고품질 배 와인 제조를 위한 최적 발효 조건과 품질특성 (Optimal Fermentation Condition for Development of High Quality Pear Wine and Characteristics of Pear Wines)

  • The goal of this study was to develop new functional pear wine using six Asian pears (Pyrus pyrifolia, Nakai), namely Wonhwang, Niitaka, Whangkeumbae, Whasan, Gamcheonbae and Chuwhangbae. To select optimal yeast and pear, we investigated the physicochemical properties of the pear wines from fermentation of musts of six pear cultivars at $25^{\circ}C$ for 7 days by several yeasts. $11.2%{\sim}12.4%$ of ethanol from musts of 'Wonhwang', 'Whangkeumbae' and 'Whasan' were produced by Saccharomyces cerevisiae K-7 and 12.8% of ethanol was also produced from 'Niitaka' by commercial Saccharomyces cerevisiae C-2. 9.9% and 11.4% of ethanol were produced from musts of 'Gamcheonbae' and 'Chuwhangbae' by Saccharomyces cerevisiae KCTC 7904, respectively. Among several pear wines, Niitaka pear wine showed the best acceptability in the sensory evaluation, and Niitaka pear wine and Whangkeumbae pear wine showed 31.1% and 27.8% of antihypertensive angiotensin I-converting enzyme(ACE) inhibitory activity, respectively. However, the other functionalities were not detected or very low. Furthermore, Niitaka-strawberry mixed fermentation wine was showed the excellent acceptability and high antihypertensive ACE inhibitory activity of 64.9%.

백운배의 화학성분과 생리활성 효과 (Chemical Composition and Physiological Activity of Native Pear c.v. ‘Baekwoon’)

  • This study examined the basic information on the native pear c.v. 'Baekwoon' grown in Mt. Baekwoonsan, Gwangyang, to develop as a local specialty product. the sensory characteristics, chemical compositions, and physiological activities of 'Baekwoon' pear were examined and compared with those of 'Niitaka' pear. Hardness of 'Baekwoon' pear was 19.30N, which was higher than 'Niitaka'. The sugar content of 'Baekwoon' was 11.5 $^{\circ}Brix$, which was lower than 'Niitaka'. The total amino acid contents of the fruit skin and flesh of 'Baekwoon' were 222 mg/100g dry weight (DW) and 130 mg/100g DW, respectively, which were much higher than those of 'Niitaka'. Especially, serine contents in fruit skin and flesh of 'Baekwoon' were 75.4 mg/100g DW and 40.2 mg/100g DW, respectively, which were significantly (p<0.05) higher than those of 'Niitaka'. However, physiological activities, such as total phenol content, DPPH radical scavenging activity, total flavonoid content and nitrite scavenging activity, of 'Baekwoon' were lower than or similar to those of 'Niitaka'. Consequently, vitamin and amino acid contents of 'Baekwoon' were better than those of 'Niitaka'. It is suggested to use fruit skin because of its good composition and physiological activities so that it helps to improve the quality and the biological activity.

Confirmation of Parentage of the Pear Cultivar 'Niitaka' (Pyrus pyrifolia) Based on Self-incompatibility Haplotypes and Genotyping with SSR Markers

  • The parentage of the horticulturally important pear cultivar 'Niitaka' was confirmed by determining its S-genotypes based on the S-RNase and $PpSFBB^{-{\gamma}}$ genes, and genotyping using simple sequence repeat (SSR) markers. Previous reports suggested that the cultivars 'Amanogawa' and 'Imamuraaki' were the parents of 'Niitaka', although the cultivars 'Chojuro' and 'Shinchu' were also examined as candidate parents, along with two other cultivars. In the present study, the S-genotype of 'Niitaka' was determined to be $S^3S^9$. The $S^9$-RNase of 'Niitaka' was found to be likely inherited from the parent 'Amanogawa' ($S^1S^9$) and the $S^3$-RNase from 'Chojuro' ($S^3S^5$) or 'Shinchu' ($S^3S^5$). Based on the S-genotypes, the cultivar 'Imamuraaki' ($S^1S^6$) had no contribution to the parentage of 'Niitaka' ($S^3S^9$). A total of 67 polymorphic SSR markers were used to further confirm the parentage of 'Niitaka'. Discrepancies were found at several SSR loci between 'Niitaka' and the cultivars 'Imamuraaki' and 'Shinchu', whereas 'Niitaka' inherited alleles from 'Amanogawa' and 'Chojuro' at all SSR loci. Therefore, our findings established that 'Amanogawa' and 'Chojuro' are the parents of pear cultivar 'Niitaka', and not 'Imamuraaki' as previously reported.

발육속도 모델을 이용한 배 '신고' 자발휴면타파시기 추정 (Estimation of Dormancy Breaking Time by Development Rate Model in 'Niitaka' Pear(Pyrus pirifolia Nakai))

  • 배 '행수'의 자발휴면기의 발육속도 모델을 이용하여 배 '신고'의 자발휴면 타파기 예측 가능성을 검토하였으며, 나아가 겨울철 기온이 온난화됨에 따른 휴면타파시기의 변화를 검토하였다. 모델에 의해 예측된 자발휴면 타파시기와 포장에서 조사된 휴면타파시기가 12월 12일$\sim$12월 19일로 일치하여 배 '행수'의 발육속도 모델을 배'신고'에 적용하는 것이 큰 무리가 없는 것으로 판단되었다. 기온이 상승함에 따라 휴면타파시기가 지연되었으며, $4^{\circ}C$이상 상승하면 제주도를 중심으로 휴면타파에 필요한 저온 부족현상이 발생될 것으로 추정되었다.

Pear Skin Stain Caused by Mycosphaerella graminicola on Niitaka Pear (Pyrus pyrifolia Nakai)

  • Pear skin stains on 'Niitaka' pears, which occur from the growing stage to the cold storage stage, reportedly negatively influence the marketing of pears. These stains on fruit skin are likely due to a pathogenic fungus that resides on the skin and is characterized by dark stains; however, the mycelium of this fungus does not penetrate into the sarcocarp and is only present on the cuticle layer of fruit skin. A pathogenic fungus was isolated from the skin lesions of infected fruits, and its pathogenicity was subsequently tested. According to the pathogenicity test, Mycosphaerella sp. was strongly pathogenic, while Penicillium spp. and Alternaria spp. showed modest pathogenicity. In this present study, we isolated the pathogenic fungus responsible for the symptoms of pears (i.e., dark brown-colored specks) and identified it as Mycosphaerella graminicola based on its morphological characteristics and the nucleotide sequence of the beta-tubulin gene. M. graminicola was pathogenic to the skin of 'Niitaka' pears, which are one of the most widely growing varieties of pears in South Korea.

배나무잎 이상반점증상에 관한 연구 - 2. 원인구명 - (Studies on the Pear Abnormal Leaf Spot Disease - 2. Identification of Causal Agent -)

  • Alternaria spp.were predominantly isolated from the abnormal leaf spot lesions of pear cultivars Niitaka and Nijiiseiki. Alternaria isolates from the cultivar Niitaka were not pathogenic to both cultivars, but the isolates from the cultivar Nijiiseiki developed typical lesions of black leaf spots and were identified as A. kikuchiana. However, no typical abnormal leaf spot lesions were produced by the Alternaria isolates. Foliar spray of twelve different agrochemicals including lime sulfur, either alone or in combinations, with 7 times applications from April to July failed to reduced the disease development. Application of 17 different pesticides including fungicides, insecticides and herbicides currently used in pear orchards did not cause leaf injury similar to the abnormal leaf spot. Simulated acid rain of as low as pH 3.0 did not incite any leaf lesions alike the abnormal spot lesions. Mineral contents in the leaves of both cultivars did not differ significantly between the healthy leaves and those with abnormal leaf spots. When cuttings of pear tree were obtained in February from newly emerged twigs of the healthy or the diseased trees of Niitaka and planted in sand in the greenhouse, only those from the diseased trees developed typical leaf lesions of the abnormal spot. These results indicate that abnormal leaf spots are caused by unknown systemic agents in pear trees, rather than by Alternaria spp., chemical injury or acid rain.

Effect of different pollen sources on fruit characteristics and quality in 'Niitaka' pears (Pyrus pyrifolia Nakai)

  • This study was conducted to explore which pollen type could be an effective pollen source for self-incompatible 'Niitaka' pear (Pyrus pyrifolia Nakai), when different pollinizers were to be applied. The pollens of five different pears with similar flowering times were applied to bagged 'Niitaka' flowers grown in Cheonan city, Korea. Pollen types used were of different origins including Korean pears ('Wonhwang' and 'Chuhwangbae'), Japanese pears ('Chojuuro' and 'Okusankichi'), and Chinese pear ('Yali'). Results show that the amount of pollen produced by flowers of each cultivar was the largest in Korean pear 'Wonhwang' (234 g/100 flowers) and the smallest in Japanese pear 'Okusankichi' (126 g/100 flowers). A high proportion of large fruits (> 600 g), 71.4% of total production, was found in the fruits treated with 'Yali' pollen. However, these fruits showed an unfavorable external appearance. Based on individual fruit width differences, 'Chojuuro' treatment produced the smallest difference in fruit diameters (3.2 mm) and 'Yali' treatment' gave the largest (4.8 mm). Also, the difference in fruit length was the largest in 'Yali' (7.5 mm), which also produced the most uneven fruits among the pollinizers used. Meanwhile, the use of pollens of 'Wonhwang' and 'Chuhwangbae' improved productivity by increasing the fruit shape index and the ratio of bigger fruits in total production. Moreover, those pollens also decreased the development of lenticels on fruit skins which gave them a smoother appearance.

배나무잎검은점병 무독수의 선발 및 품종 저항성 (Selection of Pear Trees Free from Pear Black Leaf Spot Disease and Resistant Test for Pear Tree Cultivars)

  • 배나무잎검은점병에 대한 종합방제 대책을 수립하고자 시험을 수행하였다. 배 생산단지로부터 무독모수를 선발하기 위해서 본 병에 대한 감염 여부를 검정한 결과, 배나무잎검은점병이 발생하지 않는 6주를 확인하였다. 본 바이러스는 $40/32^{\circ}C$에서 3주간, $37/30^{\circ}C$에서 4주간 변온처리에 의해서 무독화가 가능하였으나 신초의 활착률이 매우 낮았다. 본 바이러스를 접종하여 병징이 발현하는 품종은 신고 등 7품종이었고, 발현하지 않는 품종은 수황배등 11종이었다. 품질이 우수한 저항성 품종인 수황배를 배나무잎검은점병이 발생하고 있는 신고 배나무에 고접한 결과 배나무잎검은점병이 전혀 발생하지 않았다.

화분매개곤충과 인공수분이 '신고' 배의 과실품질과 수익성에 미치는 영향 (The Influence of Insect Pollination and Artificial Pollination on Fruit Quality and Economic Profit in the 'Niitaka' Pear (Pyrus pyrifolia Nakai))

  • 꽃가루가 없는 '신고' 배에서 화분매개곤충의 수분효과를 확인하기 위하여, 망실과 노지에서 꿀벌, 서양뒤영벌과 인공수분 간의 과총착과율과 수확물 특성을 비교하였다. 수분방법별 착과율을 조사한 결과, 망실에서는 인공수분이 77.1%로 서양뒤영벌보다 1.3배, 꿀벌보다 1.9배 높았다. 노지에서는 인공수분이 38.4%로 서양뒤영벌과 꿀벌보다 1.2배, 1.3배 높았다. 장소별로는 망실이 노지보다 1.3-2.2배 높은 과총착과율을 보여주었다. 화분매개곤충 별로는 서양뒤영벌이 꿀벌보다 같거나 1.5배 높은 과총착과율을 나타내었다. 수확물 특성을 조사한 결과, 인공수분이 과실 크기, 무게가 꿀벌보다 화분매개곤충보다 5-10% 정도 높고, 과형지수도 2-3% 높은 것으로 나타났다. 경제성 분석결과, 인공수분 대비 순수익지수가 서양뒤영벌은 97.0%, 꿀벌은 93.1%로 나타났다. 따라서, 화분이 나오지 않는 '신고' 배에서 인공수분이 화분매개곤충보다 더 효과적이지만, 과실품질과 경제성을 고려할 때, 인공수분을 대체할 수 있다고 생각된다.

신고배 개화기 NaDCC 처리에 의한 검은별무늬병의 방제 (Control Effect of Sodium Dichloroisocyanurate for Pear Scab (Venturia nashicola) on Niitaka Pear during Flowering Period)

  • 본 연구는 배 개화기에 염소계 살균제인 NaDCC(sodium dichloroisocyanurate)의 사용에 따른 배검은별무늬병의 방제 가능성을 검토하기 위하여 수행하였다. 건전한 배나무에 배검은 별무늬병원균인 Venturia nashicola의 분생포자를 접종하고 NaDCC를 농도별로 살포한 결과, 무처리에서 51.6% 발생한 반면에 NaDCC 처리시 750mg/L에서는 23.8%, 1,000mg/L에서는 26.2%로 발병억제 효과가 있었다. 원황 등 6개 품종을 대상으로 만개기에 NaDCC를 살포하여도 배꽃의 화분발아에는 피해가 없었다. 신고 배 포장에서 개화초기와 만개기로 구분하여 NaDCC를 살포한 결과 개화초기에 NaDCC를 단독 살포 처리시 98% 이상의 높은 수정율을 나타내어 가장 효과적인 살포시기로 판단되었다. 또한 신고 배 재배포장에서 NaDCC를 배검은별무늬병 방제 적기에 4회를 살포한 결과 NaDCC 750mg/L 이상의 농도로 처리시 발병과율은 0%이었다.
