Characteristics of Mayonnaise Prepared with Palm Oil (팜유의 사용에 의한 마요네즈의 품질 특성)

  • To know the availability of double fractionated palm olein (DFPL) for vegetable oil in commercial mayonnaise preparation, oxidative stability and stability to cold test of DFPL, soybean oil and blended oils (blended soybean oil with DFPL) were tested. Mayonnaises with these oils were prepared and then emulsion stability at low temperature $(-5^{\circ}C)$ were compared. The oxidative stability of vegetable oil by Rancimat test showed that induction time of DFPL (26.9 hr) was longer when compared with soybean oil (13.4 hr), and became longer with increase of DFPL ratio in the blended oil. Emulsion stability of mayonnaises at low temperature $(-5^{\circ}C)$ was decreased with the increase of DFPL ratio in the blended oil. But, mayonnaise with blended oil of below 20% DFPL was comparable to that with soybean oil only. Among quality characteristics of mayonnaises with soybean oil and blended oil (soybean oil 85% plus DFPL 15%) the latter showed stronger oxidative stability and less flavor reversion during high temperature treatment. This result suggested that the possibility of DFPL to substitute for vegetable oil in the preparation of commercial mayonnaise.

향신료의 원료와 식품기능

  • 조미식품과 관련된 용어로서는 양념, 조미료, 등이 있고 영어로는 Seasonings, Flavorings, Condiments, Spice등이 있다. 사전적인 의미에서 약간의 차이가 있을지 몰라도 조미식품이란 직접 음용하는 일은 드물고 주로 다른 식품의 풍미를 증진시키는데 이용되는 모든 식품을 말하며 일반사전에는 없는 일종의 '합성어'이다. 따라서 한마디로 정의하기 어렵고 다른 식품과의 구분도 애매한 편이다. 우리나라 표준산업 분류에는 조미식품 제조업이란 분류는 없다. 한편, 식품공전에서는 조미식품을 "식 등의 풍미를 돋우기 위한 목적으로 사용되는 장류, 시초, 소스류, 토마토 케첩, 카레, 고춘가로 및 실고추 향신료가공품, 드레싱, 복합조미식품, 향미유 등의 제품을 말한다"고 정의되어 있다. 이 중 장류에는 간장, 된장, 고추장, 춘장, 청국장 등이 포함되며, 소스류에는 우스타소스 등 서양풍 소스는 물론이고 불고기양념등과 같은 우리의 전통양념류를 포함한다. 우리나라 경우 드레싱보다는 마요네즈가 먼저 소개되어 현재 생산량이나 소비량에서 압도적으로 우위에 있기 때문에 마요네즈가 널리 알려져 있으나, 마요네즈는 샐러드드레싱, 프렌치드레싱 등과 마찬가지로 드레싱의 일종으로 보는게 타당하다. "소스"라는 말도 넓은 의미에서는 조미식품 의 대부분을 포함하며, 좁은 의미로는 현재 식품공전에서 말하는 제품류들이다. 이처럼 조미식품이라 하면 시초, 토마토 케첩 및 소스류, 마요네즈 및 드레싱류, 카레 및 천연향신료 등을 포함하는 좁은 의미를 뜻하는 경우가 많다. 본문은 이중에서 천연향신료를 중심으로 그 원료소재에 따른 기능별 효과를 다루고자 한다.

Oxidative Stability of Perilla Blended Oils in Mayonnaise Preparation (마요네즈 제조시 들기름 혼합유의 산화안정성)

  • This study was designed to select the most stable oil among vegetable oils for mayonnaise preparation on lipid oxidation when blended with perilla oil. Oxidative stabilities of perilla oil, soybean oil, rapeseed oil, corn oil, sunflower oil and perilla blended oils (blended perilla oil with other vegetable oil in a equal weight rate) were tested. Among the perilla blended oils, perilla blended soybean oil was the most effective on oxidative stability. This may be concerned with the fact that the content of natural antioxidant, tocopherol, is higher than that of other oils. Mayonnaise was prepared by using both perilla oil and perilla blended soybean oil. Variations of POV and tocopherol content of mayonnaise during storage at $37^{\circ}C$ were compared. The changes in POV and tocopherol content in the mayonnaise of perilla blended soybean oil were less than those of perilla oil. This result suggested that the usage of perilla blended soybean oil instead of perilla oil itself is possible in the manufacturing of mayonnaise.

The Effect of Low Erucic Acid Rapeseed Oil for the Preparation of Mayonnaise on Quality Characteristics (마요네즈 제조시 품질특성에 미치는 저에루신산 유채유 혼합의 영향)

  • This study was performed to know the availability of low erucic acid rapeseed oil (LEAR oil) for vegetable oil in commercial mayonnaise preparation. Mixed oils (blended soybean oil with LEAR oil) were prepared and mayonnaises were prepared with these oils and then compared the quality characteristics of these samples. The oxidative stability of vegetable oil with Rancimat test showed that LEAR oil was higher stability than soybean oil, and became higher with increase of LEAR oil ratio. Quality characteristics of mayonnaises with these oils showed that mayonnaise with mixed oils was preferred to that with LEAR oil itself. Furthermore, the quality characteristics of mayonnaises with mixed oils of soybean oil $(20{\sim}60%)$ plus LEAR oil $(80{\sim}40%)$ were better than those of mayonnaise with soybean oil solely.

  • The purpose of this study was to investigate the storage stability of mayonnaise containing a different emulsifier and various levels of soybean paste powder. The mayonnaise with egg yolk as an emulsifier is E group according to the amount of soybean paste powder addition of 0%(E1), 3%(E2), 6%(E3) and mayonnaise with soy milk as an emulsifier is S group with soybean paste powder addition of 0%(S1), 3%(S2), 6%(S3). Storage stability of mayonnaise was determined during storage at $30{\pm}5^{\circ}C$ for 8 weeks. The peroxide value, TBA value, acid value of mayonnaise with addition of 6% soybean paste powder was significantly lower than that of 0% and 3% addition. The turbidity decreased according to storage period. The viscosity of mayonnaise was increased with increasing amount of soybean paste powder. Base on these results, addition of soybean paste powder in the mayonnaise improved oxidation stability during storage period.

Changes in Physical Properties of Salted Egg Yolks as Affected by Salt Content During Frozen Storage and Their Effects (가염량이 다른 난황의 냉동저장 중 물성 및 마요네즈 제조적성 변화)

  • The changes in Physical properties of egg yolk(refractive index 43) as affected by salt content(7%, 10%, 13%) during frozen storage and their effects on functionalities in mayonnaise preparation were investigated. As the frozen storage period of salted egg yolk increased, viscosity was increased, and further increased with higher salt content, and emulsification capacity was gradually decreased. In case of egg folk with 7% salt, emulsification capacity was considerably decreased during the storage at $-25^{\circ}C$ over 4 months. Microbes of salted egg yolk were decreased with frozen storage, but the difference was not due to salt content. Mayonnaise. Prepared with frozen egg yolks stored for $2{\sim}3$ months, maintained a minimum viscosity. Viscosity became higher in the mayonnaise which prepared with egg yolk of higher salt content stored at $-25^{\circ}C$. Oil particle size of mayonnaise with the yolk contained more salt was smaller, when the yolk was stored at $-25^{\circ}C$ than $-15^{\circ}C$. Noticible microbes were detected in the mayonnaise right after preparation, but not detected in the mayonnaise after 1 month storage.

Studies on the Viscometric Behavior of Mayonnaise (마요네즈의 점성(粘性)에 관(關)한 연구(硏究))

  • The rheological properties of mayonnaise were studied with cylindrindrical viscometer. It was observed that mayonnaise showed pseudoplastic behavior, yield stress and time dependent characteristics. In the initial period of shear time, the decay of viscosity of mayonnaise was followed by a second-order kinetic equation. The influence of temperature on viscosity could be described by Arrhenius equation. The apparent viscosity of mayonnaise markedly increased with an rise in the concentration of egg yolk; and the emulsion was most stable at the concentration of 12%. At the concentration of $65{\sim}75%$ oil, the apparent viscosity was increased; the maximum value was reached at 75% oil, and above 75% oil, the remarkable decreased was observed. The size of oil drops was decreased with an increase in oil concentration of 75% oil. The apparent viscosity of mayonnaise was increased with an rise in water contents, while being decreased with one in the concentration of vinegar.

Structural and emulsification properties of octenyl succinylated potato dextrin upon different preparation methods (OSA-감자 덱스트린의 구조 및 유화 특성 연구)

  • Octenyl succinylated (OSA) potato starch was dextrinized by two methods: ultrasound (at 25, 50, or $70^{\circ}C$ for 1 h; OSA-25UT, OSA-50UT, and OSA-70UT, respectively) and acid hydrolysis (for 1 or 4 h; OSA-AD1H or OSA-AD4H, respectively), and the properties of the resulting starch were analyzed. The melting enthalpy of OSA-70UT decreased the most (from 14.0 to 10.0 mJ/mg), indicating chain degradation. For pasting properties, as ultrasound treatment temperature increased, peak viscosity decreased (2884, 2550, and 1888 cP, respectively), whereas acid hydrolysis increased peak viscosity and decreased pasting temperature. The relative crystallinity of OSA-dextrin produced by ultrasound or acid hydrolysis significantly decreased (from 33.61 to 14.90-26.03 and 19.28-20.05, respectively) as temperature or time increased, yet a B-type crystal pattern was maintained. Regarding emulsifying stability and sensory tests of mayonnaise prepared with OSA potato dextrin, mayonnaise with OSA-70UT was stable for short storage period (1 week), however mayonnaise with OSA-AD1H was the most suitable for long storage periods (from 2 to 4 weeks). In addition, the OSA-70UT was the most acceptable for mayonnaise in the sensory test.

Antioxidant Activity and Quality Characteristics of Soy Milk Mayonnaise Containing Soybean Paste Powder (된장분말을 첨가한 두유마요네즈의 항산화성 및 품질특성)

  • In this study, antioxidant activity and quality characteristics of egg yolk mayonnaise and soy milk mayonnaise containing soybean paste powder were assessed. The mayonnaise with egg yolk as an emulsifier is E group according to the amount of soybean paste powder addition of 0% (E1), 3% (E2), 6% (E3) and mayonnaise with soy milk as an emulsifier is S group with soybean paste powder addition of 0% (S1), 3% (S2), 6% (S3). Total phenol content and electron donating ability of mayonnaise were increased as the amount of the soybean paste powder increased. L value of Hunter's color was decreased, but a value and b value were increased as the amount of the soybean paste powder increased. Soy milk mayonnaise showed very low cholesterol content than egg yolk mayonnaise. In sensory evaluation, S2 received the highest scores for flavor, overall taste and preference. Base on these results, soybean paste powder showed significant antioxidant activity in mayonnaise and cholesterol content was successfully decreased in soy milk mayonnaise compared to egg yolk mayonnaise. The soy milk mayonnaise with soybean paste powder will be a possible model to introduce our traditional food to the worldwide food item, such as mayonnaise.

Quality characteristics of mayonnaise with varied amounts of yuzu juice added during the storage period (유자즙 첨가량을 달리한 마요네즈 저장 중 품질특성)

  • The purpose of this study was to examine the antioxidant activity and quality characteristics of mayonnaise with varied amounts of yuzu juice added during the storage period. The viscosities of the yuzu juice groups were significantly higher than that of the control group (p<0.05). In terms of color, the L values of the yuzu juice groups were lower than that of the control group, and these L values significantly decreased during the storage period (p<0.05). In the meantime, the a values of the Y-75 and Y-100 groups significantly increased during the storage period (p<0.05). The DPPH free-radical scavenging activities of all the groups decreased during the storage period while the yuzu juice groups demonstrated higher DPPH free-radical scavenging activities compared to the control group (p<0.05). With an increment in the added amount of yuzu juice lower have been the acid values and peroxide values of yuzu juice groups than that of the control group even though they have been increased with the course of storage period (p<0.05). Based on these results, it can be concluded that yuzu juice added to the mayonnaise may be useful for improving its quality and storage stability.
