  • In Korea, potatoes have served as a side dish, but their role as snacks, such as chips or French fries, has recently gained traction. While there is a high demand for processing potatoes, there remains a dearth of research on the impact of double cropping, particularly during autumn, on processing quality. Therefore, this study was conducted to determine the effects of different spring potato cultivation periods on growth, yield, and processing quality during autumn cultivation. Following spring planting, harvest was carried out four times: 70 days, 80 days, 90 days, and 100 days. Subsequently, autumn cultivation was carried out in Gangneung and Seocheon regions using these seed potatoes. Results showed an increase in above-ground emergence rate with shorter spring growing period. When seed potatoes with a spring cultivation period of 80 and 90 days were grown in the autumn in the Gangneung region, the stem length was 47.2 to 48.9, which was greater than that of other treatments. However, stem number and leaf color (SPAD) showed no significant differences across cultivation periods. The number of tubers, tuber weight, yield, and marketable yield did not vary significantly with cultivation periods but described clear cultivar dependent differences. The tuber weight of the Saebong cultivar in Gangneung and the Eunseon cultivar in Seocheon was superior. The starch content peaked at 7.9% when seed potatoes grown for 80 days in the spring were harvested after autumn cultivation in the Gangneung region, but there was no significant differences in the Seocheon region. Glucose content showed a clear difference depending on the cultivation period, increasing with longer spring cultivation period during autumn cultivation. In conclusion, as a result of the effect of the spring potato cultivation period on the growth, yield, and processing quality of tubers when cultivating potatoes in double-cropping, the differences depending on the cultivation period were insignificant, while cultivar-based disparities were pronounced. The Eunseon cultivar exhibited robust above-ground growth and yield, while the Saebong cultivar demonstrated excellent processing quality.

  • This study evaluated the qualitative properties of Buchimgaru supplemented with JAP (Jerusalem Artichoke Powder). In Buchimgaru, JAP and wheat flour were mixed in ratios of 1:9 (10% JAP), 2:8 (20% JAP), and 3:7 (30% JAP). The values for texture profiles (hardness, chewiness, springiness, and cohesiveness) decreased when JAP was added to Buchimgae formulations. The fructan contents of Buchimgaru supplemented with 0, 10, 20, and 30% JAP were 1.52, 6.39, 10.50, and 13.71%, respectively. The total polyphenol content of Buchimgaru supplemented with JAP was significantly higher than Buchimgaru without JAP. The 1,1-diphenyl-2-picrylhydrazyl (DPPH) radical scavenging activity of Buchimgaru supplemented with 30% JAP was approximately 11 times greater than Buchimgaru without JAP. In the sensory evaluation (color, flavor, overall preference), Buchimgae supplemented with JAP showed higher sensory values than Buchimgae without JAP.

  • The objective of this study was to evaluate the physicochemical, structural, and rheological properties of new domestic potato cultivars ('Goun', 'Sebong', and 'Jinsun') against the foreign potato cultivar 'Atlantic'. Based on the results obtained from scanning electron micrograph, X-ray, and Fourier transform infrared spectrum analyses, the structural properties of all potato flours were not considerably different. Rapid visco analyzer analyses showed that the setback viscosities of 'Goun', 'Sebong', and 'Jinsun' were significantly lower than that of 'Atlantic'. For steady shear rheological properties, potato flour dispersions showed shear-thinning behaviors (n=0.45~0.49) at $25^{\circ}C$. Apparent viscosity and consistency index of 'Atlantic' were similar to those of 'Sebong' and 'Jinsun'. For dynamic shear rheological properties, storage modulus (G′) and loss modulus increased, whereas complex viscosity (${\eta}^*$) was reduced with increasing frequency from 0.63 to 62.8 rad/s. G′ and ${\eta}^*$ values of 'Jinsun' were significantly higher than those of the other potato cultivars.

  • Water is the most important resource for the potato cultivation, especially to get the maximum water use efficiency and yield of potato, Water has to be applied moderately based on the water requirement of the potato. Crop water requirement (WR) is a function of the Potential evapo-transpiration(PET) and Crop coefficient (Kc). PET can be estimated by the climate data measured at the weather station in the production region. Kc was measured by the NIAST (RDA) through Lysimeter experiments. In this study, the growth stage of potato was divided as four (G-1 : Apr. 1~Apr. 15, G-2 : Apr. 16~May. 10, G-3 : May. 11~May. 31, G4 : Jun. 1~Jun. 15). The average PET during potato growing season of the 45 areas was $2.95mm\;day^{-1}$. The most water requirement was the G-3 stage among the potato growth stage. The MWR (Mean water requirement) according to growth stage was 1.0~1.2 (average 1.1), 1.5~1.8 (average 1.6), 1.9~2.2 (average 2.0) and 1.7~2.1 (average 1.8) mm $day^{-1}$, in the G-1, G-2, G-3 and G-4 stage, respectively. The TWR (Total water requirement) according to growth stage was 18.0~22.1 (average 19.3), 50.6~66.6 (average 56.3), 63.5~88.2 (average 72.4) and 38.3~54.5 (average 44) mm, in the G-1, G-2, G-3 and G-4 stage, respectively.

  • Potato(Solanum tuberosum L.) is one of the major food crop in the world following rice, wheat, and maize. It is thus important to project yield predict of potato under climate change conditions for assessment of food security. A crop growth modelling is widely used to simulate crop growth condition and total yield of various crops under a given climate condition. The decision support system for agrotechnology transfer (DSSAT) cropping system model, which was developed by U.S. which package integrating several models of 27 different crops, have been used to project crop yield for the impact assessment of climate change on crop production. In this study, we simulated potato yield using RCP 8.5 climate change scenario data, as inputs to the DSSAT model in five regions of Korea. The genetic coefficients of potato cultivar for 'superior', which is one of the most widely cultivated potato variety in Korea were determined. The GenCalc program, which is a submodule of the DSSAT package, was used to determine the genetic coefficients for the superior cultivar. The values of genetic coefficients were validated using results of 39 experiments performed over seven years in five regions. As a case study, the potato yield was projected that total yields of potato across five regions would increase by 26% in 2050s but decrease by 17% in 2090s, compared with 2010s. These results suggested that the needs for cultivation and irrigation technologies would be considerably large for planning and implementation of climate change adaptation for potato production in Korea.

  • Solanum brevicaule is one of the tuber-bearing wild Solanum species. Because of its resistance to several important pathogens infecting potatoes during cultivation, it can be used for potato breeding. However, the fact that S. brevicaule used in this study has an EBN value of two causes the sexual reproduction barriers between the species and cultivated potatoes. In this study, specific markers for discriminating S. brevicaule from other Solanum species were developed on the basis of the results of sequence alignments with the whole chloroplast genomes of S. brevicaule and seven other Solanum species. The chloroplast genome of S. brevicaule was completed by next-generation sequencing technology described in other recent studies. The total sequence length of the chloroplast genome of S. brevicaule is 155,531 bp. Its structure and gene composition are similar to those of other Solanum species. Phylogenetic analysis revealed that S. brevicaule was closely grouped with other Solanum species. BLASTN search showed that its genome sequence had 99.99% and 99.89% identity with those of S. spegazzinii (MH021562) and S. kurtzianum (MH021495), respectively. Sequence alignment identified 27 SNPs that were specific to S. brevicaule. Thus, three PCR-based CAPS markers specific to S. brevicaule were developed on the basis of these SNPs. This study will facilitate in further studies on evolutionary and breeding aspects in Solanum species.

  • The objective of this study was to increase the efficiency of starch extraction from potato sludge by different concentration of food-grade hemicellulase. The potato sludge, which is a by-product of potato processing industry, was treated with food-grade hemicellulase. Starch extraction efficiency displayed no significant difference in hemicellulase concentration. The purities of potato starch increased from 83.40 to 95.91, 97.44, 95.58, and 97.79%, with treated 0.5, 0.75, 1.0, and 1.5% hemicellulase, respectively. The physicochemical properties of the starches, such as granule structure, particle size, pasting, and thermal transition, were not affected by the concentration of hemicellulase. These results indicate that food-grade hemicellulase treatment is an efficient method for starch extraction from potato sludge.

  • This study was performed to investigate the effect of packaging materials on quality characteristics of washed potatoes such as Hunter's a value, chlorophyll and potato glycoalkaloids (PGA) content during their storage for 15 days. Packaging methods were evaluated into five ways: no packaging (NP, positive control), paper bag (PB, negative control), onion net (ON), transparent oriented to polypropylene without hole (TP), opaque oriented polypropylene with 4 holes (OP). Hunter's a values of washed potatoes showed minus in NP and TP after 12 days storage, whereas all plus values were observed in those of PB, ON, and OP. Total chlorophyll content of washed potatoes was the highest in no packaging at 15 days after storage. The PGA content of washed potatoes showed low levels in flesh part (below $5mg/100g{\cdot}FW$) as well as in peel part ($4.5-9.3mg/100mg{\cdot}FW$) in all packagings up to 15 days after storage.
