Analysis of Energy Expenditure during walking and running by % body fat in obese women (비만여성에서 체지방율에 따른 걷기와 달리기시 에너지 소비 분석)

  • The purpose of this experiment was to compare the energy expenditure and the physiological response among two groups by percent body fat(group A: 30-35% body fat, B: 35-40% body fat) to walking and running at several equivalent speeds. Subjects in group A and B followed A group(mean$\pm$SD, age; 24.0$\pm$0.4yrs, body fat; 32.3$\pm$0.7) and B group (age; 25.2$\pm$0.7yrs, body fat; 36.7$\pm$0.9). The walking and running protocol consisted of treadmill speeds for five min at each of the following speeds: 5.0, 5.5, 6.0, 6.5, 7.0 km.$hr^{-1}$. The obtained data reveal in group A, the rate of oxygen consumption and energy expenditure was higher during walking compared to running ate treadmill speeds $\geq$ 6.6km.$hr^{-1}$. In group 5, the rate of oxygen consumption and energy expenditure was higher during walking compared to running ate treadmill speeds $\geq$ 6.8km.$hr^{-1}$. Heart rates and respiratory exchange ratio were higher at treadmill speeds $\geq$5.8 in group A and $\geq$5.5 in group B. these findings demonstrated that a difference of percent body fat in obese women have no large effect on energy efficiency of walking, but walking within speeds 6.5~7.0km/hr resulted in rates of energy expenditure that were as high or higher than jogging at the same speeds even though the relative stress was greater during walking.

  • The effect of fat content, thickness, and storage temperature and period of fresh meat samples on the migration of di-(2-ethylhexyl) adipate(DEHA) from plasticized PVC film was investigated. Pork samples were prepared to have different fat contents by mixing with pork loin and pork backfat and stored at 5$^{\circ}C$ for 2 d. The migration values of DEHA into the pork samples were increased with a high fat content. There was a gradual increase in the DEHA concentration as a function of prolonged exposure period and elevated storage temperature when the pork samples were stored at -2, 5 and l0$^{\circ}C$ for up to 7 d, respectively. The migration of DEHA into fresh pork and beef was limited only to a small depth under the meat surface($\leq$2 cm). The migration value was higher when the pork belly was wrapped double with plasticized PVC film compared to once after storage at 5$^{\circ}C$ for 3 d. However, when the samples was minced and repacked with new film after 2 d, and kept for a further 1 d, these showed lower migration value compared to the above two intact samples. Migration values exceeded in most cases the upper limit for DEHA migration proposed by the EU(18 mg/kg or 3 mg/d㎡), even though no limitation is currently set in Korea.

  • Omega-3 fatty acids have been major research interests in medical and nutritional science relating to life sciences since after the epidemiologic data on Green3and Eskimos reported by several researchers clearly showed fewer per capita deaths from heart diseases and a lower incidence of adult diseases. Linolenic acid(LNA) is an essential fatty acid for human beings as well as linoleic acid(LA) due to the fact that vertebrates lack an enzyme required to incorporate a double bond beyond carbon 9 in the chain. In addition the ratio of omega-6 and 3 fatty acids seems to be important in terms of alleviation of heart diseases since LA and LNA competes for the metabolic pathways of eicosanoids synthesis. High consumption of omega-3 fatty acids in seafoods may control heart diseases by reducing blood cholesterol, triglyceride, VLDL, LDL and increasing HDL and by inhibiting plaque development through the formation of antiaggregatory substances like PGI$_2$, PGI$_3$ and TXA$_3$ metabolized from LNA. Omega 3 fatty acids also play an important role in neuronal developments and visual functioning, in turn influence learning behaviors. Current dietary sources of omega-3 fatty acids are limited mostly to seafoods, leafy vegetables, marine and some seed oils and the most appropriate way to provide omega-3 fatty acids is as a part of the normal dietary regimen. The efforts to enhance the intake of omega-3 fatty acids due to several beneficial effects have been made nowadays by way of food processing technology. Two different ways can be applied: one is add Purified and concentrated omega-3 fatty acids into foods and the other is to produce foods with high amounts of omega-3 fatty acids by raising animals with specially formulated feed best for the transfer of omega-3 fatty acids. Recently, items of manufactured and marketed omega-3 fatty acids fortified foodstuffs are pork, milk, cheese, egg, formula milk and ham. In domestic food market, many of them are distributed already, but problem is that nutritional informations on the amounts of omega-3 fatty acids are not presented on the labeling, which might cause distrust of consumers on those products, result in lower sales volumes. It would be very much wise if we consume natural products, result in lower sales volumes. It would be very much wise if we consume natural products high in omega-3 fatty acids to Promote health related to many types of adult diseases rather than processed foods fortified with omega-3 fatty acids.

2001년도 국내에서 실시된 가축의 수정란이식 현황

  • 2001년도 국내에서 실시된 가축의 수정란이식 현황을 파악하기 위하여 전국의 수의·축산분야의 대학, 국·공립 축산관련 연구소, 농업기술센터, 가축 인공수정소 및 동물병원 등의 108개 관련기관에 2001년 1월 1일부터 12월 31 일까지 소, 돼지 및 기타 동물의 수정란 생산, 이식 및 임신진단 결과에 대하여 설문서를 통하여 조사하였으며, 설문서를 작성하여 제출한 51개 기관의 자료를 분석한 결과는 다음과 같다. 가축의 수정란이식을 실시하고 있는 기관은 국림기관 4개소, 지방자치단체 10개소, 대학 11개소, 생산자단체 2개소, 개인 시술소 25개소로 전체 51개소였다. 한우 및 젖소 228두를 과배란 처리하여 회수된 난자수는 1,536개였으며, 그 중 이식가능 수정란 수는 995개로 두 당 평균 4.4개였다. 체외수정의 생산은 OPU유래 244개, 도축난소 유래 20,957개, 복제수정란 8,154개로 29,355개의 이식가능 체외수정란을 생산하였다. 한우에서 수정란이식은 체내수정란 359개, 체외수정란 2,686개, 복제수정란 713개 등 3,758개가 이식되었고, 젖소에는 체내수정란 U개, 체외수정란 120개, 복제수정란 106개 둥 294개가 이식되었다. 이식된 수정란의 상태별로는 신선수정란이 61.7%(2,500개), 동결수정란이 38.3%(1,552개) 이식되었고, 수란우의 품종별로는 한우 수정란을 한우 수란우에 1,471개, 젖소 수란우에 2,287개가 이식되었고, 젖소 수정란을 젖소 수란우 236개, 한우 수란우에 58개가 이식되었다. 수정란이식 수란우의 수태율은 임신진단이 이루어진 체내수정란이식(368 두)은 32.3%, 체외수정란이식(968두)은 40.4%, 복제수정란이식(536두)은 9.3%였다. 기타동물의 체내수정란 생산은 돼지 105두에서 1,623개, 염소 2,662두에서 1,720개, 기타 39두에서 228개의 수정란을 회순 하였으며, 돼지에서 체내수정란 695개, 체외수정란 1,200개, 복제수정란 67,750개 이식되었고, 기타동물에서 58,950개가 이식되었다.

Estimation of Genetic Parameters for Economic Traits in Yorkshire (요크셔종에 대한 경제형질의 유전모수 추정)

  • This study was conducted to estimate the heritabilities and genetic and phenotypic correlations among average daily gain, age at 90kg and backfat thickness in Yorkshire pigs. The data were obtained from 2,111 heads of Yorkshire tested at National Livestock Research Institute from May, 1994 to April, 2000. Genetic parameters were estimated with a multiple trait animal model by using DF-REML (Deri- vative-Free REstricted Maximum Likelihood). The results obtained are summarized as follows ; The means of traits studied were 0.871${\pm}$0.124 kg for average daily gain, 145.397${\pm}$11.718 days for age at 90kg and 1.476${\pm}$0.241 cm for backfat thickness. The estimated heritabilities were 0.55 for average daily gain, 0.56 for age at 90kg and 0.55 for backfat thickness. The genetic correlation of average daily gain with age at 90kg and backfat thickness were -0.82, 0.10, respectively. The genetic correlation of age at 90kg with backfat thickness was -0.25. The phenotypic correlations of average daily gain(ADG) with age at 90kg and backfat thickness and age at 90kg with backfat thickness were -0.77, 0.02 and -0.05 respectively. Though phenotypic correlation of ADG and age at 90kg was low, breeding project should be carefully considered by high genetic correlation. High heritabilities on all economic traits were obtained. Therefore, it is considered that suitable selection and management is needed successful improvement.

Genetic Parameter Estimates for Reproductive and Productive Traits of Pig in a Herd (돼지의 번식형질과 산육형질에 대한 유전모수 추정)

  • The purpose of this study was to estimate heritabilities and genetic correlations for reproductive and productive traits and to apply their estimates to selection strategies in a swine population. Reproductive and productive traits considered in this study were number of born alive piglet (NBA), number of weaned piglet (NW), loin eye area (LEA), days to 90 kg (D90KG), back fat thickness (BF), and lean meat content (LEAN). Data were collected from 9,886 litters on 2,447 sows for reproductive traits and 10,181 gilts and boars for productive traits from Jan. 2000 to Dec. 2008 in a swine GGP farm. The statistical model to estimate genetic parameters for considering traits was a multiple traits animal model with including animal and maternal additive effects and litter effects on reproductive traits and animal additive effects on productive traits as random as well as some of fixed effects. For estimating (co) variance components of several random effects, restricted maximum likelihood methodology was used on this assumed model. The estimated heritabilities by animal additive effects and maternal effects were 0.07 and 0.02 for NBA and 0.03 and 0.02 for NW, respectively. Genetic correlation estimate for direct genetic effects between NBA and NW was 0.14. Heritability estimates for direct genetic effects were 0.19, 0.39, 0.36, and 0.43 for LEA, D90KG, BF and LEAN, respectively. The genetic correlation of LEA with LEAN was 0.35. Productive traits were antagonistically correlated with reproductive traits. From these results it is concluded that, if selection is done for strong positive effects of reproductive traits, then this would decline productive performance.

Analysis of Factors for Seasonal Meat Color Characteristics in Hanwoo(Korean Cattle) Beef using Decision Tree Method (의사결정나무분석기법을 이용한 계절별 한우육의 육색 특성에 미치는 요인분석)

  • This study analyzed the effects of pH, sex, backfat thickness, ribeye area, cold carcass weight, shipping month, muscle internal temperature, average daily temperature, and average relative humidity for slaughtered Hanwoo to meat color by season. The analyses focused on interaction and each effect to meat color of the factors. For the result for analysis of multiple linear regressions, meat color values were decreased as pH increased in all meat color, and the meat color values increased as the backfat thickness was increased. As the results of the decision tree analysis by each factor, cow and steer slaughtered in spring and autumn were the highest in the lightness(L*). The redness(a*) was the cases that pH was less than 5.63 and average relative humidity was over than 71.5% for Hanwoo slaughtered in autumn. The chroma(C*) value was the highest for Hanwoo that was slaughtered in summer and autumn, the pH was less than 5.60, and the back fat thickness was over than 8 mm. The hue angle($h^0$) was shown that the muscle internal temperature was less than 4.7$^{\circ}C$ among Hanwoo which was slaughtered in spring, summer, and autumn, the pH was less than 5.66, and the back fat thickness was over than 8 mm.

Detection of Imprinted Quantitative Traits Loci (QTL) for Reproductive and Growth Traits in Region of IGF II Gene on fig Chromosome (돼지 염색체상의 IGF II 유전자 인접 부위에서 번식 및 성장형질에 연관된 Imprinting 양적형질 유전자 좌위(QTL)의 탐색)

  • Characterization of quantitative trait loci (QTL) was investigated in the experimental crosses between Berkshire and Yorkshire breed. A total of 525 F$_2$ progenies from 65 matting of F$_1$ Parents were produced. Phenotypic measurements included average daily gain (ADG), average back fat thickness (ABF), and loin eye area (LEA). To identify the presence of QTL for reproductive performance, birth weight (BWT) and body weight at 16 days (16DAY) were included as indirect trait. QTL segregation was deduced using 8 markers assigned to chromosome 2 (SSC2). Quantitative trait locus analyses were performed using interval mapping by regression under line-cross model. Presence of imprinting was tested under the statistical model that separated the expression of paternally and maternally inherited alleles. To set the evidence of QTL presence, significance thresholds were derived by permutation following statistical tests, respectively. Genome scan revealed significant evidence for three quantitative trait loci (QTL) affecting growth and body compositions, of which two were identified to be QTL with imprinting expression mode near the ICF II gene region. For average back fat thickness (ABF), a paternally expressed QTL was found on chromosome 2 (SSC2). A paternally expressed QTL affecting loin eye area (LEA) was found in the region of SSC2 where evidence of imprinted QTL was found for average back fat thickness (ABF). For average daily gain (ADG), QTL expressed with Mendelian mode was found on chromosome 2 (SS2). Also, QTL affecting average daily gain (ADC), was identified to be expressed with Mendelian express mode.

A Study on the Foods of Confucian Ancestral Rites in the Young-Nam Area of Korea (영남지방 유교식 제사의 제물에 관한 연구)

  • 본 연구에서는 우리나라 영남 지방에 소재하는 네 가정을 표집하여 각 가정에서 행 하여지고 있는 유교적 차례와 제사에 차려지는 제물을 실증적으로 연구, 고찰하였으며, 또 이들을 문헌적으로 비교 검토하여 그 변천의 모습을 고찰하고저 하였다. 영남지방의 북부인 안동 하회마을과 영남의 중부지방이라고 볼 수 있는 양동 마을의 불천위제사에서 보이는 제 물조리에서의 공통점은 炙을 완전히 익히지 않고 진설하여 性으로서의 기원을 그대로 지키 고 있다는 사실이며 차이점은 바다가 가까운 양동마을에서는 하회마을보다 어물의 사용이 (대게와 생문어 등) 월등히 많다는 사실과 산골에 위치한 하회마을의 경우는 그 대신 닭을 생으로 한 마리 왼으로 쓰고 엽적에 또 한 마리를 사용하여 어물이 적은 데 비하여 닭을 더 많이 사용하고 있었다. 이러한 것은 의례가 매우 엄격한 제례에서도 지역적 특성이 많이 작 용하고 있다는 것을 나타낸다고 하겠다. 또한 진설에 있어서도 한 곳은 양위진설이고 다른 곳은 단설로 같은 불천위이지만 이러한 차이를 나타낸다고 하겠다. 또한 진설에 잇어서도 한 곳은 양위진설이고 다른 곳은 단설로 같은 불천위이지만 이러한 차이를 나타내고 있어, 이것에 있어서도 한 곳은 양위진설이고 다른 곳은 단설로 같은 물천위이지만 이러한 차이를 나타내고 있어 이것은 진설배열과 함께 가가체로 지켜져 내려 오는 것이라 하겠다. 양가 모 두 기제사 때보다 차려지는 제물의 종류가 다양하고 양도 많았다. 떡, 煎, 자반, 炙 및 나물 과 과일 등이 차려졌다. 여전히 제물을 조리할 때 사용되는 양념은 매우 제한되고 있으며, 또한 이용할 수 있는 채소의 종류는 가정마다 다양하게 다르게 제한되고 있다는 것이 특징 적이다. 사용되는 식품의 종류는 전통적으로 답습해오고 있음에 비추어, 과일은 매우 최근에 수입된 외래종의 것도 모든 가정에서 이용되고 있었다. 그러나 전체적으로 볼 때 유교식 제 사의례는 시대에 따라 거의 변화됨이 없이 지켜져 내려 오고 있었다.

생봉독처리에 의한 비육돈의 도체 및 육질 특성

  • 1. 도체특성 대조구와 비교하여 생봉독 1처리구와 2처리구의 경우 암퇘지와 거세돼지 모두에서 도체중, 도체율이 증가하였으며, 등지방두께도 두꺼워졌다. 이러한 도체특성은 도체등급을 향상시켜 A와 B등급 출현율이 높아져 경제적으로 유리한 것으로 사료되었다. 2. 육질특성과 PSE육 발생율 대조구와 비교하여 생봉독 1처리구와 2처리구의 경우 암퇘지와 거세돼지 모두에서 등심육의 일반성분중 지방함량이 높은 수준을 나타내었고, pH와 보수력이 높고, 육즙손실과 가열감량이 낮아 우수한 육질특성을 나타냈다. 그 외 주관적 판정의 마블링 점수가 높았고, 육색측정에서도 진한 적색을 나타내어 우수한 외관을 보여주었다. PSE육 발생율에서는 암퇘지와 거세돼지 모두에서 무처리구에 비해 3개 생봉독처리구에서 발생율이 감소했는데, 특히 생봉독2처리구가 낮았다.
