Feeding Effects of Whole Crop Rice based TMR on Growth Performance and Carcass Characteristics of Hanwoo Steers (사료용 벼 위주 TMR 급여가 거세 한우의 생장 능력 및 도체 특성에 미치는 영향)

  • This experiment was conducted to investigate the effect of whole crop rice (WCR) based TMR on growth performance and carcass characteristics of Hanwoo steers. WCR "Yeongwoo"was harvested at yellow ripen stage and ensiled for 60 days. The crude protein (CP), acid detergent fiber (ADF), neutral detergent fiber (NDF), in vitro dry matter digestibility (IVDMD) and total digestible nutrient (TDN) content was 8.4 %, 28.0 %, 53.8 %, 72.4 % and 66.8 %, respectively. For silage quality, pH was 4.37 and lactic and butyric acid content were 2.84 and 0.04 % in DM. Sixteen Hanwoo steers (8-mon-old) were allocated into either a control (commercial TMR) and WCR-TMR (WCR-based TMR) group. The TMR were fed according to the feeding stage phase: growing (Initiate~14 month), early fattening (15 month~21 month) and late fattening (22 month~30 month). The body weight of control group increased (P<0.05) until early fattening stage, but late growing stage of WCR-TMR group was higher than that of control (P<0.05). Average daily gain (ADG) was significantly greater (P<0.05) in WCR-TMR group (total 0.78 kg/head) compared to control (total 0.66 kg/head) except for late fattening stage. The marketing weight and carcass weight were higher in WCR-TMR group (726 vs 765 kg; 417.8 vs 450.4 kg). The back fat thickness (11.75 vs 13.00 mm), Longissimus dorsi area (88.00 vs $89.88cm^2$) and yield index (65.87 vs 64.30) were not different between the two groups (P>0.05) and also no difference in meat yield grade (A : B : C = 2 : 4 : 2). Marbling score (4.00 vs 4.13), meat color (4.75 vs 4.75), fat color (3.13 vs 2.88), texture (1.25 vs 1.50) and maturity (2.00 vs 2.00) were not significant difference between the two groups and meat quality grade ($1^{{+}{+}}:1^+:1:2:3=0:2:4:2:0$) was also not different. In conclusion, TMR feeding based on WCR silage showed superiority in carcass yield and ADG compared to control TMR. It is considered that the use of WCR for feed is a necessary option for the substitution of the imported forages and the government's policy for rice production adjustment.

Effect of Selenium Sources on Meat Quality of Hanwoo Steers (셀레늄 급여원에 따른 한우 채끝육의 육질 특성)

  • This study was conducted to investigate the feeding effect of selenium provided by different sources on the physico-chemical properties of M. longissimus thoracis. Twenty Hanwoo steers(20~24 months, approximately 613kg) were assigned to 4 different feeding groups of each five, depending on the sources of selenium such as inorganic selenium(sodium selenite), organic selenium(Yeast, USA Sel-Plex), Se-SMC(Se-spent mushroom compost) and the control(no selenium). The selenium level in feed was 0.9 ppm for all groups except the control. Animals were fed with different feeding treatments for 12 weeks and slaughtered at National Livestock Research Institute. The inorganic selenium group had the highest cooking loss(CL. %) and followed by the Se-SMC group and organic selenium group. No significant differences in chemical composition, WB-shear forces, water-holding capacity(WHC) and sensory properties were found among the groups(P>0.05). There were 40% frequencies of grade A in the inorganic selenium group and followed by the organic selenium group(20%). Se-SMC group had 80% of frequencies for grade 1+ and followed by the inorganic selenium group(40%), whereas the organic selenium group and the control group had the 20% frequencies for grade 1+. From the results of this study showed that the selenium sources did not affect chemical composition, WHC and tenderness of Hanwoo steers. However, the inorganic selenium group had the highest cooking loss(%) and lowest pH when compared to the other groups.

Association of Insulin-related Genes Expression with Carcass Weight in Loin Muscle of Korean Cattle (Hanwoo) (한우 등심조직 내 인슐린 조절 유전자의 발현이 도체중에 미치는 영향에 관한 연구)

  • The peroxisome proliferator-activated receptor (PPAR) signaling pathway is well known as a candidate pathway related to meat quality in mammals. In particular, there are many studies on the relationship between the PPAR signaling pathway and intramuscular fat. However, recent studies have demonstrated that genes in the PPAR signaling pathway are associated with carcass weight in cattle. Among 48 genes in the PPAR signaling pathway, 16 genes are related to the insulin that regulates the adipocyte glucose metabolism and thus affects body weight. Therefore, we conducted an investigation to try to identify candidate genes associated with the carcass weight and relationships between the expressions of these 16 genes in the loin muscle of Hanwoo (Korean cattle). From regression analysis, the three genes (ACSL6, FADS2, and ILK) showed significant effects with regard to carcass weight (p<0.05). Finally, we analyzed the common regulators of the significant genes from pathway analysis. The significant genes are regulated by insulin as well as D-glucose. These findings show that the differentially expressed genes are possible candidate genes associated with carcass weight in the longissimus muscle of Korean cattle.

Effects of Feeding Dietary Mugwort Powder on the Fattening Performance and Carcass Characteristics in the Fattening Hanwoo (쑥사료 급여가 비육한우의 비육능력 및 도체특성에 미치는 영향)

  • This study was conducted to determine the effect of mugwort powder supplementation on the fattening performance and carcass characteristics during a 14 month period (from 14 months to 27 months after birth) in 32 heads of fattening Hanwoo. Fattening Hanwoos were randomly assigned 4 treatments (8 heads/treatment): C-1 [(control (0%) with Hanwoo steers)], C-2 [(control (0%) with Hanwoo heifers)], T-1 (supplementation with 2.0% mugwort powder with Hanwoo steers) and T-2(supplementation with 2.0% mugwort powder with Hanwoo heifers). The final body weights for C-1, C-2, T-1 and T-2 at 27 months were 648.6kg, 623.1kg, 663.3kg and 620.7kg, respectively. The total gain and the daily gain were highest in the T-1 group (342.4 kg, 0.88 kg). Hanwoo steers were not significantly different from Hanwoo heifers. The feed intake for the C-1, C-2, T-1 and T-2 groups were 9.35 kg, 9.09 kg, 10.08 kg and 9.69 kg, with the T-1 value being highest. The feed conversion ratios were as follows: C-1 (11.28) > T-1 (11.48) > C-2 (11.52) > T-2 (12.57). The concentrations of total cholesterol, GOT, GPT, glucose and BUN in blood serum during the fattening period were higher after than before the experiment The total cholesterol, GOT and glucose after completion of the experiment were higher in the treatment groups than the control groups (p<0.05). The carcass body weight was higher in the treatment groups than the control groups. The back fat thickness was lower in the treatment groups (12.75-14.75mm) than the control groups (15.76-16.00mm), and the longissimus muscle area was higher in the treatment groups $(84.25-87.88cm^2)$ than the control groups $(84.00-85.25cm^2)$ with the highest over-all values in the T-1 group (p<0.05). The yield grade and quality grade point were higher in the treatment groups (2.02-2.50, 2.85-3.05 point, respectively) than the control groups (1.80, 2.55-2.80 point, respectively). In conclusion, the effects of feeding dietary mugwort powder to Hanwoo steers improved the ADG, carcass body weight, longissimus muscle area and quality grade.

Physicochemical Properties and Tenderness of Hanwoo Loin and Round as affected by Raising Period and Marbling Score (사육기간과 등심의 근내지방도가 거세한우 등심 및 우둔의 이화학적 성상 및 연도에 미치는 영향)

  • This study was performed to investigate the physicochemical properties and tenderness of Hanwoo loin and round cuts, as affected by various raising periods and marbling scores. Five loin and round cuts with various marbling scores (5-9) from Hanwoo at various raising periods (27, 33, 30 mon) were collected. pH, Hunter color values (L, a, b), chemical composition, cooking loss, vacuum purge, and Warner-Bratzler shear values were evaluated according to two-way analysis of variance. No differences in pH values of Hanwoo loin were observed by raising period and marbling scores (p>0.05), but those of Hanwoo round at 27 mon was the lowest. Increased Hunter color values were observed with the increased marbling score and those at 27 and 30 mon were lower than 33 mon. Redness (a) and yellowness (b) of Hanwoo round cuts with the raising period of 27 mon were higher than those at 30 and 33 mon. The raising period of 27 mon showed higher water holding capacity than those of 30 and 33 mon, regardless of Hanwoo cut. Increased shear values (kgf) of Hanwoo round cuts were observed with increasing raising period (p<0.05). Increased marbling score decreased shear values in loin cuts, but no differences were observed in the round cuts. Based on these results, the parameters measured varied with meat cut, and raising period affected round pH, color, chemical composition, vacuum purge, and shear values. Marbling score affected color, chemical composition, water binding capacity, and shear values in loin cuts (p<0.05), but didn't affect any parameters in round cuts (p>0.05).

Effect of Dietary Cracked Whole Barley on the Meat Compositional Properties of Hanwoo Steer Loin Beef (분쇄 통보리 급여 수준이 거세한우의 등심부위의 성분 조성에 미치는 영향)

  • This study was carried out to investigate the effects of the feeding level of cracked whole barley (CWB) on fatty acid composition, free amino acid content, organic acid content, pH, HDL cholesterol, total phenol and DPPH (1,1-diphenyl-2-picrylhydrazyl) radical scavenging activity of finishing Hanwoo steers. The dietary treatments were consisted of five types (C: base feed + 0% CWB, T1: base feed + 10% CWB, T2: base feed + 20% CWB, T3: base feed + 30% CWB, T4: base feed + 40% CWB). A total 30 Hanwoo steers(588.6${\pm}$11.8kg) were allocated into 5 feeding groups, and a total of thirty Hanwoo steers raised from 24 to 30 months. Linoleic acid of fatty acid composition was significantly higher for cracked CWB treatments (T1, T2, T3, and T4) than C, and T3 of CWB treatments was the highest than the other treatments (P<0.01). SFA, USFA, MUFA and USFA/SFA did not differ among the treatments. On the contrary, PUFA was significantly higher for CWB treatments(T1, T2, T3, and T4) than C, and T3 was the highest (P<0.05). EAA was higher in the order of T1 > T2 > C > T3 > T4 (P<0.05). NEAA was higher in the order of T2 >T3 >T1 >C >T4, although a statistical significance was not detected. The total organic acid content was the highest for T3 (20.15 mg/100g) and the lowest for T2 (13.19mg/100g). pH and total phenol of all treatments were did not differ. HDL cholesterol was higher in the order of T1 > C > T4 > T2 > T3 (P<0.01). DPPH radical scavenging activity was in order of T1 > T2 >T4 > C > T3 (P<0.01). Based on the above results, T1 treatment compared to other treatments have been shown to improve EAA, DHL, and DPPH radical scavenging activity.

Effect of Domestic Clay Minerals on Growth Performance and Carcass Characteristics in Growing-Fattening Hanwoo Steers (육성비육 거세한우에 대한 점토광물 급여가 성장 및 도체특성에 미치는 영향)

  • This study was conducted to investigate the effects of domestic clay minerals on feed efficiency, meat quantity, meat quality and economic traits in 24 head of Hanwoo steers(166.1kg in body weight) for 540 days from six to 24 months in age. Feeding trial was conducted with 4 treatment(six heads/treatment) which were T1(Control), T2(Control+Kaolinite), T3(Control+Bentonite), T4(Control+Illite). The results obtained are summarized as follows; The range of average daily gains were 0.682 to 0.713, 0.669 to 0.714, 0.690 to 0.840 and 0.699 to 0.756kg in growing, fattening, finishing and over-all period, respectively, and the gains were high in T1 for growing and fattening period but in clay mineral groups for finishing and over-all period, especially it was high in Illite and Bentonite groups. Concentrates and TDN intakes per unit of kg gains were lower in clay mineral groups than in control and was lower especially in Bentonite groups. In carcass characteristics, dressed carcass and fresh meat and retailed cut percent were not apparently difference by treatments, and yield index was 69.3, 68.9, 68.8 and 68.6 in T3, T2, T4 and T1, respectively. Marbling scores were 5.1, 4.6, 4.4 and 3.3 in T3, T2, T4 and T1, respectively, and the range of shear force by treatment was from 3.51 to 6.02kg/cm2. and were improved with significant difference(P<0.05) in clay mineral groups than in control. Also in palatability traits, panel test scores of juiciness, tenderness and flavor were improved in clay mineral feeding groups, especially the flavor was improved with highly significant difference(P<0.01) in clay mineral groups than in control. In total fatty acid contents, the rate of SFA(saturated fatty acid) in longissimus muscle of beef was higher in the order of T2, T3, T1 and T4 while the rate of MUFA(monounsaturated fatty acid) was high in the order of T4, T3, T1 and T2. The content of oleic acid which is major influential factor at the flavor of beef was higher in Illite groups than in any other groups. In composition of amino acids in longissimus muscles of beef, the rate of essential amino acids was high in the order of T1, T2, T3 and T4. and the rate of amino acids in clay mineral groups was smaller than in control.In chemical component in Gom-Tang(soup of bone) made by Hanwoo steer’s leg-bone, the ranges of crude protein, ether extract, and crude ash was 0.81 to 1.24, 0.17 to 0.35 and 0.07 to 0.09%, respectively. In mineral composition, the ranges of Ca, P, Na and Mg was 14.01 to 15.77, 11.45 to 16.40, 37.92 to 49.99 and 0.26 to 0.46ppm, respectively. Chemical composition were not apparently different but mineral composition was increased in clay mineral groups than in control. Income by treatments was 967,096 to 1,524,055 Won per head for 540 days and income of clay mineral groups in comparison with control’s increased by 23.7 to 57.6 percent, and especially it was higher in bentonite and(or) Illite groups than others. According to the above results it may be concluded that clay mineral to growing-fattening Hanwoo steers can be improved the meat quantity, meat quality and income. Especially the effect of bentonite and illite is large and can be recommended for usage to improve animal performance as feed additives of growing-fattening Hanwoo steers.

Effects of Energy Level of Concentrate Feed on Meat Quality and Economic Evaluation in Finishing Hanwoo Steers (거세한우 비육후기 농후사료 에너지 수준이 육질 및 경제성에 미치는 영향)

  • This study was conducted to evaluate the effects of energy level of concentrate feed in finishing Hanwoo steers for 6 months before slaughter. Feeding trial was done with 2 treatment groups, IDN72 (72% of TDN in concentrate) and TDN74 (74 % of TDN in concentrate). The body weight (from 19 to 24 months) tended to be higher in TDN74 than in TDN72, but was not significant. Average daily gain of TDN74 was higher by 4.4 % in comparison to TDN72. There was no significant differences in concentrate, dry matter and TDN intake per I kg body weight gain between TDN72 and TDN74. And there was a tendency to improve crude protein intake per I kg body weight gain by increasing TDN content from 72 to 74 %. The dressing percentage tended to be higher in TDN74 than in TDN72, but was not significant. Salable meat percentage tended to be lower in TDN74 than in TDN72 because of higher body fat percentage in TDN74 than in TDN72. There were no significant differences in marbling score, meat color, fat color, carcass weight, rib-eye area and back fat thickness between TDN72 and TDN74. Significant differences were not found in shear value, cooking loss, water holding capacity or moisture and protein contents of longissimus dorsi (LD) muscles between TDN72 and TDN74. Fat content of LD muscles tend to be lower in TDN74 than in IDN72 but without any significance. There was a tendency to improve juiciness and taste by feeding IDN74 rather than TDN72. Especially, tenderness of TDN74 was increased by 7.4% in comparison to TDN72 (p < 0.05). Gross income from TDN74 was higher than TDN72 by 5% The results suggested that significant differences were not found in growth performance, feed conversion and carcass characteristics between TDN72 and TDN74. The results also show that more studies are required to clarify the energy level for finishing Hanwoo steers.

Evaluation of non-conventional feeds for ruminants using in situ nylon bag and the mobile bag technique (In situ 나일론백 그리고 모바일백 방법을 이용한 국내 부존사료자원의 반추가축용 사료 가치 평가)

  • This study was conducted to evaluate the chemical composition, digestibility, and energy value of 15 non-conventional feeds produced in South Korea as ruminant feeds. Three Hanwoo steers (body weight, $520{\pm}20.20kg$) fitted with a permanent rumen cannula and duodenal cannula were housed individually in tie-stall barns, followed by a 14-day adaptation period and 3-day experimental period. Chemical composition analysis, in situ nylon bag, and mobile bag technique were used as experiments. As a result of the chemical composition analysis offeeds, crude protein (CP) contentsofmalt meal, perilla meal, soy sauce cake, and soymilk residue were greater than 30%. As a result of the degradability characteristics analysis of feeds using an in situ nylon bag, rumen undegraded protein (RUP) contents of beet pulp, brewer's grain, coffee meal, malt meal, milo bran, perilla meal, ramen residue, and soymilk residue were greater than 50%. Analysis of total digestible nutrient (TDN) values of feeds using an in situ mobile bag showed that TDN values of beet pulp, brewer's grain, makgeolli residue, milo bran, perilla meal, ramen residue, rice bran, soy sauce cake, soybean curd cake, soymilk residue, and wheat bran weregreater than 50%. In summary, these non-conventional feeds have high potential value as good feed resources to replace formulated feeds or roughage. Therefore, the chemical composition, digestibility, and energy value of non-conventional feeds obtained from this study can be used as base data for the manufacture of ruminant total mixed ration (TMR) with improved feed efficiency, reduced feed costs, and reduction of environmental pollution.

Effects of Probiotic Supplementation on Growth Performance, Blood Metabolites, and Meat Quality of Hanwoo Steer (혼합 생균제 급여가 거세한우의 성장, 혈액성상 및 육질에 미치는 영향)

  • In this study, the effect of probiotic supplementation on growth performance, blood metabolites, and meat quality of Hanwoo steer was investigated. A total of 32 Hanwoo steers (15-17 months, average body weight $462{\pm}37.9kg$) were randomly allotted to 4 dietary treatments (0, 0.5, 1.0, and 1.5% mixed probiotics), with four Hanwoo steers per pen (two replicates per treatments), and reared for 12 months. There were no differences among treatments in growth performance of Hanwoo steer (P>0.05); however, feed intake decreased linearly with increasing levels of mixed probiotics. Growth hormone and Blood Urea Nitrogen (BUN) levels responded linearly with increasing levels of dietary mixed probiotics (P<0.05), but not insulin and blood glucose did not. In particular, total cholesterol was significantly lower for the 1% mixed probiotic treatment in comparison with that of the other treatments (P<0.05). The pH, Thiobarbituric Acid Reactive Substances (TBARS), cooking loss, and meat color were influenced by increasing levels of mixed probiotics (P<0.05), but the carcass characteristics and shear force were not. Regarding sensory evaluation, the addition of mixed probiotics resulted in significant difference in meat color, tenderness, aroma, off-flavor, juiciness, and marbling score, but not in overall acceptability. In addition, fatty acid profiles indicated no differences between control and mixed probiotic treatments. In conclusion, mixed probiotic treatment at 1% levels can enhance consumer preferences possibly by reducing cholesterol and TBARS.
