe sweat and thirst, it is effective far quenching thirst strengthening the stomach, stopping diarrhea and regulating intestinal function. It is also known to play a role in activating the growth of useful microbes in the intestine and in multiplying intestinal immune cells. Thus, this study investigated all aspects of the drink in an effort to develop a new functional beverage. In the course of this study, the analytical research into the literature concerning Jehotang an error in the secrets of preparing the drink. The Japanese apricot, which was given the botanical name, "Prunusmume", should only be used with the flesh (scientifically referred to as "Fructusmume"), which is fumigated with straw fire before drying. and the seed should be thrown away. The honey should only be used after it is heated with a gentle fire, before removing the white foam that farms on its surface to make the "Yeonmil". Two kinds of cooking processes were found in the ancient literature. One procedure boiling down the powered Fructus mume mixed with the Yeonmil, while the other procedure involved preparing the Fructus mume's water by adding water to it and blending the water with the Yeonmil and the rest of the raw ingredient before boiling them down. The current procedure, in which the cooking is done in a double boiler, has been widely adopted to its simplicity. The finished Jehotang is put in porcelain, kept at room temperature, and consumed after mixing with cold water.

Quality standard of Agaricus bisporus in a market and changes of mushroom quality during storage (유통 양송이버섯의 등급별 품질규격 및 저장기간별 품질 변화)

  • This study was carried out to improve standardization of agricultural products and investigate quality changes during preservation at various treatments. The standardization does much to improve merchantable quality, distribution efficiency and fair dealings by shipping of the standard agricultural products. Mushrooms notified as the standard are five; Pleurotus ostreatus, Pleurotus eryngii, Flammulina velutipes, Agaricus bisporus and Ganoderma lucidum. But many farmers are suffering from strict standards. Therefore, modification of these standards is required to fit farmhouse situations. Fruit-body weight of A, B and C grades of the marketed Agaricus bisporus was 19.3g, 12.2g and 10.4, respectively. Average pileus diameter of A grades was 43.3mm but B and C grades did not show significant difference. Average stipe length of A, B and C grades was 9.8mm, 13.1mm and 11.6mm, and stipes thick was the highest in A grades. The weight loss rate of stipe cutting of Agaricus bisporus was 12.6% in harvested mushrooms and the rate of stipe cutting length was 60.8%. The diameter of Agaricus bisporus stored for 5 days was 3.5~4.5cm but decreased rapidly in 15 days. The weight loss rate of the high temperature samples lowered rapidly than that of the low temperature samples. Conversely, the L value of the low temperature samples was higher than that of the high temperature samples.
