Effect of Non-Uniform Milling on Quality of Milled Rice during Storage (불균일도정이 저장 중 쌀의 품질에 미치는 영향)

  • Uniform milling is regarded as a very essential technology to produce high quality milled rice in Rice Recessing Complex. But non-uniformly milled rice can be produced very easily because of unadequate operation methods of milling system and bad brown rice conditions. This study was conducted to find out the bad effect of non-uniform milling degrees and store temperatures on quality characteristics such as taste of cooked rice, fatty acidity, whiteness and so on of milled rice during storage. According to the increase of non-uniform milling degrees, the fatty acid acidity and b value were increased very rapidly, and taste of cooked rice and whiteness were decreased very rapidly during storage. And the general quality characteristics of milled rice were better at low temperature storage of $5^{\circ}C$ than at high temperature storage at $25^{\circ}C$.

Physicochemical Properties and Hydration of Rice on Various Polishing Degrees (도정도에 따른 쌀의 수화와 이화학적 특성)

  • The physicochemical and gelatinization properties of rice flours, which were prepared by polishing nonwaxy brown rice (Dongjin byeo), depending on polishing degrees were investigated. The contents of protein, ash, lipid and fiber decreased significantly as the degrees of polishing increased and water uptake of rice grains decreased during hydration. When the surface of the soaked rice grains was examined by the SEM, extensive crack formation was observed. The water binding capacities, swelling power and solubility of rice flour increased as the polishing degree increased. By the amylogram, the initial gelatinization temperatures of rice flour decreased as the polishing degree increased and the peak viscosities, the breakdown and consistency of rice flour increased as the polishing degree increased.

The effect of rice nuruk prepared from rice with different degrees of milling on quality changes in yakju (도정도를 달리한 쌀누룩이 약주의 품질 변화에 미치는 영향)

  • In this study, the effect of nuruk prepared from rice with different degrees of milling on the physicochemical and sensory qualities of yakju after accelerated aging was investigated. The results indicated significant differences, except for Fe and Mn contents, in the qualities of aged yakju prepared using nuruk from rice with different degrees of milling. However, the degree of milling of rice did not influence the quality of yakju, except for amino acidity and pH, which significantly decreased as the degrees of milling increased. In addition, as compared to before aging, brownness ($A_{430}$) and color difference significantly increased after aging in all the treatments. The intensity of off flavor in yakju after aging made from 0% milled rice nuruk was the lowest.

Quality changes of yakju prepared from rice with different degrees of milling (DOM) due to accelerated aging (도정도를 달리한 쌀이 가속숙성에 의해 약주의 품질변화에 미치는 영향)

  • This study was conducted to elucidate how rice with different milling degrees (DOM: 10, 20, 30, and 40%) affects rice yakju properties by accelerated aging. There were significant differences among the treatments with respect to the properties except for brownness before aging, which showed no correlation with DOM (p for trend>0.05). In contrast, the amino acidity and brownness significantly decreased after aging as DOM increased, lightness (L) in particular was affected in all the treatments regardless of DOM. Almost all treatments showed significant differences except for the pH and the total acid and alcohol content between before and after aging. Moreover, the amino acidity, brownness, redness (a), yellowness (b), and color difference in all the treatments showed significant differences regardless of DOM. We found a significant difference in the color change. The yakju free amino acid analysis showed that almost all amino acids slightly decreased as DOM increased.

Changes of Milling Quality of Rice Varieties According to the Transplanting Time and Good Resources with High Milling Quality in Yeongnam Plain Paddy (영남평야지에서 벼 이앙시기에 따른 도정특성 변화와 도정특성 유망 유전자원 탐색)

  • We carried out this study to analyze changes of rice grain milling properties according to the transplanting time and to identify genetic resources suitable for improving milling quality of rice in paddy field of Yeongnam area. We analyzed grain filling and milling quality of 30 rice varieties. In late transplanting (June 20), heading date was delayed for 6 days, compared to normal transplanting(June 5). The grain filling ratio (GFR), perfect kernel ratio of milled rice (PKR), and head rice recovery (HRR) were improved in late transplanting. There was no significant difference in head rice yield of two transplanting time, even though the milled rice yield in late transplanting was significantly smaller than that in normal transplanting because of the reduction of spikelet numbers per panicle. The uniformity of brown rice grain measured by selection sieve norm was improve in late transplanting. There was no significant difference of milling loss ratio between normal and late transplanting but there was a trend for a increase of milling necessary time in late transplanting. Thus, our result suggest that optimum transplanting time is June 10 to 15 to improve grain filling and milling quality and produce high head rice yield in the southern paddy plain of Yeongnam region. We selected promising 9 rice varieties which are Nampyeongbyeo, Ilmibyeo, Chucheongbyeo, Dongjinbyeo, Hopyeongbyeo, Malguemi, Chilbo, Hinohikari, and Cheongmu having high percentage of ripened grain and milling quality as genetic resources to improve milling characteristics of rice varieties. Chucheongbyeo, Dongjinbyeo, and Malguemi showed the highest grain filling ratio and Nampyeongbyeo had the highest perfect kernel ratio. Nampyeongbyeo and Ilmibyeo showed the highest head rice yield with more than 500 kg/10a.

  • 국내에서 개발된 연속식 현미조절기를 이용한 현미 가수처리 여부에 따른 도정수율의 변화를 알아보기 위해 경남 진주 농협 미곡종합처리장, 경기 여주의 미곡종합처리장 및 경기 용인의 농협 미곡종합처리장에서 검증실험을 실시하였다. 현미의 조절을 위한 가수처리 여부에 관한 실험 결과를 요약하면 다음과 같다. 1. 조질에 따른 현미 함수율의 측정값과 예측값의 차이는 진주, 여주의 경우는 각각 0.07%, 0.13%로 미소하게 나타났으며, 용인의 경우는 0.18%로 예측값이 낮게 나타났다. 2. 쇄미 발생량을 분석한 결과, 진주 농협의 경우 2.85 kg, 여주 농협의 경우 5.47 kg, 용인 농협의 경우 5.47 kg 감소되는 것으로 나타났다. 3. 도정수율 변화는 진주농협 1.21 %, 여주 0.87%, 용인 농협 1.00%의 상승을 보였다.

Quality Characteristics of Yakju as Affected by Rice Nuruk with Different Degrees of Milling (도정도별 쌀누룩 약주의 품질특성)

  • This study aimed to investigate the effect of rice nuruk prepared from rice with different degrees of milling (0, 10, 30, 50, and 70%) on physicochemical qualities of yakju. The results indicated significant differences in the qualities of yakju prepared using rice nuruk from rice with different degrees of milling. Specially, pH, amino acidity, brownness, b value, and color difference were significantly reduced as the degrees of milling increased, whereas contents of alcohol and volatile acid, reducing sugar, and L value were increased. Malic acid, succinic acid, and lactic acid were the main organic acids in yakju, and there were significant differences among the treatments in malic acid, lactic acid. However, there was no tendency according to different degrees of milling. In addition, contents of total free amino acids and nitrogen compounds showed no tendency according to degrees of milling, whereas the content of aspartic acid showed a tendency to decrease significantly. The content of 2-phenyl alcohol in the volatile flavor components showed a tendency to increase significantly with higher degree of milling of rice nuruk, whereas contents of n-propanol and iso-amyl alcohol tended to decrease significantly.

Effect of Milling Degree on the Physicochemical and Sensory Quality of Sogokju (도정도에 따른 소곡주의 품질 및 기호도 변이)

  • Sogokju, a Korean glutinous rice wine and one of the oldest Korean traditional wines, is famous for its unique taste acquired from a 100-day incomplete fermentation process. This study investigated the effects of the degree of rice milling on the physicochemical and sensory characteristics of Sogokju. It evaluated the physicochemical characteristics, pasting and color properties, and structural properties of starch using four different degrees of milled rice (Oryza sativa L.) cultivar Dongjinchalbyeo. Samples of brown rice with milling yields of 92%, 84%, 76%, and 68% were produced using both abrasive and friction whiteners. This study showed that the protein, lipid, and ash content of milled rice decreased as the degree of milling increased. The lower hardness of the kernel below milling yield 92% suggested that milling may be related to the lower protein content of the kernel. The pasting curve showed a significant increase in viscosity properties as the degree of milling increased. This is due to the decrease in protein and lipid content, the increase in starch content, and the difference in amylopectin chain-length distribution. Further milling of white rice, based on 92% milling yield, had an effect on the amylopectin chain-length distribution due to the degree of polymerization (DPn) of 37~60. The long chain of amylopectin also contributed to the viscosity. The increase in the degree of milling decreased the glucose and total sugar content of Sogokju. However, it increased the total acidity of Sogokju. Moreover, the lightness of Sogokju decreased while its yellowness increased. These results indicate that the degree of milling can alter the taste and color of Sogokju. The sensory evaluation showed that the increase in the degree of milling decreased consumer preference for Sogokju. The sensory score for Sogokju was positively correlated with its brix degree, glucose content, pH, and protein content of raw rice.
