Manufacture and Stability of Low Calorie Mayonnaise Using Gums (검을 이용한 저열량 마요네즈의 제조 및 유화안정성)

  • Four kinds of low calorie mayonnaises containing 1.2% of sodium alginate, 1.0% of guar gum, 1.0% and 1.2% of xanthan gum and one control mayonnaise containing 78.5% of oil without gums were manufactured in pilot scale. Fresh control mayonnaise was higher in viscosity and turbidity than low calorie mayonnaise with gums. During storage at -1$0^{\circ}C$, viscosity and turbidity of control mayonnaise decreased sharply, whereas those of low calorie mayonnaise with gums decreased slightly. Scanning electron microscopy showed that fresh mayonnaise was composed of heterogeneous population of dispersed spherical oil droplets (<10 ${\mu}{\textrm}{m}$), and oil droplet size of control mayonnaise was smaller than any other low calorie mayonnaise. During storage at -1$0^{\circ}C$, a shift in oil droplet size toward larger oil droplets was frequently observed in control mayonnaise as a result of coalescence of oil droplets. Oil separation and turbidimetric study also confirmed that coalescence of oil droplets was occurring during this accelerated aging treatments.

Oxidative Stability of DHA Added Mayonnaise (DHA를 첨가한 마요네즈의 산화안정성)

  • The objective of this study was to investigate the difference of oxidative stability between DHA (docosahexaenoic acid) added and not added commercial mayonnaise, and then to find out stable condition for maintaining the quality of DHA added mayonnaise. During the storage at room temperature $(25^{\circ}C{\pm}1^{\circ}C)$, it showed that DHA added commercial mayonnaise was more sensitive to oxidation than DHA not added commercial mayonnaise. And sensory quality of DHA added commercial mayonnaise decreased drastically after 5 months from the production date of mayonnaise. During the storage at low temperature $(4^{\circ}C{\pm}1^{\circ}C)$, DHA added mayonnaise was also more sensitive to oxidation than DHA not added mayonnaise, but it showed no apparent and sensory problem with both samples during 8 months of cold storage test periods. In considering the distribution condition of mayonnaise in the country, it was suggested that shelf-life of the DHA added commercial mayonnaise should be shortened 2 or 3 months than that of the DHA not added commercial mayonnaise.

The Effect of Bovine Plasma for the Preparation of Mayonnaise on Quality Characteristics (Bovine Plasma의 Mayonnaise 제조 적성에 관한 연구)

  • This study was carried out to investigate the effect of bovine plasma for the preparation of mayonnaise on quality characteristics through the tests of viscosity, color, emulsion stability and sensory evaluation. In the case of standard mayonnaise preparation with the bovine plasma addition from 0.01% to 0.1%, The result of viscosity, color, emulsion stability and acceptability are improved. When the bovine plasma(5%) was only used to Prepare mayonnaise without e99 yolk, the result of color and acceptability were reduced, whereas viscosity, emulsion stability were observed as the characteristic of standard mayonnaise. The sample mayonnaise containing the e99 yolk(50%) and bovine Plasma (0.5~1.0%) was observed as the characteristics of standard mayonnaise without color.

Control of Powdery Mildews of Cucumber by Using Mayonnaise (마요네즈 살포에 의한 오이흰가루병 방제)

  • This study was conducted to develop an organic control of powdery mildews of cucumber by using mayonnaise in green house. The treatment of 0.1~2% mayonnaise resulted in 8.3%~99.2% control efficiencies against powdery mildew of cucumber. 0.5% mayonnaise treatment resulted control values over 97% in disease. It did not adversely affected the photosynthesis of foliages. Although one application of mayonnaise to the foliage was not practically effective enough, two or three application of mayonnaise to the foliage at the 0.5% concentration resulted in excellent control against powdery mildews. This treatment could provide protection for 10~14 days after application. Among the type of mayonnaise, general mayonnaise revealed 97.5% control value, but mayonnaise containing low oil content revealed 39.3%~97.5% control values on powdery mildews at the 0.5% concentration. Therefore, oil content in mayonnaise played a essential material to control powdery mildew. Results indicated that mayonnaise could be used as organic control of powdery mildews of cucumber. This control might be environmentfriendly as well as cost-effective.

Oxidative Stability of Green Tea-Added Mayonnaise (녹차를 첨가한 마요네즈의 산화안정성)

  • The purpose of this study was to investigate the oxidative stability of green tea-added mayonnaise during storage at 5, 15 and 25$\^{C}$. Mayonnaise was prepared with salad oil, egg yolk, sugar, salt and vinegar, and added with 0.1, 0.3 and 0.5% of green tea powder for experiment. Peroxide values (POV) of each mayonnaise were compared during storage for 13 weeks. POVs of control mayonnaise stored at 5, 15 and 25$\^{C}$ for 13 weeks were 28.0, 63.5 and 144.4 meq/kg, respectively. Oxidative stability of green tea-added mayonnaise was increased with increasing concentration of green tea in mayonnaise, but it was decreased with increasing storage temperature. The addition of green tea at 0.5% extended the induction period of mayonnaise significantly (p<0.05) at each temperature. Relative antioxidant effect (RAE) of mayonnaise containing 0.1% of green tea were 226%, 188% and 143% during storage at 5, 15 and 25$\^{C}$, respectively, and it was increased with increasing green tea concentration in mayonnaise. The results suggested that the use of green tea is valuable to inhibit the oxidation of mayonnaise as a natural antioxidant.

Characteristics of the Mayonnaise Quality by the Addition of Soybean Phytosterols (Soybean Phytosterols가 첨가된 마요네즈의 품질특성)

  • Soybean phytosterols have been known to have the effect of reducing the amount of cholesterol in blood. We isolated and analyzed soybean phytosterols from soybean scum. The functional mayonnaise was prepared by the addition of the different amounts of soybean phytosterols. To determine the desirable level of soybean phytosterols in mayonnaise, solubility, viscosity, the stability of emulsion and the sensory evaluation were measured. The most desirable level of soybean phytosterols was 0.5% in solubility, viscosity, stability of emulsion and the sensory evaluation.

  • 난황을 이용한 유화식품인 마요네즈 제조시 천연고분자 물질인 chitosan의 사용가능성을 조사하기 위하여 난황의 유화력과 유화 안전성에 미치는 chitosan의 효과와 마요네즈 제조시 chitosan 첨가특성을 조사하였다. Chitosan을 난황 무게에 대해 0.1% 첨가한 결과난항의 유화력은 약 10%증진되었으며 유화 안정성은 뚜렷이 증진되었다. 마요네즈 제시 0.1% chitosan 첨가에 의해 마요네즈의 유화 안정성을 증가되었으며 대조구의 첨가 대두유에 비해 40% 증량 처리구에 있어 유화 안정성 및 점도는 대조구에 비해 우수하였으며 색택은 비슷한 경향을 나타내었다. 마요네즈의 퍼짐서, 점성, 맛, 종합적 기호도에 관한 기호성은 0.1% chitosan 첨가구가 대조구에 비해 양호하였으며, 40% 증량한 경우 더욱 우수하였으며 60% 증량한 겨웅 대조구와 유사하였다.

Effects of Acetic Acid Concentration on Rheological Characteristics and Emulsion Stability of Mayonnaise (마요네즈의 유동 특성과 유화 안정성에 미치는 초산 농도의 영향)

  • The effect of acetic acid concentration on the qualities of mayonnaise was studied. The rheological properties, emulsifying stability and color of the mayonnaise were determined by rotary viscometer, rotary shaker and centrifuge, and color and color difference meter, respectively. The rheological behavior of mayonnaise showed plastic behavior with yield stress and that of shear thinning. The yield stress and consistency index increased as the acetic acid concentration increased. The emulsion stability was lowest at 4% acetic acid concentration and highest at 1% acetic acid concentration. With the increase of the acetic acid concentration, lightness increased and yellowness decreased.

  • Mayonnaise has probability of fatness and adult disease because main components of it contain high calorie. We prepared dietary mayonnaise used for corn starch paste. And also, dietary mayonnaise with hot taste was manufactured by using both O.R.capsicum and O.R.paprika. It was observed that the calorie of general mayonnaise was 748 Kcal and the calorie of dietary mayonnaise used for starch was 237∼240 Kcal. The dietary effect was certified by animal experiment.

Sensory and Physical Properties of Low-fat Mayonnaise Made with Starch-based Fat Replacers (저지방 마요네즈의 물성과 관능적 특성)

  • Appropriate types and concentrations of starch-based fat replacers which are low-pH stable, shear resistant and heat stable were selected to develop reduced-fat mayonnaise without affecting taste, texture and emulsion stability. Four kinds of commercial fat replacers [Neutral DR (DR), Stellar 100X (SX), Sta Slim 150 (SS) and N-Lite L (NL)] were thermally activated after appropriately hydrated and applied to mayonnaise formulation. For each fat replacer, eight recipes having various ratios of soybean oil/fat replacer(95/5 to 60/40) were formulated and compared with standard formulation(100% soybean oil) using rheological and sensory evaluations. All tested starch pastes showed pseudoplastic behavior, time-dependent thixotropic gel characteristics. The increasing order of pseudoplasticity and yield stress was RM, NL, SS and ST. The hardness and adhesiveness of each fat replacer-added mayonnaise was increased in the same order as above. Formulated mayonnaise which contained higher ratio of fat replacer showed lower values in hardness and adhesiveness. ST at up to 25% oil replacement exhibited the highest oil replacing ability among four replacers. ST-added mayonnaise also exhibited the highest sensory score and emulsion stability among all products including standard formula. The high sensory score in spreadability of RM-added mayonnaise well reflected the consistent index of RM paste. Use of fat replacers reduced oily odor and greasy aftertaste of mayonnaise.
