Effects of Reed (Phragmites communis) on Growth Performance, Carcass Characteristics, and Meat Quality in Hanwoo Steers (갈대 급여가 한우 거세우의 발육, 도체 및 육질특성에 미치는 영향)

  • This study investigated the effects of diet of different forages on growth performance and carcass characteristics of Hanwoo steers. Twenty-one Hanwoo steers were randomly allocated to three groups (fed hay, reed, and reed with rice straw) of seven steers each. Initial and final body weights of control, T1, and T2 groups were 125.5, 128.3, 128.3 kg and 697.4, 614.6, 706.7 kg, respectively. Average daily gain tended to increase in controls (0.70 kg/d) and the T2 group (0.71 kg/d) but not as much in the T1 group (0.60 kg/d); however, there was no significant difference. DMI was not significantly different among the treatment groups, but T1 was relatively lower than the other groups. For the yield traits, carcass weight was not significantly different between controls and the T2 group but was greater in the T2 group compared to the T1 group (p<0.05). Back fat thickness and rib eye area were higher in controls and T2 compared to T1; yield grade (A:B:C, %) was greater in T1 (43:57:0) compared to the other groups (control 0:71:29; T2 29:42:29). For the quality traits, fat color and texture were not significantly different among groups. However, meat color and maturity were significantly greater in T1 compared to T2 (p<0.05). Marbling score and appearance rate of over 1st meat quality grade were greater in the control and T2 groups compared to the T1 group. Based on the results, growth performance, feed utilization, and carcass traits appeared to improve when roughage containing rice straw plus reed was offered. Therefore, reed is worth considering as a roughage source for fattening Hanwoo steers.

Effects of Geographic Locations and Year-Seasons of Birth on Ultrasound Scanned Measures and Carcass Traits of Hanwoo Steers (한우 거세우의 초음파 생체진단형질과 도체형질에 대한 지역과 출생년도 및 계절 효과 분석)

  • Ultrasound measures of back fat thickness (UBF), eye muscle area (UEMA) and marbling score (UMS) and carcass measures of carcass weight (CW), backfat thickness (BF), eye muscle area (EMA) and marbling score (MS) were available on 26,129 Hanwoo steers. Statistically significant differences by regions of the farms location and birth years-seasons for the steers taken ultrasound measures and their carcass measures (p<0.01) were found. Steers in Gyeonggi province showed the highest values in ultrasound measures and carcass traits except in BF compared to steers in the other provinces. Comparing between ultrasound and carcass measures, UBF was thicker in general than BF in all regions except in Daejeon city. UEMA was higher than EMA in all regions except in Gyeonggior in Jeju provinces. Especially, the difference in Jeonnam province between UEMA and EMA was $7cm^2$ while the differences between UMS and MS ranged from 0.9 to 2.26 depending on the regions of steers located. Steers born in spring showed greater ultrasound or carcass values than those born in autumn. However, carcass measures of steers born in autumn were greater than those born in spring, 2009 except MS. The pearson and residual correlations were 0.63 and 0.65 between UBF and BF, 0.31 and 0.32 between UEMA and EMA and 0.56 and 0.56 between UMS and MS, respectively.

Effects of Supplementation Period and Levels of Fermented Mineral Feed(Power-Mix(R)) on the Growth and Carcass Characteristics of Hanwoo Steer (무기물 사료(Power-Mix(R))첨가 급여 기간과 수준이 거세한우의 육량 및 육질에 미치는 영향)

  • This study was carried out investigate the effects of the period of dietary supplementation and the level of fermented mineral feed on daily body weight gain and carcass characteristics of Hanwoo steer. The dietary treatments were compared during two supplementation periods (T1:Feeding Hanwoo steers from 18 months to 25 months, T2: feeding Hanwoo steers from 7 months to 25 months), and the diets tested were of four types (0%: normal concentrate as a basal diet, 1%: 1% addition of fermented mineral feed, 2%: 2% addition of fermented mineral feed, and 3%: 3% addition of fermented mineral feed). A Total of 35 Hanwoo steers were allocated into 7 feeding groups. The daily gain of the 0% fermented mineral feed group was lower (0.64 kg) than that of the other groups (1%: 1.08 kg, 2%: 0.90 kg, 3% treatment: 0.75 kg) for the T1 period, and for the T2 period the order was 1% (0.98 kg) > 0% (0.75 kg) > 1% (0.89 kg). The amount of back fat in decreasing order was as follows: 0% (12.0) > 1% (10.8) > 2% (10.2) > 3% fermented mineral feed (7.8 mm) for the T1 period, and for the T2 period the order was C (16 mm) > T1 (13.8 mm) > T3 treatment (12.6 mm). Eye muscle area increased with increased fermented mineral feed levels. The marbling score of the T1 groups was highest with 3% fermented mineral feed (4.2), and of the T2 groups, the highest score was seen with 1% fermented mineral feed (5.6). Meat color and meat maturity were not different among all groups. The grade of meat quantity and meat quality of both the T1 and T2 groups were highest with the addition of 3% fermented mineral feed. The daily income ranged from 2,062 won to 5,265 won in the T1 groups, which were ordered as follows: 1% > 2% > 3% > 0% fermented mineral feed, and of the T2 groups, the 1% group was highest at 6,098 Won, while the 3% group was lowest at 4,590 Won.

Effects of Agricultural By-Product Feeds on Growth and Carcass Characteristics of Korean Native Steer (농산 혼합 부산물 첨가급여가 송아지 질병 및 거세 한우 성장 및 도체특성에 미치는 영향)

  • This study was carried out investigate the effects of dietary supplementation of agricultural by-product feed(persimmon-pell+barley bran+fermented rice bran+activated carbon) on calves disease, growth and carcass characteristics of Korean native steer. A total of twenty Korean native steer were allocated into four feeding group and assigned to four dietary treatments: Control(normal concentrate as a basal diet), T1(1% addition of by-product feeds), T2(3% addition of by-product feeds) and T3(5% addition of by-product feeds). The calf diarrhea was the highest at Control, while T3 was the lowest. The breath disease was the lowest at T2, occurrence with diarrhea and breath disease was the highest at Control. The daily gain was orderly ranked as T2(0.76kg)>T1(0.7kg), T3(0.70kg)>Control(0.67kg). The back fat thickness was orderly ranked as T2>T3>Control>T1, eye muscle area was orderly ranked as T3>T1>Control>T2. Grade of meat quantity was the highest at T1(2.3), but fat color, firmness and maturity tends to have a similar result. The marbling score and quality grade of T2 were the highest at 5.0 and 3.5, respectively. Based on the study, agricultural by-product feeds are able to many used for various purposes at disease reduce, increment of meat quantity and improvement of quality grade.

Study on the Productivity of Hanwoo Steers with Self-product Organic Rice Straw (자가 생산 유기볏짚을 이용한 거세한우 생산성 연구)

  • This study was conducted to investigate the productivity of Hanwoo steers by feeding self-product organic rice straw and concentrates(conventional, T1 and organic T2). Sixteen Hanwoo steers(8 months on the average) were randomly assigned to two treatment groups. Feeding trail was carried out in 2 treatment(8 heads/ treatment) by Hanwoo steers for 600 days form 8 to 28 months in age. The range of average daily gains of T1 and T2 were 0.76 to 0.77kg in the growing stage, 0.93 to 0.90kg in the first fattening stage, 0.99 to 0.84kg in the middle fattening stage, and 0.59 to 0.64kg in the latter fattening, respectively, and the gains for overall period was higher in T1 than in T2. Concentrates and total digestive nutrients(TDN)(T1) intakes per unit of kg gains were higher than T2 without significant difference. In carcass characteristics, the carcass weight in T1 were higher about 5% than in T2. According to the above results, it may be concluded that dry matter(DM) intakes, crude protein(CP) and TDN contents of feedstuff between treatments was no significant difference. but marbling in T2 score was higher than in T1 about 20%. There were no significant differences rib-eye area, back fat thickness and fat color(p>0.05).

Effects of Fish Oil Supplementation on Growth Performance, Fatty Acid Composition of Longissimus Muscle and Carcass Characteristics in Hanwoo Steers (Fish Oil의 첨가가 한우 거세우의 육성성적, 배최장근의 지방산 조성 및 도체특성에 미치는 영향)

  • Twenty Hanwoo steers (average body weight=440.8±32.4kg) were used to investigate the effects of fish oil supplementation on growth performance, fatty acid composition of longissimus muscle and carcass characteristics. The experiment was done with two treatment groups; FO-0, without fish oil and FO-3, supplemented with 3% fish oil. Total gain and average daily gain (ADG) of steers were similar between two groups. Fish oil supplementation had no effects on contents of protein, ether extract and ash in longissimus muscle. Contents of isoleucine and glycine in longissimus muscle were decreased by fish oil supplementation (p<0.05), but content of cystein was increased by fish oil supplementation (p<0.05). Fish oil supplementation decreased contents of myristic acid and eicosenoic acid in longissimus muscle (p<0.05), but increased contents of oleic acid and arachidonic acid in longissimus muscle (p<0.05). Contents of eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA) in longissimus muscle were increased by fish oil supplementation p<0.05). Carcass weight, back fat thickness, rib-eye area, yield index and yield grade were similar between two groups. Meat color was improved by fish oil supplementation (p<0.05), Ratio of quality grade ‘1 or over’ increased by fish oil supplementation. Therefore, the present study indicating that fish oil supplementation had positive effects on content of oleic acids in relation to flavor of beef, contents of EPA and DHA in relation to human health and ratio of quality grade ‘1 or over’.

Effect of Dietary Palm Oil Supplementation on the Quality of Carcass and Meat of Hanwoo (Korean Cattle) (팜유의 급여가 한우의 도체 및 육질에 미치는 영향)

  • This study was carried out to investigate the effect of dietary palm oil supplementation on the quality of the carcass and meat of Hanwoo (Korean cattle). Thirty-month-old steers were fed on a concentration with or without (control) palm oil for 3 mon prior to slaughter. The samples of M. longissimus were taken from all carcasses and then stored at $4^{\circ}C$ for 9 d. The carcass traits, total myoglobin content, pH value, total reducing ability, and myofibrillar fragmentation index were unaffected by supplementation with palm oil. However, the fat content, water-holding capacity, and tenderness were significantly increased by dietary palm oil (p<0.05). In the fatty acid composition, the palm oil group had a higher palmitic acid (C16:0) content and lower polyunsaturated fatty acids (PUFA) content compared to the control group (p<0.05). The lipid oxidation stability, myoglobin oxidation stability, and color stability were increased by dietary palm oil. It is concluded that supplemental palm oil increased the marbling and storage quality but decreased the PUFA in Hanwoo beef.

  • Body weight-age data from 60 bulls and 60 steer of Hanwoo in the Korean Native Cattle Improvement Center was used to determine the growth curve parameters with Gompertz equation. Estimated growth curve functions were as follows; Bul l : $W_t$ = 906.1.exp{-3.956.exp(-0.0034t)} Steer : $W_t$ = 823.1.exp{-3.301.exp(-0.0027t} Mature weight estimated with Gompertz equation of bull is higher than earlier studies. And the major factor raising differences from the other is feeding level. Relative body weights of steer to bull were rapidly decreased to 79.2% until 19.5 months of age, and then increased slowly. The ratio was 90.8% at mature state. Body weight was under-estimated for bull at birth, but over-estimated for steer, and the body weight variations of bull were larger than the steer.

  • 일반적으로 알려져 있는 소에 있어서의 제각은 화학적인 소락제, 송아지 제각기 (tube calf dehorner), 전기인두, 톱 및 선거(線鋸; wire saw) 등을 이용하고 있으나, 제각 처치시 소에 많은 스트레스를 주고 있는 실정에 있다. 2001년도에 일본의 요우카이치시(四日市) 소재 냉동 및 냉장창고업을 하는 일신냉장고(주)에 근무하는 직원이 현내의 비육농장에서 제각하는 것을 보고, 생산자나 소비자로부터 이야기를 나누던 중, 점차적으로 소 사육농장에서 다두사육화가 되면서 우군 무리중에서 순위싸움으로 인해 외상을 입거나, 경쟁에 밀린 소는 사료를 제대로 먹지 못하여 스트레스를 받는 다는 것에 착안하여, 끝이 뾰쪽한 뿔에 복싱 글러브(boxing glove)와 같은 커버를 장착하면 제각을 하지 않고 소 본래의 자연체형을 유지한 체로 안심, 안전, 위험방지가 가능한 소의 뿔 커버를 연구개발하게 되었다. 최초로 제작된 소의 뿔 커버는 고무 특유의 수축작용을 이용해서 소의 뿔에 장착하였으나, 소의 큰 압력에 눌려 하루도 못가 각상피(角上皮)와 같이 탈락하였으며, 그 후 약 3년간은 실패를 거듭한 끝에 4년째인 2005년 봄에 의외의 장소에서 힌트를 얻었는 데, 귀가시 가족중 우연히 이가 빠졌는 것을 보고, 소의 각돌기(角突起)의 각첨부(角尖部)에 고정하는 방법을 생각하게 되었다. 연구를 시작하면서부터 NOSAI 수의사들, JA 동일본조합사료 수의사, 전농축산 서비스 등의 도움을 받았으며, 이후 오리온기업육성기술개발지원사업에 채택되어 4년여간의 연구를 한 끝에 약 30초의 부착시간이 걸리는 1회성의 영구적인 소의 뿔 커버를 특허개발(2005년)하여 2008년도부터 판매하기 시작하여 거세 화우, 교잡종 화우암소, 화우 암소 등에 일본 전역에서 보급되어 시술되고 있다. 최근 수개월전에 제가 아는 지인이 일본서 뿔 커버 2두분을 직접 구입하여 왔는 바, 직접 한우 경산우 암소 2두에 극히 간편하고 쉽게 시술하였기에 소개하여 도움을 주고 저 한다.

Estimation of Environmental Effect and Genetic Parameters for The Carcass Traits in Hanwoo (Korean Cattle) (한우 도체형질의 환경효과 및 유전모수의 추정)

  • This study aims to estimate the genetic parameters for carcass traits on Hanwoo of breeding farmhouses using Animal Products Grading Service’s data of 428,812 cattle from 101 slaughterhouses nationwide from 2000 to 2005. Using carcass traits of carcass weight, eye muscle area, backfat thickness, marbling score, meat color and fat color that greatly influence Hanwoo's grade, the effects of carcass year, carcass season, sex and carcass region were estimated. Based upon carcass traits of carcass weight, eye muscle area, backfat thickness, marbling score and meat color that greatly influence Hanwoo’s grade, the heritabilities and genetic parameters were estimated of 17,578 Hanwoo slaughtered in 2005 with existing herdbook, where EM-REML algorithm was used in estimating genetic parameters. The mean and standard deviation of each carcass trait are 321.42±53.62kg, 76.25±10.43cm2, 9.96± 4.14mm, 3.75±2.00, 4.83±0.48 and 2.99±0.40, for carcass weight, eye muscle area, backfat thickness, marbling score, meat color and fat color, respectively. As a result of analysis on the effects of carcass year, the carcass weight, backfat thickness and meat color came out highest as 359.40±0.181, 9.82±0.017 and 4.90±0.002, respectively in 2004. As a result of analysis on the effects of carcass season, the carcass weight and eye muscle area came out highest as 345.88±0.144 and 79.57±0.033 respectively in spring, and the backfat thickness was highest as 8.78±0.013 in winter, and the meat color and fat color slightly came out higher as 4.88±0.002 and 2.96±0.001 in fall, while the marbling score was highest as 3.29±0.006 in summer. The results of the analysis on the effects of sex indicated that the backfat thickness and fat color were highest as 10.53±0.010 and 3.07±0.001 in cow, the carcass weight came out highest in Hanwoo steer as 368.03±0.068kg, the eye muscle area were highest as 82.96±0.042 in bull, and the marbling score was highest as 4.19±0.007 in steer, and the meat color was highest as 4.89±0.001 in cow.
