This experiment was carried out to investigate the influence of flooding on the quality and yield of an oriental melon. Waterlogging for four periods, 0(not flooded), 5, 10 or 15h, were applied to 30cm depth from the soil surface. The soluble solids content of fruit flesh measured at 7 days after waterlogging was 12.6 Brix in not-flooded plot, but it decreased by 4.7-5.6 Brix in plots flooded 5, 10 or 15h, respectively. Difference in fruit hardness between the no-flooded and 5h-flooded plots was not observed, while a significant decrease in fruit hardness was observed in 10 or 15 h-flooded plots at 7 days after waterlogging. Decrease in fruit hardness in all plots except control plot was observed at 13 days after waterlogging. The percent decayed fruits at 7 days after waterlogging was not observed, but at 13 days after waterlogging it gradually increased as duration of flooding increased. The incidence of downy or powdery mildews increased is significantly in plots flooded for 5, 10 or 15h as compared to the not-flooded control. However, population of cotton caterpillar decreased in the flooded plots. Marketable fruits yield per 10a was 616.2kg in no-flooded plot, but it decreased by 33%, 45% and 66%, respectively, in plots flooded for 5, 10 or 15h. The waterlogging during fruit enlargement stage significantly deteriorated fruit quality and decreased marketable fruit yield.
In the present study, egg development and early life history of Korean spined loach, $Iksookimia$$koreensis$, were observed. Adult fish were sampled using spoon nets in Okgye-ri, Hoengseong-gun, Gangwon-do, Korea in July 2010. Eggs were obtained after injecting females with Ovarprim. Eggs were then artificially fertilized in the laboratory using the dry method. Mature eggs were slightly adhesive and transparent with a light yellowish color, and measured $1.40{\pm}0.04mm$ (mean${\pm}$SD) in diameter. Hatching of the embryo occurred approximately 50 h after fertilization in the water at $23^{\circ}C$, and newly hatched larvae were averaged $4.7{\pm}0.21mm$ in total length. 5 days after hatching, the averaged total length of larvae was $7.1{\pm}0.25mm$ and their yolk sacs had been completely absorbed. 17 days after hatching, fish started to enter the juvenile stage and reached $12.2{\pm}1.10mm$ in total length. 80 days after hatching, the band patterns and external form of juvenile fish were similar to those of adults, and they averaged $31.0{\pm}3.98mm$ in total length.
This study was conducted to select the coagulant for konjac processing and to identify the antibacterial activity on foodborn pathogens by concentration of $Ca(OH)_2$. In rheological properties such as hardness, gumminess and chewiness, konjac jelly were increased by progressing coagulation regardless of coagulant. In mineral contents, the Ca content of konjac jelly made with $Ca(OH)_2$ was significantly higher than that of NaOH. On the contrary, the Na content of konjac jelly made with NaOH coagulant was significantly higher than that of $Ca(OH)_2$. There were no significant differences in the Mg and P contents according to coagulant. In sensory evaluation, there were no significant differences in the color, flavor, taste, texture and overall quality according to coagulant. The antimicrobial activities of Staphylococcus aureus, E. coli, Salmonella typhimurium were inhibited in proportion to the concentration of $Ca(OH)_2$. According to the manufacturing process of konjac jelly, the change in microorganism was not found after molding.
The objectives of this study were to investigate the quality characteristic of the nutrition bar with various concentrations (0, 5, 10, 20%) of defatted ginseng seed meal(DGSM). Specific gravity and pH of bar batters were lower in bars containing DGSM. Specific volume, loss rate and leavening rate of bars were decreased as DGSM increased. In color of bar crust and crumb, the L and bcolor values decreased according to the level of DGSM added, whereas the a color valuesand ${\triangle}$ increased. The bars with 5, 10 and 20% DGSM had significantly higher hardness value than control bar (p < 0.05). The result of sensory evaluation showed that intensity scores for color, flavor, taste, after taste and texture were highest for the nutrition bar substituted with 20% DGSM. The nutrition bar with 10% DGSM attained the highest overall acceptability score. Results indicated that optimal concentration of DGSM into the nutrition bar was 10%.
The domestic grape cultivar Campbell Early has high levels of both malic acid and tartaric acid. Therefore, the processing of wine made from Campbell Early must include decreasing the acidity. Six different methods were tested for reducing excess acidity: traditional vinification, precipitation, cold stabilization, malolactic fermentation (MLF), carbonic maceration and cold fermentation. Wines had higher pH values and lower total acidity than control after all the processing methods except cold stabilization. With regard to the measured organic acid content, the control contained 2,927 ppm tartaric acid, 2,421 ppm malic acid and 486 ppm lactic acid, but the precipitated wine contained 2,346 ppm tartaric acid. The MLF wine contained 828 ppm malic acid and 2,394 ppm lactic acid. Wine after carbonic maceration contained 792 ppm malic acid and cold fermentation decreased the organic acid contents in general. Sensory analysis showed that the carbonic maceration and precipitation methods resulted in wines that were excellent in color, flavor, taste and overall preference.
To determine freshness and detect changes in quality of beef and pork during storage, we manufactured a freshness indicator and monitored the surface pH, volatile basic nitrogen (VBN), thiobarbituric acid reacted substance (TBARS), total bacterial counts, electronic nose analysis, and sensory evaluation. Both beef loin and pork belly had a change in the color of the freshness indicator after storage of 6 days at $2^{\circ}C$. VBN and TBARS levels and total bacterial counts reached the decay point at the time of the color change of the freshness indicator attached to the surface of the beef and pork samples. Sensory evaluation also indicated that the samples were unacceptable by an 'off' odor on day 6 of storage. There were significant differences in electronic nose analysis for samples from day 0, day 6, and day 10 of storage. These results suggest that this freshness indicator should be useful in determining the expiration date of beef and pork products during marketing by indicating the microbial safety as well as the physicochemical and sensory changes.

Modified atmosphere packaging of peaches(Prunus persica L. Batsch) was investigated to extend their freshness during distribution. Peaches were packaged in the PE film(20LD, 40LD), the PE film modified by addition of 5%(w/w) zeolite(20CK, 40CK), and the PE film containing $Purafil^{\circledR}$ sachet(20LP, 40LP). Quality indexes of peaches during storage at $20^{\circ}C$ were measured in terms of weight loss, soluble solids content, pH, titratable activity, firmness, color and sensory properties. Gas composition and ethylene content In the film bags changed rapidly at the early stage of storage. Within 8 days, weight loss of the unpacked control increased upto ll.8% but those of the packaged remained below 2%. There was no significant difference in soluble solids content and pH in all the treatments. Ethanol content of peaches packed in 40LD was 12.88 mL/kg and acetaldehyde content in 40CK was $160\;{\mu}L/kg$ for 8 days. Peaches packed in 20CK showed a good visual and sensory Quality. The result suggested that active packaging treatment such as 20CK could be used for extending freshness of peaches during transport period at ambient temperature.

A new Gomchwi cultivar ‘Gommany’ was bred by crossing between Gomchwi (Ligularia fischeri (Ledeb.) Turcz.) and Handaeri-gomchwi (Ligularia fischeri var. spiciformis Nakai). The selection and investigation of growth and yield characteristics were conducted from 2006 to 2011 in field and greenhouse of Highland Agriculture Research Institute, NICS, Rural Development Administration. The color of petiole ear was purple. Petiole trichome existed, but light of leaf back did not. Density of leaf vein was 5 degree in a newly developed cultivar ‘Gommany’. Plant height, leaf length, leaf width and petiole length were 47.7, 16.3, 21.2, and 31.4 ㎝, respectively in the 3 year of growth characteristics. Plant size was also higher than that of ‘Gondalbi’. Bolting and flowering time were Aug. 5 and Sept. 10, respectively. In contrast, Bolting time of ‘Gondalbi’ showed 25 days quite earlier bolting time compared to ‘Gommany’, Which led to earlier flowering time. ‘Gommany’ showed higher number of leaves (138) per plant compared to ‘Gondalbi’ (130). Furthermore, yield was 97% higher in ‘Gommany’ (1,575 g/plant) than in ‘Gondalbi’ (798 g/plant). ‘Gommany’ showed higher leaf thickness (0.69㎜) than ‘Gonalbi’ (0.46 ㎜), and consequently showed more hardness in leaf characteristics (24.3 ㎏/㎠) compared to ‘Gondalbi’ (23.0㎏/㎠). ‘Gommany’ showed higher resistance in the susceptibility of powdery mildew compared to ‘Gondalbi’. ‘Gommany’ cultivar was registered as a novel variety with number 90 in The Minister of the Korea Forest Service on December 2015.

Subalpine species, Sorbus pohuashanensis in the Korean peninsula, which is assumed to be evolved from hybridization between S. commixta and an unknown species based on the flavonoids data. Morphometric analysis was conducted on the basis of 19 leaf and flower (or fruit) characters. A total of 721 samples in 13 populations of Sorbus pohuashanensis and S. commixta from Korea and additional specimens of S. commixta, S. pohuashanensis, and S. wilsoniana from Japan and China were examined to reveal the hybridization patterns and morphological differences. We found a preliminary evidence where Korean mountain rowan is more related to a Chinese inland taxon, S. wilsoniana, rather than Northeastern Chinese S. pohuashanensis in terms of flavonoids. The current morphological structure of the Korean mountaion rowan, however, which is more similar to S. commixta, was neither associated with that of S. wilsoniana nor that of S. pohuashanensis. This indicates that this morphological variation represents an intermediate of S. commixta and S. wilsoniana via a more ancient hybridization event in terms of qualitative characters, such as stipules, buds, and carpels. These morphometric differences together with other distinguishing characteristics suggest that the Korean mountain rowan should be considered as a conspecific species of S. commixta, although this demonstration of hybridization with the current phenetic species concept contradicts longstanding historical species concept.
The storage quality of fresh Sulhyang strawberries packaged under modified atmospheres was investigated to examine the effect of high $O_2$ on the fruit. Fresh strawberries were packed into PP trays and top-sealed with PET/PP film. Initial gas compositions inside the packages were varied with air, 40% $O_2$/60% $N_2$, 60% $O_2$/40% $N_2$, and 80% $O_2$/20% $N_2$. Sealed packages in PE film bags with air and perforated PP trays were also used as another treatment and control, respectively. Quality attributes and viable cell counts of pathogenic bacteria were assessed during storage at $5^{\circ}C$ for 12 days. High $O_2$ concentration showed no significant effects on the physicochemical and microbial qualities of strawberries. Fruit packaged in PE film bags with 6-15% $O_2$ and 7-9% $CO_2$ during storage had the lowest viable cell counts of inherent microorganisms among the treatment samples. Growth of pathogenic bacteria was suppressed in perforated packages where molds occurred frequently. In an overall sensory aspect, the PE film packages exhibited higher scores than the others at the end of storage period. The experimental results suggested that gas-permeable film packaging with an appropriate combination of $O_2$ and $CO_2$ rather than gas-barrier tray packaging with an initially high $O_2$ concentration would be suitable for improving the storability of strawberries.
