우리는 흔히 병서에 나오는 '자기를 알고 상대를 알면 백번 싸워 백번 이긴다.'라는 말은 알면서도 실제 실행에 옮기지는 못하는 경우가 너무도 많다. 양계를 하면서도 달걀의 영양가를 모르고 있으며 계란의 소비확대 운동을 한다 하면서도 계란의 진가를 너무도 모르고 있다. 양계인 부터 계란의 진가와 다른 식품의 가치를 정확히 알 때에라야만 계란의 소비는 신장될 수있을 것이다. 이런 뜻에서 본고는 계란에 관한 모든 것을 정리한 지침서가 될 것으로 연재로 게재한다.

이번 육계파동을 전후하여 여러가지 대책이 많았다. 그 중에서 많은 양계인의 시선을 집중한 것이 달걀 및 닭고기의 해외수출 문제였다. 그러나 본 협회에서는 이 문제를 국가손익의 차원에서 외화손실이 아닌가하는 고려 때문에 본지에 게재를 주자하였다. 이제 1차 수출이 끝난 현시점에서 관계자를 모시고 그에 관한 여러가지를 알아보기로 하자.

종계나 채란계의 사육목적은 전산란기간중 더 많은 수의 달걀과 더욱 품질이 좋은 달걀을 얻는데 있다. 그러나 이들은 장시간 사육될 뿐만 아니라 발육단계별로 질병에 대한 감수성이나 질병에 의한 후유증이 다르기 때문에 질병관리는 그만큼 더 어려워진다, 왜냐하면 육추기때의 추백리나 전염성기관지염 또는 감보로병 등의 감염은 즉각적인 피해가 있을 수도 있지만 그 후유증은 산란기에 이르러서야 관찰되기 때문이다. (중략)

어느 나라이든 그 나라의 전통과 습관에 얽매여 식생활에 있어 금기로 하는 것이 있다. 물론 이러한 전통과 습관이 전부가 불합리한 것은 아니지만 저 개발 국가에서 가장 중요한 단백원인 축산물을 기피하는 경우가 있다. 적어도 인도를 봐도 종교적인 taboo 때문에 소를 우상시하여 식용화 하지 않고 있다. 이것은 비단 일국에 국한된 것만은 아니다. 여기 소개하는 동남아시아 및 아프리카의 일부지방에서 달걀이나 닭고기를 taboo시하는 것도 하나의 전통에 얽매인 현상이라 하겠다. 이러한 불합리한 점은 적극 계몽하여 동물성 단백질의 효용을 높여야 하겠다.

인체세포는 오묘한 능력을 가지고 있다. 산성물질이 외부에서 들어오면 그것을 중화시켜 일정한 산도를 유지하며 알칼리성 물질이 들어오면 역시 그것을 중화시키는 완충 능력이 있다. 그러므로 달걀이 산성식품이라 문제라는 생각은 어디까지나 편견이다. 새로운 체세포를 합성하는 신진대사를 위해 절대적으로 필요한 것이 필수아미노산이며 그것을 가장 이상적으로 가지고 있는 것이 달걀이라는 것은 누구나 다 아는 사실이다.

This study prepared steamed egg salted with different ratios of salt and saeu jeot, and examined the effects of the saeu jeot content on the quality characteristics of steamed egg through the analysis of moisture content, color, pH, texture profiles, and sensory evaluation. Moisture contents of steamed egg samples decreased with increased percentage of saeu jeot. Hunter color values of L(lightness) and b(yellowness) decreased with increasing in the percentage of saeu jeot. Also the pH of samples increased with increased saeu jeot. Texture profile analysis resulted that the hardness, chewiness, and gumminess decreased significantly with the increase of saeu jeot content. As a result of attribute difference test, appearance(yellowness and sleekness) decreased with the increase of saeu jeot. Most characteristics of flavors(roasted nutty smell, fishy smell, roasted nutty taste, saltness, fishy taste, umami) increased with the increase of saeu jeot. The steamed eggs salted with the same proportion of salt and saeu jeot showed the highest overall acceptability. The results are expected to be used in developing steamed egg products and preparing processed egg dishes.

The edible ectomycorrhizal mushroom Amanita javanica is a valuable species protected by forest law in Korea. However, basic characterization data on its use as an important forest resource has been limited. This study was performed to determine mycelia growth characteristics of the domestically isolated Amanita javanica strain NIFoS 1267 on potato dextrose agar media under diverse culture conditions. Physical factors temperature, pH, and light, as well as chemical factors salts, heavy metals, and pesticides were examined for their effects on the growth of the mushroom strain. The mycelia of A. javanica strain exhibited optimal growth when cultured in dark at 30℃ in media with a pH of 5-6. Normal levels of growth were observed in media containing up to 2% saline. At a heavy metal ion content of 50 ppm, mycelial growth was not affected by arsenic ion but was affected by cadmium and lead ions. In the tests performed with two pesticides used in Korean forests, the growth of the mushroom strain was not affected by the presence of abamectin, but was inhibited in media containing acetamiprid, emamectin benzoate, or thiacloprid. These results are expected to facilitate artificial cultivation of A. javanica as a new commercial product.

Avian influenza (AI) is notorious for its rapid infection rate, and has a serious impact on consumers and producers alike, especially in poultry farms. The AI outbreak, which occurred nationwide at the end of 2016, devastated the livestock farming industries. As a result, the prices of eggs and egg products had skyrocketed, and the event was reported by the media with heavy emphasis. The purpose of this study was to investigate the correlation between the egg price fluctuation and the keyword changes in online news articles reflecting social issues. To this end, we analyzed 682 cases of AI-related online news articles for fourteen weeks from November 2016 in South Korea. The results of this study are expected to contribute to understanding the relationship between the actual price of eggs and the keywords from news articles related to social issues.

강한 지진 하에서 효율적으로 거동하도록 유도하는 연구중의 하나로서 개구부를 가진 합성보의 이력거동을 조사하고 있다. 직사각형 개구부를 가진 합성보에 대한 연구를 발전시켜 에너지 소산능력이 보다 큰 달걀형 개구부를 가진 합성보에 대한 연구를 수행하였다. 실험적 연구와 비선형 FEM 해석 연구 모두가 그러한 합성보의 연성도를 입증하였다. 본 연구는 달걀형 개구부를 가진 합성보의 강도와 초기강성도를 산정하는 약산식을 제시하였고, 그 결과를 실험 및 비선형 FEM 해석의 결과와 비교 분석하였다.
