It is very important to minimize the acid value of oil in the oil and fat industry, because acid value of oil products are a indicator quality. This study was performed to investigate change of moisture content, acid value and free fatty acid content by drying condition such as drying method, temperature and drying time on steamed duck egg york. Also, change of fatty acid composition by acid value. The acid values, moisture contents and free fatty acid contents were showed comparatively lower value by spray drying and freeze drying than by steam drying. but difference that keep in mind between each drying method was not looked. Whereas moisture content, acid value and free fatty acid content of effect of drying temperature reaches in lowest value. also, did not show change until dry 12hours reaching to lowest value by 3.1, 3.0% and 0.98% after dry 9hours both moisture content, acid value and free fatty acid content. Also, acid value increase, free fatty acid was increased, where unsaturated fatty acid showed that decrease rapidly.
The purpose of this study was to evaluate the effect of dietary ceramic powder on laying performance, Pathogenic bacterial (E. coli, salmonella) counts in caecal contents and excreta, malodorous substances $(NH_3,\;H_2S,\;VFA)$ in excreta and fatty acid composition of e99 yolk in laying hens. Three hundred sixty layers at 34 weeks of age were divided into three groups of 120 hens each and each group was fed diets containing 0 (control), 0.4, or 0.8 ceramic powder for six weeks. It is concluded that $0.4\%$ ceramic powder supplementation of diets decreased of E. coli, salmonella counts in the intestine and emission of $NH_3$ and VFA gas from excreta, and improved the laying Performance and ratio of egg yolk fatty acids contents.
A study was conducted to investigate the effect of supplementing earthworm meal (EWM) on the performance of laying hens and fatty acid composition in egg yolks. A total of 360 laying hens at 55 weeks of age were fed the experimental diets containing 0.0% (Control), 0.1% and 0.2% of EWM for 5 weeks. Eggs were collected and weighted every day and egg production and feed conversion were recorded every weeks during the experimental period. However fatty acid composition of egg yolk were measured at last week of experimental period. Amount of feed intake tended to increase by supplemental EMW, but feed conversion ratio of birds fed EWM was not different among three groups. Average egg production seemed to increase and significantly improved (P<0.05) when fed a 0.1% EWM and 0.2% EWM, respectively. Average egg weight was prone to decrease when fed a 0.1% EWM compared to that fed a 0% (control) or 0.2% EWM. Average daily egg mass tended to improve by the addition of EWM. It was more increased in 0.2% EWM treatment than 0.1% EWM. The ratio of egg yolk n-6/ n-3 fatty acids contents was 5:1 fed a 0.1% and 0.2% EWM. But these ratio was 10:1 in control group. It is concluded that 0.2% earthworm meal supplementation in the 55 weeks old laying hens diet, improves the laying performance and ratio of egg yolk n-6/ n-3 fatty acids contents (P<0.05).

An experiment was conducted to investigate the effect of fermented garlic solution (FGS) on the performance, egg quality and blood profiles of laying hens in the finishing period. In total, 432 Lohmann Brown hens aged 79 weeks were equally distributed into four dietary treatments with six replicate. Hens were fed the basal diet containing 2,750 kcal/kg of ME and 16% of CP, which was supplemented with either 0% (control), 0.05%, 0.10% and 0.20% FGS from 79 to 83 weeks old. Laying performance, egg quality, yolk fatty acids and serum characteristics were analyzed at the end of experiment. Egg production and feed conversion was numerically improved in FGS supplementation treatments compared to those in the control, but were not statistically different. The albumen height and Haugh unit showed significant increase (P<0.05) in the FGS supplementation groups. The concentration of saturated fatty acid decreased in the yolks of birds fed FGS (P<0.01), whereas the unsaturated fatty acid (UFA) and mono-UFA contents were significantly higher (P<0.01) in those treatments than in the control. Significantly lower natural fat and cholesterol in serum were observed in birds fed the 0.20% FGS supplementation diet (P<0.01). However, the high-density lipoprotein (HDL) cholesterol increased in both the 0.10% and 0.20% FGS supplementation groups. In addition, interleukin-2 mRNA and CD4+/CD8+ level in serum which were cellular immunity indicators showed statistical differences (P<0.01) among treatments and a higher concentration in the 0.10% and 0.20% FGS groups than in the control. Thus, it can be concluded that dietary supplementation of FGS improved egg quality and stimulated immune response in mature laying hens.
A layer feeding trial was conducted for 10 weeks to investigate the effects of the addition of corn distillers dried grains with solubles (DDGS) to layer diets on the laying performance, egg qualities, and yolk fatty acid composition. Nine hundred Hyline Brown layers, 24 weeks of age,were randomly allotted to 20 replicate laying cages, 45 birds per replicate. There were four diet treatments (0, 10, 15, and 20% DDGS), and five replicates per treatment. All experimental diets were prepared to contain iso-protein (17%) and iso-calorie (TMEn 2,780 kcal/kg). The use of DDGS up to 20% level in layer diets did not exert any influence on feed intake, laying rate, total egg mass, mean egg weight, and feed conversion ratio. DDGS did not exert any influence in weight of egg, breaking strength, and color of eggshell. The albumen height and Haugh unit was not influenced by DDGS addition. The yolk color was significantly increased by DDGS supplementation. As the DDGS level increased, the oleic acid content decreased, and the linoleic acid increased (P<0.05). The degree of saturation of yolk fatty acids was not affected by dietary DDGS. The inclusion of DDGS up to 20% in layer diets resulted in the decrease of feed cost per kg without any effect in the laying performance. In conclusion, the use of DDGS up to 20% level in layer diets could replace corn and soybean meal without any harmful effect on the laying performances.
This study was performed to investigate the effects of Undaria pinnatifida on the hysicochemical properties in egg from laying hens fed with $5\%,\;10\%$and $15\%$ supplementation, respectively. The increased amount of Undaria pinnatifida resulted in the decreased weight of egg, expecially in white ones. Darkness, greenness, and blueness of egg yolk and white were increased with the addition of Undanria pinnatifida, and such color changes were predominantly observed in egg york. Among the analyzed minerals, the contents of Ca, Fe and K were increased to $286.6\;mg\%$, $72\;mg\%$ and $430.6\;mg\%$, respectively. But amount of p was reduced to $134.2\;mg\%$. Total cholesterol contents were not significantly changed. Major fatty acids were palmitic, oleic and linoleic acid The contents of omega-3, omega-6 and essential fatty acids were increased to $2.5\%,\;17.6\%$, and $18.4\%$, respectively.
A great progress in genetic selection, nutrition and management practices has contributed to the improved growth rate of broilers and egg production in laying hens. For the increased productivity of modern poultry, a healthy chicken liver needs to cope with the increased metabolic demands. The liver is the major site of de novo fatty acid synthesis; therefore, hepatic lipogenesis is crucial for producing better quality meat and eggs. When de novo lipogenesis exceeds the capacity of lipid metabolism and secretion, large amounts of lipids accumulate in the liver of broilers, leading to a fatty liver. Upon onset of egg-laying in hens, lipids including free fatty acids, triglycerides, and phospholipids are dramatically increased in blood plasma for the synthesis of yolk precursors in oocytes. Productive hens with fatty liver often have hemorrhagic syndrome and sudden death due to the heavy demands of yolk synthesis, which burdens the liver. Understanding the lipid metabolism and hepatic lipid disorders is a key point in the improvement of the growth and production of chickens. This review focuses on the recent studies on lipid metabolism, the hepatic lipid disorders, and the prevention or reduction of fatty liver in poultry.

This research was carried out to determine the effect of Cudrania tricuspidata fruit (CTF) on the performance of laying hens, egg quality, yolk fatty acid composition, Immunoglobulin G (IgG) and blood composition. A total 288 Brown Nick laying hens of 48 weeks old replaced into 4 groups with 4 replicates of 18 birds in each. Treatments were added with 0, 0.25, 0.5, 1.0% CTF containing dried seed and pulp. Metabolizable energy (ME) and crude protein (CP) were 2,800 kcal/kg and 16.0% in basal diets, respectively. Egg production and daily eggmass were significantly increased in 1.0% CTF addition treatment compared to those of other treatments (P<0.05). Egg weight and feed intake were not different among treatments. Feed conversion ratio showed the lower result in 1.0% CTF treatment than other treatments (P<0.05). Eggshell color was not influenced by the addition of CTF. Albumin height, Haugh unit and eggshell breaking strength was not statistically different, but seemed to be higher as dietary CTF addition increased. Yolk color was increased as dietary CTF increased and was the highest in 1.0% CTF group (P<0.05). Fatty acids were not shown the consistency in yolk. Blood cholesterol and triglyceride (TG) of birds fed CTF were significantly low compared to those of control. IgG was also statistically higher in CTF treatments than control (P<0.05). As the results of this experiment, the addition of 1% CTF would be the most effective on performance and egg quality, whereas the 0.25% CTF addition in basal diets seemed to be optimum to improve the blood cholesterol, TG,high density lipoprotein cholesterol (HDL-CHOL), IgG in laying hens.

This study aimed to evaluate the dietary effect of organic sulfur (OS) supplementation on performance, egg quality and serum constituents in laying hens. A total of 360 Lohmann brown laying hens at the age of 31 weeks were distributed into four treatments having five replicates of 18 hens each until 54 weeks. The hens were fed four levels (0.0, 0.1, 0.2 and 0.4%) of OS with basal diet. The number of eggs was investigated daily, and egg quality was confirmed every 8 weeks. Sulfur content in eggs, interleukin 2 (IL-2), T help cells (CD4+) and cytotoxicity cells (CD8+) were measured at the termination of the experiment. The result of the study showed that egg production tended to increase with 0.4% OS in diet after 39 weeks of age and, there was a significant effect (P<0.05) from 47 to 54 weeks of age. Egg quality traits of albumen height and haugh unit increased significantly (P<0.05) owing to the addition of OS to the diet. The polyunsaturated fatty acids in yolk were gradually increased while saturated fatty acids were decreased with increasing levels in OS (P<0.05). Total sulfur concentration in the eggs increased significantly (P<0.05) in treatments fed OS. Moreover, albumin, AST and HDL cholesterol levels in serum improved significantly (P<0.05) owing to the addition of OS. The IL-2 concentration and the ratio of CD4+ and CD8+ in blood were generally higher (P<0.05) at 0.4% OS. Therefore, it can be recommended that supplementary OS diet affected the performance, egg quality and stimulated immune response in laying hens.

This study was conducted to assess the effect of dietary addition of Germanium (Ge) on performance, egg quality, serum biochemical properties and yolk fatty acid composition in laying hens. At 74 weeks of age, a total of 360 Hy-line brown commercial layers were divided into four treatments with five replicates per treatment. Four dietary levels of Ge (0, 1, 2 and 4%) were added to the basal diets (ME: 2,750 kcal/kg, CP: 16%) and fed corresponding diet for a period of 12 weeks. The effects of these treatments on production performance and egg quality were measured three times at four week intervals, and at the end of the experiment, blood and egg yolk fatty acid were analyzed. The results showed that production performance parameters including egg production rate, feed intake, egg weight, egg mass and feed conversion ratio were non-significant, but dietary addition of 2% Ge tended to increase egg production rate. Eggshell strength was found to be significantly higher in Ge supplemented groups than in the control group (P<0.05), and eggshell thickness was also trended to be improved in Ge treated groups. In serum, triglyceride content was significantly greater (P<0.05), and the highest total cholesterol was found in hens of the control group as compared with that of the Ge supplemented groups. The yolk fatty acid composition including polyunsaturated fatty acid, unsaturated fatty acid and saturated fatty acid were not affected among the treatments but addition of 2 or 4% Ge in basal diet had significantly (P<0.05) increased monounsaturated fatty acid. Therefore, supplementation of Ge in laying hens diet has positive effects on egg quality and triglyceride in serum.
