The Factors for Food Service Satisfaction of the Elderly Welfare Center Free Lunch Program Participants in Busan (부산 일부지역 복지관 무료급식 이용노인들의 급식만족도에 영향을 미치는 요인)

  • This study was carried out to investigate the factors of food service satisfaction of the elderly in Busan. The survey was conducted from September 1 to October 15, 2009 by questionnaires and data analyzed by SPSS program. Fifty point nine percent of the subjects lived alone and the source of living expenses of 70.5% of the subjects was subsidy from government. The most important reason for the elderly to participate in meal service was 'economic difficulty' and 'to meet friend'. The subjects had various chronic degenerative diseases, such as arthritis, hypertension, diabetes, osteoporosis and cardiac disease. Sixty-six point eight percent of the subjects needed diet therapy for their diseases, but 87.1% of them don't want to pay the extra fee. Thirty six point five percent of the subjects attained information about lunch program because it was 'close to home' but 20.7% was 'from public officials'. The reasons for the use of the meal service were 'economic difficulty' (40.0%), 'to meet friends' (22.6%), and 'bother to prepare meal' (16.50%). The services provided by welfare center were health care, physical exam and haircut. The score given by the subjects on the satisfaction of meal service was 3.84 on the 5-point maximum scale. Higher satisfaction on kindness of staff, satisfaction of social support and awareness of support resulted in higher satisfaction of food service. It would be effective to provide food service models that meet specific needs of the elderly according to social welfare service and social community activities.

Survey on the Content and Intake Pattern of Sugar from Elementary and Middle School Foodservices in Daejeon and Chungcheong Province (대전.충청지역 초.중학교 급식의 당 함량 및 급식을 통한 당류의 섭취실태 연구)

  • Korean government will set up the nationwide food safety system with strict control of hazardous nutrients like sugar, fatty acids and sodium as well as advanced nutrition education system. In addition, almost one hundred percent of school food service rate forced the government to consider more effective ways to upgrade the nutritional status of school meals. The object of our study was to provide the data on content and consumption of sugar in school meal for the nationwide project. For this purpose, we surveyed the sugar content of 842 school meal menus and their intake level for 154 days in 8 schools in Daejeon and Chungcheong Province. Sugar contents, the sum of the quantity of 5 sugars commonly detected in food, were analysed with HPLC-RID (Refractive Index Detector). Sugar intakes were calculated by multiplying the intake of each menu to the sugar content of that menu. The sugar content was highest in the desserts, which include fruit juices, dairy products and fruits. Sugar content of side dish was high in sauces and braised foods. Sugar intake from one dish is high in beverage and dairy product, and one dish meals contribute greatly to sugar intake because of their large amount of meal intake. The average lunch meal intakes of second grade and fifth grade elementary school students were 244 g/meal and 304 g/meal, respectively. The meal intake of middle school student was 401 g/meal. The average sugar intake from one day school lunch was 4.22 g (4.03 g on elementary and 5.31 g on middle school student), which is less than 10% of daily sugar reference value for Koreans. The result of this study provides exact data of sugar intake pattern based on the content of sugar which is matched directly to the meals consumed by the students.

Evaluation of Microbiological Hazards of Cooking Utensils and Environment of Mass Catering Establishments (급식장의 조리기구.용기 및 작업환경에 대한 미생물학적 위해분석)

  • Serious consequences can arise from lack of hygiene in mass catering. Microbiological testing is of value in determining hazards for developing a HACCP plan, and in demonstrating to food handlers the reality of the microbial risk. This studies was performed to describe the overall hygiene of cooking utensils and equipments, employees, and environment in mass catering establishments. Generally, hygienic conditions of cutting board and sanitized dish cloth were better than those of other cooking utensils such as knife, sieve, and peeler. It was found that the cross-contamination of knife might be caused by the use of contaminated sanitizing solution. It was observed that there was considerable variation (10$^1$~10$^{5}$ CFU) of the number of general bacteria for employee's hands. The number of general bacteria were influenced from establishment, employee, and the period of analysis. The number of Coliform group for employee's hands was in the range of 10$^2$~10$^4$CFU only at the first analysis. Total aerial bacteria in working area of mass catering establishments was below 7 CFU/Plate and aerial Staphylococcus sp. was not detected at all except one spot.

Conjoint Analysis를 이용한 대학 급식소 선택속성 규명 및 급식소 신설 전략 도출

  • 최근 대학생들은 초등학교 때부터 혹은 중학교 때부터 급식을 받아온 세대로 급식체계에 싫증을 내고 학교 밖의 외부식당으로 눈을 돌리고 있는 세대이다. 또한, 위탁급식전문업체의 대학 내 급식사업 참여와 많은 선행 연구 등을 토대로 여러 면에서 대학 내 구내식당이 개선되고 있으나 아직도 매우 부족한 실정이다. 따라서, 본 연구는 외부식당과의 경쟁으로 현재 급식인원수가 매년 감소하여 운영상의 어려움을 겪고 있는 S 대학 학생식당 고객의 급식소 선택속성에 대한 의견을 조사하고 현재 운영중인 급식소 이외에 추가 설립하고자 하는 식당 신설에 대한 전략을 도출하고자 한다. SPSS통계 package (ver. 11.0)를 활용하여 기술통계(descriptive analysis), 컨조인트 분석 (conjoint analysis)을 실시하였다. 현재 학생식당 이용빈도 감소원인은 ‘음식이 맛이 없어서’가 44.8%, ‘거리가 멀기 때문’이 19.9%로 조사되어, 학생식당의 이용빈도에 가장 큰 영향을 주는 것은 '음식 맛'과 '거리'인 것으로 파악되었으며, 학생식당에 대한 전반적인 만족도는 ‘보통이다’가 37.8%, ‘불만족 한다’가 36%, ‘매우 불만족한다’가 18.4%, ‘만족한다’가 7.8%로 조사되어 응답자의 대부분이 식당에 대해 불만족하고 있었다. 거리에 의해 식당의 이용빈도가 감소하고 있는 것은 현 학생식당의 위치가 강의 동과 먼 거리에 위치하고 있어 강의 동이 밀집해 있는 건물과 근거리에 식당이 개설된다면 이용할 의사가 있는지 여부에 대해 64.7%가 이용하겠다는 의사를 밝혔고 26.1%는 이용하지 않겠다고 응답했다. 따라서, 학생들이 인식하는 적정 거리의 식당 위치를 파악하기 위해 식당으로 이용하는 소요시간에 대해서 조사대상자가 멀다고 인식하는 시간과 가까운 거리라고 인식하는 시간에 대한 조사 결과 가까운 거리로 인지하는 평균 이동소요시간(분)은 5분이었으며 먼 거리로 인지하는 평균이동소요시간은 10.9분으로 적당한 식당의 위치는 S~10분내의 거리로 9분 30초의 거리에 식당이 위치하면 학생들의 이용률을 극대화시킬 수 있을 거라 사료된다. 사전 대면면접을 통해 가격, 소요시간, 음식의 맛으로 선정된 속성과 각 속성별 수준을 활용한 컨조인트 분석 실시하여 도출된 학생들의 급식소 선택 시 중요하게 인식하는 속성은 가격대, 소요 시간, 음식 맛 순으로 나타났으며, 각각의 중요도는 가격이 65.42%, 소요시간인 24.76%, 음식의 맛이 9.82%였다. 즉, 학생들은 학생식당의 서비스 품질 속성 중에서 상대적으로 식사 가격을 가장 중요하기 생각하는 것으로 나타났고, 다음으로는 식사를 하기 위해 식당까지 가는데 소요되는 시간, 음식의 맛을 중요하게 생각하는 것으로 분석되었다. 컨조인트 분석결과 조사대상자가 가장 선호하는 대학 식당으로는 이동하는데 6-10분이 소요되는 거리에 위치한 식당으로 2,100-2,500원 정도의 가격대로 맛있고 깔끔한 식당을 가장 선호하는 것으로 조사되었다. 따라서, 현재 운영중인 학생식당이 모두 1,800원의 단일 식단가로 운영되고 있는 점을 감안하여 학생식당을 신설할 경우에는 이동하는데 10분 이상 소요되지 않는 장소에 가격대는 현재보다 더 높은 2,000-2,500원의 가격대에서 맛있고 깔끔한 현재와는 차별화 된 일품메뉴 위주의 식단의 학생식당을 신설하는 것이 바람직할 것으로 사료된다.

A Study on the Perception and Satisfaction with School Food Service among High School Students in the Busan and Kyungnam Area (부산.경남지역 고등학교 학생들의 급식 중요도와 만족도에 관한 연구)

  • The purpose of this study was to evaluate student's perception of their high school foodservice in the Busan and Kyungnam area. For this study, questionnaires were distributed to 254 students in 6 high schools in the Busan and Kyungnam area. The students assessed the importance and performance of school foodservice at 3.90/5.00 and 3.25/5.00 respectively. The importance mean scores of students were showed significantly(p<0.001) higher in sanitation and freshness of food items than any other factor while showed lowest in the frequency of dessert offering and the diversity of dessert items. The analysis result revealed that two factors, the diversity of dessert items and the harmony of main dishes and desserts, should be urgently improved. This result is expected to provide a school foodservice management team with useful information in its food service operation.

Effect of Heated Soybean on the Cholesterol Contents in Brain and Aorta of the Albino Rat (熱處理大豆가 흰쥐腦와 大動脈의 Cholesterol 含量에 미치는 영향)

  • The effect of heat treatment (autoclaving at $100^{\circ}C$ for 30 minutes) of soybean on the cholesterol contents in the brain and aorta of the albino rat was studied. The subjects were 72 young male rats and divided into 12 groups by diet and periods. Experimented periods were 5, 15 and 30 days, diet standard are raw soybean, soybean diets heated at $100^{\circ}C$ and $120^{\circ}C$ respectively, and each diet was prepared to contain 14g protein and 400 Kcal per diet 100g. After corresponding treatment, the cholesterols in the brain and aorta were determined. The results are summarized as follows: In the brain, total, free and ester cholesterol contents of each group are not remarkedly different from those of control group, in the experimental periods. In the aorta total and free cholesterol at $100^{\circ}C$ and $120^{\circ}C$ than those of control group, but there is no significant difference among groups fed for 15 or 30 days, and the ester cholesterol has no regular tendency. It seems that the heat treatment at $100^{\circ}C$ and $120^{\circ}C$ of solybean has no effect on the cholesterol contents of the brain and aorta.

Evaluation of Oven Utilization Effects at School Foodservice Facilities in Daegu and Gyeongbuk Province (대구·경북지역 학교급식소 오븐 사용 효과 평가)

  • The objectives of this study were to gain an overview of practices and effect evaluation of oven utilization at school foodservice facilities in Daegu and Gyeongbuk province. Out of 147 dieticians, who responded for questionnaires, 44 dieticians used the oven and 103 dieticians did not use the oven. All statistical analyses were conducted with the SPSS 14.0 statistical software program. With regard to the style of foodservice system, 74.4% were urban, 23.3% were rural, and 2.3% were remote country. Also, 23.3% of school foodservices produced meals by batch cooking. According to the results of the expected effect and using effect analysis for 27 items, the average of evaluation score about expected effect was 1.64 points and that of using effect was 1.61 points. Both expected effect and using effect had higher scores than average points in 13 items out of 27 items. Using effect had higher scores than expected effect in 4 items. In conclusion, using ovens could help to increase foodservice satisfaction of students at school foodservice, because it can improve the various cooking methods and the food safety management. Therefore, it is important to modernize and automate cooking equipment for quality improvement of school foodservice operations.

Systemic Analysis on Hygiene of Food Catering in Korea (2005-2014) (Systemic analysis 방법을 활용한 국내 학교급식 위생의 주요 영향 인자 분석 연구(2005-2014))

  • A systemic review on the factors affecting food catering hygiene was conducted to provide information for risk management of food catering in Korea. In total 47 keywords relating to food catering and food hygiene were searched for published journals in the DBpia for the last decade (2005-2014). As a result, 1,178 published papers were searched and 142 articles were collected by the expert review. To find the major factors affecting food catering and microbial safety, an analysis based on organization and stakeholder were conducted. School catering (64 papers) was a major target rather than industry (5 pagers) or hospitals (3 papers) in the selected articles. The factors affecting school catering were "system/facility/equipment (15 papers)", "hygiene education (12 papers)", "production/delivery company (6 papers)", food materials (4 papers)" and "any combination of the above factors (9 papers)". The major problems are follow. 1) The problems of "system/facility/equipment" were improper space division/separation, lack of mass cooking utensil, lack of hygiene control equipment, difficulty in temperature and humidity control, and lack of cooperation in the HACCP team (dietitian's position), poor hygienic classroom in the case of class dining (students'), hard workload/intensity of labor, poor condition of cook's safety (cook's) and lack of parents' monitoring activity (parents'). 2) The problem of "hygiene education' were related to formal and perfunctory hygiene education, lack of HACCP education, lack of compliance of hygiene practice (cook's), lack of personal hygiene education and little effect of education (students'). 3) The problems of "production/delivery company" were related to hygiene of delivery truck and temperature control, hygiene of employee in the supplying company and control of non-accredited HACCP company. 4) The area of "food materials" cited were distrust of safety regarding to raw materials, fresh cut produces, and pre-treated food materials. 5) In addition, job stability/the salary can affect the occupational satisfaction and job commitment. And job stress can affect the performance and the hygiene practice. It is necessary for the government to allocate budget for facility and equipment, conduct field survey, improve hygiene training program and inspection, prepare certification system, improve working condition of employees, and introducing hygiene and layout consulting by experts. The results from this study can be used to prepare education programs and develop technology for improving food catering hygiene and providing information.

Relations among Foodservice Quality between Customer Loyalty of High School Students in Busan Area (부산지역 일부 고등학생들의 급식서비스 품질과 고객충성과의 관계)

  • The purpose of this study was the improvement of satisfaction for school foodservice customers through analysis of the importance and performance of school foodservice quality and the understanding what factors affected customer's loyalty. The questionnaire was distributed to three hundred students at five high schools in Busan. Students evaluated the factors of importance and performance, the order of importance was sanitation> food> service and then, the order of performance was sanitation> service> food. Gap analysis resulted 4.39 for importance factors and 2.51 for performance factors; importance scores were higher than performance scores at all areas (p<0.01) and the sanitation factor gap was the biggest gap compared to all others. Each factor's analysis resulted that the gap analysis order was taste> balance of main & sub side dish> diversity of food in food area, quick react to customer complaint> reflection of customer proposal and recommendation> provide better service than competitor in service area, sanitation of food> cleanness of tableware> cleanness of container in sanitation area. The average score of customer's loyalty was 1.66 and female' score was significantly higher than male (p<0.001). Food, service and sanitation had a significant correlation to customer's loyalty than service (p<0.01), food (p<0.05), and sanitation (p<0.05) affected customer's loyalty significantly. So, intensive control is needed in the sanitation area which had the highest gap analysis result between importance and performance in food service. Especially, service factor was very important in explaining customer's loyalty, so service improvement through training is needed to improve student's satisfaction.

A Study on Utilization and Perceived Service Quality of the University Foodservice (대학급식 이용실태 및 급식서비스 품질이 고객만족과 고객태도에 미치는 영향)

  • This study investigated the efficiency of university foodservice operations by analyzing the effect of consumer's perception towards university foodservice quality. University students in the Jeonnam area were surveyed and 571 out of 700 surveys were chosen (response rate: 97.0%). SPSS (ver. 20.0) was used to conduct descriptive analysis, factor analysis, reliability analysis, t-test, and multiple regression analysis. The results show that 21.9% of university students have never used the university foodservice, while 48.7% of university students have eaten there 1~2 times per week. The most common reasons reported for avoiding the university foodservice were a limited menu selection (51.5%) and an untasty food (45.8%). The perception of overall service quality at the university foodservice scored relatively low (3.01 points), compared with its importance (3.89 points). The food taste, menu variety, and quality of food ingredients are factors that require improvement for operational strategies by the importance-performance analysis (IPA). The food factors (taste, variety, and quality) among university foodservice qualities had a significantly positive effect on consumers' overall satisfaction (p<0.001), perceived value (p<0.01), intent to recommend (p<0.001), and intent to revisit (p<0.01). These result indicate that the university foodservice management should focus on developing food factors and strive to meet the needs of university students through continuous customer surveys.
