Functional Properties of Acetylated and Succinylated Silkworm Larvae Protein Concentrates (아세틸화와 숙시닐화한 번데기 농축단백질의 기능성)

  • Eighty eight percent of succinylation at $\varepsilon$-amino group of lysine was obtained from silkworm larvae protein concentrate and it resulted in increased bulk density and fat absorption, improved flavor and color, increased solubility over fivefold. Both emulsifying activity and emulsion stability of the succinylated protein were improved by 30% and emulsifying capacity was enhanced by 4%. Foaming capacity of the succinylated Protein concentrate was improved by 30% and foaming stability improved fivefold. The viscosity of succinylated silkworm larvae protein concentrate was increased at all concentrations and reached the highest at 4~5% of concentations. Acetylation of silkworm larvae protein concentrate caused negligible change in the functional properties studied. Therefore, high emulsification properties of silkworm larvae protein concentrate would be a good protein source for the emulsified foods.

Effect of Mixing Ratio on Rheological Properties of Kochujang (배합비를 달리한 고추장의 레올로지 특성)

  • 찹쌀가루와 메주가루의 배합비율(무게비)을 달리한 고추장(찹쌀가루 : 메주가루 = 1:1, 1:2, 1:3, 2:1, 3:1)의 숙성 중 품질 변화를 평가하기 위해 12주 동안 숙성시키면서 고추장의 이화학적 특성, 효소 활성 및 레올로지 특성을 연구하였다. 숙성 중 고추장의 수분함량은 $47.4{\sim}47.9%$에서 점차 증가하여 8주에는 최대 수분함량을 보였다. 환원당 함량은 $2{\sim}4$주에 가장 높았으며 이후에서는 점차 감소하는 경향을 보였다. 아미노태 질소 함량은 지속적으로 증가하였다. ${\alpha}-amylase$${\beta}-amylase$ 활성은 숙성 $2{\sim}4$주에 최대 역가를 나타냈다. Acidic protease와 neutral protease는 각각 숙성 2주와 4주에 가장 높은 활성을 보였다. Power law 모델에 의한 유동성 측정에서 고추장은 낮은 유동성지수(flow behavior index, $n=0.21{\sim}0.36$)를 가진 전단담화(shearing-thinning)거동을 보여주었으며, 점조도 지수(consistency index, K)와 겉보기점도 $({\eta}_{a,10})$는 숙성 2주에 급격히 증가하고 이후에는 감소하였다. Casson 모델식에 의한 항복응력$({\sigma}_{oc})$은 숙성 2주에 급격히 증가하고 이후에는 감소하였다. 동적 점탄성 측정에서는 저장 탄성률 (G#)이 손실탄성률 (G') 보다 높은 수치를 나타내었고 주파수(frequency, ${\omega}$)가 증가함에 따라 증가하는 경향을 보여주었다. 또한 숙성기간이 경과함에 따라 (G#)과 (G@)이 증가하는 경향을 나타냈다.

Comparison of Physicochemical Properties of Starch Phosphates Prepared by Dry Heating and Extrusion Process (건식법과 Extrusion 공정에 의해 제조한 인산전분의 이화학적 성질 비교)

  • Starch phosphates were prepared by dry heating, gelatinizing method and extrusion process using sodium tripolyphosphote (STPP) as a substitution reagent and their physicochemical properities were compared. In the preparation of starch phosphate by dry heating method(DSP), the effect of reaction temperature was the most significant to the DS(Degree of substitution). In the phosphorylation reaction with gelatinized starch(GSP), the substitution ratio was increased with increasing the reaction temperature, but the increase was insignificant above $85^{\circ}C$. By extrusion with the corn starch containing 2.0% STPP at various moisture contents of 20, 25 and 30%, the DS values of extrudate(WESP) were within the range of between 0.0066 and 0.0083. The starch phosphate(DSP) products showed lowering the gelatinization temperature, increasing the clarity of the starch paste. However, WESP showed higher gelatinization temperature than that of raw starch. The starch phosphate prepared by extrusion process showed lower apparent viscosity of paste than that of the DSP at same condition. All of starch phosphates showed reducing the tendency of the paste retrogradation.

Flow Properties of Red Flower Cabbage Pigment Solutions (꽃양배추 색소 추출액의 유동특성)

  • Flow properties of red flower cabbage pigment solutions were determined over a wide range of temperatures ($20-50^{\circ}C$) and soluble solid concentrations (1-65%) using a cone and plate rotational viscometer. Flow properties of the pigment solutions were adequately described by the simple power law model. Within the tested ranges of concentration, temperature and shear rate, the flow behavior index (n) and the consistency index (K) of the solutions were in the ranges of 0.841-0.998 and $0.008-31.525\;Pa{\cdot}s^n$, respectively. The effect of temperature on the apparent viscosity of the solutions followed an Arrhenius type relationship. Activation energy of flow varied from 9.36 to 52.48 kJ/mol depending on the solid concentration and shear rate. The combined effect of temperature and concentration on the apparent viscosity at the shear rate of $100\;s^{-1}$ could be represented by a single equation as ${\ln}\;{\eta}_a\;=\;6.11\;-\;3103.94(1/T)\;-\;0.03C$.

  • The objectives of this research were to analyze physicochemical properties of physically modified rice starch which was prepared by hydro-shear homogenizer and ultrasonic homogenizer. The 5:1 of water to starch ratio, 20,500 rpm of hydro-shear homogenizer, and 5 sec of pulse and 40 kHz of frequency of ultrasonic homogenizer, which were operated for 10 min. The 1/3 of size reduction of raw rice starch and gelatinized rice starch, and reduced of particle size were achieved by above processing conditions. The homogenization of raw rice starch and gelatinized rice starch were higher values of specific area, transmittance, solubility and swelling power than control. While, these had lower value of apparent viscosity than control. In raw rice starch, the gelatinization characteristics of ultrasonic homogenizer treated rice starch had some higher values of gelatinization temperature, peak temperature and enthalpy than those of control. While, those of hydro-shear homogenizer treated rice starch had similar values to those of control.

  • The Present study uses non-Newtonian simulant gel propellant mixed by Water, Carbopol 941, and NaOH solution in order to analyze the gel propellant flow behavior. Rheological data have been measured and obtained prior to the analysis of flow characteristics where water-gel propellant as well as water-gel propellant with $Al_2O_3$ nano particles are both used. The critical Dean number were examined by numerical simulation of gel propellant in the U-shape duct flow. It is found that though gel-nano propellants have higher apparent viscosity, the critical Dean number did not showed notable difference with respect to the water-gel propellant. It is believe that this is due to the fact that the power law index of both propellants have close value, as was demonstrated by Fellouah et al.[1]

Quality Properties of Korean Yam by Various Drying Methods (건조방법에 따른 마의 품질특성)

  • To establish optimum drying methods for Korean yam, freeze drying, cool air drying and hot air drying methods were compared by determining some quality criteria. The native color, odor, taste and viscosity of raw yam were preserved by only freeze drying at less than $40^{\circ}C$. The native white color of yam changed to brown and odor and taste of yam decreased largely by cool air drying and hot air drying. Especially cooked and roasted flavor was developed in hot air dried yam. The viscosity of cool and hot air dried yam was about half than that of freeze dried yam. Conclusively freeze drying method was shown optimum to preserve quality properties of yam such as viscosity, color, odor and taste. The physical properties of yam powder such as dispersiveness and solubility was the best in $40{\sim}60{\;}mesh$ particle size.

  • A new extracellular biopolymer was produced by Methylobacterium organophilum from methanol as a sole carbon and energy source. The purified biopolymer was found to have a high molecular weight of about 4-5$\times$10$^6$ dalton and contained 66% (w/w) of carbohydrate but no polyhydro xybutyrate. Other organic constituents were consisted of protein, pyruvic acid, uronic acid, and acetic acid, whereas content of inorganic ash was 22%. Based on the chemical analysis of the biopolymer by TLC method, the polymer was consisted of glucose, galactose, and mannose with an approximate molar ratio of 2:3:2. The biopolymer solution showed a characteristics of pseudoplastic non-Newtonian fluid. The viscosity of the 1%-biopolymer solution was found to be 18,000 cp at a shear rate, 1 sec$^{-1}$, which was almost 10 times higher than that of a commercial xanthan gum.

The Development of Air-kerma Strength Calculation Algorithm in Terms of the Absorbed Dose to Water for HDR Ir-192 Source (기준점에서의 물 흡수선량을 이용한 Ir-192 선원의 공기커마 세기 계산을 위한 알고리즘 개발)

  • The aim of this study was to develop the calculation algorithm of source strength of Ir-192 source In terms of the absorbed dose to water instead of an apparent activity (Ci). For this work the Multi Purpose Brachytherapy Phantom(MPBP) was developed, which was designed to locate the source and the chamber precisely at a specific position Inside the water phantom. The reference point of measurement was set at the 5 cm distance along the transverse axis of the source. For a brachytherapy source calibration, the absorbed dose to water calibration factor ($N_{D.W.Q}$) of an lonization chamber were determined and then apply standard protocols of absorbed dose to water. The calibration factor ($N_{D.W.Q}$) of the ion chamber (TM30013, PTW, Germany) was determined using the EGSnrcCPP Monte Carlo Code. The calculated calibration factor ($N_{D.W.Q}$) was 5.28 cGy/nC. The calculated factor was then used to determine the absorbed dose to water from which the air kerma strength for an Ir-192 source can be easily derived at the reference point (5 cm). The calculated air kerma strength showed discrepancies of -0.6% to +1.8% relative to the air kerma strength provided by the vendor, In this work we demonstrated that the air kerma strength ($S_k$) could be determined from the absorbed dose to water calibration factor for Ir-192 source. In audition, this source calibration method could be applied directly to the dose Calculation formalism of AAPM report TG-43.

Viscometric Properties of Waxy Rice Starches (일반계 및 다수계 찹쌀 전분의 점성 특성)

  • Viscometric properties of japonica(Olchal) and japonica${\times}$indica(Hankang and Suwon 317) waxy rice starches were investigated. Light transmittance of starch suspension increased from $50^{\circ}{\sim}55^{\circ}C$ and remained constant after $75^{\circ}C$. Swelling power was in the order of Hankang, Suwon 317 and Olchal. Amylograph data revealed that Hankang had the highest viscosity at all reference points. The apparent viscosity of 5% starch suspension indicated that the j${\times}$indica starches were completely gelatinized after 30 min cooking at $65^{\circ}C$ whereas japonica starch at $70^{\circ}C$. The apparent viscosity of gelatinized starch at $121^{\circ}C$(15 psig) was higher compared to that of gelatinized one at $95^{\circ}C$. Hankang was the most susceptable to alkali gelatinization followed by Suwon 317 and Olchal.
