The Effects of Microwave Heating on the Fatty Acid Composition of Potato Flour in Storage (마이크로파 가열이 감자가루 저장중 지방산 조성에 미치는 영향)

  • For the purpose of improving storability and process adaptability of potato, we carried out an experiment to investigate the effects of microwave heating on the total lipid content and fatty acid composition of the potatoes in storage. The samples were made by powdering potatoes exposed to the microwave energy in a 560W, 2,450MHz oven for 0, 60, 120 and 180 seconds respectively. From the examination of the samples stored at th temperature of $25{\pm}1^{\circ}C$ for 12 months, the following results were obtained. As an over-all tendency, the longer the samples were heated and the longer they were stored, the total lipid content decreased but the microwave-heated samples showed decreasing rates less than those of the controls for the whole storage periods. As major fatty acids of the potato flour, linoleic acid (30.92 %), palmitic acid (29.34 %), linolenic acid (8.90 %) and stearic acid (8.23 %) were detected from the samples. The longer the samples were exposed with microwave, unsaturated fatty acids like 18:2, 18:3 increased. generally with the lapse of storage time, saturated fatty acids increased while unsaturated ones decreased. But in the samples heated with microwave, we observed an apparent suppression of the increasing rate of the saturated fatty acids and the decreasing rate of the unsaturated fatty acids, and the suppressing effects turned out to be proportional to the length of microwave heating.

  • This study was conducted to investigate the change in quality attributes of fresh-cut potatoes with heat and browning inhibitor treatment (CW: dip in the cold water for 30 sec at $4^{\circ}C$, HW: dip in the water for 60 sec at $55^{\circ}C$, AA: dip in the 0.1% solution of ascorbic acid for 60 sec at $4^{\circ}C$, HA: dip in the 0.1% solution of ascorbic acid for 60 sec at $55^{\circ}C$) during storage at $5^{\circ}C$. During storage, fresh-cut potatoes treated with HA showed the lowest value in surface color. PPO and PAL activities of fresh-cut potatoes treated with HA were gradually increased during storage. Hardness, weight loss, soluble solids content and moisture content had no significant difference between the treatments. In sensory acceptance, fresh-cut potatoes treated for HA marked the best quality. Conclusively, heat and browning inhibitor treatment showed the positive effect on browning inhibition while maintaining the quality of fresh-cut potatoes.

  • 우리나라에서 감자는 거의 연중 생산되며, 최근 저온저장고 등의 산지유통시설이 보급되면서 홍수출하에 따른 가격폭락 현상이 줄어들고 있다. 특히 겨울철 시설감자는 재배하기 쉽고 단경기에 출하되기 때문에 소득 작목으로 크게 부각되고 있으며, 그 면적은 약 1.500ha에 이른다. 그러나 이상기상에 따른 저온피해, 동해, 일조부족 등은 시설감자 생산에 종종 피해를 주고 있으므로, 온도와 토양수분, 광도를 최적 상태로 유지하는 것은 시설감자 생산의 기본적인 요소이다.

Changes of asparagine content in potato (Solanum tuberosum L.) tuber during storage (저장 중 감자 아스파라진 함량의 변화)

  • In order to research changes of asparagine content according to stage after harvest to storage, it was analysed asparagine content of potato tuber and potato sprout. The results of the asparagine content in potato cultivars after harvest ranked in cv. Superior, cv. Gahwang, cv. Atlantic and cv. Goun in descending order. The content of asparagine in potato was approximately 1300 mg/100g (D.W.) The changes the asparagine content according to storage condition and the difference of asparagine between tuber and sprout can be summarized as follows. In the asparagine content of potato cultivars, Little variation in the content was observed while potato tubers were stored at $4^{\circ}C$. However, after 3 months of storage at $10^{\circ}C$, the content increased by 9.7%, indicating that the content increases as the storage temperature and period increases. The content of asparagine also increased during sprouting of potato tubers. In the sprout, the proximal region contained 21% higher content of asparagines than the distal region, which suggests that the sprout develops with the increasing of the content of asparagines.

The retrogradation and swelling power of modified potato starches (변성 감자 전분의 노화와 팽윤력)

  • Hydroxypropylated starches and acetylated starches were prepared by reaction of potato starch with propylene oxide and acetic anhydride, respectively and then degree of retrogradation and swelling power were investigated in different pHs and temperature. The extent of retrogradation determined by glucoamylase method during freeze-thaw treatment and storage in low temperature $(0{\sim}5^{\circ}C)$ showed that modified potato starches were slowly retrograded as the increase of degree of substitution. The order of the retrogradation tendencies in different pHs were pH 4>pH 6>pH 8>pH 10. Retrogradation of hydroxypropylated potato starches were less than that of acetylated potato starches. Swelling power of starches were influenced more by the temperature than by the pH. The order of the swelling power tendencies in different pHs were pH 10>pH 2>pH 8>pH 4>pH 6.

Inhibitory Effect of Potato Sprouting Inhibitor Chlorpropham on Dry Rot (감자 맹아억제제 Chlorpropham의 마른썩음병 억제 효과)

  • Potato dry rot is one of the potato storage diseases caused by Fusarium species and is a representative pathological disorder that induced post-harvest loss during storage. Chlorpropham treatment for sprouting inhibition is mainly used for room temperature storage of potatoes for processing. In this study, the inhibitory effect of chlorpropham on Fusarium-induced dry rot of potato 'Dano'. To investigate the mycelial growth rate of the dry rot fungus (Fusarium solani Appel & Wollenw), mycelial growth was investigated in a chlorpropham (5.0, 50.4, 503.8, and 5,038 ppm) and prochloraz (0.1, 1.0, 10.0, and 100.0 ppm) medium containing F. oxysporum mycelia. Mycelia were more inhibited as the concentration of chlorpropham and prochloraz increased during incubation at 20℃, and the inhibition rate was 98.2% and 100% when treated with 503.8 ppm of chlorpropham and 10ppm of prochloraz in 14 days, respectively. Potato Dano tubers inoculated with F. oxysporum were dipped in chlorpropham (5.0, 50.4, and 503.8 ppm) and prochloraz (100 ppm) to investigate the effect of preventing dry rot during cold storage at 20℃ and 4℃ in vivo. The disease diameter of potatoes stored at room temperature (about 20℃) was reduced to 13.0 mm in the prochloraz 100 ppm teatment, and 10.7 mm in the chlorpropham 50.4 ppm treatment compared to 13.7 mm in the control tuber at 70 days of storage. The disease progression in all treatments including control was similar with no statistically significant difference at 4℃ air temperature. From the results of this study, it is considered that treatment with 50.4 ppm of chlorpropham after harvest will be useful for suppressing dry rot of stored potatoes.

Quality Comparison of Potato Vinegars Produced by Various Acetobacter Bacteria (초산균에 따른 감자식초의 품질 비교)

  • To investigate the effect of Acetobacter on qualities of potato vinegars, potato vinegars were produced through acetic acid fermentation using 3 Acetobacters such as Acetobacter sp. PA97, Acetobacter sp. PA96 and Acetobacter pasterianus JK 99. There were little difference in pH(2.90∼3.09) and total acidities(5.30∼5.60%) of 3 potato vinegars. However potato vinegar(II) fermented by Acetobacter sp. PA96 showed a little difference in color values with other potato vinegars. Except acetic acid in each potato vinegars, the contents of citric acid, oxalic acid, succinic acid were high in potato vinegar(I), malic acid in potato vinegar(II) and lactic acid in potato vinegar(III). The contents of glutamic acid alanine, histidine and proline were high in all potato vinegars. The major volatile components in 3 potato vinegars were acetic acid, isoamyl acetate, isobutyl acetate, 3-methyl-1-butanol, 3-methyl-butanoic acid and phenethyl alcohol. Also composition ratio of volatile components was a little difference among 3 potato vinegars.

Volatile Compounds of Potato Sojues Produced by Different Distillation Condition (증류조건을 달리한 감자소주의 휘발성 성분)

  • The fusel oils and the volatile flavor compounds of two potato sojues, one of which was produced with the traditional distillation apparatus(soju-gori) and the other, with the reduced pressure distillation system, were examined. The fusel oil content was high in the potato soju that was distilled under reduced pressure (potato soju(II)). The relative ratio of the isoamyl alcohol to the isobutyl alcohol and the n-propanol was 3.1:0.8:1.0 in the potato soju that was distilled with soju-gori (potato soju(I)), and 4.0:1.2:1.0 in potato soju(II). The chromatograms of the volatile components apparently differed between potato soju(I) and potato soju(II). Potato soju(I) contained four kinds of alcohol, six kinds of ester, n-valeraldehyde, and acetic acid. Potato soju(II) contained seven kinds of alcohol, 14 kinds of ester, two kinds of aldehyde, acetic acid, and three other compounds. Potato soju(II) significantly scored higher for flavor property than potato soju(I).

The Changes of Nutrient Composition in the Edible Potato Varieties during Storage (식용감자 품종의 저장기간별 영양성분 변화)

  • This study was conducted to examine the changes of nutritive substances in the edible potato varieties ('Superior', 'Atlantic', 'Irish Cobbler', 'Dejima') during storage under low temperature condition($4^{\circ}C$, 85-90% RH) from January to May. The items examined in this experiment were moisture, free soluble sugars, starch and vitamin C. The contents of starch and vitamin C decreased with increasing storage period. The rates of decrease in starch and vitamin C contents were high in February and low after that. The contents of moisture and free soluble sugars did not show a constant tendency during storage period. The contents of glucose and fructose were the highest in February and March. Among the four varieties, 'Superior' contained highest vitamin C, free sugar, and moisture, while 'Atlantic' contained the highest starch.
