The Drying Characteristics of Apples at Various Drying Conditions (사과의 건조조건(乾燥條件)에 따른 건조특성(乾燥特性))

  • This study was performed to examine the drying characteristics of apples at various drying conditions. Air velocity has no effect on the drying rate except the constant rate period. In this experiment the diffusion coefficients of moisture in the apple tissue were in the range of $1.1470-2.2148{\times}10cm^2/sec$. As a result of balance of heat and mass transfer during the falling rate period. an empirical equation based on Fick's law was obtained as follows; $log{\Delta}t\;=\;log\;t_o\;-\;D{\frac{{\pi}^2{\theta}}{4d.}}$ This equation can be used to calculate the temperature of apples during the falling rate period, provided the diffusion coefficients of apple are known. The experimental values of the internal moisture distribution during apple dehydration were nearly in accord with the theoretical values.

Fresh-cut사과 전처리에 따른 물성학적 품질 특성

  • 편의와 fresh-like quality를 선호하는 소비 경향에 맞추어 가공한 fresh-cut사과의 선도 연장을 위한 저해제를 탐색하였다. 실험에 사용된 사과는 박피하여 속심을 제거한 사과를 8조각으로 절단하여 저해제에 3분간 침지한 후 물기를 제거하고 각각 LDPE 포장지에 포장하여 실온에서 저장하면서 colorimeter와 rheometer를 이용하여 색도와 물성을 측정하였다. 저해제로는 1% ascorbic acid, citric acid, NaCl, MgCl$_2$, CaCl$_2$, KCl, CaSO$_4$, MgSO$_4$, $Na_2$SO$_4$, oxalic acid, calcium lactate, calcium citrate를 사용하였으며 천연저해제로는 건칡, 맥문동, 목향, Rhubarb, 당귀, 오약, 시체, 지각, 천문동, 청피, 계피, 구기자, 당귀, 진피, 감초, 녹차, 후추 등을 열수추출하여 사용하였다. 물리적인 변화는 시간이 경과함에 따라 감소하는 추세를 보였으며 일부 건조로 인해 texture의 증가를 나타내기도 했다. 처리에 따른 물리적인 변화로는 CaCl$_2$, NaSO$_4$, Cl, 시금치를 처리하였을 때 그 변화가 가장 작았으나 시금치의 경우 시금치로 인한 사과의 색변화로 관능적으로 좋지 않았다. 한약재는 목향, 당귀, 지각, 계피를 처리하였을 때 물리적인 변화가 가장 작았으나 시금치와 마찬가지로 처리 초기에 한약재 자체의 향과 색으로 인하여 관능적으로 좋지 못한 결과를 나타냈다. 갈변 정도를 나타내는 ΔE의 변화는 KCl과 CaCl$_2$, CaSO$_4$를 처리한 구에서 변화가 가장 작았으며 한약재를 처리하였을 경우 당귀, 천문동을 처리한 구에서 효과를 보였다. oxalic acid는 갈변저해에는 효과적이었으나 시간이 경과함에 따라 수분의 용출이 증가하였으며 물성의 변화도 컸다. 또한 ZnCl$_2$를 처리한 구에서는 이취 발생과 수분 용출이 컸으며 색의 변화도 컸다.

New Processing Technology For Steamed-mature Silkworms (HongJam) to Reduce Production Costs: Employing a High-Speed Homogenization and Spray Drying Protocol (생산비용 절감을 위한 익힌숙잠(홍잠, 弘蠶) 신 가공기술: 초고속 균질화와 분무건조 활용법)

  • Produced by steaming mature silkworms, HongJam is a natural functional food with various health-promoting effects. The current standard HongJam production protocol involves freezing and freeze-drying steamed mature silkworms for convenient long-term storage and/or selling it to customers. However, freeze-drying HongJam requires a range of processes and costs, which have contributed to its high resale value. In this study, we found that the cost of manufacturing HongJam powder could be reduced by homogenizing steamed mature silkworms using a high-speed blender and digital homogenizer, followed by spray drying. After the homogenized HongJam solution was digested by directly adding food-graded proteases, food-graded protease-digested homogenized HongJam solution was spray-dried. Food-graded digested protease or non-digested homogenized HongJam solutions could be used to produce food for special medical use for patients with general or specific diseases. This more efficient HongJam processing protocol proposed in this study can facilitate the development of sericulture farms and related industries by reducing the production costs of HongJam and its associated products.

Physicochemical Properties of Red Wine using Active Dry Yeast Strains (활성건조효모를 이용한 양조주의 이화학적 특성)

  • In wine making, to perform yeast culture effectively that is the most important factor, 5 (Montrachet, Pasteur Champagne, Epernay II, prise de Mousse, Lalvin W15) representative active dry yeasts were selected. These are results about physicochemical properties. As a consequence of examining the survival rate in both 17% ethanol solution and 200ppm sulfite solution after 72 hours, Lalvin W15 strain was the highest among the 5 representative active dry yeasts. Moreover, in 1% citric acid solution, the survival rate of Pasteur Champagne after 72 hours was the highest one. As a result of experiment of red wine that is fermented by 5 different active dry yeasts, the highest one of total acidity was must of Lalvin W15. And then, the must of the Epernay II contains the highest ethanol content. Regarding of the content of organic acid, the wine that is fermented by Prise de mousse was the highest one and the order could be explained by Tartaric > Malic > Citric.

Quality Characteristics of Apple Jangachi Cured with Different Types of Traditional Korean Sauces (절임원에 따른 유기농 사과 장아찌의 이화학적 특성)

  • Qualitiy characteristics such as moisture content, pH, acidity, sugar content, salinity, appearance, flavor, taste, color and overall acceptance of apple Jangachi cured with different traditional Korean sauces (Kochujang, Doenjang, Kanjang) were investigated during storage time. The initial moisture content of the apple Jangachi was an average of 14.97%. But after curing with the three sauces (Kochujang, Doenjang, and Kanjaing) moisture content increased to 27~28%, 41~4% and 56~58%, respectively. The pH was 4.84-5.42 regardless of sauce. Total acidity increased from 0.4%, 0.34%, 0.34% to 1.14%, 0.60%, 0.67%. respectively. But acidity decreased after 10 days. Sugar content of apple jangachi decreased throughout the aging time regardless of sauce type. Salinity of apple Jangachi increased to a certain level during storage time regardless of sauce type. Apple Jangachi softened during storage as they increased in moisture content. All sensory characteristics of Kocuhjang apples showed a higher score than Doenjang and Kanjang. Overall, Kocuhjang seems most appropriate for curing apple Jangachi.

A Study on Pectic Substances of Korean Apple Varieties (한국산 사과의 품종별 펙틴물질들에 관한 연구)

  • Total pectin content of Korean apple varieties at optimum harvest time was deter-mined by carbazole reaction method and pectin fraction content in each variety was also determined. Properties of pectin extracted ty 2a Sodium hexa metaphesphate were compared with commercial pectin. Among apple varieties, pectin contents varied in the range of 0.26-0.48% on fresh basis and 1.76-4. 0% on dry basis. Ball's was the highest and then high in order of Spur early blaze, Golden delicious, Fuji. , Jonathan. In each pectin fraction, soluble pectin fractions in Rall's was the lowest and in both Spur early blaze and Golden Delicious were highest but insoluble fractions in the latter were lowest. Thub the changes in poetic substances in Spur early blaze and Golden delicious seem to he occurred: during early ripening. In the analysis of properties of isolated pectin, ash, anhydrogalacturonic arid7(AUA) content and methoxyl content were different among apple varieties. Ash and methoxyl content in all isolated pectin were higher and AUA content lower than in commercial pectin. Degree of esterification (DE) in all apple varieties were above 70%.

Changes in The Chemical Composition of Apple Slices Pretreated with Supercritical Carbon Dioxide (건조 전처리 방법으로써 초임계 이산화탄소가 사과절편의 화학적 성분에 미치는 영향)

  • We investigated changes in the chemical composition of apple slices after pretreatment with supercritical $CO_2$. Total phenolic levels increased with increasing temperature, although the concentrations were lower in pretreated material than in fresh or untreated slices. The levels of vitamin C and malic acid in pretreated slices were also lower than in untreated or fresh apple slices. Little difference was evident among various pretreatmentconditions. It was found that supercritical $CO_2$ served not as a solvent but rather as a means of tissue compression. Supercritical $CO_2$ compressed the apple slices, causing juice to be extruded. The juice disappeared when the supercritical $CO_2$ pressure was released.

  • An attempt was made to investigate the some constituents and separation of flesh by drying of Corni Fructus for utilization as processing foods of Cornus officianalis S. et Z. Moisture and reducing sugar contents of Corni Fructus flesh were 40.4% and 18.6%, respectively. The content of anthocyanin was 183.0 mg/100g(dry base). The free sugars of Corni Fructus were consisted of glucose and fructose and their contents were 7.9% and 9.0%, respectively. The compositions of organic acids were malic and succinic acids which contained 1.9% and 0.5%, respectively. The titrable acidity as malic acid and pH were 3.6% and 3.19. The decrease ratio of weight and the drying temperature as the optimum conditions for the separation of flesh and seed of Corni Fructus were $30{\sim}35%$ and $60^{\circ}C$.

Effects on Quality of 'Fuji' Apple by Dipping of Calcium Solution and MA Packaging (칼슘처리와 MA포장의 저장중 '후지' 사과의 품질에 미치는 영향)

  • 거창사과원예협동조합에서 구입한 사과 600상자를 5% $CaCl_2$ 용액에 각각 15분간 침지하는 방법으로 전처리 후 24시간 건조시키고 무포장구, $25{\mu}m$ 두께의 기능성 MA 필름으로 포장한 포장구와 무처리 무포장구인 대조구로 나누어 $0^{\circ}C$의 저온저장고로 옮겨 7개월 동안 저장하면서 3주 간격으로 품질을 분석하였다. 저장 기간이 증가할수록 중량 감소율은 Control 구보다 $CaCl_2$구와 $CaCl_2+MA$구의 중량 감소율이 월등히 낮았다. 경도변화는 저장 기간이 증가할수록 감소하는 경향을 보였으며, 그 중 $CaCl_2$구는 초기치 0.97 $kg_f$에서 저장 18주에는 0.95 $kg_f$로 초기치에 비해 2%의 가장 적은 변화를 보였다. 산도는 대조구보다 처리구의 산도가 높게 나타났으나 큰 차이는 나타나지 않았다. 가용성 고형분 함량은 저장 기간 모든 실험구에 따른 큰 차이가 없었다. 비타민 C 함량은 저장기간이 지날수록 모든 실험구에서 감소하는 경향을 보였으며, 기호도 조사에서 $CaCl_2$구와 $CaCl_2+MA$구가 대조구보다 유의적으로 높게 나타났다.

A review on processing factors of pesticide residues during fruits processing (과일류 가공 중 잔류농약 가공계수에 관한 고찰)

  • A processing factor (PF) has been used to define the maximum residue limits of pesticide in a variety of processed fruit products. This study summarizes PF by the stage of fruit processing based on JMPR reports from 2010 to 2014. When we compared PF of 19 pesticides in apple products during the processing of washing, drying, canning, juice, sauce, puree and pomace, PF was higher than 1 only in pomace. In the comparison of 21 pesticides during the process of grape (washing, juice, wine and raisin), PF was higher than 1 in raisin. In the comparison of 19 pesticides during the process of orange (juice, oil and marmalade), PF was higher than 1 in oil. When 27 pesticides were compared during the process of tomato (juice, puree and paste), paste showed the highest PF value except pomace. During the process of plum (washing, drying and puree) with 12 pesticides, PF was higher than 1 in drying. The correlation coefficients between physical characteristics of pesticide (fat-solubility and volatility) and PF were statistically significant in the processes of apple juice, orange juice, tomato puree and paste and strawberry jam.
