  • This study was carried out to develop a kiwi dressing which was lower in calories and a more beautiful color by using Kiwi rather than mayonnaise. This study was aimed to standardize a recipe for Kiwi dressing using sensory characteristics as well as to examine the changes of pH and chromaticity by the storage period. Results of this study were as follows: from the results of sensory evaluation on kiwi dressing using different kinds of oil, the pure olive oil showed the higher scores than the corn oil in the taste, fresh-sour taste and overall palatability. Sensory evaluation scores of kiwi dressings with various amounts of oil were not significantly different, which suggested that use of kiwi for a dressing was a good way to develop a low calorie dressing because the addition of 32% (360g) oil in kiwi dressing could replace the 75% oil used in mayonnaise without my significant differences in the overall palatability. From the result of sensory evaluation on kiwi dressing with different kinds of acid, lemon juice showed the higher scores than apple vinegar in flavor. The kiwi dressing showed the highest scores in the overall palatability and fresh-sour taste when 12% (60g) onion juice was added and in as well as flavor, taste and the overall palatability at 10 days of storage. The pH values of kiwi dressing Increased significantly in proportion to the storage period (p<0.001), and showed the highest pH value of 2.99 at 17 days of storage. Lightness in color showed the lowest value at 3 days of storage and the greenness of kiwi dressing increased gradually, but the yellowness decreased significantly in proportion to the storage period(p<0.001).

  • Growth and ecological differences of some important medicinal plants (Carthamus tinctorius, Astragalus membranaceus, Digitalis purpurea, Melissa officinalis, Anethum graveolens, Angelica gigas and Saururus chinensis) were observed at the different attitudinal sites of Mt. Halla in Cheju from 1997 to 1998. Growth of all medicinal plants was generally higher in the northern slope parts than in the southern slope parts. But at 50m above the sea level in the northern slope regions, the germination, growth and yield of Astragalus membranaceus and Digitalis purpurea were reduced by the wind. As the altitude was higher, the temperature was more slowly down in the northern slope regions than in the southern slope regions, while, the moisture was relatively high. The growth of Carthamus tinctorius, Melissa officinalis, Anethum graveolens and Angelica gigas were generally reduced by the higher altitude. On the other hand, growth of Saururus chinensis was good at the 700m above the sea level.

  • The objective of this study was to compare antioxidant activities of green tea, rosemary, lemon and bamboo leaves extracts using three different extraction methods (80% ethanol sonication extraction, distilled water autoclave extraction, distilled water extraction at room temperature). As a result, green tea and rosemary extracts showed relatively high antioxidant activities compared with those of lemon and bamboo leaves. These green tea and rosemary extracts were subsequently added to soymilk and their mixtures were examined for antioxidant activities. Soymilk added with 10% green tea distilled water autoclave extracts and distilled water at room temperature extracts showed relatively high DPPH, $85.09{\pm}2.26%$, $84.38{\pm}1.97%$, and ABTS radical scavenging activities, $73.43{\pm}2.78%$, $81.34{\pm}4.78%$, respectively. On the other hand, soymilk added with 10% rosemary distilled water autoclave extracts showed remarkably higher DPPH radical scavenging activity while their ABTS radical scavenging ability was similar to that of non-added soymilk. In conclusion, our results suggest that the addition of green tea distilled water autoclave extracts, distilled water at room temperature extracts and rosemary distilled water autoclave extracts to soymilk could contribute to the development of added value soymilk products with increased antioxidant activities.

  • In this study, we measured total flavonoids after extracting the total flavonoids from lemongrass which is known to have a high content of antioxidant ingredients when using microwave energy. Also, optimal extraction conditions of active ingredients using central composite design-response surface methodology (CCD-RSM) were presented. Both ultrapure water and alcohol were used as extraction solvents and the volume ratio of ethanol/ultrapure water, microwave irradiation time, and microwave irradiation power were set as independence variables. And the extraction yield and total flavonoids were measured. The optimal extraction conditions using CCD-RSM were the volume ratio of ethanol/ultrapure water = 56.3 vol.%, the microwave irradiation time = 6.1 min, and the microwave irradiation power = 574.6 W. We could also obtain expected results of yield = 17.2 wt.% and total flavonoids = 44.7 ㎍ QE/mL dw under the optimum conditions. The comprehensive satisfaction degree of this formula was 0.8562. The P-value was calculated for the yield of 0.037 and the total flavonoids content of 0.002. The average error from actual experiments established for the verification of conclusions was lower than 2.5%. Therefore, a high favorable level could be obtained when the CCD-RSM was applied to the optimization of extraction process.

  • The problem of increased resistance to pesticides is caused by the management of Bemisia tabaci, which depends almost entirely on pesticides, and to solve this problem, we investigated the host preference of B. tabaci among herbal plants to develop a possible attractant for alternative control methods. Experiments were conducted in greenhouse tomatoes at the National Institute of Horticultural Science and Herbal Science in Wanju-gun. Major herbal plants such as lemon balm, chocolate mint, rose geranium, and apple geranium were installed 50cm from the ground and 30cm from the top of the tomatoes, then the density of B. tabaci was investigated. As a result of examining the density of B. tabaci by the location of the herbal plants, it was found that the lemon balm location showed the highest B. tabaci density while rose geranium and apple geranium were rather avoided. These results are expected to be helpful in the development of alternative B. tabaci control methods using herbal plants including attractants, repellents, and trap plants.

  • In this study, the cell viability, radical scavenging ability, elastase activity, moisturizing activity, and antimicrobial activity of mixed fermented extract of vitamin tree fruit, acai palm fruit, mango, lemon, apricot and blueberry as an active ingredient were measured. The experiment was performed at three concentrations(0.5 / 1.5 / 2%), since cytotoxicity was not shown at these three concentrations. Based on this, a radical scavenging experiment was conducted to compare with L-ascorbic acid, a representative raw material of an antioxidant material. The results showed that the 1,1-diphenyl-2-picrylhydrazyl (DPPH) radical scavenging ability was 95.1 ± 0.6%, 94.3 ± 0.7%, 95.3 ± 0.6%, 95.1 ± 0.7%, 95.1 ± 0.3%, 95.5 ± 0.3%, and 95.4 ± 0.4% respectively, when the concentration of the mixed fermentation extract was 2%. As the concentration increased at the three concentrations (0.5/1.5/2%) and the content of blueberry extracts increased, sample 7 showed excellent elastase activity at a concentration of 2% to 0.9 cm, such as retinol crystal, and moisturizing activity was also found to be 71.5%, 75.6%, and 81.6%, respectively. Particularly, at the 2% concentration of the mixed fermented extract, the antibacterial activity effect on Propionibacterium was very excellent in sample 7. Therefore, it is considered that it is worth developing the mixed fermented extracts of 2% concentration as a cosmetic component with antioxidant, moisturizing, and antibacterial properties.

  • Purpose: The aim of this study was to explore the effects of A-solution on halitosis and oral status in preoperative NPO patients. Methods: A nonequivalent control group, non-synchronized pretest-posttest design was used in this study. The participants in this study were 66 patients who were admitted for gynecologic surgery. The experimental treatment was to give oral gargling with A-solution, blended essential oils and diluted with distilled water. To identify the experimental treatment effects, halitosis, salivary pH, and oral status were measured by a portable halitosis detector, visual analogue scale, Bromo Thymol Blue (BTB), Bromo Cresol Purple (BCP) test paper and oral assessment guide. Data were analyzed using $X^2$-test, t-test with PASW 18.0 version. Results: Participants were homogeneous before experimental treatment. Objective halitosis in the experimental group, measured by a portable halitosis detector (t=-8.34, p<.001) was significantly lower than the control group. Subjective halitosis was significantly lower in the experimental group (t=-9.29, p<.001). Salivary pH was significantly different between two groups (t=8.81, p<.001). Oral status was significantly better in the experimental group (t=-13.31, p<.001). Conclusion: These findings indicate that oral gargling using A-solution is effective in reducing patient halitosis, and improving oral status.
