Quality Characteristics and Antioxidant Activities of Noodles added with Spergularia marina L. Griseb Powder (세발나물 분말 첨가 국수의 품질 특성 및 항산화 활성)

  • This study evaluated the quality characteristics and antioxidant activities of Spergularia marina L. Griseb powder from halophyte plants added to noodles at ratios of 0%, 0.5%, 1.0%, 1.5%, and 2.0% in order to examine its applicability as a substitute for salt. For quality characteristics of noodles with Spergularia marina L. Griseb powder, pH increased (p<0.05) and salinity decreased (p<0.01) with higher added Spergularia marina L. Griseb powder content. Water absorption ratio decreased (p<0.01) while turbidity decreased (p<0.001) with greater addition of Spergularia marina L. Griseb powder. However, volume expansion ratio increased with greater addition of Spergularia marina L. Griseb powder, but there was no significant difference. For chromaticity, L value and a value decreased (p<0.001) while b value increased (p<0.001) with greater addition of Spergularia marina L. Griseb powder. For texture, hardness (p<0.001), gumminess (p<0.001), and cohesiveness (p<0.01) increased with greater amount of added Spergularia marina L. Griseb powder; however, there were no significant differences in adhesiveness, springiness, and chewiness according to the amount of added Spergularia marina L. Griseb powder. In the sensory evaluation, for color, the score was 5.55 points when 1.5% Spergularia marina L. Griseb powder was added, which was the best preference (p<0.001); for flavor, preference was best (5.64 points) when 2.0% Spergularia marina L. Griseb powder was added; for taste, preference was best (5.36 points) (p<0.001) when 2.0% Spergularia marina L. Griseb powder was added; for overall preference (overall quality) the score was 5.55 points when 1.0% Spergularia marina L. Griseb powder was added, which was the best preference (p<0.001). For antioxidant activities, antioxidant activities including total phenol content, total flavonoid content, and DPPH free radical scavenging activity increased (p<0.001) with the amount of added Spergularia marina L. Griseb powder. As a result of the above research, preference was the highest and quality was excellent overall when 1.0% Spergularia marina L. Griseb powder was added. Thus, addition of 1.0% Spergularia marina L. Griseb instead of salt would be desirable.

Monitoring the Development Process of Edge Vegetation Structure in Broad-leaved Forest -A Case of Baekwoonsan Research forest of Seoul National University- (낙엽활엽수림대 주연부식생구조 발달과정 모니터링(I) -서울대학교 백운산연습림지역을 중심으로-)

  • The objective of this study was to monitor the edge vegetation development process after timber harvesting at deciduous hardwood forest in Seoul National University Forests of Baekwoonsan(Mt), Korea. From 1994 to 1999, Woody plants were monitored on two experimental plots established in 1994. The edge vegetation development pattern during the last six years(1994-1999) after timber harvesting is summarized as follows; Weigela subsessilis, Lindera erythrocarpa, Stephanandra incisa, Zanthoxylum schinifolium appeared to be a competitive species at the harvested forest edge. Staphylea bumalda, Lindera erythrocarpa, Viburnum erosum appeared to be a competitive species at harvested forest border between the harvested forest edge and the harvested interior. Weigela subsessilis, finders erythrocarpa, Lindera obtusiloba appeared to be a competitive species at the forest interior. The mean relative important value of major species were changed along the distance from the forest edge to the forest interior and seemed to be affected by aspect, and existing woody plants. But similarity indices seemed to be affected by distance. Species composition of forest edge(0-10m) was dissimilar to that of the other forest edge(40-50m). Species diversity indices, number of species and individuals were decreased according to the distance from the forest edge to the forest interior with passing time.

Nutritional Adequacy of One-dish Meals in the Middle and High School Technology & Home Economics Textbooks Cooking Practice Units (중 고등학교 기술.가정 교과서 조리실습 단원에 게재된 일품요리의 영양 적정성 평가)

  • The purpose of this study was to analyze the nutritional adequacy of one-dish meals in the middle and high school technology & Home Economics textbooks cooking practice units. Total of 27 technology & Home Economics textbooks(9 books published by 9 different publishers each for grade 7, 9, and 10) were examined. The total number of one-dish meals introduced in the textbooks was 27, remarkably low, and there are only 7 Korean one-dish meals. It was found that most one-dish meals failed to meet 1/3 of daily estimated energy requirement. According to the analysis of energy contribution ratio by carbohydrate, protein, and fats in one-dish meals, only 4 Korean foods, such as Yubuchobab, Bibimbab, Deokguk and Guksujangguk showed ideal energy contribution ratio. Among the foreign foods, there was no one-dish meal with ideal energy contribution ratio. According to the index of nutritional quality(INQ) analysis, there was no such one-dish meal which supply all the essential nutrients in adequate amounts. All one-dish meals introduced in the textbooks contained excessive protein, but almost no vitamin $B_1$ and $B_2$. Ca and Fe, likely insufficient in Korean people, was found to be a nutrient insufficient also in most one-dish meals.

Forest Structure of the Region from Dongchanggyo to Deogjusa in Woraksan National Park, Korea (월악산국립공원 덕주사-동창교 지역의 산림군집구조)

  • To investigate the vegetation structure of the region from Dongchanggyo to Deogjusa in Woraksan National Park, 23 plots$(400m^2)$ set up with random sampling method were surveyed. Three groups Quercus mongolica-pinus densiflora community, Pinus densiflora-Quercus molica community, Mixed Broad-leaved community were classified by cluster analysis. Quercus mongolica, pinus densiflora, Quercus serrata and Fraxinus rhynchophyllai were found as a major woody plant species in Woraksan National Park region. In this area, Quercus mongolica and Pinus densiflora were dominated partially. In the future, the importance percentage of Pinus densiflora might be decreased, but those of Quercus mongolica, Quercus serrata and Fraxinus rhynchophyllai might be increased. High positive correlations were proved between Acer pic tum and Corylus heterophylla, Betula schimidtii; Acer pseudosieboldianum, Cornus controversa ; Stephanandra incisa and Symplocos sawafutagi, Lespedeza maximowixzii ; Symplocos sawafutagi and Fraxinus rhynchophyllai, Lespedeza maximowixzii; Fraxinus rhynchophyllai and Acer pseudosieboldianum, Lespedeza maximowixzii; Quercus variabilis and Fraxinus sieboldiana; Corylus heterophylla, and Rhododendron schlippenbachii; Acer pseudo sieboldianum and Lespedeza maximowixzii, and relatively high negative corrlations was proved between Quercus serrata and Betula schimidtii; Quercus mongolica and Quercus serrata; Corylus heterophylla and Lindera erythrocarpa. Species diversity(H') of investigated groups were ranged from $1.2393\~1.3674$ and it was relatively high compared to those of the ridge area of other national parks.

Vegetation Structure of Mountain Ridge from Miwangjae to Cheonwhangbong in Weolchulsan National Park (월출산국립공원 미왕재-천황봉 구간의 능선부 식생구조)

  • To investigate the vegetation structure of mountain ridge from Miwangjae to Cheonwhangbong, 11 plots($2000m^2$) set up with random sampling method were surveyed. Three groups of Quercus mongolica community, Quercus mongolica-Styrax japonica community, Q. mongolica-Pinus densiflora community were classified by cluster analysis. Quercus mongolica was a major woody plant species in the ridge area from Miwangjae to Cheonwhangbong, and Styrax japonica and Pinus densiflora was partly occupied. High positive correlations was proved between Prunus sargentii and Euonymus alatus for. ciliato-dentatus; Quercus serrata and Euonymus alatus; Sorbus alnifolia and Euonymus alatus, Magnolia sieboldii; Acer pseudo-sieboldianum and Euonymus alatus for. ciliato-dentatus; Rhododendron schlippenbachii and Euonymus alatus for. ciliato-dentatandus; Euonymus alatus and Lindera obtusiloba, Castanea crenata, Lindera erythrocarpa; Lespedeza bicolor and Rhododendron schlippenbachii; Castanea crenata and Magnolia sieboldii; Magnolia sieboldii and Lindera erythrocarpa, and relatively high negative correlations was proved between Rhododendron schlippenbachii and Euonymus alatus; Lespedeza bicolor and Castanea crenata; Stephanandra incisa and Magnolia sieboldii; Rhododendron yedoense var. poukhanense and Lindera erythrocarpa; Euonymus alatus for. ciliato-dentatus and Magnolia sieboldii; Fraxinus sieboldiana and Sapium japonicum; Prunus sargentii and Lespedeza maximowiczii; Lespedeza maximowiczii and Lindera erythrocarpa. Species diversity(H') of investigated groups was ranged $2.3225{\sim}2.7721$, and it was relatively low value compared to that of mountain ridge area of other national parks.

Change for Eleven Years$(1994{\sim}2005)$ of Plant Community Structure of Major Community in Namsan, Seoul (서울시 남산 주요 식생군락의 11년간($1994{\sim}2005$년) 식생구조 변화분석)

  • This study analyzed the changes in vegetation structure of Quercus mongolica communities, Pinus densiflora communities, Robinia pseudo-acacia communities and Pinus rigida communities for the last 11 years$(1994{\sim}2005)$ to provide basic data for ecological restoration. We studied the vegetation structure of four communities within a plot$(unit:\;1,200m^2)$) and concluded that Canopy Layer continuously preserved and expanded existing superior species, Understory Layer grew Styrax japonica which is highly adaptive to urban environment, and Shrub Layer grew more Stephanandra incise. An analysis on species diversity indicated that Quercus mongolica communities$(1.0921{\rightarrow}1.0381{\rightarrow}1.0633)$, Pin us densiflora communities$(0.7071{\rightarrow}0.8553{\rightarrow}1.0164)$, and Robinia pseudo-acacia communities$(0.9255{\rightarrow}0.8392{\rightarrow}0.8721)$ sharply decreased in 1998 and are gradually increasing these days. Also, Pinus rigida communities decreased from 0.9008 in 1998 to 0.8850 in 2005. Fluctuation in numbers of species and trees were similar. Acidity of soil was $4.34{\sim}5.31$ and improved compared to 20 years ago.

A new natural habitat of Abeliophyllum distichum Nakai (미선나무(Abeliophyllum distichum Nakai)의 새로운 자생지 보고)

  • We report a newly found natural habitat of Abeliophyllum distichum in mountainous slope range of Yeongdong-gun, Chungbuk Province. Abeliophyllum distichum Nakai is one of the Korean monotypic endemic species. Natural growth habitats of this species have been recorded from seven sites up to now, and all of the natural habitats are located in middle (Chungbuk Prov.) and middle west (Jeonbuk Prov.) parts of South Korea. Among the previously recorded seven natural habitats, six sites have been designated as Korean national monuments and protected with in situ conservation. New natural habitat of A. distichum is located on northwest slope of stiff hillock area beside the small stream, Seolgye-ri, Yeongdong-eup, Yeongdong-gun, Chungbuk Province. Total growing area is nearly $3,000 m^2$. It is 10-25 cm in soil depth and pH 5.0-6.5 in soil acidity in that area. And many of A. distichum are clustered with 2-5 individuals extended by stoloniferous asexual reproduction. And the total numbers of A. distichum are about 700 individuals with only typical white flowers, and the ratio between pin type and thrum type is 37% and 63%, respectively. The huge population of A. distichum is growing with Quercus mongolica-Fraxinus rhynchophylla association in a mixed forest, and it shows high affinity with Stephanandra incisa, Ligustrum obtusifolium, Euonymus alatus for. ciliatodentatus, and Smilax sieboldi.

Quality Characteristics of Waxy Corn Noodles Containing Defatted Soybean Powder (탈지대두박을 첨가한 찰옥수수 국수의 품질특성)

  • This study was conducted to investigate the quality characteristics of waxy corn noodles (WCN) made with different defatted soybean powder (DFP). The WCN was evaluated for their cooking properties (weight, water absorption, volume, and turbidity), color values, texture characteristics, and sensory characteristics. The weight, water absorption, and volume of cooked WCN increased according to DFP content, whereas they significantly decreased relative to those of control noodles. The turbidity of cooked WCN decreased with increasing DFP content. The L-value of cooked WCN decreased relative to that of control noodle, whereas a- and b-values increased. The hardness, adhesiveness, springiness, and cohesiveness of cooked WCN increased with increasing DFP content, whereas chewiness and gumminess decreased. The texture characteristics of cooked WCN decreased compared to control noodles except for adhesiveness. Sensory evaluation indicated that the appearance, flavor, and overall acceptance of cooked WCN were better than those of control noodles. Overall, DFP can be used as an effective ingredient to improve the quality and sensory characteristics of WCN.

Vegetation Structure of Some Abandoned Coal Mine Lands in Taebaek Area, Gangwon Province (강원도 태백지역 폐탄광지의 식생구조에 관한 연구)

  • Vegetation structure was investigated to provide basic information on revegetation of abandoned coal mine lands in Borim, Sungwon, Hyeopjeong, Daedong and at a control site in Taebaek. The upper layer of the control site consists of 7 species and the Importance Value was highest for Pinus densijlora, but there were no species in the four abandoned coal mines. The number of dominant species in the middle layer of each coal mine site was 2 for Borim, 2 for Sungwon, 3 for Hyeopjeong and 2 for Daedong. In the case of the lower layer in Borim, Sungwon, Hyeopjeong and Daedong, there were 12, 14, 9 and 8 species, respectively. The lower level importance values were highest for Pinus densiflora in Borim, for Amorpha fruticosa in Sungwon and for Rubus crataegifolius in the Hyeopjeong and Daedong coal mines. Weigela subsessilis, R. crataegifolius, P. densiflora, Betula platyphylla var. japonica, Stephanandra incisa, Lespedeza crytobotrya and A. fruticosa appeared in the lower layers of abandoned coal mines. Species diversity of the lower and the herbaceous layers ranged from 0.800 to 0.952 and 0.699 to 0.907 in abandoned coal mines. Evenness and dominance in all abandoned coal mines ranged from 0.840 to 0.949 and 0.051 to 0.160.

Development of Analytical Method for Sodium Alginate in Foods (식품 중 알긴산나트륨의 분석법 개발)

  • Method of analyzing sodium alginate in foods was developed using high performance liquid chromatography (HPLC). HPLC conditions for sodium alginate were: column, MCI GEL $(8\;mm\;i.d{\times}300\;mm)$; mobile phase, deionized water; detector, refractive index detection (sensitivity = 16). Separation of sodium alginate was achieved within 15 min. Sodium alginate showed good linear relationship at 0.1-2.0% range. Correlation coefficient of calibration curve for sodium alginate exceeded 0.999, and detection limit was 0.005%. Recovery rate of sodium alginate in wheat flour dough was 106.67%. This method was successfully applied to analyses of cereals, saccharides, and ice cream, etc. Sodium alginate was detected in chocolate, noodles, and kelp at 0-44.8% range.
