Effect of Blanching Condition on the Quality of Carrot Juice (Blanching 조건이 당근쥬스의 품질에 미치는 영향)

  • Investigations were conducted on the effects of different blanching solutions and time on tile quality of carrot juice to minimize undesirable changes in color, taste and flavor of raw carrot. Juice yields were 65.9% in raw juice(RJ), 51.7~55.3% in juice by blanching in water(JBIW) and 44.6% in juice by blanching in acetic acid solution(JBIA). pH of JBIW was 6.12~6.37, similar to RJ, while that of JBIA was 4.85. Soluble solid was in the decreasing order of RJ, JBIW and JBIA. Turbidities of JBIW for 1 min and JBIA for 5 min after 3 day storage at $4^{\circ}C$ were maintained by 94% compared to the original juice. Only 44~46% of $\beta-carotene$ was extracted from carrots during pressing, and f-carotene was extracted to a greater extent than $\alpha-carotene.$ Sensory evaluation indicated that JBIW for 1 min was superior to nth and commercially available juice in overall acceptance.

Effects of Blanching Conditions by Various Salt Contents on the Quality Properties of Cirsium setidens Nakai (소금함량을 달리한 데치기 조건이 곤드레의 품질특성에 미치는 영향)

  • This study was carried out to investigate the change of the quality of wild edible plants, Cirsium setidens Nakai, blanched at various conditions. Samples were blanched under blanching conditions of $90^{\circ}C/25min$, $95^{\circ}C/15min$, and $100^{\circ}C/5min$, with salt concentrations of 0%, 1%, 2%, 3%, 4% and 5%. The color, texture (hardness), chlorophyll and total polyphenols were analyzed. The contents of polyphenol and hardness in Cirsium setidens Nakai were found to be decreased in relation to blanching time. With respect to sensory evaluation, the 3% treatment had a higher overall acceptability than other treatments. The optimal blanching condition was found to be $100^{\circ}C/5min$ and 3% salt.

Optimization of Blanching Process of Cirsium setidens and Influence of Blanching on Antioxidant Capacity (참취 데치기 최적 공정 확립과 추출물의 항산화 특성 변화)

  • This study was conducted to investigate the change of Aaster scaber antioxidative activity, total phenolic compounds and flavonoids during the blanching processes. With two parameters such as blanching time and temperature, response surface methodology and central composite design was used to study the combined effect of blanching time (90 to 162 sec) and blanching temperature (75 to $99^{\circ}C$). We found that antioxidative activity, total phenolic compounds and flavonoids during the blanching processes were influenced by blanching temperature and time. Within process condition, total phenolic compounds and flavonoids were extracted 3.00 - 35.48 mg/g and 2.35 - 8.38 mg/g, respectively. DPPH radical scavenging activity was 42.10 - 67.14%. The change of total phenolic compounds, flavonoids, and DPPH radical scavenging activity was dependent of blanching temperature more than time. The total phenolic compounds was increased as temperature rise, but flavonoids not. However, DPPH radical scavenging activity was increased during the blanching process.

Effect of blanching time on physicochemical characteristics and sensory evaluation of Aster scaber (데치기 시간에 따른 참취의 이화학적 및 관능적 특성의 변화)

  • This study investigated the changes in the physicochemical characteristics and sensory evaluation of Aster scaber by blanching treatment time. Aster scaber was blanched with $100^{\circ}C$ hot water for 1~5 min. At $100^{\circ}C$ blanching, the total polyphenol contents of the sample blanched for 1~5 min ranged from 7.57 to 6.45% while the sample blanched for 5 min showed a severe loss of phenolic compounds. The sample blanched $at 100^{\circ}C$ for 5 min had the lowest $L^*$ and $b^*$ values (24.96 and 16.14, respectively) and the highest $a^*$ value (-10.39) among all the samples. With regard to the texture profile, the sample blanched at $100^{\circ}C$ for 5 min was the highest in texture. Significant reductions in the texture, color, and total phenol content were observed after blanching. In the sensory evaluation, the Aster scaber sample blanched with hot water at $100^{\circ}C$ for 2 min showed the highest color, appearance, and flavor while the sample heated with boiling water for 3 min had the highest sensory score in terms of texture and overall acceptability. In conclusion, the 3 min blanching of Aster scaber yielded the best sensory quality.

Changes in Color of Spinach Leaves by Blanching (데치기에 따른 시금치 잎의 변색)

  • The changes in color of spinach leaves upon blanching in boiling water and by microwave oven were investigated. The noticible changes in color of leaves were observed above $70^{\circ}C$. The values of L (lightness), a (redness) and b (yellowness) were decreased upon blanching. The value of the under surface of leaves was decreased by 2~3 times compared to that of the upper surface. The noticible color changes occured from 15 sec and the absorbance at 432 nm of water increased rapidly from 2 min of blanching in boiling water. Salt (0.5 and 0.9%) decreased the absorbance at 432 nm of water. The changes of L and b of the under surface of leaves upon heating with a microwave oven were less compared with those in boiling water. Based on the color differences of leaves upon blanching in boiling water, the optimum ratio of spinach to water was 1:4 or 1:5.

  • The purpose of this research was the optimization of Cirsium setidens blanched at various conditions by response surface methodology. Conducted to investigate the change of Cirsium setidens DPPH radical scavenging activity, total phenolic compounds and flavonoids during the blanching processes. With two parameters such as blanching time and temperature, response surface methodology and central composite design was used to study the combined effect of blanching time (70 to 170 seconds) and blanching temperature (70 to $99^{\circ}C$). The changes of DPPH radical scavenging activity, phenolic compounds, and flavonoids on blanching process conditions such as temperature and time were evaluated. After blanching, total phenolic compound was determined from 13.00 to 35.48 mg/ml. total flavonoids was determined from 2.31 to 8.38 mg/ml. DPPH radical scavenging activity was determined from 42.10 to 67.14 %. The optimum conditions were determined to be blanching temperature of $85^{\circ}C$ and blanching time of 150 sec.

Studies on the Textural Quality Improvement of French-Fried Potato Produced with Korean Potato Varieties (한국산 감자를 이용한 French-Fried Potato의 Texture 개선)

  • Attempts were made to improve the textural quality of French-fried potato produced with S potato varieties popular in Korea. The most suitable variety to produce French-fried potato, among 5 varieties tested, was Superior. Texture of French-fried potato was improved by air drying blanched potato strips at room temperature for over 1 hour, immersing potato strips in 6% starch solution at $60^{\circ}C$ for 2 minutes, and immersing in 1.5% hydroxypropyl methyl cellulose(HPMC) solution at $60^{\circ}C$ for 2 minutes. Textural quality of French-fried potato was significantly improved, when blanched potato strips were subjected to air drying at room temperature for 1 hour, followed by immersing them in 1.5% HPMC solution at $60^{\circ}C$ for 2 minutes prior to frying.

  • Changes in quality of blanched vegetables(carrot, green onion, spinach) by microwave heating were evaluated. Ceramic coating treatment(CCT) within microwave oven caused the reduction of blanching time and Hunter's L, a, b values of vegetables. Also, CCT showed the higher cutting force compared to NCCT after microwave heating. Photomicrographs of cross-section of blanched vegetables after heating in ceramic coated microwave oven showed better appearance than those in nonceramic coated microwave oven. CCT process improved retention of vitamin C.

Effect of Blanching and Germination of Soybeans on the Quality of Soymilk (대두의 데치기와 발아가 두유의 품질에 미치는 영향)

  • In order to study the effects of blanching and germination of soybean on the quality of soymilk, the soybeans were differently treated as follow; (1) blanched for 5 min at $100^{\circ}C$, (2) germinated for 2 days at $25^{\circ}C$, (3) germinated for 2 days and then blanched for 5 min at $100^{\circ}C$. The qualities of various soymilks prepared from the treated soybeans were compared with those of soymilk from the untreated soybeans. Blanching of soybeans decreased yields, solid materials, viscosity, total protein, soluble nitrogen, and total sugar of soymilk but no effect on its free sugar contents, specific gravity, and pH. The blanching, however, improved the sensory properties and decreased the n-hexanal contents of soymilk to about 1/2.4. Germination of soybeans improved the yields, physical, chemical, and sensory properties and decreased the n-hexanal contents of soymilk to about 1/5. The germination plus blanching of soybeans showed kind of combined effects of germination's and of blanching's, resulting in the decrease of n-hexanal to about 1/10 and improvement in sensory properties of soymilk.

Changes in the quality characteristics and chemical compounds of garlic shoots for blanching (데치기 처리에 따른 마늘종의 이화학적 품질 특성 변화)

  • This study was performed to investigate changes in the quality characteristics and chemical compounds in garlic shoots by blanching for different time (0, 0.5, 1, 2, 3, and 4 min). The color (L, a, and b values), texture profile (hardness, springiness, chewiness, gumminess, and cohesiveness), total vitamin C, total sugar, total polyphenol and flavonoid, chlorophyll a and b contents, total pyruvate and thiosulfinate contents of the blanched garlic shoots were examined. As the blanching time increased, the L and b values decreased, while the a value increased. Hardness, chewiness, springiness and gumminess of the blanched shoots were significantly lowered with the increasing blanching time. Vitamin C content of raw garlic shoot was 1.62 mg/100 g while that of the blanched garlic shoots was 0.16~0.24 mg/100 g, implying vitamin C loss into blanching water and destruction by heat. The total sugar and polyphenol contents were fluctuated during blanching, but over 75% of their initial levels were retained under all blanching conditions. The total flavonoid contents increased as the blanching time increased. The chlorophyll a content did not show significant change with blanching time, but the chlorophyll b content significantly decreased. These results suggest that blanching for 2 min could be the best for retaining beneficial compounds and desirable quality of garlic shoot.
