  • 교육인정자원부가 부족한 교육재원 확보를 이유로 이미 위헌판결이 내려진 학교 시설 용지부담금 대신 아파트 사업자들에게 학교 시설 비용 일체를 부담하라는 새로운 해석으로 민간 건설사들의 강한 반발을 사고 있다. 기존의 대단지 아파트 입주민들에게 부담금을 전가하는 것은 위헌이라는 판결을 받은 바 있는 학교용지부담금이 다시금 쟁점화됐다.

Quality characteristics of whey Makgeolli by Kluyveromyces marxianus (Kluyveromyces marxianus에 의한 유청막걸리 품질특성)

  • This study was performed to analyze the processing and quality characteristics of whey Makgeolli prepared with different types of yeast and ratio of the whey content. Lactose content of yeast culture medium containing S. cerevisiae. was 1.36% whereas lactose content of yeast culture containing K. marxianus KCCM 12015 was very little. Yeast culture of both K. marxianus KCCM 35455 and K. marxianus KCCM 50700 did not produce lactose. Until the 10th day, ethanol production ability of S. cerevisiae, K. marxianus KCCM 12015, K. marxianus KCCM 35455, and K. marxianus KCCM were 0.31%, 2.51%, 2.53%, and 2.59%, respectively. Total acids content increased rapidly with the increase in the addition of whey content in the initial 2 days and then decreased during 4~10 days of fermentation. In the aspect of pH, the pH was rapidly decreased in the initial 2 days and then increased until 10th day of fermentation with the increase in whey content. Ethanol content of whey Makgeollis at 10th day of fermentation was the highest in yeast culture containing K. marxianus. From the sensory evaluation, the flavor score of whey Makgeollisin was higher than that of control. The color and taste scores were increased as the increase in the addition of whey. The comprehensive preference indicated that Makgeolli prepared with 100% whey was the best among other samples.

Comparison of Physicochemical Properties between Extracts and Soaked Liquor of Lespedeza cuneata G.Don (비수리(Lespedeza cuneata G.Don) 추출물과 담금주의 이화학적 특성비교)

  • Lespedeza cuneata (LC) is a herbaceous plant that grows throughout Korea. To investigate the physicochemical properties and the antioxidant activities of LC extracts and LC-soaked liquor (s. liquor), extraction with distilled water (DW) and ethanol was conducted and the extracts were compared with s. liquor. A total of 22 free amino acids from LC extract were detected, with the main ones being phosphoethanolamine 20.36>L-proline 18.02>ammonia 14.48>L-aspartic acid 12.96>${\gamma}$-amino-n-butyric acid 10.67%. The total flavonoid contents (TFC) and total phenolics contents (TPC) were in the order of s. liquor>DW>ethanol extract. The electron donating ability based on DPPH radical scavenging ability was highest for s.liquor, which equivalents 81.4% ascorbic acid in the order of s. liquor>ethanol>DW extract. The orders of ferric reducing antioxidant power and ABTS radical scavenging ability were proportional to the TFC and TPC of extracts, and in the order of s. liquor>ethanol>DW extract. The nitrite scavenging ability of s. liquor was highest among the three extracts (96.6% at pH 1.2), which was 2.6 times greater than that of DW extract.

Effect of the Water Quality on the Variation of Ascorbic Acid Content during Yulmoo Mul-kimchi Fermentation (담금수의 수질이 열무 물김치의 비타민 C 함량에 미치는 영향)

  • Yulmoo Mul-kimchi was prepared by fermentation of the mixture of 1 part of leafy radish and 2.75 parts of water. It is thought that during the kimchi fermentation both the biosynthesis and destruction of ascorbic acid occurred at the same time. So the ascorbic acid content in Kimchi broth was strongly influenced by the environment of the processing period. In the present studies, an attempt had been made to elucidate the effect of water quality on the content of ascorbic acid and the population change of microorganism during Mul-kimchi fermentation. Five kinds of water such as tap water, an underground water, one commercially available processed water, distilled water and triply distilled water were examined. Nevertheless there were no differences in the population of microorganism and the pattern of acid formation among the five different kind of waters, a large variation of ascorbic acid content was observed. The ascorbic acid content of Kimchi prepared with triply distilled water showed the highest of 7.2 mg% in contrast to 3.37 mg% in tap water kimchi, and 5.72 mg% in the kimchi using underground water which has relatively high concentration of Ca. These results suggested that pure water free of metal ions might prevent the destruction of ascorbic acid during the fermentation. The considerable amount of ascorbic acid in the Kimchi with underground water might be due to Ca ion in the water.

Characteristics of Byeok-hyang-ju made by various processing methods originated from ancient documents (고문헌 유래 벽향주의 제조방법에 따른 품질특성)

  • We investigated the temperature changes during processing and quality characteristics of seven preparations of Byeok-hyang-ju described in ancient documents. During fermentation, treatments with intervals longer than 7 days to the second mashing kept temperatures below room temperature. The process with the shortest interval (2 days) between the second and third mashings maintained a preparation temperature above $28^{\circ}C$ for the longest period. As fermentation proceeded, the pH gradually decreased. Titratable acidities increased prior to the second mashing, and then decreased. Amino acid levels increased gradually during all fermentations except for that of method 5 (the lowest level of raw material addition). Ethanol content increased rapidly to the time of second mashing with all methods except method 2. This method featured a short interval between the first and second mashing. Upon sensory evaluation, the best overall acceptability was provided by method 3.

Quality Changes of Traditional Doenjang Fermented in Different Vessels (전통 된장의 담금용기에 따른 숙성 중 품질변화)

  • Traditional doenjang was fermented in different vessels, and its quality characteristics were investigated during ripening. Fermentation vessels used were dark brown glaze pot, dark brown glaze pot with glass lid and plastic box. Water content of doenjang decreased during fermentation, with doenjang pepared in dark brown glaze pot with glass lid showed the highest water content reduction. Water-soluble nitrogen content $(4.56{\sim}5.80%)$ was the highest at 8 months fermentation and amino type nitrogen content continuously increased until 12 months, with doenjang in dark brown glaze pot higher than those in plastic box. Sensory evaluation revealed the quality of doenjang fermented in plastic box was significantly lower than others after 4 months.

Retardation of Kimchi Fermentation by the Extracts of Allium tuberosum and Growth Inhibition of Related Microorganisms (부추추출물의 김치발효 지연 및 관련 미생물 증식억제)

  • The effect of retarding the fermentation of Kimchi by the extract of leek(Allium tuberosum) were tested by measuring the changes in pH, acidity and total cell number as well as number of microorganisms involved in Kimchi fermentation such as Lactobacillus, Leuconostoc, Pediococcus, Streptococcus and yeasts. The changes of pH and acidity of Kimchi stored at $25^{\circ}C$ indicated that the shelf-life of Kimchi with leek extract was retarded by 1.5 days compared with Kimchi without leek extract. Growth of Lactobacillus, Leuconostoc, Pediococcus and yeasts in Kimchi were remarkably inhibited by adding the leek extract at the initial and the 1st day of fermentation. This result suggested the methanol extract of leek can be sucessfully used for the extension of shelf-life of Kimchi.

Effect of Ozone and UV Treatment of Groundwater on the Quality of Wine (지하수의 오존과 UV처리가 탁주의 품질특성에 미치는 영향)

  • Experiments using ozone are presented for the water purification and wine quality improvement. Advanced oxidation process results reveal water treatment by both ozone and UV radiation increases quality of the takju prepared using a Korean conventional nuruk than with ozone-treatment or convectional method only. Water quality was enhanced by ozone treatment, resulting in 85% reduction of hardness, and 30% increase in total glucose produced due to increased conductivity and biodegradability of water. Although initially decreased slightly due to oxidation of takju, higher than expected ethanol production was observed, with ozone plus UV treatment resulting in 20% higher production compared with other methods.

  • 우육 지방질의 산화에 대한 김치의 항산화성과 발효기간이 다른 김치의 항산화 관련성분의 변화를 살펴본 결과는 다음과 같다. 익힌 마쇄우육(CGM)에 발효기간이 다른 김치를 조합한 모델 시스템을 $4^{\circ}C에서$ 4주간 저장하면서 산화 양상을 살펴본 결과 가열우육의 지방질 산화에 대한 김치의 항산화성은 발효기간에 따라 달랐다. 특히 발효당일의 김치나 발효 16일의 김치 보다 7일간 발효된 김치의 항산화성이 더 높은 것으로 나타났다. 그리고, 발효진행에 다른 김치의 항산화성에서도 적당히 발효된 발효 7일 전후의 김치들에서 항산화성이 높았다. 김치발효에 따른 항산화 관련 성분의 변화를 살펴 본 결과, ascorbic acid는 담금 직후 10mg%이었으나 7일간 발효한 김치는 19.43mg%로 높았다가 그 이후에는 감소하는 것으로 나타났다. $\beta-caro-tene은$ 담금 직후 0.315mg%이었으나 발효가 진행됨에 따라 감소하는 것으로 나타났으며 총 phenolic compounds는 담금 직후나 과숙 김치에서 보다 7일간 발효한 김치에서 오히려 높았다. 따라서 발효가 진행됨에 따라 김치의 항산화 작용에 기여하는 항산화 관련성분은 ascorbic acid, chlorophylls 및 phenolic compounds 등인 것으로 생각된다.

A Study on the Gas Chromatographic Analysis of Alcohols and Organic Acids during Takju Fermentation (가스 크로마토그래피에 의한 재래주 발효중 알코올과 유기산 분석)

  • Takju, a Korean traditional wine, was prepared by using nuruk and Koji which were inoculated with Aspergillus kawachii and Aspergillus shirousamii. Those chemical composition such as alcohols and organic acids were determined with gas chromatography to investigate the variation of its content by the fermentation. Alcohol such as methyl, ethyl, n-propyl, i-butyl, i-amyl alcohol were detected in the most takju mash samples. Alcohol contents in the groups fermented with KNR and SNR were slightly higher than KKR, SKR groups. Lactic acid were concentrated and organic acids such as pyruvic, oxalic, malonic, succinic, maleic, malic, ${\alpha}-keto$ glutaric acid were also detected in the most samples. The pH was lowest in the KKR group. The total acid content was slightly decreased at the later fermentation and was highest in KKR. The content of minerals were highest in the WNR and BNR groups. Throughout fermentation the content of potassium and magnesium varied greatly with the tested groups.
