Changes in Compositions of Fatty Acids According to Drying Methods of Mugwort (Artemisia asiatica Nakai) (쑥의 건조방법(乾燥方法)에 따른 지방산(脂肪酸) 변화(變化)에 관하여)

  • This study was carried out to investigate changes in the compositions of fatty acids according to the different drying methods of raw mugwort. Raw mugwort from Kang-wha was dried with four methods such as sun-drying, shady sun-drying, heated oven-drying and freeze-drying. Total contents and fatty acid compositions of the ethyl ether extracts from the dried mugworts were examined. Total contents of the ethyl ether extracts showed remarkable differences with drying methods; freeze-dried mugwort had the highest content (5.60%), while oven dried mugwort revealed the lowest content (2.45%). Eleven fatty acids and four unknown peaks were identified by gas-liquid chromatography; major fatty acids were linoleic acid, linolenic acid and palmitic acid. Fatty acids of mugworts dried by 4 different methods were the same in kinds, but different in their compositions. The content of polyunsaturated fatty acids $(C_{18:2}+C_{18:3})$ was the highest and the loss of low volatile fatty acids was the least in mugwort dried by the freeze-drying method. The volatile fatty acids considerably decreased in oven-dried mugwort. However, the contents of polyunsaturated fatty acids were a little higher in oven-dried mugwort than in sun-dried and shady sun-dried mugwort, and the lowest in sun-dried mugwort.

A Study on the Design Parameters of a Gasket and Innercase of a Refrigerator to Reduce Dew Generation on the Outer Surface (표면의 이슬 맺힘 저감을 위한 냉장고 가스켓 및 냉동냉장실 내벽 구조개선에 관한 연구)

  • Current refrigerators are designed to have thin doors and walls to facilitate user convenience and increase inner storage space. However, the thin doors and walls gives rise to the problem of dew generation on the outer surface of a refrigerator due to a large critical temperature difference between the outer wall and the room air; So far, an electric heater is commonly used for making the dew to evaporate; in this case, the heater inevitably requires additional electrical power. We propose a new approach to reduce the dew generation in a refrigerator by redesigning the gasket and varying the thickness of the inner case of the refrigerator. The results of simulations performed in this study indicate that the surface temperature in the region where dew was generated was increased by approximately $0.39{\sim}3.07^{\circ}C$ without the use of a heater.

Effects of freezing-storage temperature on the shelf life of mackerel fish (냉동 저장 온도가 고등어의 저장성에 미치는 영향)

  • The purpose of this study was to evaluate changes in the quality characteristics of mackerel fish fillet under freezing storage conditions. The changes in product quality were determined by measuring pH, volatile basic nitrogen (VBN); thiobarbituric acid (TBA), lightness ($L^*$), redness ($a^*$), yellowness ($b^*$) values, shearing force, and microbiological evaluation (Total Plate Count, TPC) during 21 days of storage at -20, -5, and $-1^{\circ}C$, and their shelf-lives were established. TPC as an effective quality indicator was used to estimate the shelf-life via linear regression analysis. The TPC increased steadily with increasing storage periods at every temperature (p<0.05) and showed a significant relationship with temperature at $-1^{\circ}C$ (r=0.949), $-5^{\circ}C$ (r=0.919), and $-20^{\circ}C$ (r=0.905). Therefore, based on TPC, the shelf life of the mackerel fillet was noted to be 32 days when stored at $-1^{\circ}C$, more than 51 days when stored at $-5^{\circ}C$, and about 2 months when stored at $-20^{\circ}C$.

The Effect of Freezing Rates on the Physico-Chemical Changes of Beef during Frozen Storage at $-20^{\circ}C$ (동결속도에 따른 쇠고기의 냉동저장중 이화학적 변화)

  • In order to study effect of freezing rates on the quality changes such as pH, TBA value, free fatty acids and protein extractability, cylindrical chopped beef logs with 10cm of diameter and 10cm of height were frozen at three freezing rates(0.97cm/hr, 2.05cm/hr, 3.71cm/hr)using air blast freezer. Physicochemical changes of frozen meat were investigated during forzen storage at $-20^{\circ}C$ for 16weeks. Results on pH change showed $0.1{\sim}0.2unit$ increase at the 16th week of the frozen storage and the change was smaller with the increasing freezing rates. Free fatty acids content and TBA value also were increased during forzen storage, but they were minimal at 3.71cm/hr freezing rate. Correlation coefficient between TBA value and free fatty acids content were highly significant(r=0.804). After 16weeks of storage, extractibilities of salt soluble protein were decreased by 17.7%, 6.1% and 1.6% at freezing rates of 0.97, 2.05 and 3.71cm/hr, respectively. On the other hand, extractabilities of water soluble protein were decreased by 26.0%, 21.2% and 18.5%, respectively. The effect of freezing rates on the protein extractability appeared to be greater in salt soluble protein than in water soluble protein, but freezing denaturation was more rapid in water soluble protein.

  • Cryogenic particle detectors have recently been adopted in radiation detection and measurement because of their high energy resolution. Many of these detectors have demonstrated energy resolutions better than the theoretical limit of semiconductor detectors. We report the development of alpha spectrometer using a micro-fabricated magnetic calorimeter coupled to a large-area particle absorber. A piece of gold foil of $2{\times}2{\times}0.05mm^3$ was glued to the paramagnetic temperature sensor made of sputtered Au:Er film to serve as an absorber for incident alpha particles. We performed experiments with 241Am source at cryogen free adiabatic demagnetization refrigerator (CF-ADR). A high energy resolution of 6.8 keV in FWHM was obtained for 5.5 MeV alpha particles.

  • To determine and improve the holding machinery for the productin of convenient food (Dosirak) making Compnay in Seoul and Kyeongkido, a survey was conducted of 16 relative companys in 1986. The majority of the holding machinery are composed to work table, sink, rice cooker and fryer. It is necessary that the machinery are reinforced like packaging machine, air cleaner, cold and refrigeration room, sanitary arrangements.

  • When the temperature of a flange in a refrigerator is reduced to the dew point, condensation is generated on the flange. Generally, hot lines, having a temperature of $35^{\circ}C$, are located near the flange to increase its surface temperature above the dew point. Hot lines are installed in close contact with the flange in order to increase the heat transfer from the hot lines to the flange surface. Through this work, the effects of the hot line shape and installation conditions, including a gap between the hot line and flange, and the function of a spacer in the inner case of the refrigerator were investigated. Additionally, an optimal shape of the inner case for easy assembling is proposed considering the contact between the hot line and flange.

Continuous-Flow Analysis for Determination of Nitrate Using Hydrazine-Copper Method in Plan (Hydrazine-Copper 방법을 이용한 연속흐름제어장치를 통한 식물체의 nitrate 분석)

  • This study is to describe continuous-flow analysis (CFA) for the determination of nitrate using hydrazine-copper in plant material and to test precision of this method compared with that of methods, which are RQflex method and salicylic acid method. Samples were leaves of watermelon, cucumber, melon and tomato. Nitrate values measured by the RQflex method were greater than those measured by CFA or salicylic acid method. The correlation of nitrate values between those measured by CFA and salicylic acid method was $R^2=0.9671$, and those measured by CFA between those measured by RQflex method was $R^2=0.9739$. Recovery rate of nitrate added to tissue extract by CFA method was $99.7{\pm}0.25%$.

Freezing and Deflection Characteristics of Flexible Pavement Structure Using Frost Model Test (동상모형실험을 통한 아스팔트 포장체의 동결 및 처짐 특성)

  • In this paper, the frost heaving and thawing characteristics of flexible pavement structure were evaluated in the large scale freezer which have a specification of temperature range $-20^{\circ}C{\sim}10^{\circ}C$ and $3.2m(L){\times}3.2m(B){\times}2.4m(H)$ in size. The insulated steel box with the size of $0.9m(L){\times}0.9m(B){\times}0.9m(H)$ was used to simulate actual pavement road structure. The variation of temperature, frost heave amount and frost heave pressure were measured through the instrument of TDS-602 data logger. LFWD (light falling weight deflectometer) was used to determine the change of deflection due to the frost heaving and thawing. Furthermore, the influence of aggregate layer to the freezing of the subgrade soil was studied to verify the function and effectiveness of the anti-freezing layer.

NMHCs measurement using a cryogenic concentration system and application on gas samples (저온농축장치를 이용한 NMHCs의 측정법과 가스 시료에 적용)

  • In this study, we have developed a cryogenic concentration system for the analysis of non-methane hydrocarbons (NMHCs) in air sample. NMHCs with nmol/mol level of concentrations in the atmosphere were quantified by a comparative method with certified reference gas mixture. GC/FID with cryogenic concentration system operated in the range from $-67^{\circ}C$ to $180^{\circ}C$ was adopted. After cryogenic concentration, a fast desorption by heating could achieve a large amount of sample injection into the GC/FID. The linearity of the system was verified with the peak areas of NMHCs of the concentration amount of sample. The reproducibility is less than 10% and the limit of detection (LOD) is 0.1 nmol/mol. For the application of this system, we analyzed NMHCs in gas samples taken from air and soil in Daejeon, Seosan and Goheung.
