Quality Characteristics of Chun-dubu(whole Soybean Curd) with Added Ginseng Powder (인삼분말 첨가가 전두부의 품질 특성에 미치는 영향)

  • This study investigated the quality characteristics of Chun-dubu(whole soybean curd) to which ginseng powder was added. The overall composition of the material was moisture $80.11{\pm}0.32%$, crude protein $6.04{\pm}0.007%$, crude fat $5.85{\pm}0.007%$, and crude ash $1.06{\pm}0.014%$(all w/w). The total microorganism count was 3.57 log CFU/g, whereas that of control Chun-dubu was 4.82 log CFU/g after 15 days of storage at $5^{\circ}C$. No coliforms were detected in Chun-dubu with added ginseng powder, whereas the control Chun-dubu coliform count was 3.52 log CFU/g after 15 days of storage at $5^{\circ}C$. When textural properties were considered, all of hardness, springiness, and chewiness rose during storage at $5^{\circ}C$. The sensory characteristics of Chun-dubu with added ginseng powder rated higher(from 5.80 to 6.10) than those of control Chun-dubu.

Three Dimensional Mathematical Simulation for Predicting the Shelf Life of Tofu Packaged in a Semi-rigid Plastic Container (플라스틱 용기 포장 두부의 유통기간 예측을 위한 3차원 수치모사)

  • In this research, three dimensional mathematical models were developed to predict the shelf life of tofu packaged in a semi-rigid plastic container. A model combining oxygen transfer through the package and oxygen consumption within the package was considered. According to the results, the model simulations estimated that the number of microorganisms in the filled water was higher than that in the tofu, suggesting the shelf life of packaged tofu was not affected by the number of microorganisms in the tofu product, but rather by the number of organisms in the filled water. Additionally, the effects of the physical properties of the packaging material, such as oxygen permeability through the package, oxygen diffusion coefficient, the initial oxygen concentration in the filled water, and the depth of the filled water in the packaged tofu, were also observed.

  • ㆍ 제주전통두부 제조에 따른 지역별 원료대두의 전처리 공정은 \circled1 생두부 -> 수침 -> 맷돌분쇄, \circled2 생두부 -> 맷돌분쇄 -> 수침 그리고 \circled1과 \circled2를 병행한 방법이 있었다. ㆍ비지제거공정의 경우 비지를 제거하는 지역과 비지를 제거하지 않는 지역(성읍)이 있었으며, 비지분리를 위한 첨가제로 돼지기름(내도) 또는 돼지기름과 쌀겨를 혼합(선흘)한 경우가 있었으며, 비지분리 횟수는 지역에 따라 1~3회 정도의 차이가 있었다. ㆍ 가열공정 중 가열용기는 가마솥을 사용하였고, 누름방지제로는 대부분의 지역에서 돼지기름을 사용하였고 일부 지역에서는 들기름을 사용하였다. ㆍ 응고공정 중 응고제로 해안선 지역에서는 해수를 사용하였고, 중간산 지역에서는 소금물을 이용하였으며, 염전이 있는 지역에서는 간수를 사용하였다. ㆍ 성형시간은 60~720분이었으며, 냉각은 수냉이 아닌 방냉을 하였다. 제주 전통두부는 주로 잔치, 상례, 기제사, 명절 등 대소사에 사용하였으며 대부분 가열조리하지 않고 섭취하였다.

The physicochemical characteristics of silk-tofu added with medicinal herb powder preserved in kochujang and deonjang (Tofujang) (약초첨가 비단두부의 장담금에 따른 이화학적 특성)

  • The effect of medicinal herb Powder addition on the Physicochemical characteristics of tofujang preserved in kochujang and deonjang was investigated. The moisture contents of tofujang decreased rapidly till 4 weeks of storage, after which they showed a slight tendency to increase. The PH values of cochujang tofujang and deonjang tofujangs showed a tendency to decrease, but then showed a tendency to increase a little. The saltiness of tofujang increased rapidly till 2 weeks of storage, and then increased gently. The chromaticity of L and a values decreased, and that of b value significantly increased, during a storage. The total microbial counts of kochujang tofujang decreased till 4 weeks of storage, and then increased a little (103 CFU/ml). The total microbial counts of deonjang tofujang were decreased during storage. The total free amino acids content of silk-tofu was extremely small $(0.16\~0.92 mg/ml)$, but after 4 weekn of preservation, that of tofujang preserved in kochujang and deonjang increased to 10mg/ml and 40mg/ml, respectively In the kochujang tofujang, the textural characteristics of hardness, gumminess and chewiness increased rapidly at initial preservation and then showed a tendency to decrease significantly. The springiness and cohesiveness values showed no specific tendency. In the deonjang toking, the textural characteristics of hardness and gumminess increased till 2 weeks of preservation, and then tended to decrease. The springiness, chewiness and cohesiveness value had a tendency to decrease significantly with preservation. In the sensory evaluation, color, aftertaste and overall acceptability of mok-k tofujang showed significantly high score, but there was no significance in nutty taste, sweet, salty and hot. Color, savory, sweet and overall acceptability of mok-d and con-d tofujang were high, and the saltiness and aftertaste of sin-d tofujang got high score.

  • 두부는 오래전부터 우리나라를 비롯하여 중국, 일본 등 동양권에서는 물론 이제는 구미지역에 이르기까지 각광을 받는 식품으로 부상하고 있다. 두부가 문헌상으로 나타나기 시작한 것은 지금으로부터 약 2,000년전인 중국 한나라때다. 한고조의 손인 회남왕 유안(B.C178-122)이 저술한 만필술에 두부만드는 법이 기록되어 있어 두부제조의 시조를 회남왕으로 보고 있으며, 우리나라에 전래되어 온 시기는 분명치 않으나 고려말 또는 그 이전이었으리라는 추측이 지배적이다.(중략)

Effect of Red Ginseng Extract on Storage and Antioxidant Activity of Tofu (홍삼 추출물이 두부의 저장성과 항산화 활성에 미치는 영향)

  • In relation to making tofu with red ginseng extract, the effects of added red ginseng extract on the storage and antioxidant activity of tofu were investigated. When red ginseng extract was added in $0.5%{\sim}2%$ of dried soybean, differences in texture, color and sensory properties were compared. The textural properties of tofu slightly increased depending on the added amount of red ginseng extract in terms of the hardness and springiness: significant difference was demonstrated in the tofu with 2% red ginseng extract, and the color properties also significantly increased in terms of the values of L, a, and b. As a result of sensory evaluation, although the preference to color tended to diminish, as the peculiar taste of red ginseng was significantly perceived, the overall preference did not show any statistical difference. Therefore, the addition of red ginseng extract may be interpreted as not having negative effect on the preference of consumers. There was no change at the early stage of storage in pH, turbidity and total microbial count when the tofu was stored at $15^{\circ}C$. However, the changes in pH and in turbidity, and total microbial counts according to the addition of red ginseng extract took place from the second day and from the sixth day of storage, respectively, suggesting that the shelf-life of tofu may be extended due to its antimicrobial effect. Especially, the highest antimicrobial effect was observed tofu with 2% red ginseng extract. Concerning the antioxidant activity of tofu using oxygen radical absorbance capacity (ORAC) assay, the antioxidant activity significantly increased along with the increase in concentration of red ginseng extract. In ORACOH.assay, the pro-oxidant activity was shown in the tofu added with red ginseng extract.

Quality Characteristics of Topokki dduk With Respect to Added Whole Soybean Curd (Chun-Tofu) by Different Storage Time (전두부를 첨가하여 제조한 떡볶이용 떡의 저장시간에 따른 품질특성)

  • The purpose of this study was to investigate the quality characteristics of Garaedduk with regard to the amount of added whole soybean curd (Chun-Tofu). Whole soybean curd was added in amounts of 0, 3, 6 and 9%. Whole soybean curd Topokki dduk was stored at room temperature for 48 hours. The moisture contents had no significant difference for increases in the amount of whole soybean curd. The L value and b values of Garaedduk increased significantly with increases in the amount of whole soybean curd. Texture characteristics of Garaedduk measured with a texture analyzer revealed that hardness and cohesiveness decreased significantly for different amounts of whole soybean curd, and hardness increased significantly and cohesiveness and chewiness decreased with increase of storage time. As for sensory characteristics, samples with 9% added whole soybean curd rated higher in overall acceptability compared with other samples. In regard to cooking properties, water absorption increased and solid contents decreased with increases in the amount of whole soybean curd. Therefore, Garaedduk containing 9% whole soybean curd was most preferable.

Manufacture technology of tofu shake added with red rice (홍국쌀을 첨가한 두부 셰이크의 제조기술)

  • To establish manufacturing technology of tofu shake added with red rice prepared with Monascus purpureus KCCM 60570, the quality characteristics of tofu shake added with M. purpureus KCCM 60570 were investigated. Also, we determined the optimal mixing ratios of raw materials including red rice for manufacturing tofu shake. Monacolin K and mold number of red rice were increased rapidly until $8^{th}$ day of incubation and then gradually increased during the 12 day manufacturing period. As the results, it was considered to be most suitable to prepare red rice for 8 days at $25^{\circ}C$, and inoculate 1% (w/w) M. purpureus KCCM 60570. Sensory evaluation of tofu shake added with red rice and tofu shake without red rice was not significantly different at p<0.05. In sensory evaluation, tofu shake added with 0.5% (w/w) red rice was higher in taste, texture, and overall acceptability than the other. Therefore, the optimal mixing ratio of red rice and tofu shake is 0.5% (w/w). These results suggest that the addition of red rice could improve the quality of tofu shake.

The Effects of Tofu (Soybean curd) Containing Mushrooms on the Immune Activities (버섯첨가 두부의 면역활성에 미치는 영향)

  • This research was carried out to evaluate the value of tofu containing mushroom as a immunomodulator. Tofu was made using $CaSO_4{\cdot}2H_2O$ or Lactobacillus extract as a coagulant after adding powder of fruit bodies or mycelia of Letino edodes and Lepista nuda to soybean milk. Proximate compositions of tofu and tofu containing mushroom were analyzed. Levels of interferon ${\gamma}$ (IFN-${\gamma}$), interleukin 4 (IL-4) and tumor necrosis factor-${\alpha}$ (TNF-${\alpha}$) in culture media of lymphocytes collected from mouse spleens after being injected with mushroom, regular tofu, or tofu made with mushroom were measured by sandwich ELISA. In addition, concentrations of IgG1, IgG2a and IgE in plasma or lymphocyte culture media were analyzed. Crude protein, crude lipid and crude ash were decreased in tofu containing mushroom but phosphorus was increased significantly. IFN-${\gamma}$ concentration was significantly decreased in mice injected with fruit body or tofu alone. IL-4 level was decreased significantly in mice injected with tofu containing fruit body of L. edodes. However, TNF-${\alpha}$ was increased in mice injected with tofu containing fruit body of L. edodes. Plasma levels of IgG1 were increased in almost all groups, while there was no significant change in IgG2a levels among treated mice groups. Concentrations of IgG1 and IgG2a were increased significantly in lymphocyte culture media of mice injected with tofu containing mushroom. Plasma levels of IgE level was significantly increased in mice injected with tofu or fruit body of L. edodes, but not in mice treated with tofu containing mushroom. These results showed that tofu with mushroom affected immune activities, and it seems valuable to consider developing the mixture of tofu and L. edodes as an immunomodulator.

Effects of heat treatment on storage of packaged Tofu (포장두부의 저장성에 미치는 열처리 효과)

  • The effect of heat treatments (boiling or microwave heating) on packaged Tofu was investigated by microbial and physicochemical changes during its storage in order to improve the shelf-life. The shelf-life of the packaged Tofu prepared by acetic acid was found better than that prepared by calcium chloride. As the spoilage of Tofu developed, titratable acidity, amino and ammonia nitrogen contents, and optical density of packaged Tofu suspension were increased. Heat treatment of fresh Tofu in package was effective in lowering the bacterial counts, and extending shelf-life, but there was no significant difference between heating methods. Packaged Tofu prepared from acetic acid and pretreated by heating for 3 minutes kept the shelf-life of 4 days at $30^{\circ}C$, but that without heat treatment spoiled at one day.
