혈중 콜레스테롤 저하 기능성 요구르트의 특성에 관한 연구

  • 본 연구는 ${\beta}-CD$를 이용하여 콜레스테롤을 제거한 우유에 EPO의 첨가비율을 달리하여 제조한 요구르트의 이화학적 변화와 물성 및 관능적 특성을 알아보는 것과 동물실험을 통해 혈중콜레스테롤 저하 기능을 관찰함으로서 혈중콜레스테롤 저하 요구르트를 개발하기 위하여 실시하였다. ${\beta}-CD$를 이용하여 콜레스테롤을 제거한 우유에 달맞이꽃 종자유를 첨가하여 제조한 요구르트는 저장기간이 지남에 따라 품질이 저하되었으나, control과 유사한 경향을 보여 전체적으로 긍정적인 결과로 나타났으며, 랫트 실험결과 HDL-cholesterol은 대조군과 유의적 차이는 없었지만 EPO를 섭취하기 전보다 21.4mg/dl 증가하였고, 총콜레스테롤 농도와 중성지질의 농도가 감소한 결과로 보아 LDL-cholesterol수치가 저하되었음을 나타내므로 혈중 콜레스테롤 저하 기능성 요구르트로서의 작용을 가지고 있다고 사료된다.

가교화 ${\beta}-CD$를 이용한 콜레스테롤 제거와 달맞이꽃 종자유와 phytosterol를 이용한 혈중 콜레스테롤 저하에 관한 연구

  • 본 연구는 크림에 가교화 ${\beta}-CD$ 처리로 콜레스테롤을 제거 시킨 후 phytosterol 과 EPO 8%를 첨가하여 제조한 버터의 저장 기간 중의 이화학적 특성, 물성, 관능적 특성과 혈중 콜레스테롤 저하 기능을 관찰하기 위하여 수행되었다. 가교화 ${\beta}-CD$를 이용하여 평균90%의 콜레스테롤을 제거한 후 phytosterol 과 EPO 8%을 첨가한 버터의 저장기간이 경과할수록 지방산화도는 증가하였으나, 색도, 물성의 조직 부분이나 관능평가 시 texture, color 부분에서는 유의적 차이를 나타내지 않았다. 그러나 이미 이취를 발생시켜서 바람직하지 않은 결과를 보였으나, 동물 실험 결과 phytosterol 과 EPO 8%를 첨가한 버터 섭취 후 혈중 콜레스테롤을 저하 기능이 있는 HDL-콜레스테롤이 증가하고, 반면에 혈중 콜레스테롤을 증가시키는 기능이 있는 LDL-콜레스테롤과 중성 지방이 감소를 관찰할 수 있었으므로 혈중 콜레스테롤 저하 기능을 가진 버터의 개발이 가능 할 것으로 사료된다.

Quality Characteristics of Fermented Wild Grass Juice (산야초 발효액의 품질 특성)

  • The quality characteristics, enzyme activity, and antioxidative activity of fermented wild grass juices were investigated during fermentation and ripening for 6 months. Fermented wild grass juice was prepared from wild grasses (Oenothera biennis, Portulaca oleracea, and Rhus verniciflua) and sugar. Wild grasses and sugar mixed at the same ratio (1:1, w/w) and ripened at $20^{\circ}C$ for 3 months after fermentation for 3 months at $20^{\circ}C$. The $^{\circ}Bx$ of all fermented wild grass juices (FWGJ) decreased during fermentation. The pH of all FWGJ decreased gradually during fermentation and did not show any significant difference during ripening. Viscosity of FWGJ increased during fermentation but decreased during ripening periods in all tested samples. Total viable cell of FWGJ decreased after fermentation for 1 month, whereas lactic acid bacteria were not detected during fermentation. Enzyme activity was lower than 1 unit during fermentation and ripening period in all tested FWGJ samples. Enzyme activity of commercial FWGJ (Acanthopanax sessiliflorum, Oenanthe javanica, Plantago asiatica L., Platycodon grandiflorum, Orostachys japonicus A.) showed lower activity of 1 unit following invertase, cellulase, and amylase activity.

Analysis of Weed Vegetation in Vicinity of Abandoned Mines (폐광산 주변에 발생하는 잡초 식생의 특징)

  • Field study to find appropriate species for phytoremediation and phytomonitoring with higher plants was carried out at four abandoned metalliferous mines. In order to know the tolerant degree of plant resources collected at heavy metal polluted sites, soil and plants were sampled at same sites and metal concentrations were determined. Most serious heavy metal polluted in the sites was As that showed range from 29.1 to 1372.2 mg $kg^{-1}$ in investigated area. The dominant species were Oenothera biennis, Commelina communis, Persicaria senticosa, Conyza annuus, Artemisia princeps, and Erigeron canadensis. These species were predominant species that were proliferated in any survey area. Compared with other sites, vegetational characteristics of Dal-Seong, a mine site abandoned early in 1973, showed higher diversity index and lower dominance index. Distributions of weed species according to life cycle indicated that the proportions of perennial plants were lowered in every investigated site. Although the polluted areas were distant from each other, similarity indices among these vegetation were relatively similar. These results means the vegetations of abandoned mine areas were beginning stage of vegetational succession, and the vegetations were adversely affected by disturbance with heavy-metals and lack of water in soil.

Quality Characteristics of Oenothera biennis Juice Fermented at Different Temperatures and Sugar Concentrations (발효조건을 달리한 달맞이꽃 발효액의 품질 특성)

  • The quality characteristics of Oenothera biennis juice (OJ) fermented with various concentrations of sugar solutions (50, 60, and $70^{\circ}Brix$) and at different temperatures (20 and $30^{\circ}C$) were investigated. The sugar concentration and pH of fermented OJ decreased during fermentation and more rapidly decreased at $30^{\circ}C$ rather than at $20^{\circ}C$. The number of total bacteria increased during 6 days of fermentation and decreased gradually thereafter, and coliform bacteria were not detected after 8 to 10 days of fermentation at 20 and $30^{\circ}C$. Enzyme activities (invertase, amylase, and cellulase) of fermented OJ with $50^{\circ}Brix$ sugar solution were the highest among the different treatments after fermentation for 4 days at $30^{\circ}C$. Total polyphenol content and DPPH radical scavenging ability increased during fermentation. The highest total polyphenol contents and DPPH radical scavenging ability were 7.1 mg TAE/mL and 58.6%, respectively, when fermented at $30^{\circ}C$ with $50^{\circ}Brix$ sugar solution.

Screening of Medicinal Plants with Antifungal Activity on Major Seedborne Disease (주요종자전염병 억제를 위한 항균성 약용식물탐색)

  • Antifungal activity on major seedborne diasease of crops was screened by the treatment of the extracts from 50 medicinal plants in vitro and in vivo. The extracts of garlic and taxus, Rheum undulatum, Achiranthes japonica, Glycyrrhiza uralensis, Oenothera lamar kiana treated with the blotting filter paper and water agar methods inhibited the growth of Pyricularia oryzae, Alternaria sesamicola, Colletotrichum gloeosporioides, and Alternaria brassicicola among the tested plants. Antifungal activities on infected seeds by soaking methods were shown even at the dilution of the extracts by 10 times. The activity was the highest in soaking seeds at $25^{\circ}C$ for 24 hours. The effect of plant extract on seed germination was not significant as compared with untreated seed. However, early growth of seedling was increased by the treatment of extracts. The extract of taxus slightly inhibited the seed germination of radish and chinese cabbage but those of Achirunthes japonica, Glycyrrhiza uralensis and Oenthfera lamarkiana showed severe damage on the seed germination and early growth of seedling.

Two Newly Naturalized Species in Korea: Lolium rigidum Gaudin (Poaceae) and Oenothera rosea L'Hér. ex Aiton (Onagraceae) (한반도 미기록 귀화식물: 댕돌보리와 애기분홍낮달맞이꽃)

  • Two unrecorded naturalized species, Lolium rigidum Gaudin (Poaceae) and Oenothera rosea L'H$\acute{e}$r. ex Aiton (Onagraceae) were newly reported in Korea. L. rigidum, 'Daeng-Dol-Bo-Ri', was found at roadside of Yesong beach, Yesong-ri, Bogil-myeon, and roadside of Myeongsasimni beach, Sin-ri, Sinji-myeon, in Wando-gun, Jeollanam-do. It was distinguished from L. mutiflorum Lam by spikelet 10-20 mm long, florets 2-10(-13), and obtuse lemma, awn absent or up to 3-8(-10) mm. O. rosea, 'Ae-Ki-Bun-Hong-Nat-Dal-Mat-I-Kkot', was found in side of Wondong wetland, Yongdang-ri, Wondong-myeon, Yangsan-si, Gyeongsangnam-do. This taxon was distinguishable from other Oenothera in Korea by following combination of characters, stem erect to ascending, petal 5-12 mm long, pink to bright purple. Descriptions and illustrations of the two taxa and their photographs in the habitat are provided along with a key to the species of Lolium and Oenothera from Korea.

Vascular Plant of the Construct-Reserved Site for Eco-Forest of Mt. Daeun in Yangsan-si, Gyeongsangnam-do (경남 양산 대운산 생태숲 조성예정지의 관속식물상 연구)

  • The purpose of this study is to offer the basic information for the rational management plan in construction and running of eco-forest by analyzing the vascular plant of the constructreserved site of eco-forest in Mt. Daeun, Yangsan-si, Gyeongsangnam-do. The vascular plants were 280 taxa; 75 families, 179 genera, 245 species, 3 subspecies, 28 varieties and 4 forma. The Korean endemic plants were 6 taxa including Pseudostellaria coreana, Stewartia pseudocamellia, Primula modesta var. hannasanensis and so forth. The rare plants were Juniperus chinensis var.sargentii, Prunus yedoensis, Primula modesta var. hannasanensis, Chionanthus retusus and Scopolia japonica. The naturalized plants were 14 taxa including Rumex acetosella, Lepidium apetalum, Trifolium repens, Oenothera biennis, Veronica persica and so forth. The invasive alien plants were Rumex acetosella and Ambrosia artemisiifolia. Specific plant species by floristic region were total 24 taxa; Prunus yedoensis and Primula modesta var. hannasanensis in class V, Juniperus chinensis var. sargentii and Acer pictum subsp. mono in class IV, 5 taxa including Dryopteris bissentiana, Scolopolia japonica and so forth in class III, Pseudostellaria coreana, Potentilla dickinsii and Chionanthus retusus in class II, 12 taxa including Acotinum jaluense, Clematis patens and so forth in class I.

Screening of ${\gamma}-linolenic$ Acid Resources and Fatty Acid Composition in Korean Native Medicinal Plants Resources (국내 약용자원식물의 지방산 조성과 ${\gamma}-linolenic$ acid 탐색)

  • Fatty acid composition analysis was carried out from 60 species of Korean native medicinal plant to screen ${\gamma}-linolenic$ acid(GLA) resources. Oenothera odorata, SymPhytum officinal, and Lithospermum erythrorhizon contained ${\gamma}-linolenic$ acid with 9.5%, 3.5%, 7.2% of total fatty acid content, respectively. The vegetative organs usually contained higher level of ${\alpha}-linolenic$ acid than seeds. Some plants were found to be excellent source of unsaturated fatty acid.

  • The flora of vascular plants investigated in Mt. Hyangro-Bong was 450 taxa belonging to 86 families, 254 genera, 393 species, 2 subspecies, 51 varieties, 4 formae. Among the investigated vascular plants, Korean endemic plants (Carex okamotoi, Salix koriyanagi, Clematis chisanensis, Aconitum pseudo-laeve var. erectum, Viola diamantiaca, Sanguisorba hakusanensis, Vicia venosissima, Patrinia saniculaefolia, Hanabusaya asiatica, H. asiatica for. alba etc.) were 23 taxa; rare and endangered plants(Disporum ovale, Lilium distichum, Trillium kamtschaticum, Gastrodia elata. Clematis chisanensis, Rodgersia podophylla, Rosa marretii, Viola diamantiaca, Syringa wolfii, Hanabusaya asiatica etc.) were 17 taxa; naturalized plants(Dactylis glomerata. Poa pratensis, Rumex acetosella, Gypsophila oldhamiana, Lepidium apetalum, Oenothera odorata, Aster pilosus, Carduus crispus, Erigeron annuus, Taraxacum officinale etc.) were 14 taxa.
