The Impact of Geographical Indication on the Promotion of Cultural Industry of a Region : A Case Study of Boseong Green Tea (지리적 표시제 도입이 지역 문화산업 진흥에 미치는 영향 -보성녹차를 사례로-)

  • Geographical indications are signs which identify a good as originating in the territory of a specific country, region, or locality, where the quality, reputation or other characteristics of the product is essentially attributable to its geographical origin. Korea has implemented geographical indication system through its Agricultural Product Quality Control Act since 1999. This research analyzes the impacts and implications of geographical indications on a particular cultural industry in a region using a case study of Boseong green tea which is the first product that was officially registered as a geographical indication in Korea. The results show that the geographical indication has contributed to the promotion of green tea industry in Boseong not only through increase of production but also through development of tourism. The implication is that a geographical indication can be used as an effective method to cope with trade liberalization in terms of agricultural policy. Another implication is that a geographical indication provides an efficient tool for place marketing.

  • In order to observe the Na contents, Korean common foods, especially processed foods were analyzed by Atomic Absorption Spectrophotometer. 1. The Na contents of instant noodle (ramen) was 400-900 mg/100 g and Na contents of their soup powder was 10000-16000 mg/100 g. 2. The Na contents of corns and beans was very low but their processed foods, com Dake and soybean milk, had relatively high Na contents. 3. The Na contents of meats was 40-60 mg/100 g but the Na contents of meats products was 700-900 mg/100 g. 4. The Na contents of Davoring salt was 12000-38000 mg/100 g, those of soybean products was 3000-6OOO mg/100 g, and that of seasoning MSG was 8000-17000 mg/100 g. 5. There was no statistical difference between the results of wet ash method and dry ash method in the Na contents of all food groups.

  • Mackerel water-soluble protein solution Mackerel meat washing water were concentrated by isoelectric point shifting precipitation process, and the concentrates were utilized as a material for processing of an elastic gel food such as kamaboko. The water-soluble proteins were partly polymerized during the isoelectric point shifting precipitation process. Then, the water soluble protein concentrates were partly substituted for frozen minced Alaska pollack meat in processing of a good quality kamaboko. The maximum substitution percentage for good quality kamaboko manufacturing was concluded to be below $30\%$, according to the criteria of color difference, jelly strength and folding tests using the substituted recovered protein concentrates.

Cholesterol-Lowering Effects of Soybean Products (Curd or Curd Residue) in Rats (백서에 있어서 콩제품(두부, 비지)급여의 콜레스테롤 저하효과)

  • The effects of soybean products(bean curd and curd residue) on the cholesterol profiles of serum and liver were studied in rats. Male rats were fed on purified diets, supplemented with cholesterol, containing casein (CAS), dried bean curd(DBC), or mixture of casein and dried bean curd residue(CBCD, 3:1, w/w) as a protein source for 4weeks. Dietary DBC and CBCD, compared with CAS, reduced markedly the concentration of serum cholesterol. The concentration of HDL-cholesterol was significantly higher in the CAS group than in the CBCD group, but there were no significant differences in the ratio of HDL-cholesterol to total cholesterol. Liver cholesterol was lower in the DBC group than in the CAS and CBCD groups. The results suggest an effective cholesterol-lowering action of soybean products in rats fed on cholesterolemic diets, and further a possibility that than curd dreg decrease the concentration of serum cholesterol, regardless of the presence of animal protein in diets.

Quality Characteristics of Commercial Yoghurt Powder Marketed in Korea (국내 시판 요구르트 분말의 품질 특성)

  • Quality characteristics of commercial yoghurt powder products marketed in Korea were compared. According to the product type classification, no product met the product identity of "fermented milk powder" (six were identified as "other processed product" and nine as "sugar product"). Titratable acidity of products (10%, w/v) varied from 0.11 to 0.82% while numbers of lactic acid bacteria varied from 0 to $1.4{\times}10^8CFU/g$. There were significant differences in hydration properties and viscosity of yoghurt powder products. Some regulations are required to avoid consumer misunderstanding of beneficial health effects of yoghurt powder products.

Characteristics of Yersinia enterocolitica Isolated from Frozen Foods (냉동식품에서 분리한 Yersinia enterocolitica의 특성)

  • Overall prevalence of Y. enterocolitica in frozen foods was 5.6% (35 cases of 624 samples). Seasonal variation of contamination was observed. Isolation rate of Y. enterocolitica from samples collected in the second half of the year was six times higher than those of the first half of the year. Serotype of the isolated Y. enterocolitica was mainly serotype O:5 (9 cases). However, 25 cases of 35 isolates could not be serotyped with antiserum used in this study. The biotype test showed that all isolates were non-pathogenic type 1A. The polymerase chain reaction test with ail gene specific primers also confirmed that pathogenic strains were not found in frozen food isolates.

  • This study was conducted to investigate the effect of adding black soldier fly larvae powder (BSFP) in the manufacturing of processed chicken products for dogs using poultry by-products. Chicken breast and Mechanically Deboned Chicken Meat (MDCM) were used for chicken products. To evaluate the effect of the addition of BSFP, the chicken products without BSFP were compared with the chicken products with 1%, 1.5%, and 2% BSFP added. As the amount of BSFP in processed chicken products increased, the protein content and redness increased, and the lightness decreased (P<0.05). Therefore, BSFP showed potential to be used as an additive to improve protein content in the production of processed dog food using poultry by-products.

Effect of Green Tea Products on Bone Metabolism Marker in Ovariectomized Rats with High Cholesterol Diet Intake (고콜레스테롤 식이를 섭취한 난소절제 흰쥐에서 녹차가공품이 골 대사 지표에 미치는 효과)

  • This study was designed to evaluate the effect of green tea products (GTP) on bone metabolism marker in ovariectomized (OVX) rats fed high cholesterol diet. Forty Sprague-Dawley female rats, 10 weeks of age ($279{\pm}2g$), were divided into 4 groups and fed on the experimental diets for 6 weeks: sham operated control (Sham-C) and OVX-control (OVX-C) groups treated high cholesterol diet. OVX-GTP 5% (OVX-G5) and OVX-GTP 20% (OVX-G20) groups were treated with high cholesterol diet containing 5% GTP and 20% GTP, respectively. Food efficient ratio was significantly (p<0.05) lower in OVX-G20 than in the other OVX groups. Bone mineral density of femur was not significantly different among the experimental groups in the order of Sham-C>OVX-G5 and OVX-G20>OVX-C. Alkaline phosphatase activities on serum was lower in the GTP supplement groups than in the OVX-C. Estradiol levels of serum were higher in the GTP supplement groups than in the OVX-C. Osteocalcin levels of serum was the lowest in the OVX-G20. Deoxypyridinoline crosslink values of urine, indicator of bone absorption, was the lowest in the OVX-G20 group. The GTP supplemented groups had a lower bone resorption ratio than in the OVX-C group. From the above results, these findings suggest the possibility of using GTP as a functional food materials related to bone metabolism in menopause.

A Study on Contents of Sugar and the Activities of Amylase in Enzyme Foods and Enzyme-shaped Foods (효소식품과 효소표방식품 중 아밀라아제 활성과 당 함량 조사연구)

  • The purpose of this study was to investigate the contents of sugars and ${\alpha}$-amylase and ${\beta}$-amylase activities in 98 specimen with enzyme foods and enzyme-shaped foods (the other processed foods, beverage bases, fermented drinks, liquid teas). The ${\alpha}$-amylase activity in enzyme foods and the other processed foods were ranged 4.9~53,854.6 U/g and 2.9~1,182.7 U/g, respectively, there was a big difference in the same type. The ${\alpha}$-amylase activity of the fermented products (beverage bases, fermented drinks, liquid teas) were ranged 0.1~1.7 U/g. The average of ${\beta}$-amylase activity in enzyme foods, the other processed foods, the fermented products were found 126.0 U/g, 5.6 U/g and 10.5 U/g, respectively, enzyme-shaped foods were a lot lower than enzyme foods. Total contents of sugars were average 22.4 g/100 g in enzyme foods, 14.8 g/100 g in the other processed foods, 46.9 g/100 g in beverage bases, 41.1 g/100 g in fermented drinks, 39.5 g/100 g in liquid teas, total contents of sugars appeared high amount in the fermented products. Correlations between ${\alpha}$-amylase activity and lactose content was statistically significant in enzyme foods (r = 0.644) and it was strong in the other processed foods (r = 0.903). Correlations between ${\beta}$-amylase activity and lactose content was statistically significant in enzyme foods (r = 0.648) and it was strong in the other processed foods (r = 0.757). There was a significant relationship between ${\alpha}$-amylase and ${\beta}$-amylase activities in enzyme foods and the other processed foods (r = 0.869, r = 0.760). That is, it was found that also the proportional relationship established among the ${\alpha}$-amylase activity, ${\beta}$-amylase activity.

Contents of Total Mercury and Methylmercury in Deep-sea Fish, Tuna, Billfish and Fishery Products (심해성 어류, 다랑어류, 새치류 및 어류가공품의 총수은 및 메틸수은 함량)

  • The aim of this study was to determine total mercury and methyl mercury level in fishes (Deep-sea Fish, Tuna, Billfish) and fishery products. A total of 101 fishes and 44 fishery products samples collected from commercial market in Gyeonggi-do. Total mercury were analysed by mercury analyzer and methyl mercury were analyzed by gas chromatography with electron capture detector. In the fishes, total mercury was detected in all samples and methylmercury was detected in 92 samples of them. The detection rate of methylmercury was 91.1% in fishes. The mean concentration (mg/kg) of total mercury and methylmercury were $1.968{\pm}0.505/0.496{\pm}0.057$ for Billfish, $0.665{\pm}0.091/0.252{\pm}0.033$ for Deep-sea Fish and $0.577{\pm}0.085/0.218{\pm}0.025$ for Tuna, respectively. The Swordfish contains the highest level of total mercury (1.968 mg/kg) and methylmercury (0.496 mg/kg). In Mabled rockfish, the ratio of methylmercury's contents about total mercury's contents was the highest as 66.5%. In case of fishery products, frozens made of 100% of raw material contained the highest level of total mercury and methyl mercury. The weekly intake of total mercury and methylmercury was calculated in 4.72% and 5.24% of Provisional Tolerable Weekly Intake (PTWI) respectively. This study showed that the weekly intake of methylmercury from Deep-sea Fish, Tuna and Billfish was less than the PTWI recommended by the Joint FAO/WHO expert committee on food additives.
