Exploring the Competitiveness for Sustainable Growth of Well-known Local Products : Ancient Capital Gyeongju Bread and Waxy Barley Bread Case Study (지역 특산품의 지속 성장을 위한 경쟁력 고찰 : 고도 경주빵과 찰보리빵 사례연구)

  • Local product is the key driver of regional economic growth. Despite abundant attention - there remains to examine about sustainable growth of local products. While previous studies have focused on local product brand and tourism effects, we need to know more about other way or mind-set that upgrade local product quality in local circumstances. This research topic's goal is to provide an academic implication to discuss sustainable growth and local product developments in Gyeongju bread and waxy barley bread from succession and entrepreneurship view with practical lesson for fostering local products. In-depth case study conducted within ancient capital Gyeongju bread and waxy barley bread provided combined evidence that craftsmanship and entrepreneurship is vital to the sustainable growth of local bread. Our study suggests that how succession is deployed serves as a key engine for the craftsmanship and entrepreneurial mind of local product business ownership.

The Recognition and Improvement of the Hwangnamppang Available to University Students in the Gyeongju Area (경주 지역 대학생의 황남빵에 대한 인식 및 개선 방향)

  • The purpose of this study was to investigate the recognition and need for improvement of the Hwangnamppang provided to university students in the Gyeongju area of Korea. To accomplish this, we surveyed 195 university students by questionnaire. The consumption frequency rate revealed that 49.7% of students consumed Hwangnamppang $1{\sim}2$ times a year, while 32.8% consumed it $2{\sim}3$ times per six months and 16.4% consumed it $1{\sim}3$ times a month. Furthermore, the results revealed that 45.6% of the students purchased Hwangnamppang to give as a present. Moreover, 55% of the respondents thought that Hwangnamppang was a suitable gift, but that it was too expensive. In addition, 47.7% of the respondents felt that there were not enough varieties of the product and 26.7% for factor that do not increase Hwangnamppang's consumption respond. Finally, 90% of the respondents felt that there was a need to diversify the red-bean paste used in Hwangnamppang, and felt that the best pieces contained chestnuts (3.66/5 score) or sweet potato (3.62/5 score). Overall, the results of this study revealed that Hwangnamppang requires further development to increase the varieties available and improve the overall acceptability.

The Recognition and Use of Bakeries Available to University Students in the Gyeongju Area (경주 지역 대학생의 빵에 대한 인식과 이용 실태)

  • This study was performed to analyze the preferences and actual use patterns of university students (96 males and 187 females) for bakeries in the Gyeongju area of Korea. A total of 283 questionnaires were used for the examination and statistical analyses were completed using SPSS Win (14.0) by descriptive analysis and $x^2$-tests. The most favored bakery products were prepared items such as sandwiches and toast. Most of the respondents (92.9%) typically used bread for snacks, and the main places of purchase were well-known bakery shops (38.5%) in which females preferred well-known shops more than males. In addition, the respondents liked milk (79.9%) and jam (39.7%) as the beverage and food, respectively, to eat with bread. When choosing bread, the main selection point was taste (80.2%) and the cost per person per visit was usually 1,000~5,000 won (63.3%). The consumption frequency rate revealed that 49.1% of the students consumed bread as a snack, while 24.8% consumed bread with other foods 1~2 times a week. In the case of purchasing bread as a snack, females had more purchases than males (p<0.05). Students who lived in their own home (p<0.001) with a commute time to school greater than 30 minutes (p<0.001) had the highest number of bread purchases as a snack. The most important point for bread purchase was hygiene (4.60). Overall, for the development of bakeries in the Gyeongju area it seems imperative to address the bakery shop environment, including such aspects as hygiene, price, and new bread product development for students.

Local Food Specialties Tourism Quality, Value Perception, and Consumer Behavior Intention: Gyeongju Specialties Bread (관광지역 특산물의 메뉴품질, 가치지각, 행동의도와의 영향관계 연구: 경주 특산물 빵을 중심으로)

  • This study examined the factors that affect the relationship among local specialties food quality, value perception and customer behavioral intention. A total of 280 questionnaires were distributed to consumers, of which 268 were deemed suitable for analysis after the removal of 12 unusable responses. In order to perform statistical analyses required for the study, SPSS 18.0 Statistical Program was employed for frequency analysis, factor analysis, and reliability analysis. The results of the exploratory factor analysis showed that three factors regarding local food specialties quality were extracted from all measurements with a KMO of 0.827 and a total cumulative variance of 65.638%. With regard to value perception, six factors were extracted with a total cumulative variance of 59.855% and a KMO score of 0.782. One factor for behavioral intention was extracted that accounted for a total cumulative variance of 64.427% and a KMO score of 0.757. All factors were significant to 0.000 and the correlation between variables was significant. Thus, based on the results, the main research hypothesis that identifies the relationships between value perception and behavioral intention was partially adopted.
