Effect of addition of sweet potato on physiochemical properties of Kochujang (고구마를 이용한 고추장의 숙성 중 이화학적 특성 변화)

  • Kochujang was prepared by replacement of rice (25%, control) with pumpkin or purple sweet potato by 0. 5, 10, and 15% (total addition ratio of rice and sweet potato=25% of sample). Effects of the addition of sweet potato on physiochemical properties of fermented Kochujang were investigated. Viable cells of yeast decreased in the sweet potato-added Kochujang at the later stage of fermentation, while there was no significant difference in the number of bacteria among the test groups. As the addition ratio sweet potato increased, ${\alpha}$-amylase activity increased while protease activity decreased. Hunter L, a, and b values of Kochujang prepared with purple sweet potato were lower than those with pumpkin sweet potato. Changes in ${\Delta}E$ value was greater in Kochujang prepared with pumpkin sweet potato than that with purple sweet potato. Oxidation-reduction potential and water activity were higher in sweet potato-Kochujang than control, but reducing sugar content was higher in control. Alcohol and amino-type nitrogen contents were higher in Kochujang prepared with pumpkin sweet potato than that with purple sweet potato, but it was not significant. Overall sensory acceptability was highest in Kochujang prepared with 10% of purple sweet potato while that with 15% pumpkin sweet potato was the least preferred.

A Study on the Standardization of Kimchi for the Children -The Proper Red Pepper Powder for Children대s Kimchi- (어린이 김치 표준화에 대한 연구 -어린이 김치에 적합한 고추가루-)

  • This study is a continuous work for the standardization of children's kimchi preparation. In order to find out the proper red pepper powder for children's kimchi, four kinds of red pepper powder(A, B, C, D) sold in Kyungsang province were used as samples. The proximate composition, color value, capsaicinoids concentration and sugar content in four kinds of the red pepper powder were determined, and sensory evaluation of kimchi Prepared with those was carried out for different fermentation times. Moisture contents of red pepper powder A, B, C and D were in the range of 11.59~13.48%. Lipid and ash contents of samples were in the range of 7.59~8.39% and 4.34~7.45%, respectively. In comparision of color values measured by a Hunter colorimeter, red pepper powder A showed the highest value for a and b values. Also A showed the brightest color as measured in ASTA color and L value. Capsaicin concentration of D and dihydrocapsaicin concentration of C were found to be the highest among the sanlples. The capsaicin equivalent was in tile order of D>C>A>B. The content of total sugar was in the order of B>A>D>C. In the sensory evaluation of children's kimchi prepared with four kinds of red pepper powder, the color and total acceptability of kimchi prepared with A were found to be the best. The results of sensory evaluation between kimchi prepared with A and school supplied kimchi showed that the former was better. And the composition of A red pepper powder was as follows: capsaicin equivalent 24.l5mg%, total sugar content 15.79% and ASTA color value 178.2.

Anti-oxidant and Anti-obesity Effects of Red Pepper and Zanthoxylum schinifolium Ethanol Extract, Main Ingredient of Mara Source (마라소스 주원료인 고추 및 산초 에탄올추출물의 항산화 및 항비만 효과)

  • This study was performed to investigate anti-oxidant of red pepper and Zanthoxylum schinifolium ethanol extract, main ingredient of mara source. Anti-obesity effects of red pepper and Zanthoxylum schinifolium ethanol extract were investigated with mice fed high fat diet for 8 weeks. Sixty mice were classified to 6 groups of ND (normal diet), HFD (high fat diet), RP (high fat diet+red pepper (0.1 g/60 kg)), CP (high fat diet+Chinese pepper (0.1 g/60 kg)), RCP (high fat diet+red pepper : Chinese pepper=1:1 (0.1 g/60 kg)), HCA (high fat diet+HCA (0.1 g/60 kg)) experiments. This research showed that final weight, weight gain, food efficiency ratio, and river weight were decreased by the addition of red pepper and Zanthoxylum schinifolium ethanol extract comparing to those of HFD group. The plasma triglyceride and LDL cholesterol concentration of red pepper ethanol extract and Zanthoxylum schinifolium ethanol extract group was lower than that of high fat diet group. HDL-cholesterol concentration of red pepper ethanol extract and Zanthoxylum schinifolium ethanol extract group was higher than those of high fat diet group. These results suggested that red pepper and Zanthoxylum schinifolium ethanol extract might be useful for obesity control and good source of functional materials.

Development of Value-added Ketchup Products with Korean Chile Peppers(Capsicum annuum L.) and Their Sensory Evaluation (국내산 고추를 이용한 고추 케찹 개발 및 관능적 특성 평가)

  • The purposes of this study were to develop value-added sauce(ketchup) products with Korean advanced chile peppers (Capsicum annuum L.), determine their physicochemical characteristics, and conduct a sensory evaluation. American chile ketchup products were collected from American local favorites and analyzed based on their compositions. The Korean chile ketchup contained tomato paste(37.5%), Korean chile pepper(14.1%), sugar(14.8%), vinegar(14.1%), garlic(8.5%), herbs, plum extract, and oligosaccharide. Its physiochemical analysis showed: moisture $59.61{\pm}0.28%$, crude protein $2.18{\pm}0.11%$, crude lipid $1.99{\pm}0.04%$, crude ash $9.26{\pm}0.13%$, crude carbohydrate $26.97{\pm}0.48%$, reducing sugar $35.19{\pm}0.97%$, salt $3.04{\pm}0.04%$, acidity $2.22{\pm}0.01%$, pH $3.7{\pm}0.01$, and $^{\circ}brix\;36.3{\pm}0.14$. Korean chile ketchup showed higher overall acceptability compared to American local favorite chile ketchup. This result suggests the possibility for replacing chile ketchup products imported from foreign countries(USA and Europe).

Physicochemical Properties of Kochujang Prepared by Bacillus sp. Koji (Bacillus sp. koji가 고추장의 품질 특성에 미치는 영향)

  • A part of Aspergillus oryzae koji was replaced with Bacillus sp. koji to improve the quality of kochujang, and the resulting effects on enzyme activities, microbial characteristics, and physicochemical properties were investigated during fermentation. The activity of amylase was higher in the kochujang prepared with Asp. oryzae koji. The activity of protease increased as the ratio of Bacillus. sp. koji increased. Viable cell counts of yeast and bacteria of the kochujang increased with increasing ratio of Bacillus sp. koji. The Hunter a-values of the Bacillus sp. koji kochujang were higher, and the degree of increase in the total color difference $({\Delta}\;E)$ was lower in the Bacillus sp. koji group. Consistency and water activity of the kochujang prepared with Bacillus sp. koji was higher, and the pH and titratable acidity of the kochujang also changed slightly. As the ratio of Asp. oryzae koji increased, sugar content decreased. However, the ethanol content of the kochujang did not significantly change. Amino nitrogen content of the kochujang increased, while ammonia nitrogen content decreased as the ratio of Bacillus sp. koji increased. After 12 weeks of fermentation, the result of sensory evaluation showed that C kochujang (75% of Asp. oryzae koji replaced by Bacillus sp.) was more acceptable (p<0.05) than the other groups in taste, color, flavor, and overall acceptability.

Changes in Microflora and Enzyme Activities of Traditional Kochujang Prepared with a Meju of Different Fermentation Period during Aging (메주의 발효기간에 따른 재래식 고추장 숙성 중 미생물과 효소력의 변화)

  • This study was designed to investigate the changes in microflora and enzyme activities of traditional kochujang during aging, which was prepared with a meju fermented for various periods of time. The number of bacteria was highest in all samples after 30 days of fermentation at $20^{\circ}C$, while that of mold in kochujang prepared with a 40-day- or 60-day-fermented meju was highest at 15th day of aging when yeast appeared. The activities of carbohydrases and proteases were highest in kochujang prepared with a 40-day-fermented meju followed by a 60-day-fermented meju. These results suggest that kochujang prepared with a meju aged for 40 days had the highest quality in terms of physicochemical, microbiological and enzyme activities of kochujang during fermentation.

Changes in Quality Characteristics of Kochujang Prepared with Aspergillus oryzae, Bacillus licheniformis and Saccharomyces rouxii during Fermentation (고초균과 효모를 혼용첨가한 고추장 숙성 중 품질특성의 변화)

  • Quality characteristics of 3 kinds of kochujang were investigated during 6 months of fermentation in order to improve the quality of industrial kochujang to that of traditional one. Three different kinds of kochujang were prepared using Aspergillus oryzae, Aspergillus oryzae plus Bacillus licheniformis and Aspergillus oryzae, Bacillus licheniformis plus Saccharomyces rouxii. Kochujang prepared with all three microorganisms contained lesser amounts of free sugar than the other preparations and glucose was the most abundant free sugar found. Ethanol was the most abundant amount among alcohols in kochujang. Kochujang prepared with A. oryzae, B. licheniformis plus S. rouxii has more amino nitrogen content than that prepared with A. oryzae only. Capsaicin contents of kochujang decreased slightly in all three kochujang, but there was no significant differences. The results of sensory evaluation showed statistically significant difference among three samples and panel members preferred the taste and flavor of kochujang prepared with all three microorganisms to those of the other samples.

Comparison of the Quality of Hot Pepper(Capsicum annuum L.) Grown under Organic and Conventional Conditions (유기 및 관행재배 고추의 품질특성 비교)

  • The aim of this study was to evaluate the product quality and function properties of hot pepper (green and red) fruits cultivated by organic and conventional agricultural practices. Organic and conventional hot peppers were analyzed their product quality with respect to pH, soluble solid, hardness, and color values. The soluble solid contents of organic hot peppers were 2.6~10% higher but their hardness was slightly lower than those of conventional hot peppers. Hot peppers were further analyzed their functional properties on chlorophyll contents, ASTA (American Spice Trade Association) value, total phenolics, and SEM ultrastructure. In case of green pepper, organic hot pepper showed higher (-)a value and the significantly (p<0.001) higher amounts of chlorophyll a and b than conventional hot pepper. Interestingly, organic red hot pepper showed higher (+)a value than that of conventional one. The ASTA value of organic red hot pepper was 28% higher than that of conventional one. Regardless of the fruits color, total phenolics content of organic hot peppers was more enriched than those of conventional ones. These results suggest that organic hot peppers exhibited more excellent color quality and functional properties than conventional hot peppers regardless of fruit color.

Synergistic Effect of Citric Acid on Antioxidant Property of Red Pepper (고추의 산화성(酸化性)에 대한 Citric Acid의 상승효과)

  • The antioxidant activity of ground red pepper, ethyl alcohol extracts of ground red pepper peel and alcohol extracts plus organic acid was studied by using edible soybean oil as a substrate. All the substrates were stored in a dark place at $45.0{\pm}0.5^{\circ}C$ respectively. The results of the study were as follow: 1. Ground red pepper, black pepper and cassia exhibited slight antioxidant activity and there was no significant difference in antioxidant activity among them. 2. Although both ground red pepper peel and red pepper seed showed antioxidant activity, ground red pepper peel exhibited greater antioxidant activity than ground red pepper peel did. 3. Ethyl alcohol extracts of red pepper peel showed strong antioxidant activity, but the residue did not show the antioxidant activity. 4. The antioxidant activity of the ethyl alcohol extracts of red pepper peel increased in direct proportion to the concentration of the extracts. 5. In connection with the synergistic effect of organic acid to the ethyl alcohol extracts of red pepper peel, citric acid showed a very strong synergistic effect on the antioxidant activity of red pepper, while ascorbic acid showed a weak effect. On the other hand, phosphoric acid showed an accelerating effect on the oxidation of oils. 6. The maximum antioxidant activity of the ethyl alcohol of ground red pepper peel was observed at the citric acid concentration of 0.04%, when tested at various concentration of citric acid.

Studies on the Change of Composition of Sweet Potato Kochujang During Fermentation (고구마 고추장의 숙성기간중(熟成期間中) 성분변화(成分變化)에 관(關)한 연구(硏究))

  • In an attempt to study the possibility of substituting sweet potato for cereals as raw materials for Kochujang, three kinds of Kochujang were made from barley, sweet potato or 50% barley and 50% sweet potato, The results of component variation during the ripening and the effect of temperature on the aging in the harvesting season of sweet potato were as follows: 1) Kochujang is, usually, manufactured in May, but no difference was observed in aging condition when it was manufactured in September, the season of sweet potato harvest, since the inner temperature of the product was around $20^{\circ}C$. 2) The total reducing sugar content and maturity reached maximum after $40{\sim}50\;days$ of fermentation in the three treatments and crude fat content tended to be slightly decreased during fermentation. 3) Lightness in color of the three kinds of Kochujang decreased by exposure to sunlight. Sweetpotato Kochujang showed a stronger tendency to increase the redness as compared with the rest. 4) Sensory evaluation showed that sweet potato Kochujang was less acceptable than barley Kochujang due to disagreeable flavor of sweet potato but mixed Kochujang showed little difference, as compared with barley Kochujang.
