Physicochemical Properties and the Product Potentiality of Soft Wheats (연질밀의 품종별 이화학적 특성 및 제품의 제조적성)

  • The physicochemical properties and mixograph characteristics of soft white winter (SWW) and club wheat, as well as their product potentiality, were investigated. There were no significant differences between the SWW wheat and club wheat regarding their Single Kernel Characterization System (SKCS) properties. The straight-grade flour yield, break flour yield, ash content, and milling score of the SWW wheat were similar to those of the club wheat, and the straight-grade flour yield had a significant positive correlation to the break flour yield (r = 0.805**). The Rapid Visco-Analyzer (RVA) peak viscosity and swelling volume of the SWW wheat flour were very similar to those of the club wheat flour, and there was a significant positive correlation between the RVA peak viscosity and the swelling volume (r = 0.662**). The average mixograph absorption of the SWW wheat was higher than that of the club wheat. The club wheat resulted in a higher cookie diameter than the SWW wheat, but the difference was not significant. The sponge cake volume using the SWW wheat flour was higher than that with the club wheat flour. In addition, there was a significant correlation between the cookie diameter and the sponge cake volume (r = 0.745**).

A Study of the Nutritional Composition of Aralia continentalis Kitagawa and Aralia continentalis Kitagawa Leaf (땅두릅과 땅두릅잎의 영양성분에 관한 연구)

  • In this study, we assessed the functional characteristics of Aralia continentalis Kitagawa (AcK) and Aralia continentalis Kitagawa leaf (AcK-leaf), including crude saponin contents, antioxidant activity, nutritive elements, dietary fiber, and chlorophyll contents. The results of our analysis of nutritive elements in AcK, the contents of the general components, inorganic components, and vitamins were all relatively high. The contents of inorganic components were also high in the following order: K>Ca>P>Na>Mg. Among vitamins, $\beta$-carotene and vitamin C contents were all high. The crude saponin content was 63.7 mg/g in the AcK and 63.5 mg/g in the AcK leaf, and the antioxidant activity was determined to be relatively high. With regard to the dietary fiber content, the total dietary fiber content was 2.13% (soluble 0.40, insoluble 1.72) in the AcK and 5.98% (soluble 1.06, insoluble 4.89) in the AcK leaf, and the total chlorophyll content was 92.58 mg in the AcK and 147.25 mg/100 g in the AcK-leaf.

Quality Attributes of Bread Made of Frozen Dough Added with Milk Protein-Polysaccharide Mixtures (우유단백질과 다당류 혼합물을 첨가한 냉동반죽의 제빵특성)

  • The quality attributes of bread made with milk protein (casein, C; whey protein, W) and polysaccharide (sodium alginate, A; ${\kappa}$-carrageenan, K) mixtures were investigated to study the method to suppressing quality deterioration during storage. Bread prepared with the CA mixture had a higher specific loaf volume compared to the control. And bread made with the WA mixture had reduced moisture loss during storage compared to the control. The hardness of control and breads containing protein-polysaccharide mixtures increased during storage, but hardness increased more in the control than the treatments. In terms of crumb color, the breads containing protein-polysaccharide mixtures had higher $L^{\ast}$ values, but lower $a^{\ast}$ and $b^{\ast}$ values than the control. Finally, there were no significant differences in sensory quality among the control and treatment breads. Overall, data indicate that the addition of CA and WA improved the baking quality of bread and retarded staling.

Effect of carbohydrase treatments on phenolics content and antioxidant activity of maize flour (탄수화물 가수분해효소 처리가 옥수수 가루의 페놀산과 항산화활성에 미치는 영향)

  • Enzymatic treatments of maize flour (MF) were investigated using commercial carbohydrases (Ultraflo L and Pentopan 500 BG) to enhance the phenolic acid content and antioxidant property. The total phenolic acid content of the MF was 3.76 mg/100 g, whereas those of the Pentopan 500 BG and Ultraflo L treated MF were 6.85 and 39.55 mg/100 g, respectively. Particularly, ferulic acid content of Pentopan 500 BG-treated MF was 20.0 times higher than that of untreated MF (1.7 vs. 33.9 mg/100 g). Pentopan 500 BG appeared to be more effective than Ultraflo L in increasing the free phenolic acid content. Antioxidant activities of enzyme treated MF were significantly higher than untreated MF. In particular, the Pentopan 500 BG-treated MF (16.0 mmol TE/100 g) was approximately 1.5 times higher than untreated MF (12.6 mmol TE/100 g). Enzymatic hydrolysis of cell wall polysaccharides in MF could be used as an effective procedure for not only increasing phenolic content but also antioxidant activities.

Comparison on Physicochemical Properties of Amaranth Starch with Other Waxy Cereal Starches (아마란스 전분과 곡류 찰전분의 특성 비교)

  • Physicochemical properties of amaranth starch were compared with those of waxy rice and waxy corn starches. Amaranth starch granules vary from $1.1{\sim}1.9\;{\mu}m$ in diameter and are polygonal in shape. Total amylose contents from waxy rice, waxy corn and amaranth starches were 0.01, 0.03 and 0.07%, respectively. Swelling power of amaranth starch granule was slightly different from waxy rice. The swelling power of amaranth increased at $70^{\circ}C$. X-ray diffraction patterns of amaranth and other waxy cereal starches showed an A-type crystalline structure. Relative crystallinities of their starches were similar. According to pasting properties by Rapid Visco-Analyzer, amaranth starch showed a very high gelatinization temperature $(75.1^{\circ}C)$ and lower viscosity and higher stability than other waxy cereal starches during heating and cooling cycle. Peak onset temperatures (To) of starches from waxy rice, waxy corn and amaranth in DSC thermograms were $58.7{\sim}64.0$, 67.2 and $71.5^{\circ}C$, respectively, and their peak enthalpies were similar. Enthalpy of reheated amaranth starch after 3 day storage at $4^{\circ}C$ was higher than those of waxy corn and rices starchs.

Aptness for the Preparation of Liquid Yogurt by Lactobacilli isolated from Korean Liquid Yogurts (국내 액상발효유에서 분리한 유산균의 제품제조 적성조사)

  • In order to evaluate the aptness for the preparation of liquid-yogurt, microbiological properties of 8 Lactobacilli isolated from 7 Korean liquid-yogurts were investigated. To accelerate acid-producing ability in skim milk, L. bulgaricus D, L. casei A and L. casei E need to supply with glucose, and L. Casei A and L. csaei E also need milk-protein hydrolyzate, but L. jugurti B, L. jugurti C, L. jugurti G, L. helveticus F and L. acidophilus B did not need those supplements. In cultivation in skim milk supplemented with glucose, L. jugurti B, L. jugurti C, L. jugurti G. L. helveticus F and L. bulgaricus D showed rapidity in acid development and weakness in cell viability, but L. acidophilus B, L. casei A and L. casei E showed slowness in acid development and highness in cell viability. Liquid-yogurts made by L. casei A or L. casei E had no sedimentation during storage but those made by L. jugurti B, L. jugurti C, L. jngurti G, L. helveticus F, L. bulgaricus D, or L. acidophilus B had much sedimentation. In sensory evaluation, Liquid-yogurts made by L. casei A or L. casei E had good response but those made by L. jugurti B, L. jugurti C, L. jugurti G, L. helveticus F, L. bulgaricus D or L. acidophilus B did not. Among 8 Lactobacilli examined, L. casei A and L. casei E were thought to have more suitable properties for the preparation of liquid-yogurt though they required a long period of cultivation.

Preparation and Evaluation of Dried Noodle Products Made from Composite Flours Utilizing Rice and Wheat Flours (쌀가루와 밀가루 복합분(複合粉)의 제면성(製麵性)시험)

  • In an attempt to make dried noodles with composite flours utilizing rice and wheat flours, noodle-making characteristics were improved by the addition of popped rice and wheat flours to rice flour. Their quality was studied in terms of physical properties, noodle-making characteristics, cooking quality test and sensory evaluation. Dried noodle of the composite flour was produced by the conventional method. The results are summerized as follows; 1. In comparing the composite flours, the rice flour containing 30% popped rice flour had a lower maximum viscosity than that with 40% popped rice flour by method of amylograph. The composite flour(20% rice+30% popped rice+50% wheat flour) with added 2% xanthan gum showed the viscosity characteristics which was similar to that of wheat flour. 2. Addition of $1.5{\sim}2.0%$ xanthan gum and $40{\sim}50%$ wheat flour to rice and popped rice flour mixture helped to improve the noodle making properties and the cooking quality, and the noodle making properties and the cooking quality of the mixed flour were almost the same as those of wheat flour alone. 3. The composite flour (rice+popped rice+wheat flour) with xanthan gum showed a higher score in sensory evaluation than that without xanthan gum. The general acceptability scores obtained with the noodle products made of the composite flours with 30% popped rice flour was not significantly different from that of noodle products made of wheat flour alone. However, the noodle products made of the composite flours showed rather higher scores in odor and palatability than the products made of wheat flour alone.

  • In order to obtain the basic data for processing adaptability of Korean figs, chemical analysis was carried out with 7 cultivar produced at Namhae and 3 cultivar transplanted from abroad. To prolong the storage period, Masan No.1 was packed with PE films with different thickness and stored at $2{\pm}0.5^{wcirc}C$. The results obtained were as follows; 1. Total sugar content, total acidity and pectin were $37{\sim}89.6%$(dry basis), $0.57{\sim}1.08%$, $4.30{\sim}7.79%$, respectively. 2. Changes in moisture content of control during storage were rapid. After 16 days it was decreased about 5% but in the lot packed with PE films. moisture content was slowly decreased. 3. Total sugar and acidity of the figs in the lot packed with 0.08 mm PE film were very slowly decreased but control was not. 4. Changes in hardness, fracturability during storage showed similar decreasing pattern but adhesiveness was increased.

Lacquer Layers and Making Methods of the Wooden Coffin Excavated from the Nongso Tomb of Unrimri, Sunchang in Korea (순창 운림리 농소고분 출토 목관 칠 분석을 통한 제작방법 연구)

  • The Nongso tomb of Sunchang was built in a relatively deep place; hence there was little damage from grave robbers. The tomb was completely filled with a large amount of charcoal, and therefore the wooden coffin was excavated in relatively good condition. On the basis of the structure of the tombs, excavated artifacts, and radiocarbon dating results, the tomb is estimated to be from between the late Goryeo and the early Joseon period. The wooden coffin excavated is double-layered structures consisting of an outer coffin and an inner coffin. The outside of the wooden coffin is thickly lacquered and decorated with yellow letters and white motifs. An analysis of the pigments' components revealed that the major component of the letters was gold (Au) and the major component of the motifs was silver (Ag). The coffin lacquer had three layers: a pigment layer, a yellowish-brown layer, and a black layer. The wooden bases of the coffins were painted with a black substance, such as soot, as mineral elements were not detected in the black layer. The yellowish-brown layer is presumed to be refined lacquer. From the analysis of the structure of the layers and pigments, we can estimate the method was adopted for making lacquer for wooden coffin. It is assumed that the method used gold leaf and gold powder. The form of the pigment and the internal structure are likely to be gold leaf, but the shape of the surface letters appears to have been formed using gold powder. This study will serve as important information for understanding lacquer making techniques at the time of the tombs' construction by confirming the making method through reproduction experiments using gold leaf and gold powder.

Physicochemical Properties of Rice Starch by Amylose Content (아밀로오스 함량별 쌀전분의 이화학적 특성)

  • physicochemical properties of rice starch isolated from eight varieties were examined to evaluate the rice processing suitability The amylose contents of rice starch were varied with 16.7-29.7%, and IR 30, Godael, Aguja and Lengkwang varieties showed higher amylose content than the other varieties. The water binding capacity and blue value were in the range of 87.0 103.0 and 0.178-0.305, respectively. As the amylose content increased, the amylogram pasting temperature and the break down ratio increased, while the peak viscosity did not show any significant difference. The transmittance of 0.1% starch suspension slowly increased at $50^{\circ}C$ in the low-amylose content rice group, and rapidly increased at $65^{\circ}C$ in the high-amylose content rice group, but there were no differences above $75^{\circ}C$ among varieties. Also the low-amylose rice starch showed higher values in the swelling power and solubility. The hardness of the 30% rice starch gels was low in low-amylose one. During storage at $20^{\circ}C$ for 14 days, the increment of hardness was more slow in high-amylose one. The retrogradation velocity constant of rice starch gel by Avrami equation was the highest as 0.219 in Aguja variety.
