The Geomorphological Features of Dongcheon-gugok in the Eastern Part of Gyeongsang Province (경상좌도 동천구곡의 지형적 특성)

  • This work is to describe the geomorphological features of Dongcheon-gugok in the Eastern Part of Gyeongsang Province, and attempt to develop a basic data for traditional natural heritage. The bedrocks of the study area is typically sedimentary rocks of Gyeongsang Series. Dongcheon-gugok in the study area is almost distributed in the valley of Taebaek Mountain range in Gyeongbuk Province. These valleys almost belong to tributaries of Nakdong River, and are characterized by narrow meandering valley in the moutainous region. Dongcheon-gugok in the study area is located in these valleys with steep slopes or rocky cliffs. And there are pools, point-bar with sands and gravels, riffles, etc in the river valley. Ancesters named these landscape with Jeolbyuk(rocky cliff), Bong(peak), Dam(pool), Tan(ripple), Cheonsa(point-bar), Pok(waterfall), Dae(hill), etc.

Analysis of Consumption Status of Cooked Rice with Different Grains and Related Factors in a Korean Population: Based on Data from 2011 Korean National Health and Nutritional Examination Survey (KNHANES) (한국인의 잡곡밥 섭취 실태 및 관련 요인 분석 - 2011년 국민건강영양조사 자료를 이용하여 -)

  • This study aimed to investigate consumption status of cooked rice with different grains as well as examine related factors of Koreans. Based on the Korea National Health and Nutrition Examination Survey of the second year (2011) in the fifth stage, we extracted data on 7,190 people aged 1 year and higher who consumed cooked rice with one or more grains and legumes for at least one meal per day. A total of 15,250 meals were analyzed. Approximately 67.6% of subjects consumed cooked rice with different grains for more than one meal. Age was the strongest influencing factor for consuming cooked rice with different grains. Compared with people in their 40s, those aged 19~29 and in their 30s showed lower probabilities (0.5 and 0.6, respectively) of intake of cooked rice with different grains, whereas those in their 50s and 60s showed relatively higher probabilities (1.9 and 5.0, respectively). The intake ratio of cooked rice with different grains was higher in subjects who were females (64.5%), aged 1~18, over 50s, and residing in a metropolis (62.0%). Breakfast (69.6%) showed a higher intake ratio of cooked rice with different grains compared to lunch (49.1%) and dinner (57.9%). Intake of cooked rice with different grains was highest at home (71.2%), whereas it was lowest in restaurants (11.2%). The findings of the current study may be useful in planning dietary guidelines for intake of cooked rice with different grains.

A Survey on the Preferences and Recognition of Multigrain Rice by Adding Grains and Legumes (곡류와 두류를 혼합한 잡곡밥의 기호도 및 인식 조사)

  • This study investigated the preference and recognition of cooked rice mixed with multigrains. The data for the analysis was collected from 464 people who were residing in Seoul, Gyeongsang and Jeolla area, and analyzed by the SPSS 18.0 program. The result showed that 77.8% of the respondents liked cooked rice mixed with multigrain, showing significant difference by age (p<0.001) and occupation (p<0.01). Of the respondents, 33.8% consumed cooked rice mixed with multigrains at least once a day, showing significant difference by gender (p<0.01), age (p<0.001) and occupation (p<0.001). The most popular type of grains to mix with rice were, in order, black rice (3.8)> brown rice (3.7)> barley (3.7)> proso millet (3.4)> foxtail millet (3.4)> SoRiTae (3.3)> sorghum (3.2)> adlay (3.2)> mung bean (3.1)> buckwheat (3.0)> BacTae (2.8). A total of 32.5% of the respondents answered that 21~30% was proper mixing ratio of multigrains-added cooked rice, showing age (p<0.001), occupation (p<0.001) and resident area (p<0.05). Three or four kinds of grains were preferred to mix cooked rice, showing significant difference by age and occupation (p<0.001). Of the respondents, 43.1% chose price reduction as the most desired improvement of multigrains in the market. Most of the subjects had affirmative view intake of cooked rice mixed with multigrains, but recognized that multigrains were expensive. From these results, this study will provide basic information for the increased availability of multigrains and optimization of the multigrain ratio mix.

  • Purpose: To provide the primary data on dietary guidelines for the management of obesity, we analyzed the intake rate of food groups and dish groups according to obesity and age. Data were obtained from the Korea National Health and Nutrition Examination Survey (KNHANSE, 2013-2018). Methods: This study analyzed the data of 21,184 adults aged 19-64 years, obtained from the KNHANSE 2013-2018. The 24-hour recall was performed and the food groups were classified into six representative food groups (grains, meat·fish·eggs·legumes, vegetables, fruits, milk and dairy, and oil and sugar), and 'alcohol' and 'others'. The dish groups were classified into a total of twenty-four types. Results: The normal group included 9,004 subjects (42.5%), while the obese group had 12,180 subjects (57.5%). The food groups showing significant differences according to obesity were grains (p < 0.001), meat/fish/egg/legumes (p < 0.001), and vegetables (p < 0.001); similar results were obtained in both male and female. Comparing the intake rate of food groups and dish groups targeting only the obese group according to age, the food groups showing significance between the obese group and the normal group were grains (p < 0.001) and vegetables (p < 0.001), with significantly increased intake in both genders. Considering the dish groups, significant increases were determined for stews (p < 0.001), seasoned vegetables (p < 0.001), and kimchi (p < 0.001) in male, and for rice (p < 0.001), seasoned vegetables (p < 0.001), kimchi (p < 0.001), and rice cakes (p < 0.001) in female. Conclusion: The results of this study determined that the intake ratio of food and dish groups differs by age in obese adults. We believe that our results can be used as primary data for forming dietary guidelines for obese adults in the future.

  • The determination of fungal flora in various kinds of local grains have been carded out in order to obtain an appropriate information of the population of toxigenic fungi in Korean local grains. Results of fungal examination on nine kinds of grain such as soy bean(18 samples), red bean(12 samples), rice(8 samples), kidney bean(8 samples), millet(7 samples), barley(5 samples), malze(5 samples), wheat(4 samples) and sesame(3 samples) were described in this report. 1. Of the 70 various grains, 283 colonies of fungi were isolated. Among the 283 colonies, 262 were possible to identity into 15 genera. 2. Predominant genera of fungi in most local grains were Penicillium sp.(24.39%), Aspergillus sp.(20.49%) and Alternaria sp.(13.43%).

  • Rice and other corns as well as potato were mixed, as indicated in the following table, and fed to the experimental animals for 14 weeks. It was observed that the 9th and 10th dietary groups, whose protein values were higher among the experimental groups, displayed the more ideal growth and development as compared with other groups, and that the mixing ratio in these groups was proved to be better nutritionally as judged from the serum protein levels. FIRI 연구동향: 주요 원료의 아미노산 분석 평가

  • 사료기술연구소는 수입사료의 검정과 회원사에서 자가품질검사 등과 관련하여 검정의뢰하는 사료에 대하여 분석 영역별 전문가가 검정하여 결과를 통보해 주고 있으며, 특히 회원사가 자체적으로 분석이 곤란한 성분에 대하여 품질관리를 대행해 주고 있다. 영양성분 중 아미노산은 매우 중요한 관리 항목이며, 따라서 사료관리법 시행규칙 별표8의 자가품질검사기준에서 돼지 및 닭 배합사료의 아미노산 성분은 6개월마다 1회 이상 자체 검사를 하도록 규정되어 있다. 또한 배합사료의 성분등록시 양돈사료에서는 "라이신" 함량을 닭 사료에서는 "메치오닌+시스틴+MHA" 함량을 등록하도록 규정되어 있다. 사료기술연구소는 아미노산 전용분석기 (HITACHI) 2대를 구비하여 사료검정에 운용하고 있으며, 분석결과의 정확도와 정밀도를 높이기 위하여 매월 1회 미국 AAFCO(사료검사관협회) check sample program에 참여하고 있으며 상위의 높은 신뢰도를 유지하고 있다. 본고에서는 아미노산 분석에 대한 이해를 돕고자 실무 분석방법과 당 연구소에서 최근 5년 동안 분석한 원료에 대한 아미노산의 분석 통계치등을 정리하여 품질관리에 참고자료로 활용토록 하고자 자료를 정리하였다. 참고로 지난 5년간 통계량을 보면 연평균 아미노산 분석 건수는 산안정아미노산 1,418건, 함유황아미노산 1,165건으로 총 2,583 건이며 그중 원료사료의 분석결과를 정리하였다. 의뢰 사료중 많은 경우가 원료명이 표기되지 않아 자료로 사용할 수 없었고 일부 원료(육분, 대용유등)는 분석치 변이가 크게 나타나 제외하였다. 아미노산 평균치 자료는 곡류, 강피류, 동물성단백질류 식물성박류, 기타 순으로 정리하였다.

The Geomorphic Characteristics of the Location of the 4 Traditional Settlements in Youngnam District (영남지방 4대 전통취락의 지형적 입지 특성)

  • This study aims to interpret the location of 4 traditional settlements in the Youngnam district of Korea in view of geomorphology. For this study, GIS techniques were used to analyse quantitatively the degree of slope, slope aspect and the relation with river/stream of these regions. Yugok is located on pediment in the valley basin. Cheonjeon is located in the end part of the hill. Hahoe is located on the convex natural levee of the flood plain. Yangdong is located on a hillside. Houses are mostly distributed with south, southeast, and southwest aspect, but in Hahoe face all sides. Also, the settlements are located on average $10{\sim}20m$ above river bed. This indicates a safe height above river bed for avoiding an flood damage. These results imply that the location of the traditional settlement is based on a scientific logic and rationale. It is thus argued that the settlements satisfy exellent geomorphic conditions from the perspective of modern theories of residential location.

The Factors for Korean Dietary Life Adaptation of Female Immigrants in Multi-cultural Families in Busan (다문화가정 결혼이주여성의 식생활적응에 영향을 미치는 요인)

  • This study was carried out to investigate the factors affecting the dietary adaptation of female immigrants in multi-cultural families in Busan. The survey was conducted from October 10 to November 30, 2010 using questionnaires, and the data was analyzed using the SPSS program. The subjects were mainly from China (58.8%), Vietnam (14.7%), Philippines (8.8%) and Japan (7.4%). The longer they had resided in Korea, the lower their preference they had for Korean foods. There were no significant differences in preference according to their nationality. The subjects reported that their consumption of cereals (36.7%), meats (40.0%), fish (50.8%), milk and dairy products (47.4%), vegetables (48.3%), fruits (44.8%), fat and oil (29.1%) and beverages (32.8%) were increased after immigration. They usually obtained information about Korean foods from family (26.5%) and television and internet (26.5%). Sixty four point seven percent of the females ate 'everyday' Korean foods and 30.9% ate their home country foods every day. A higher will for learning Korean foods, intake frequency and age resulted in a higher adaptation of Korean dietary life. Lower marital conflict resulted in higher adaptation. These results suggest that it would be effective to provide systematic nutrition education program for female immigrants and their families to adapt to Korean dietary life.

Analysis of Dietary Fiber Intake in the Korean Adult Population Using 2001 Korean National Health and Nutrition Survey Data and Newly Established Dietary Fiber Database (식이섬유 D/B 구축과 2001 국민건강 영양조사 식이섬유 섭취량 재평가 -20세 이상 성인을 대상으로-)

  • The present study estimates intake levels of dietary fiber (DF) in Korean adults aged 20 and over, using a newly established dietary fiber database for 3,149 food items, as well as 24-hour recall method data from the 2001 Korean National Health and Nutrition Survey. Dietary fiber intake and food groups are analyzed by gender, age, and region. The average dietary fiber intake, per capita of Korea was estimated to be 12.24g/1,000kcal or 23.58g/day. Calorie-based dietary fiber intake for 20-49 year-old-Korean males, 20-29 year-old females, and the adults who resided in metropolitan areas was under the Adequate Intake for DF, 12 g/1,000 kcal. Further, the dietary fiber intake after adjusting energy intake in people over 75 year-old was estimated to be 75% of AI. Vegetables, cereals and fruits were three major sources of DF for Korean, making up approximately 75% of DF. Regarding the subjects of this study, major sources of dietary fiber were Kimchi and well-polished rice, which supplied 13.98% and 9.16% of total dietary fiber intake, respectively. The result of this study could contribute to the establishment of DRIs for dietary fiber, after adjusting energy intake for Korean aged 75 years and over. The beneficial health effects of DF and the necessity of nutritional education in this area should be continuously emphasized concerning 20-29 year-old people and metropolitan adults.
