Effect of Drying Methods on Physicochemical Properties of Agar (건조 방법이 한천의 물리${\cdot}$화학적 특성에 미치는 영향)

  • To investigate the effort of drying methods on the physicochemical properties of agar, gel strength, viscosity, melting and setting point, and phase transition by differential scanning calorimetery (DSC) during its heating were determined. In addition the structural differences of agar powder by scanning electron microscope (SEM) was examined. The most shortest onset temperature of gel strength increase was extruding method among any other methods. Viscosity of agar with hot air method, 400.00 cps at $45^{\circ}C$, was markedly increased, but with spraying and extruding ones were little change. The melting and setting point, and the temperature for maximum endothermic and enthalpy for agar with extruding one, $80.01^{\circ}C,\;36.05^{\circ}C\;and\;61.72^{\circ}C,\;0.73\;cal/g$, respectively, were lowest among the drying ones. But in the case of reheating after gelling, there were little change in all methods. Observing the surface structure of agar with SEM, extruding method showed the most unstable with absorptive property.

Bioactive Component Content as Affected by Different Drying Condition in Peony (Paeonia lactiflora Pall.) Root (건조처리 조건에 따른 작약근 생리활성 성분 함량 변화)

  • This experiment was conducted to know the changes of bioactive component content in four-year-old peony (Paeonia lactiflora Pall.) root with various drying methods such as room temperature drying, $50^{\circ}C$ heat-air drying, room temperature drying after $80^{\circ}C$ boiling water treatment and freeze drying, and to establish the optimum drying method for high quality production of Paeoniae Radix. For this purpose, the contents of paeoniflorin, albiflorin and five phenolic compounds (gallic acid, benzoic acid, (+)-catechin, (-)-epicatechin and (+)-taxifolin 3-O-$\beta$-D-glucopyranoside) in peony root with different drying methods were analyzed by RP-HPLC. The contents of paeoniflorin, albiflorin and (+)-taxifolin 3-O-$\beta$-D-glucopyranoside at room temperature drying were higher than in the other drying methods and that of gallic acid at 8$0^{\circ}C$ boiling water treatment was the highest among that of all drying methods. In the case of freeze drying, the contents of (+)-catechin, benzoic acid and (-)-epicatechin were the highest among those of all drying methods. As increase of drying and treatment temperature, the contents of paeoniflorin, albiflorin, (+)-taxifolin 3-O-$\beta$-D-glucopyrano-side, (+)-catechin and benzoic acid were decreased.

Physicochemical Properties of Korean Ginseng Dried with Lower Power and Pulse Microwave (저출력 및 Pulse 마이크로파 건조 후 인삼의 품질 특성)

  • Quality changes of Korean ginseng on microwave drying were determined in terms of water activity, crude protein, crude lipid, crude ash, dielectric properties, content of sugar, ginsenoside composion, microstructure. Korean fresh ginseng were subjected to four different processing : 3 min microwave drying and 2 min holding-24 hrs drying (MWI), 5 min microwave drying and 2.5 min holding-24 hrs drying (MW2), 3 min microwave drying and 2 min holding-12 hrs after hot air drying for 12 hrs drying at $45^{\circ}C$ (MWH1), 5 min microwave drying and 2.5 min holding-12 hrs drying after hot air drying for 12 hrs at $45^{\circ}C$ (MWH2), Water content was decreased 14.33% without shrinkage and water activity was 0.57 after microwave drying. Permittivity was increased as water content increased. As temperature increased, permittivity was increased until $40^{\circ}C$ and fast decreased over $40^{\circ}C$. Content of ginsenoside for MW1 and MW2 was higher than that of MWH1 and MWH2. Data of free sugar showed that there was no significant difference in each treatment. The MW2 dried ginseng showed a more compact structure than the MWH2 ginseng.

Comparison of the antioxidant and physiological activities of grape seed extracts prepared with different drying methods (건조방법에 따른 포도씨의 항산화 활성의 변화)

  • The physiological activities of 70% ethanol extracts of grape seed (GS) prepared by freeze-drying (GSFD), infrared drying (GSIR), hot-air drying (GSHD), or sun-drying (GSSD) were investigated. The moisture contents of GSFD, GSIR, GSHD and GSSD powders were 4.53, 6.71, 6.91 and 5.55% respectively. Hunter's color value analysis revealed that the $L^*$ value of GSIR was lower, and the $a^*$ and $b^*$ values of GSIR were higher, than those of GSFD, GSHD, and GSSD. The total polyphenol and proanthocyanidin contents of GSFD were significantly higher than those of the other extracts. The flavonoid related substance contents were in the order of GSFD (7.68 g/100g) = GSSD (7.59 g/100g) = GSHD (7.33 g/100g) > GSIR (6.45 g/100g). The electron donating abilities of $500{\mu}g/mL$ solutions of GSFD, GSIR, GSHD and GSSD were 88.71, 52.62, 65.20, and 65.22%, respectively, while their reducing powers ($OD_{700}$) were 1.633, 1.097, 1.217 and 1.054 absorbance units, respectively. Additionally, the same trend was observed for the ABTS radical-scavenging abilities of the extracts as that observed for their electron-donating abilities and reducing powers. These results suggest that GSFD is the best method for preparing GS extracts with enhanced antioxidant activities, and that GS extracts may be used as a natural antioxidant material for use in health foods.

Extraction Characteristics of Rubi Fructus in Relation to Drying Methods and Extraction Solutions (복분자의 포제방법에 따른 추출물 특성)

  • This study was observed the effects of drying methods on the extraction characteristics of Rubi fructus (fruits of Rubus coreanus). Extraction yields of soluble solids and total sugar were high in the Rubi fructus dried by freeze drying, followed by infrared drying and sun drying. Extraction yield of phenolic compounds and DPPH radical-scavenging activity of extracts were in the following order; the Rubi fructus dried by freeze drying, the Rubi fructus dried by infrared drying, the Rubi fructus dried by sun drying. L value was the highest in the Rubi fructus dried by freeze drying, and a and b value were lowest in the fruit dried by freeze drying. These results suggest that freeze drying has an beneficial effect to enhance the quality of Rubi fructus. Water and ethanol extractions was more effective in the extraction of soluble solids and the antioxidative components.

Changes of Physicochemical and Sensory Characteristics in the Codonopsis lanceolata Saengsik, Uncooked Food by Different Drying Methods (건조방법 달리하여 제조한 더덕 생식의 이화학적 및 관능적 특성 변화)

  • Changes in the physicochemical and sensory characteristics of the uncooked food, Codonopsis lanceolata saengsik, were investigated to determine an efficient drying method, one of the most important manufacturing processes in the preparation of C. lanceolata saengsik. No changes in the proximate compositions of all samples were observed during hot-air drying at 50 and $60^{\circ}C$ and freeze-drying. The L value in the freeze-dried sample was higher than that in the hot-air dried samples, whereas the b value in the freeze-dried sample was reduced. Dietary fiber content in the hotair dried samples were higher than that in the freeze-dried sample, whereas the total phenolic compounds and crude saponin contents were lower than those in the freeze-dried sample. The highest overall acceptability values in the sensory test for color, flavor, taste, and overall acceptability were 5.63, 5.45, 5.75, and 5.85, respectively. In conclusion, the freezedrying method was the most favorable of the tested method for the manufacture of C. lanceolata saengsik.

Physiology Activity of Barley Leaf Using Different Drying Methods (건조방법을 달리한 보리 잎의 생리활성)

  • This study was to analyze the physiology activity of barley leaf extract using different drying methods. Yield of RL (raw leaf) and barley leaves dried did not show significant difference by various drying methods. There was no significant difference in total phenolic content by dry method. However, total flavonoid content was high in HD (dried after heat treatments) barley leaf after RL. There was no significance in barley leaf dried by SD (dried in the shade), FD (vacuum freeze dried) and MW (dried by microwave) after the microwave. Superoxide dismutase-like activity was high over 90%: $95.6{\pm}0.3%$ in RL, $94.9{\pm}0.7%$ in HD barley leaf, $92.0{\pm}1.3%$ in SD barley leaf, $91.5{\pm}0.4%$ in FD barley leaf, and $92.5{\pm}0.2%$ in MW barley leaf using the microwave. Significantly higher antioxidant activity was shown as compared to the control group of sesamol ($88.426{\pm}0.802%$), tocopherol ($88.8{\pm}0.6%$), and BHT ($86.6{\pm}0.8%$). Also, except for RL and MW barley leaf, all showed over 80% peroxyl radical scavenging activity and over 90% inhibition rate of xanthine oxidase. The results of this study show that total phenolic content and total flavonoid content by dry method were dependent on the drying temperature with no impact on antioxidant activity.

Physicochemical Composition of Capsosiphon fulvescens According to Drying Methods (건조방법에 따른 매생이의 이화학적 성분)

  • Caposiphon fulvescens was dried by the hot-air (50$^{\circ}C$), vacuum (50$^{\circ}C$), and freeze drying methods. The green alga contained high proportions of carbohydrates (38.10~41.54%), ash (31.86~33.28%), and crude proteins (17.46~23.03%) regardless of the drying methods used to prepare the sample. The total sugar contents of the hot-air and vacuum dried samples were higher than that of the freeze dried sample (p<0.05). Vitamin C content of the freeze dried sample was higher than that of either the hot-air or vacuum dried samples (p<0.05). The major amino acids were glutamic acid, proline, and aspartic acid, which amounted to 33.34~34.80% of the total amino acid content depending on the drying methods used. Total mineral content of either the hot-air or vacuum dried samples was significantly higher than that of the freeze dried sample (p<0.05). Regardless of the drying methods, Na, K, Mg, Ca, and P were the most abundant elements in the samples while trace elements were identified as Fe, Mn, Zn, and Cu.

Evaluation of Soil Drying Techniques (토양건조방법들에 대한 평가)

  • Influence of several dehydration treatments on original structure and water behavior in the process of drying were investigated employing three hawaiian volcanic ash soils and four synthetic minerals. These three soils were developed under different rainfall condition and contained three different amount of amorphous materials in them. Measurement of water losses by oven drying at $105^{\circ}C$, $P_2O_5$ drying, freeze drying, and critical point drying revealed that more water losses were noted by oven drying than by three other drying techniques and the differences of water losses between oven and $P_2O_5$-drying were closely related to amoun: of amorphous materials in them, showing the order of Kaiwiki > Hilo > Kawaihae. This indicates that dehydration of amorphous materials by elevated temperature ($105^{\circ}C$) excluded water beyond that in the adsorbed (hygroscopic) state. The effect of dehydration treatments on initial structure was visualized by scanning electron microscopy. The micrographs showed that oven-and $P_2O_5$-dried samples formed into large mass of sub-angular blocky, dense, and closed crumbs, while the freeze dried and critical point dried samples resulted in less shrinkage, and small, fluffy and open spongy structure. However, critical point drying technique produced bulkier, softer, and greater open structure samples than even freeze drying. Quality Characteristics of Dried Squid (Todarodes Pacificus) by Cold Air Drying Process (냉풍건조공정을 이용한 마른오징어의 품질특성)

  • In an attempt to find ways of improving the quality and sanitary state of dried squid, this study compared artificial drying methods i.e. hot air drying and cold air drying with natural drying method. The drying rates of squid were in the order of hot air, cold air and natural drying. However, cold-air drying was slower than natural drying at $7^{\circ}C$. The drying rates increased with increasing drying temperature. When drying temperature was close to the dew point on a dehumidifier surface, which was the case with cold air drying at $7^{\circ}C$, the driving force for dehumidification was lower than under other drying conditions, which resulted in a lower drying rate. There were little color differences between the drying methods and temperature. Squid dried by cold air-drying had better mechanical texture and sensory qualities than with other drying methods. In addition, the cold air drying method maintained superior quality in terms of the contents of amino acids, taurine, EPA, DHA, other fatty acids and a low TBA value than the other drying methods.
