  • 화재조사에 있어서 화재현장에서 발견되는 피해자들의 소사체는 사망원인을 밝히는 법의학적 측면에서 매우 중요하지만 현장에서 연료로 작용하여 발화부를 추적하는 화재패턴에 영향을 미칠 수 있으므로 연소적인 측면에서 소사체를 가연물로서 고려해볼 필요가 있다. 화재는 가연물의 열량과 분포에 따라서 그 화재패턴 또한 다르게 생성된다. 인체의 구성요소는 대부분 가연물이며 특히 동물성지방은 과거 등불의 연료로 사용되었을 만큼 가연성과 열량이 높다. 본 논문에서는 인체의 지방을 대신하여 돼지의 동물성지방의 연소적 특성을 고찰하였으며, 그 특성은 고체연료인 파라핀과 대동소이하여 화재현장의 분위기에 따라서 때로는 바닥에 액체가연물에 의한 패턴을 생성시킬 수 있고 가연물지배에 의한 연소로 사체 중심의 화재패턴을 생성할 수 있어 화재패턴을 통한 발화부의 판단에 혼란을 초래할 가능성이 매우 높으며 이러한 가능성은 실제 사례에서도 확인할 수 있었다. 화재사체의 연소적인 특성을 이해하는 것은 사체가 연관된 화재현장에서 화재패턴을 해석하는데 있어서 많은 도움이 될 것이며 경우에 따라서는 필수적인 요소가 될 것으로 사료된다.

  • 우유의 유지방을 주성분으로 하는 지방 식품인 버터는 오랜 옛날부터 제조되어 애용된 유제품 중의 하나이다. 기록에 의하여 식용으로서 뿐만 아니라 약용과, 제물로 이용될 만큼 매우 귀중하고 신성한 것으로 보고되어 있다. 반면 버터 대용품인 마가린은 유지방이 아닌 식품성 또는 동물성지방을 주원료로 하여 만든 식품으로서 1869년 프랑스의 나폴레옹3세가 프러시아와 전쟁 때 버터의 부족을 해결하기 위해 인조버터를 만들었는데 이것이 변천하여 오늘의 마가린이 되었다.

A Study on the Characteristics of Nutrient Intake in Metabolic Syndrome Subjects (대사증후군 대상자의 영양소 섭취 특성에 관한 연구)

  • This study was conducted to investigate the prevalence of metabolic syndrome(MS) and characteristics of nutrient intake in MS subjects by gender and age. The subjects were 957(447 men and 510 women) who visited medical center for regular medical check-up. The diagnosis of MS subjects was adapted from NCEP-ATPIII with blood glucose, cholesterol, triglycerides, and blood pressure and Aisa-Pacific definition with waist-circumference. Anthropometric and biochemical measurements were practiced, then the nutrient intake analysis was assessed through the 24-hour recall method. The MS prevalence of all subjects was 10.3% in average -17% in men and 4.5% in women, respectively. The energy intake in MS group was 2,047.1 kcal and 1,699.5 kcal for normal group, showing significantly higher in MS compared to normal subjects. For intakes of animal fat, cholesterol, and sodium, MS group were significantly higher than normal group. In respect of gender, men subjects of MS group showed significantly higher nutrient intakes than normal group for energy, fat, and cholesterol. Women subjects of MS group showed higher intakes for energy, carbohydrate, and protein. For 30s, MS group showed higher intakes of energy, animal fat, and cholesterol than normal group. Fat and cholesterol for 40s and energy, carbohydrate, vegetable fat for 50s, MS group showed significantly higher intakes than normal group. In summary, MS group showed higher intakes of energy, animal fat, cholesterol, and sodium than normal group.

  • In these days, there has been increased focus on global warming and the exhaustion of resources caused by the heavy consumption of fossil resources. In order to resolve these problems, biomass is increasingly gaining international attention as a source of renewable energy. Biodiesel fuel produced by the transesterification of vegetable oils and animal fats is expected to be one of the eco-friendly biomass based alternatives to petrodiesel. This article reviews some of the research for effective of biodiesel production.

Physicochemical Characteristics of Ground Pork with Safflower Seed Powder as an Animal Fat Replacer (동물성지방 대체제로서 홍화씨(Carthamus tinctorius L.)를 첨가한 분쇄돈육의 이화학적 품질특성)

  • This study was carried out to investigate the effect of the addition of safflower seed (Carthamus tinctorius L.) on the physicochemical properties of ground pork as an animal fat replacer. Three types of ground pork were evaluated: 20% pork fat added (control), 10% pork fat and 10% safflower seed powder added (10% SS), and 20% safflower seed powder added (20% SS). The moisture, protein, and ash contents were highest in 20% SS, and the fat content was highest in the control (p<0.05). The cooking yield, moisture retention, fat retention, and water-holding capacity were highest in 20% SS, and the control showed a reduction in the diameter (p<0.05). The external and internal L-, a-, and b-values of the control were higher than those of the 10% SS and the 20% SS (p<0.05). The cholesterol content of the control, the 10% SS, and the 20% SS was 50.85, 21.77, and 17.91 mg/100 g, respectively, and that of the 20% SS was lowest among the samples (p<0.05). The linoleic acid content of the control, the 10% SS, and the 20% SS was 28.68%, 41.04%, and 54.26%, respectively. The total unsaturated fatty acid content of the control, the 10% SS, and the 20% SS was 50.53%, 55.76%, and 64.93%, respectively. The linoleic acid and the total unsaturated fatty acid content were highest in the 20% SS (p<0.05). There was no significant difference in amino acid composition.

  • In recent years there has been an increasing focus on global warming and the exhaustion of resources caused by the heavy consumption of fossil fuels. In order to resolve these issues, biomass has gained much attention as a source of renewable energy. One area of particular interest has been the production of biodiesel. The biodiesel produced by the transesterification of vegetable oils, animal fats and waste cooking oils is expected to be one of the eco-friendly biomass-based alternatives to fossil fuels. This paper reviews some of the recent findings for the effective biodiesel production system, together with several factors affecting the biodiesel yield.

Physiological Activity of $\omega3$ Polyunsaturated Fatty Acids in Dark Fleshed Fishes I. The Effects on Protein and Phospholipid Contents, and Cholesterol Levels in Rats ($\omega3$ 고도불포화지방산의 생리활성에 관한 연구 I 단백질, 인지질 및 콜레스테롤 함량에 대한 연구)

  • The effects of n 3 polyunsaturated fatty acid (PUFA) on protein and phospholipid con-tents, and cholesterol level were studied in rats fed with diets of different fat composition. Body weights of fish oil groups were decreased to $11.1\%\~14.4\%$ compared with lard group (control), and also $16.4\%\~23.3\%$ compared with corn oil group, respectively. Protein contents of $\omega3$ PUFA and sardine oil groups in liver were increased to $6.78\%\~8.51\%$ compared with control group, but were no significant difference in brain and serum. $\omega3$ PUFA and sardine oil slightly repressed the phospholipid in microsome of liver. Moreover they effectively reduced the serum cholesterol levels compared with control group.

Effects of Dietary Fats and Oils On the Growth and Serum Cholesterol Content of Rats and Chicks (섭취(攝取) 지방(脂肪)의 종류(種類)가 흰쥐와 병아리의 성장(成長) 및 혈청(血淸) Cholesterol 함량(含量)에 미치는 영향(影響))

  • A series of experiment was carried out to study the effect of commonly used dietary fat or oils on the growth, feed efficiency, nutrient utilizability, nitrogen retention and serum cholesterol of rats and chicks fed various fat or oils at the level of 10% during 12 weeks of experimentation. Fat and oils used in this experiment were also analyzed for the composition of some fatty acids. The main observations made are as follows: 1. All groups received fat or oils gained more body weight than unsupplemented control group except chicks fed fish oil and rapeseed oil although no statistical significance was found between treatments. It was found that body weight gain achieved by the rats fed soybean oil, rapeseed oil, animal fat or corn oil was much greater than other group and that achieved by the chicks fed corn oil and animal fat was greater than other vegetable oil groups, although no statistical significance was found among treatments. 2. Feed intake data indicated that corn oil group of both rats and chicks consumed considerably more feed than other groups. Whereas feed intake of fish oil groups was the lowest among the experimental animals indicating that fish oil might contain unfavorable compound that depresses the palatability. In feed efficiency, soybean oil group of rats and corn oil group of chicks were significantly better than other experimental groups. In general, addition of fat or oils in the diet improved feed effeciency of diet. 3. Nutrient utiIizabiIity and nitrogen retention data showed that fat in the experimental diet containing 10% fat or oils was absorbed better than crude fat in control diet. It was also found that there was no significant difference in nitrogen retention among treatment. 4. Liver fat content of rapeseed oil group was much higher than that of control group and other group. It was also noticed that feeding more polyunsaturated fatty acids resulted in higher content of Iiver fat. 5. Present data indicated that serum cholesterol content of rapeseed oil and sesame oil group of rat was the higher than that of control group. Serum cholesterol content of animal fat group of chicks was higher than other group. It was interesting to note that serum cholesterol content of chicken was higher than that of rats?regardless of the kind of oils received. 6. Analytical data revealed that fatty acid composition of vegetable oil was composed mainly of oleic acid and linoleic acid, whereas animal fat and fish oil were composed of saturated fatty acid such as, myristic and palmitic acid. It should be mentionted that the perilla oil contained a very large amount of linolenic acid (58.4%) comparing with that in order vegetable oils. Little arachidonic acid was detected in vegetable oil, whereas none in animal fat and. fish oil.

도시저소득층노인들의 급식유무에 따른 영양상태 비교

  • 우리나라 급식서비스프로그램에서는 도시저소득층 재가노인을 대상으로 사회복지관등을 통하여 몇 개의 지정된 장소에서 1일 1끼니(점심정도)의 집단급식서비스(congregate site service)를 제공하고 있다. 도시저소득층노인들의 경우 영양소 섭취상태가 매우 저조한 것으로 나타나 이러한 급식서비스는 노인들의 영양상태에 많은 영향을 끼칠 것으로 생각된다. 따라서 본 연구에서는 서울 수서지역에 거주하는 노인 273명(남: 61명, 여: 212명)중 적어도 최근 1년 동안 일주일에 5회 이상의 식사에 참여한 군을 급식춘(N=137)으로 하고 나머지를 비급식군(N=136)으로 하여 영양상태를 비교하였다. 급식군은 비급식군에 비해 독거노인의 비율이 유의하게 높았으며 교육수준이 낮고 식품비 사용액수가 적었다. 24시간 회상법으로 조사한 결과 급식군은 비급식군에 비해 동물성단백질(p < 0.001), 동물성지방(p < 0.01), 동물성칼슘(p <0.01), 동물성 철분(P <0.001), 아연(p <0.01), 비타민B$_2$ (p < 0.001), 비타민B$_{6}$ (p < 0.01), 콜레스테롤(p <0.001)섭취량이 유의하게 많은 것으로 나타났으며 MAR도 유의하게 높았으나(P <0.01) 급식, 비급식군의 MAR이 각각 0.59, 0.53으로 모두 식사의 질이 낮았다. 급식군은 점심 급식을 통하여 하루 총섭취량 중 에너지는 39.7%, 당질33.7%, 단백질 43.8%, 지방 52.0%, 칼슘 35.2%, 철분은 36.9%, 비타민E 55.7%를 섭취하고 있어 하루 총섭취량의 33-56%를 급식에 의존하고 있었다. 반면에 비급식군은 하루 총섭취량 중 18-31%의 영양소를 점심으로 섭취하고 있어 대조를 보였다. 급식군은 비급식군에 비해 키가 유의하게 작은 것(p<0.001)외에는 다른 신체 계측치에서는 유의차가 없었다. 급식군은 혈중 철분지표 중에서 유의하게 낮은 MCH(P < 0.05)와 유의하게 높은 TIBC를 보였으나(p <0.05) hemoglobin 수치에 의한 빈혈비율(여 < 12.0d/㎗, 남 < 13.5g/㎗)은 급식, 비급식군 각각 20.2%, 23.8%로서 유의한 차이가 없었으며 12문항을 사용하여 조사한 우울점수에서도 군 간의 유의한 차이가 없었다. 이상으로 보아 급식군은 비급식군에 비해 사회 경제적 수준이 낮으나 점심급식을 통하여 하루 필요영양소의 1/3-1/2를 섭취함으로써 비급식군에 비해 영양소섭취량이 높거나 비슷한 섭취량을 유지하고 있었으며 신체계측치와 빈혈비율 등에서 급식군에 비해 유의한 차이를 보이지 않았다. 그러나 급식과 비급식군 모두에서 MAR이 낮아 아직도 대부분의 섭취영양소가 권장량의 75%미만으로 나타나 저소득층노인에게서 급식의 확대와 함께 급식의 질을 좀 더 높일 수 있도록 정부와 자치단체에서 의 각별한 관심과 지원이 절실히 필요하다고 생각된다.

The Effect of Seasoning on the Distribution of Nutrient Intakes by a Food-Frequency Questionnaire in a Rural Area (한 농촌 지역에서 식품섭취빈도조사로 측정된 영양소 섭취 분포에 유지류와 양념류가 미치는 영향)

  • The development of food frequency questionnaire (FFQ) is based on food use and/or dish use. Regardless of potential effect of oils and seasonings on chronic diseases, most of food-based FFQs do not include oils and seasonings in calculation of nutrient intake. This study examined the effect of added (seasoning) oils and seasonings on the distribution of subjects by relative nutrient intake using a dish-based FFQ. The subjects were 1,303 persons (men 478, women 825) aged over 20 years old, who completed FFQ composed of 121 items. Three types of daily nutrient intake were calculated; 1) total nutrient intake with oils and seasonings, 2) nutrient intake without oils, and 3) nutrient intake without oils and seasonings. The correlation and agreement of classification of subjects by relative nutrient intake were examined. All analyses were performed using absolute nutrient intakes and total energy-adjusted nutrient intakes by residual method. Comparing total nutrient intake with the nutrient intake without oils, energy, vegetable fat and vitamin E intake were significantly decreased and kappa values were 0.95 (${\kappa}{\omega}$ = 0.98), 0.64 (${\kappa}{\omega}$ = 0.81), and 0.59 (${\kappa}{\omega}$ = 0.79), respectively. Comparing total nutrient intake with the nutrient intake without oils and seasonings, most of nutrients intake except animal fat, animal protein, retinol and cholesterol were significantly decreased, and kappa values of vegetable fat (${\kappa}$ = 0.64, ${\kappa}{\omega}$ = 0.81), vitamin E (${\kappa}$ = 0.59, ${\kappa}{\omega}$ = 0.79) and sodium (${\kappa}$ = 0.61, ${\kappa}{\omega}$ = 0.80) were under 0.80. After total energy was adjusted, agreement was lower than before total energy adjustment. Excluding oils and seasonings to assess nutrient intake underestimated vegetable fat, vitamin E and sodium intake and affected the distribution of subjects by their relative nutrient intake. Therefore, we suggest that research focused on these nutrients need to be cautious about the interpretation of the results.
