A Survey on Foods of Principal Products in Jeollabukdo Area (전라북도 지역의 주요 특산물 중 식품에 대한 조사)

  • This survey was performed to investigate the distribution of specialities which cultivated importantly in Jeollabukdo area in order to understand food culture of this area. Foods in speciality were divided into 4 groups, agricultural, aquatic, animal and the others products. Total number of 93 species of specialities, including 40 species of agricultural products, 29 species of aquatic products, 8 species of animal products and 16 species of the miscellaneous products, were identified from Jeollabukdo area. Especially, there were various fruits and vegetables among agricultural products and fishes among aquatic products in this region. Rice, pepper, pear, Mandarin fish, beef, pine mushroom, lentinus edodes and honey were determined as specialities in Jeollabukdo area. Various aquatic products were specialities in Gochang, Gunsan, Buan and Gimje region. Fruits, mushrooms, wild edible greens and animal products were specialities in Muju, Jangsu, Jeongeup and Jinan. Sweet fish, cat fish and freshwater crab were caught off in Sumjin river region only such as Namwon, Sunchang and Imsil, Recently, pumpkin(Cucurbita maxima) and paprika were determined as specialities in Jeollabukdo. In case of aquatic products, mushrooms and wild edible greens, their wild type products decreased, while cultivated type increased Commercialization by brand naming of agricultural and animal products were rapidly increasing. The kinds of specialities in Jeollabukdo area were changing by the influence of geographical, religious and social factors.

Physicochemical Properties of Gamma-Irradiated Soybeans (감마선 조사된 대두의 이화학적 품질 특성)

  • Some physicochemical properties of gamma-irradiated soybeans (0-20 kCy) were investigated. Proximate components, fatty acid compositions and minerals of the soybeans irradiated at 2.5 - 20 kGy shrived no difference from the nonirradiated control. Irradiation doses above 10 kGy and long term storage caused decrease in extractable phenols and phytate content, whereas increases in acid value and organic acid content. The total amino acids content of the soybeans irradiated up to 10 kGy was not changed as compared with the nonirradiated control. Sulfur-containing amino acids, however, were changed by 10 and 20 kGy irradiaton. Gamma irradiation and long term storage caused minor changes in the color attributes of soybeans. Hunter's 'L' (lightness) and 'b' (yellowness) values were decreased whereas 'a' (redness) value was increased with increasing dose levels and the elapse of the storage period.

Improvement of Hygienic Quality and Long-term Storage of Dried Red Pepper by Gamma Irradiation (감마선 조사에 의한 건고추의 위생화와 장기 안전저장)

  • Dried-red pepper, whole and powdered types, was subjected to a storage-study by investigation the effects of packaging methods (polycloth & polyethylene/polycloth, whole dried-red pepper; nylon/polyethylene-lam-inated film, red pepper powder), temperature (ambient, $5{\sim}10^{\circ}C$) and gamma irradiation doses (0-10 kGy). After 6 months storage in polyclith sack at ambient temperature, all whole dried-red pepper showed quality deterioration, such as weight change, insect infestation, discoloration and chemical changes, After 2 years storage in combined packaging with polyethylene/polycloth sack of 5-7.5 kGy irradiated whole dried-red pepper at ambient temperature, however, quality deterioration was not observed. Gamma-irradiated red pepper powder (7.5-10kGy) showed a good quality in hygienic, physicochemical and organoleptic evaluation after 2 years of storage at ambient temperature.

Changes of Physicochemical Characteristics and Development of New Quality Indices for Industry-produced Koji Kochujang (공장산 고오지 고추장의 이화학적 특성변화 및 품질지표 개발)

  • 43 Kinds of physicochemical characteristics of koji kochujang prepared by a standardized industrial process were determined and analyzed statistically during storage for 105 days at $37^{\circ}C$. The characteristics which showed significant correlation with storage period after preparation of kochujang were 12 items, which included sensory preference for flavor and taste, Hunter tristimulus values($L,\;a,\;b,\;{\{\delta}E$), HMF, capsanthin, formol nitrogen, threonine, water and water activity. Seven of the items were related with color attributes of kochujang. Especially, tristimulus values showed significant correlation with sensory preference for color of kochujang. In this regard, tristimulus values should be recommended as new quality indices of national standard for industry-produced koji kochujang. Means and standard deviations of tristimulus values of 27 kinds of industry-produced koji kochujang in the market were $28.21{\pm}1.48,\;a=9.37{\pm}2.54,\;b=4.35{\pm}2.19\;and\;{\delta}E=30.09{\pm}2.42.$.

Sanitation and Quality Improvement of Salted and Fermented Anchovy Sauce by Gamma Irradiation (멸치액젓의 위생적 품질향상을 위한 감마선 조사기술 이용)

  • Gamma irradiation was used to improve sanitation and quality of salted and fermented anchovy sauce. For commercial production, comparison with currently using sterilization methods, such as micro-filtration and heat treatment were also conducted. Control was prepared without irradiation and sterilization process. Microbiological, physiochemical, and sensory qualities were analyzed to observe the Quality changes during the storage. Irradiation at 5 kGy or above and micro-filtration process completely eliminated microorganisms detected in this study As irradiation dose increased, the color appeared brighter and irradiation at 5 kGy or above showed similar color L-value to that of sample treated with microfiltration. The color L, a, b-value of heat-treated sample always showed lower. The pH, salinity, and viscosity were sustained during storage. From the results of sensory evaluation, the samples treated with gamma irradiation and microfiltration obtained better scores than control or heat-sterilized. Gamma irradiation to salted and fermented anchovy sauce presented the best quality products among different sterilizing methods, especially at 5 kGy dose. Therefore, gamma irradiation can be successfully applied to commercial large scale production as a new sanitation technology with improved quality.

Physicochemical Properties of Defatted High Amylose Corn Starch (탈지한 고아밀로오스 옥수수전분의 이화학적 특성)

  • For the use of starch gel like Mook(a Korean traditional gel food), the physicochemical properties and gelatinization patterns of defatted high amylose corn starch were investigated. The crude and total lipid contents of starch decreased by defatting from 0.07%, 0.92% to 0.03%, 0.19%, respectively. But iodine affinity increased from 51.6% to 71.3%. Water binding capacity of starches increased from 104.6% to 117.3% after defatting. Soluble carbohydrate and leached amylose of untreated and defatted starches were increased rapidly above $110^{\circ}C$. The apparent viscosity of starch dispersion using alkali solution increased above 0.3N NaOH solution but the transmittance increased above 0.4 N NaOH. The DSC thermograms of both starches showed broad and double endotherm with relatively low enthalpy, but the second peak of endotherm was larger in defatted starch than in untreated starch.

참외식초/농축액을 함유한 참외농축음료의 저장조건 모니터링

  • 현재 참외는 생산량의 대부분이 생과로 소비되고 있으나, 저장성이 낮아 새로운 가공식품 개발이 요구되고 있는 실정이다. 이에 참외식초/참외농축액을 함유하는 참외농축음료를 제조하였으며, 유통기간 동안 품질변화를 알아보기 위해 저장온도 및 저장시간에 따른 품질변화를 조사하였다. 배합조건에 따라 배합한 참외농축음료를 8$0^{\circ}C$에서 30분간 살균한 후 저장온도 및 시간에 따른 품질변화 및 관능적 특성변화를 모니터링하였다. 저장온도(20, 30, 40, 50, 6$0^{\circ}C$) 및 저장시간(0, 2, 4, 5, 8 week)을 독립변수(Xi.)로 하여 달리한 각 실험조건을 -2, -1, 0, 1, 2의 다신 단계로 부호화하고 실험조건을 설계한 다음 각 조건에서 저장된 참외음료의 품질특성(종속변수, Yn)을 모니터링하였다. 관능검사는 선정된 패널요원을 대상으로 4$^{\circ}C$에서 저장한 대조구와의 색상, 향, 맛 및 전반적인 기호도가 어떻게 달라지는가를 평가하였으며, 색도 및 갈색도를 측정하였다. 또한 제조된 참외 농축 음료를 저장하면서 미생물의 생육유무를 확인하기 위해 Petrifilm을 사용하여 미생물의 유무를 확인하였다. 참외식초/참외농축액을 이용한 참외농축음료를 제조하여 음료의 저장온도 및 저장시간에 따른 관능적인 특성 및 품질 특성을 모니터링하면서 저장성 실험을 통해 저장안전성을 평가한 결과 저장시간 및 저장온도에 따른 관능적인 색상은 1.6~4.0의 값을 나타내었으며, 향은 2.3~4.0의 값을 나타내었으며, 맛은 1.8~4.0의 값을, 전반적인 기호도는 2.1~4.0의 감을 나타내는 것으로 나타났다. 이화학적 품질 검사 결과, 색도L(백색도)값은 21.79~87.23, 색도 a(적색도)값은 -1.27~35.79의 값을 나타내었으며, 색도 b(황색도)값은 16.57~18.89의 값을 나타내었다. 갈색도는 0.386~3.214의 값을 나타내었으며, PH는 4.02~4.24의 값을 나타내었다. 일반미생물은 검사 결과 모든 조건에서 검출되지 않았다. 참외농축음료를 8$0^{\circ}C$에서 30분간 살균하여 미생물학적 품질 검사 결과 저장온도 및 저장시간에 따라 미생물이 검출되지 않았으며, 유통하기에 적합한 음료가 제조됨을 검증할 수 있었다.

Effects of Gamma Irradiation and Ozone Treatment on Microbial Decontamination and Fatty Acid Compositions of Aloe and Pollen Powders (감마선과 오존처리가 알로에와 화분의 오염미생물 제거 및 지방산 조성에 미치는 영향)

  • The comparative effects of gamma irradiation and ozone treatment on the microbial inactivation and fatty acid composition were investigated for improving hygienic quality of aloe and pollen powders. Gamma irradiation at 10 kGy resulted in sterilizing total aerobic bacteria, molds and coliforms below detective levels, while ozone treatment for 8 hours up to 18 ppm did not sufficiently eliminate the microorganisms of aloe and pollen powders. The compositions of fatty acid were not significantly changed by gamma irradiation up to 10 kGy. However, ozone treatment markedly decreased unsaturated fatty acids by approximately $20{\sim}80%$ in contents, whereas it significantly increased saturated fatty acids (p<0.05).

  • In 1995 of May, the Ministry of Construction and Transportation (NOCT) developed the First Nation-wide Master Plan of GIS. It is set up in response to an increasing and various demands on spatial informations. Until now, a set of diverse projects related to spatial information have been proposed and executed. However, cost-benefit analysis of investment and decision making for alternatives have not been carried out appropriately because scientific evaluations for obtaining efficiency and economical validity of investment have been deficient. Optimum decision making for projects based on itemized priority order using effect or cost of proposed alternative plan is a fundamental expedient for demonstration of propriety of projects and enhancement of efficiency of investment. From such understanding, this paper applied the analytic hierarchy process (AHP) technique to the cost required to construct a GIS so that analyze the weight of each cost factor.

  • The quality of Injulmi, waxy rice cake is affected by milling methods. varieties. additives, steeping condition before milling and the texture properties during storage. Sinsunchalbyeo and Hwasunchalbyeo flours were made using pin-dry milling(PDM) and roller-wet milling( RWM) methods. Injulmi was made from those flours with different sugars, sucrose, maltose. oligosaccharide, and were measured textural properties of Injulmi stored at 2 $0^{\circ}C$ for 0, 12, 36 and 60 hrs, respectively. The hardness of sucrose added to injulmi made from PDM flour was the highest among any other sugars, but Injulmi from RWM flour was increased in the following order sucrose>maltose>oligosaccharide>non - added Injulmi. Adhesiveness of none added Injulmi were the lowest among sugar added Injulmi including, oligosaccharide, maltose and sucrose added Injulmi.
