Korean and Chinese Consumers' Preferences for Sous-Vide Cooked Jabchae according to Sauce Mixing Proportion (Sous-Vide 잡채의 앙념 배합 비율에 따른 한국과 중국 소비자 기호도)

  • This study aimed to investigate preferences for sous-vide cooked jabchae between Korean and Chinese consumers according to sauce mixing proportion. To commercialize sous-vide cooked jabchae and localize it for overseas circumstances in the Korean and Chinese markets, consumers' subjective preferences for sous-vide cooked jabchae were investigated especially in 119 Korean consumers (55 males and 64 females) and 136 Chinese consumers (70 males and 66 females). For jabchae samples, this study set up three different mixture rates of soy sauce and sugar, 8% (LSS), 13% (MSS), and 18% (HSS), and three different salad oil rates, 0% (LO), 12% (MO), and 24% (HO), to propose nine kinds of samples. As a result of consumer preferences, for Koreans, MSS and HSS regardless of oil content were significantly high in overall, appearance, saltiness, sweetness preferences, and purchase intention (P<0.001). In addition, for oiliness preference, LSS, MSS, LO, and MO were significantly high (P<0.001). For Chinese, HSS, MO, and HO were significantly high in overall, flavor preference, and purchase intention (P<0.001). For saltiness and sweetness preference, regardless of oil content, saltiness preference was significantly high in HSS and sweetness in MSS and HSS (P<0.001). For oiliness preference, regardless of content of soy sauce and sugar mixture, LO and MO were significantly higher, and for appearance preference, there was no significant difference among all samples (P<0.01). In general, both Korean and Chinese tended to prefer MS and HO, irrespective of oil content. Especially for Koreans, LSS was the least favorite sample in almost all preference questionnaires. For Chinese, preference scores for LSS and HSS were higher than for Koreans. On the other hand, oil content did not have much effect on consumer preference as compared with contents of soy sauce and sugar mixture.

The Need Analysis for Operating Course-based National Technical Qualification Course of Vocational School Teachers (직업계고 교사의 과정평가형 자격 과정 운영에 대한 교육요구도 분석)

  • The purpose of this study is to use as a basic data of establishing operating Course-based National Technical Qualification(CNTQ) support program by examining the educational needs for operating CNTQ of vocational school teachers, and to contribute to the vocational school settlement of CNTQ course. To achieve those purposes, this study drew 27 tasks performed by teachers operating CNTQ. Also, it surveyed the perceived importance and the performance. The findings of this study are as follows. First, it is showed that 'selection of qualification fields and confirmation of organization criteria, organization of educational training time by competency unit, organization of subjects and establishment of competency unit operating plan by grade and semester, selection of teaching materials, implementation of education and training, establishment of evaluation plan, implementation of evaluation, re-education and re-evaluation students with grades under 40%, guidance of paper evaluation, guidance of practical evaluation, guidance of interview evaluation' are the first priority tasks in the result of the need analysis. Second, it is indicated that 'application of external evaluation, guidance to retake an exam for failure' are the secondary priority tasks. According to these results, the following conclusions were made. First, it will be more positive effects if the educational needs in the next CNTQ support program include contents of the first priority tasks. Second, it is indicated that the priority of the educational needs for tasks of operating plan stages is commonly high. In particular, the highest ranking in the result means that it is completely supported from the first step on operating course. It is expected that the program which teachers on operating the course of similar qualification fields share each operating experience is effective. Third, the priority of the educational needs for external evaluation step ranked high. External evaluation has a different level of difficulty and a form of practical evaluation output according to qualification fields, so the method of guidance has to be different. It needs the program constructed by similar fields.

Study on the Treesize Prediction Model : A case study of Zelkova serrata, Pinus strobus and Magnolia denudata (주요조경수목의 크기 예측 " 모델 "에 관한 연구 : 느티나무, 스트로브잣나무, 백목련을 대상으로)

  • Size characteristics of three widely used landscape trees were analized to establish a methodology of size prediction as time Passes. Tree height, tree width, stem diameter(breast or surface), canopy length and tree age were measured directly and indirectly(by using photograph), and the data were analized by using regression analysis through PC-SAS. The results are summarized as follows : 1. Zelkova serrata MAKINO showed relatively slow growth rate and the tree form was changed as aged. Size predictions were available by using the regression equations listed below : Surface diameter = 0.8293 x AGE Tree height = 0.4109(0.8293 x AGE) - 0.0039(0.7273 x AGE)$^2$Tree width = 0.3240(0.8293 x AGE) - 0.0024(0.1293 x AGE)$^2$Canopy length = 0.1337(0.8293 x AGE) - 0.0020(0.7293 x AGE)$^2$2. Pinus strobus L. showed relatively fast growth rate and the tree form did not change much as aged. Size predictions were available by using the regression equations listed below. Breast diameter = 0.756 x AGE Tree height = 0.7695(0.756 x AGE) - 0.0164(0.75\ulcorner x AGE)$^2$Tree width = 0.4331(0.756 x AGE) - 0.0079(0.75\ulcorner x AGE)$^2$Canopy length = 0.1365(0.756 x AGE) - 0.0032(0.75f x AGE)$^2$ 3. In case of Magnolia denudata DESROUX, tree form was determined relatively earlier than the other two species. Si2e predictions were available by using the regression equations listed below : Surface diameter = 0.88 x AGE Tree height = 0.5412(0.88 x AGE) - 0.0110(0.88 x AGE)$^2$ Tree width = 0.3752(0.88 x AGE) - 7.0061(0.88 x AGE)$^2$Canopy length = 0.1110(0.88 x AGE) - 0.0022(0.88 x AGE)$^2$ This study aimed to find a way to predict size change of landscaping plants. This methodology will be applied to a wide range of landscape plants to provide practical data to landscape designers.

Analyses on Sound Effects for Soundscape Design of Healing Garden at Psychiatric Hospitals - Focused Psychological and Physiological Effects - (정신병원 치유정원의 음경관 디자인을 위한 소리효과 분석 - 심리적 및 생리적 효과를 중심으로 -)

  • This study is intended to obtain a guideline for creating a therapeutic garden soundscape in a psychiatric hospital by analyzing the psychological and physiological effects of auditory components on mental patients. The subjects were 27 inpatients at a psychiatric institute located in Jeollabuk-do. They were recommended by their doctors and had been diagnosed with mild cases of schizophrenia. The survey was carried out in October 2011. With regard to the study, the subjects listened to single sounds(the sound of flowing water, birdsong, wind chimes and music) and 4 sounds composed of some of these, and then Electroencephalography(EEG) and psychological effects were measured. The moving water sound was perceived as pleasing and revitalizing and the birdsong as sonorous and delightful. When designing a healing garden in a psychiatric hospital, the vitality of sound should be considered. In comparison to other single sounds, water sounds were highly preferred and had greater effects on psychological vitality. Music sounds had a significant effect on enhancing tranquility while water sounds affected on both psychological vitality and tranquillity. When comparing single sounds with combined sounds, single sounds such as running water for vitality and music for tranquility had a greater psychological effect than combined sounds. In terms of combined sound preferences, the combination of water and bird sounds had higher preference rates. Generally, combined sounds including water tended to have higher preference rates. The physiological effects of single sounds showed that music had a greater therapeutic effect than natural sounds such as water sounds and birdsong in promoting tranquility. As for combined sounds adopted to enhance physiological tranquility, it is most appropriate to combine music and birdsong or music and water sounds. However, a single music sound is more effective than combined sounds. Overall, analyses of both psychological and physiological reactions showed music and water sounds to be most calming while water sounds promoted the greatest vitality.

Analysis of the Defects in Wooden Landscape Facilities according to the Type of Timber - Focused on the Defects in Pillars of Out Door Rest Furniture - (목재 조경시설물의 목재 종류별 하자분석 - 휴게시설물 목재기둥의 균열하자를 중심으로-)

  • Improvements in the quality of life have resulted in a heightened awareness of safety and the environment. As a result, timber as an environmentally friendly material, is used for landscape facilities and a wide range of purposes. But there are a large number of defects since there are twists and cracks that can be found in wooden landscape facilities. This has led to the use of imported hardwood instead of the Western Hemlock which has been in widespread use. Hardwood is expensive. However, it is being used without any information or research on how much it reduces the actual defects. Construction contractors are in great need of information on the characteristics and defect rates of different types of timber. This study investigated and analyzed the cracks in four types of timber - namely the Western Hemlock, Burckella, Nyatoh and Malas - in order to provide basic information to construction contractor for them to be able to select and use the appropriate type of timber. The main results of this study are as follows. First, the Western Hemlock had 1.90 $cracks/m^2$, Malas had 0.83 $cracks/m^2$, Burckella had 0.14 $cracks/m^2$, and the Nyatoh had the least number of surface defects at 0.04 $cracks/m^2$. Second, while Malas has the highest degree of strength timber, Nyatoh had the smallest defect rate. This showed that having high timber strength does not necessarily mean it has less defects. Third, the Western Hemlock was the least expensive and Burckella was the most expensive. However, considering the cost of repairing defects, it would be economically advantageous to use Burckella and Nyatoh which have low defect rates. This study aimed to provide basic information to landscape construction contractors for them to be able to select and use the appropriate type of timber when constructing wooden outdoor rest furniture. The results are expected to contribute to quality enhancements and defect reduction in landscape facilities.

The Evaluation of Physical Environmental Factors in Urban Parks for Healthy City - Focus on Seoul - (건강증진을 위한 도시공원의 물리적 환경요소 평가 - 서울시를 대상으로 -)

  • This study quantitatively and qualitatively analyzes the physical environment for health promotion in urban parks by indicators that were selected in consideration of overseas cases and previous studies. To evenly distribute the areas to be evaluated by region, Seodaemun Independence Park, Hongneung Park, Gocheok Park, Sillim Park, Cheongdam Park, Gaepo Park, and Sungin Park were selected among the old neighborhood parks already established in Seoul. The evaluation indicators consist of quantitative indicators (12 factors classified into the three categories of the surrounding environment, the park characteristics, and the park facilities) and qualitative indicators (14 factors classified according to the five categories of accessibility, safety, convenience, activities, and amenities). These indicators were selected after conducting advisory meetings with experts in the field. The physical environment perception factors were evaluated by experts and investigators by field inspections and were rated on a three-point scale (high, medium, low). According to the results of the analysis, first, not only were exercise facilities and trails, but also various factors which support health activities, such as rest areas, leisure spots, and cultural facilities, as well as accessibility, cleanliness, and drinking water facilities are important indicators for health promotion. Second, even if the requirements are met for quantitative factors, several inconveniences hinder the actual implementation or use in the qualitative evaluation. Thus, both quantitative and qualitative evaluations must be simultaneously performed for the proper judging of the physical environment of a park. Third, upon conducting a qualitative evaluation of the physical environmental factors, score differences depended on the evaluated categories in each park. These differences show that indirect indicators, such as accessibility, safety, and facility convenience are insufficiently equipped compared to direct indicators, such as activity, which includes exercise facilities and fitness centers for health promotion. As the utilization rate of parks is increasing due to COVID-19, more efforts should be made to improve park services in the post-corona era. To promote such services, it is necessary to regularly evaluate parks based on both quantitative and qualitative indicators and to contemplate services not only through direct factors but also indirect factors and security measures.

A Study of the Conservation Policy and Management Status of Historic Gardens in England - Focused on the National Trust - (영국 역사정원 보전정책과 관리현황에 대한 연구 - 내셔널 트러스트를 중심으로 -)

  • This paper investigates the history, policy and status of the conservation of historic gardens in the National Trust in England and its implications for Korea. It was conducted in three phases as follows: First, related literature data was collected to understand the National Trust and its role in the conservation of historic gardens. Second, The National Trust Policy Papers: Gardens and Landscape Parks in 1996 was reviewed and analyzed into eight categories with a review of 216 gardens and interviews with gardener-in-charge via e-mail. Finally an understanding of the policy for the conservation of historic gardens was formed from the results of the previous phases, and implications were drawn from the integrated analysis guidelines of the policy and status. The key feature of the conservation of the National Trust's historic gardens is that the conservation process has been conducted systematically through acquisition, management, upkeep, advice and so on. Furthermore, the conservation principles are defined in a concise and accessible form. According to their practical conservation process and principles, the results of the National Trust activities are to appreciate the significance of the gardens and act with accountability; integration; managing change; access and participation; and training gardener and partnership. According to the results of its activities under the premise that the purpose of the conservation and the meaning of a garden do not differ significantly among nations, implications for Korea can be primarily suggested by three points as follows: First of all, a flexible approach to change in historic gardens should be managed. In response to inevitable and desirable change, anything that is added or transferred should be recorded for the future as much as possible. Therefore, everything must be recorded and any change should be managed. Second, is to provide sustainable access for the benefit for the people and visitors. The aim of conserving the gardens is for human's to eventually understand that the present generation just borrows the historic gardens before they are passed down. The ensuing implication is that people may enjoy the gardens educationally, aesthetically, and physically, and children can be continuously interested in historic gardens as apart of educating the future generation. Finally, the National Trust educates apprentice gardeners who will maintain the historic gardens and continuously keep the current garden staff up to date with workshops. This is in contrast to the day laborers who work for historic gardens in Korea. In practice, the maintenance of historic gardens is not a simple process. The gardener must understand the past, reflect the present, and prepare for the future. Therefore, gardeners deliver culture from generation to generation.

A Study on the Coexistance of Ganghak(講學) and Yusik(遊息) space of Oksan Confucian Academy, Gyeongju: Directed Attention Restoration Theory Perspectives (주의집중 피로회복이론의 장으로 본 경주 옥산서원 강학 및 유식공간의 일원적 공간성)

  • This study attempts to understand and explain how "Directed Attention Restorative Environment (DARE)" is managed and fostered in "Gang-Hak (講學)" and "Yu-Sik (遊息)" spaces both inside and outside of Oksan Seowon Confucian Academy, Gyeongju. Directed Attention is a pivotal element in human information processing so that its restoration is crucial for effective thinking and learning. According to Kaplan & Kaplan's Attention Restoration Theory, an environment, in order to be restorative, should have four elements: 'Being Away,' 'Extent,' 'Fascination,' and 'Compatibility.' We could confirm OkSan Seowon Confucian Academy has an inner logic that integrates two basically different spacial concepts of "Jangsu" and "Yusik" and thus fosters the Attention Restorative Environment. Particularly, the Four Mountains and Five Platforms (四山五臺) surrounding the premises provides an excellent learning environment, and is in itself educational in terms of the Neo-Confucian epistemology with "Attaining Knowledge by way of Positioning Things (格物致知)" as its principle precept, and of its aesthetics with "Connectedness with Nature" as its central tenet. This study attempts to recapture the value of Korea's cultural heritage concerning the Human/Nature relationship; and it may provide useful insights and practical guidelines/grounds in designing today's schools and campuses, where the young people's needs for the Directed Attention- and Attention Restorative- Servicescapes seem to be greater than ever.

The Meaning Landscape of the Three Religion Consilience of Confucianism, Buddhism, and Taoism Embraced in Cheongamsa Temple, Gimcheon (김천 청암사에 수용된 유·불·선 삼교 통섭(統攝)의 의미경관)

  • Based on the study on place name, meaning analysis of buddhist temple Palgyeng, and classifications of instructions and characteristics of writings on rocks, the main results of the study showed the following. Cheongamsa is located in the upstream of Muheulgugok Valley which was run by Hangang Jeong Gu(寒岡 鄭逑), a typical young man in the middle of the Joseon Dynasty, and overlaps with chief monk Byukam Lee Dukjin's(1896~?) object of Cheongamsa Palgyeng during Japanese colonial era. Including the mountain embracing Cheongamsa called Bullyeong-san, various characteristics of writings on rocks such as use of combination of place names including Sudosan, Seonlyeongsan, and Sinseondae, as well as Cheongamsa Temple, Bullyeongdongchun(佛靈洞天), Namuabitabul, Hogye(虎溪), Yeosan Waterfall(廬山瀑布), and Sejinam(洗 塵巖) show co-existence of Confucianism and Taoism mixed together in the temple. Especially for Cheongamsa Valley Hogye and Samsocheon(三笑泉) which is in the precincts of the temple, are realized as the symbol of the scenery of the three religion consilience of Confucianism, Buddhism, and Taoism through announcement using Hogyesamso(虎溪三笑) which originated from Yeosan Donglimsa, Jiangxi, China. Also, there are Yeosan Waterfall with a noble sense of place by negotiating with god, writing on rocks imprinted, and Yeosangyo(廬山橋) in Cheongamsa. As such, cultures of the three religion remain in various layers with the spirit of Hogyosamso symbolizing the consilience and coexistence of the three religion in Cheongamsa without the exclusiveness of Buddhism. Besides, the third precept of Yukhwagyeongbub, known to be practiced in Buddhist temples, which says "Do not only express self-assertion and ignore others" according to the dogma of working together in harmony, is in accordance with the spirits of Hogyesamso. As shown, Gimcheon Cheongamsa which is adorned with cultural landscapes of Hogyesamso, Gugokdongcheon(九曲洞天), and Palgyeng(八景), is not only good enough for the way of Buddhism and Confucianism but also for a place for the three religion consilience embracing the three religion.

A Characteristics of Maintenance Planning of Trees in Historical Landscape Forest of Royal Tombs of the Joseon Dynasty (조선왕릉 역사경관림 수목 정비 계획의 특성)

  • After UNESCO appointed Royal Tombs of the Joseon Dynasty to be World Cultural Heritages(2009), Cultural Heritage Administration in Korea established Management Office of Royal Tombs of the Joseon Dynasty(2012) and conducted Mid to Long-Term Plan on Conservation, Management, Utilization of World Heritage 'Royal Tombs of the Joseon Dynasty(2015)'. The report, as an implementation plan, provides detailed contents of the maintenance planning of Royal Tombs of the Joseon Dynasty. From this background, with a view to comprehending the characteristics of the maintenance planning of trees in historical landscape forests, this study extracted the contents related to the historical landscape forests of the 40 Royal Tombs of the Joseon Dynasty from the "Mid to Long-term Plan" and conducted literature research. The results of the study are as follows. First, from 2016, the short-term plans have provided detailed contents on logging, transplanting and planting trees in the plans divided by stages. On the other hand, the long-term plans, instead of presenting abstract contents repeatedly for each royal tomb, should seek vegetation landscape that each royal tomb should aim for. Second, since the areas that are in charge of the various functions of the royal tombs have been subjects to the maintenance planning, it is effective to establish a maintenance planning by separating functional areas instead of the comprehensive concept as historical landscape forests. Third, the maintenance planning of trees in historical landscape forest of the Royal Tombs of Joseon Dynasty is based on daily management such as density control and maintaining the shape of trees, which is necessary to sustain the forest. Also, due to the goal of preserving the pine forest, which is recognized as a prototype vegetation landscape, foreign species and other trees have been more cut down. With a few limited types of tall tree but few shrubs and flowers, it is characterized that the orientation toward aesthetic landscapes is insufficient in large green spaces. Fourth, according to the function of the tomb, it is divided into entrance area, ceremonial area, burial area and outer forest, and the contents of the maintenance planning are analyzed by basic conditions of tree management: prototype, ecology, functionality, and aesthetics. After studying the tree management characteristics of each area, four suggestions are made: understanding the diversity of trees that form prototype landscape as a management plan, sustainability of various forests adapted to ecological environment, convenience required in addition to ceremony and safety characterizing the Royal Tombs of Joseon Dynasty, and the necessity of access to aesthetic landscape on the tombs.
