Developing and breeding improved legume-based food resources require collecting useful genetic traits with heritability even though requiring some time-consuming, costly, and labor intensive. We attempted to infer heritability of nine genetic traits-days to flowering, days to maturity, period from flowering to maturity, the number of seeds per pod, 100-seeds weight, and four contents such as crude protein, crude oil, crude fiber, and dietary fiber-using 455 homologous chloroplast gene sets of six species of legumes. Correlation analysis between genetic trait differences and phylogenetic distance of homologous gene sets revealed that days to flowering, the number of seeds per pod, and crude oil content were influenced by genetic factors rather than environmental factors by 62.86%, 69.45%, 57.14% of correlated genes (P-value ≤ 0.05) and days to maturity showed intermediate genetic effects by 62.42% (P-value ≤ 0.1). The period from flowering to maturity and 100-seeds weight showed different results compared to those of some previous studies, which may be attributed to highly complicated internal (epistatic or additive gene effects) and external effects (cultural environment and human behaviors). Despite being slightly unexpected, our results and method can widely contribute to analyze heritability by including genetic information on mitochondria, nuclear genome, and single nucleotide polymorphisms.

The dietary fiber intakes of Korean were estimated based on the data from the National Nutrition Survey in 1989. From the data, 566 foods which contain dietary fiber were selected.The intake estimation was done based on these foods. Results were summarized as followed ; Mean DF intake of nationwide population was 17.53g/day and most of these were come from vegetables. Mean DF intake of rural population was slightly lower than that of urban's. Major sources of DF were vegetables, cereals & grain products, seaweeds, fruits, fungi & mushrooms and legumens & their products in order. Vegetables were the major sources of DF which occupied 32.4% of total intake. Among them, kimchi and red pepper were the representative sources. Among cereals & grain products, rice was found to be the most important DF source occupying 12.2% of total DF. And fried noodle, loaf bread and barley were followed. Sea mustard among seaweeds, apples and persimmons among fruits, oyster mushroom and mushroom among fungi & mushrooms and soybean sprout among legumes & their products were favorable sources of DF. 653 households out of 1, 925(33.9%) were consummed 10~15g of DF per day.
Purpose: This study examined whether there was a difference in the nutrients and food intake of young children depending on their lunch places. Methods: The dietary survey data of the fifth Korea National Health and Nutrition Examination Survey (2010 ~ 2012) were used. The children were grouped into either a child care center lunch group (n = 728) or home lunch group (n = 592) and their nutrients and food intakes were compared. Results: No differences in the 24-hr energy intake and energy intakes from lunch and dinner according to the lunch places were observed. The percentage of breakfast energy was lower in the child care center lunch group, whereas the percentage of snack energy was higher. In children aged 3 ~ 5 years, the sodium, potassium, and vitamin C intakes were high in the child care center lunch group. The 1 ~ 2 years and 3 ~ 5 year old children's vegetable intake from lunch was significantly higher in the child care center lunch group than in the home lunch group. Children aged 3 ~ 5 years in the child care center lunch group consumed more beans and fish at lunch. The adequacy of nutrients and food diversity of child care center lunch appear better than home lunch. Conclusion: Parents and care providers need to make efforts to use diverse foods, such as vegetables and fish, in children's meals to provide balanced diets and promote healthy eating behaviors to their children.

Objectives: The objective of this study was to identify the association of food intake with bio-physiological indicators: blood pressure, body mass index (BMI), waist/hip ratio (WHR), cholesterol and urine sugar among rural people. Methods: The subjects were 890 inhabitants from 14 towns of G County in Honam province. Data were collected by interview and self-reported with structured questionnaires from April 6th to 30th 2005. Data were analyzed with the frequency, percentage, t-test, $x^2$-test, ANOVA, Scheffe test and ANCOVA using SPSS 12.0 program. Results: Pre-hypertensive and hypertensive group was 27.0%, overweight and obese 27.1%, more than 0.90 in WHR 42.0%, more than 201 mg/dl of cholesterol 23.9%, and positive urine sugar was 8.7% in general. Among eleven food groups, fruit intakes were more effective in normotensive group than in the others. Vegetables, liquors, and milk products were 0.90 WHR more effective than the others. Milk products and liquors in BMI, and grains, beans and seaweed in low cholesterol group were more effective than the others. Conclusions: Bio-physiological indicators are related significantly only with fruits, milk products, meats, cereal and liquors among eleven food categories. Further study on the relationship between food intake, physical activities, smoking, drinking and lifestyle with bio-physiological indicators are suggested.
In Korea, food balance sheet and national nutrition survey have been conducted in parallel by Central Government for several decades. However, the gap between the two statistics became larger to reach an intolerable level in recent years, likely due to the limitation of dietary survey method in spite of the drastic change in dietary habits after industrialization and urbanization during last three decades. The currently available data from national nutrition survey was optimized by taking in to account of the food balance sheet. Adjusted consumption data for individual food items during the period of 1991-95 were given in tabular forms for groups of cereals potatoes sugars & sweets, legumes, nuts & seeds, fruits, vegetables, meats, eggs, dairy products oils & fats and fishery foods. Conversion factors of processed foods including wheat products, soybean products, Kimchi and dairy products into their raw materials were tentatively proposed. Great differences between supply data and intake data of food commodities were pointed out to be likely due to the seasonal variation and ignorance of processed foods and dining-out in the national nutrition survey. It is recommended to utilize these optimized food intake data as the nationally-representative one until new data from the national health and nutrition survey undertaken after modified procedures since 1998 are obtained and verified in future.

Nitrate a common component of man's chemical environment, is present in foods either naturally or in an additive introduced during processing of foods. Nitrate level of foods have been found depending on nitrosation of soils and other various environmental factors. Therefore data on nitrate contents of foods reported in other countries can not be adapted to Korean foods. Also data on nitrate levels of Korean foods available were reported 10 years ago, which would be assumed to differ from those of foods currently consuming by Koreans. The present study was attempted to determine nitrate contEnts of common foods. Based on National Nutrition Survey Report 143 food items out of 14 food groups were selected for this study Nitrate levels of common foods used in the study were from N.D (not detected) to 6733.33 mg/kg foods. Mean nitrate levels of food groups 27.2 mg/kg of cereal and grain products, 78.1 mg/kg in potatoes and potato products, 8.3 mg/kg in legumes and their products N.D of seeds and nuts, 1012.1 mg/kg of vegetables and their products,76.3 mg/kg fungi and mushrooms 42.2 mg/kg fruits,34.5 mg/kg of meat, poultry and their products,0 mg/kg in eggs, 23.9 mg/kg in fish, shellfishes and their products,23.0 mg/kg in seaweeds, 7.7 mg/kg milk and dairy products, 26.3 mg/kg in seasonings, 68.0 mg/kg in others.
Physicochemical properties of milled rice, brown rice, pearled barley, wheat, sorghum, foxtail millet, soybean, and adzuki bean were evaluated for the production of extrusion formed multi-grain. Grain flours showed large differences in chemical composition including starch, protein, fat, ash, and total dietary fiber contents. Grain flours were brighter in the following order of milled rice>pearled barley>soybean>brown rice>wheat>sorghum>adzuki bean>foxtail millet, and most of the grain flours showed red-yellowish color. Mean particle sizes of grain flours were different among various grains, and whole grain flours tended to have coarser particle size than milled grain flours. The amounts of damaged starch in cereal flours were varied from 5.4 to 10.9%, and limited amount of damaged starch was present in legume flours. Water absorption index of grain flours was, in decreasing order, adzuki>bean>milled rice>brown rice>sorghum>wheat>foxtail millet>pearled barley>soybean. Water solubility index was higher in legume flours containing high protein content.
Sun is the one of steaming cook and mainly boiled the main material of vegetables and etc. In this thesis, according to the kinds of sun was to analysis reference frequency to them the materials measuring unit of materials, the terms of working and the kitchen utensil by books published in korea from 1420 to 1987. 1. It was 18 kinds of sun in our traditional documents. 2. Materials were classified into the main-material, submaterials and seasionings. 3. There were 20 kinds of measuring units, of them 9 kinds were for volume, 6 kinds were for quantity and the rest measuring units were 5 kinds. 4. There were 12 kinds of kitchen utensil for cooking, they were mainly used a chaeban, chae, castle. 5. There were 18 kinds of cooking terms. The terms of them, 6 kinds were for heating methods, 12 kinds were for the cutting process.
In order to observe the K contents, Korean common foods, especially processed foods were analyzed by Atomic Absorption Spectrophotometer. The results obtained were summarized as followed; (I) The K contents of instant noodle(ramyon) was 105-180 mg/100g and K ontents of their soup powder was 500-1000 mg/100g. (2) The K contents of potato products and bean products were less than those of original foods. So it was recongnized that the K contents might reduced during the food process. (3) The K contents of meats was 130-475 mg/I00g and those of meats products was relatively low, 80-260 mg/100g. (4) The K contents of carbonate beverage was very low but that of instant coffed was very high, 2400-2600 mg/100g. (5) There was no Statistical difference between the results of wet ash method and dry ash method in the K contents of all food groups.
Food consumption pattern between Korea and Japan were compared on the basis of the data from the National Nutrition survey which has been carried out annually in Korea (1969-1988) and in Japan (1950-1988) for the guide of the future food and nutrition policy. Total food intake has been decreased in Japan since 1973. In spite of fluctation of total food intake, there was an increase of food consumption in Korea. The intake of animal food has been increased, while that of vegetable food decreased, in both countries. Proportion of the total food intake from animal sources of Japanese in 1988, 25.3%, was greater than that of Koreans, 20%. The intakes of cereal and grain products have been decreased in both countries, but the amount of these food groups consumed by Koreans was 70 to 80g more than that by Japanese in 1988. When the animal food intake was compared, intakes of meats, fishes, shellfish and eggs have been increased considerably in Korea. Intakes of milk and milk products and meat have been increased, while those of fishes, shellfishes and eggs kept an even level since 1975, in Japan. According to changes of the national standards of height and weight in both countries, the average height has been increased greatly from 1970 to 1980 in Korea, and the tendency was the same for the average weight.
