Pigment extracts obtained from Star Ruby grapefruit pulp were stored at different temperatures (4.5$^{\circ}C$, 23$^{\circ}C$) and exposed to light. many carotenoid oxidation products were formed due to light-exposure during storage periods. They were monitored by using HPLC with photodiode array detection and tentatively identified. Including (all-E)-lycopene and trans-$\beta$-carotene as predominant carotenoids in red grapefruit, 5Z-lycopene, 9Z-lycopene, 13Z-lycopene, and 15-cis-$\beta$-carotene were formed at 4.5$^{\circ}C$, 23$^{\circ}C$. Degradation of all-tarns lycopene was more susceptible to light-exposure and temperature a than that of all-trans $\beta$-carotene. The formation of lycopene cis isomers was favored under lighted condition. Respectively, (5Z)-lycopene was formed in greater amounts than other isomers at 23$^{\circ}C$ storage. The concentration of 15-cis-$\beta$-carotene was significantly increased during storage at 23$^{\circ}C$ storage. This study was conducted to investigate the effect of CA(4% $O_2$ and 7.5% $CO_2$) storage on the quality characteristics and chilling injury in 'Nanko' prunus mume fruits at 1, 5, and $9^{\circ}C$. CA storage reduced production of $CO_2$ and $C_2H_4$ significantly. Hue values of fruit skin were significantly higher in fruits stored at $1^{\circ}C$ and $5^{\circ}C$ than $9^{\circ}C$. Weight loss was much lower in fruits stored under CA storage. Soluble solids content (SSC) titratable acids (TA), and firmness were maintained and electrolyte leakage was lower in fruits stored under CA storage. Ratios of chilling injury and decay were increased faster at $5^{\circ}C$ and $9^{\circ}C$ than $1^{\circ}C$. The chilling injury was suppressed in fruits of CA storage compared with control fruits during cold storage. These results indicate that CA storage at $1^{\circ}C$ of prunus mume fruits extended the storage life up to 30 days without quality deterioration. effectively.
The purpose of this study was to investigate the effect of Paecilomyces japonica mycelia(PJM) on pH, titrable acidity and microbiological qualify of Jeungpyun(fermented rice cake). Jeungpyun prepared with $0\~\%$ of PJM stored at $5^{\circ}C\;and\;20^{\circ}C$ for 4 weeks and 7 days respectively. Before fermentation of Jeungpyun dough, viable cells of total bacterial counts(TBC), yeasts and lactic acid bacteria(LAB) were $6.0\~9.8\times10^6,\;5.3\~9.0\times10^6,\;5.4\~8.5\times10^6\;CFU/g$, respectively. During the fermentation of dough, viable cells of TBC, yeasts and LAB increased $0.3\~0.4$ log cycle and pH was decreased whereas acidity increased as the progress of fermentation. Total viable cells in Jeungpyun before storage were $5.0\times10^1\;CFU/g$. During storage of Jeungpyun, TBC, yeasts and LAB of control group increased 2.6, 2.4, 2.1 log cycle at $5^{\circ}C$ and 4.8, 4.6, 4.5 log cycle at $50^{\circ}C$, respectively, when reached at maximum level. Major microflora of Jeungpyun was composed of yeasts and LAB during fermentation of dough and storage at $5^{\circ}C\;and\;20^{\circ}C$. Addition of PJM, inhibited the growth of microorganisms, the changes of PH and titrable acidity of Jeungpyun during storage at both of $5^{\circ}C\;and\;20^{\circ}C$. From these results, the addition of PJM extended the shelf-life of Jeungpyun during storage at $5^{\circ}C\;and\;20^{\circ}C$.
This study was carried out to investigate the effect of storage temperature (0, 5, $20^{\circ}C$) on chemical components of Korean kiwifruits. Moisture content decreased in $0^{\circ}C-,\;5^{\circ}C-stored$ samples and slightly increased in $20^{\circ}C-stored$ sample. Soluble solid content increased in $0^{\circ}C-,\;5^{\circ}C-stored$ samples and decreased in $20^{\circ}C-stored$ sample ranging from 11 to $14\;^{\circ}Brix$. pH and titratable acidity remained at the level of $3{\sim}3.5$ and $1{\sim}1.5$, respectively. The content of malic and quinic acid increased during storage at $0^{\circ}C$ and $5^{\circ}C$. In case of citric acid, the content increased up to 6th week and then decreased. Kiwifruits stored at $20^{\circ}C$ showed a changing pattern of organic acids similar to those stored at 0 and $5^{\circ}C$. Glucose, fructose and sucrose increased in $0^{\circ}C-,\;5^{\circ}C-stored$ samples except fructose at $5^{\circ}C$. In case of $20^{\circ}C-stored$ sample, sucrose increased up to 2∼3th week and then decreased.

This study was carried out in order to investigate the effect of temperature of treatment and storage on the longevity of 'Unicorn' tomatoes of light red maturity stage during commercial handling conditions encountered while exporting over long distances. Tomato stored at $5^{\circ}C$ and $11^{\circ}C$ temperature with 85% relative humidity by pre-treating handling temperature that was using from field to before shipment as a winter temperature $5^{\circ}C$, spring temperature $11^{\circ}C$ and summer temperature $25^{\circ}C$ for 3 days. On the final storage day, $25^{\circ}C/11^{\circ}C$ (treated/stored) tomatoes showed the highest respiration and ethylene production rate; whereas the lowest respiration and ethylene production rate was found for $5^{\circ}C/5^{\circ}C$ treated and stored tomatoes. Tomatoes treated and stored at $5^{\circ}C/5^{\circ}C$ showed higher marketability, without evidence of fungal rot, decay or spots for 23 days. The fresh weight loss under all treatment conditions increased gradually during $5^{\circ}C$ and $11^{\circ}C$ storage temperatures. The higher firmness and soluble solids were determined from $5^{\circ}C/5^{\circ}C$ and $5^{\circ}C/11^{\circ}C$ treated and stored tomatoes repectively, than from others tomatoes on the final day of storage. In addition, $5^{\circ}C/5^{\circ}C$ tomatoes showed higher vitamin C contents than tomatoes stored at other temperatures, on the final day of storage. As the ripening and storage period progressed, the titratable acidity increased, but declined (P < 0.05) thereafter, due to over ripe tomatoes under all treatment conditions. These results show that $5^{\circ}C/5^{\circ}C$ treated and stored light red maturity stages of 'Unicorn' tomatoes are optimum to export because they show the highest storability and marketability. Moreover, the marketability of light red maturity stage of 'Unicorn' tomato maintained for 2 weeks in $25^{\circ}C/11^{\circ}C$ treated and stored temperature that might be the export temperature from Korea to Japan in summer season. This research result could be useful in helping tomato growers and exporters to get optimum market value by satisfying the buyer and consumer with a fresher product.

This study was performed to investigate the quality characteristics of Takju under different storage temperatures ($4^{\circ}C$ and $20^{\circ}C$) and alcohol contents (6%, 8%, 10%, and 12%) during 90 days of storage. The counts of yeast were lower in Takju samples stored at $4^{\circ}C$ than in those stored at $20^{\circ}C$ after 90 days of storage. No significant differences were observed for total acidity and free amino acid contents in Takju stored at $4^{\circ}C$ during 90 days of storage. Lactic acid contents in Takju stored at $4^{\circ}C$ changed little after 90 days of storage from 1,883.5 mg/L to 1,914.6 mg/L, whereas those in Takju stored at $20^{\circ}C$ increased to 4,736.1 mg/L after storage. Free amino acid contents in Takju stored at $20^{\circ}C$ increased after 90 days of storage regardless of alcohol content. Thus, we concluded that the shelf-life of Takju could be extended more than 30 days, currently the most common shelf-life of Takju, when stored at $4^{\circ}C$.
The antibacterial activity of low concentrations of clove (Eugenia caryophyllata Thumb) in culture broth against Listeria monocytogenes and Salmonella typhimurium was tested at 35, 5, and -20$^{\circ}C$. Tryptic soy broth (TSB) containing 0∼0.5% (w/v) of clove was inoculated with 10$\^$5/∼10$\^$7/ cell/ml of L. monocytogenes and S. typhimurium and incubated at each temperature. The growth of L. monocytogenes occured only after a prolonged lag period at 0.1% clove at 35$^{\circ}C$, while viabilities of the cells decreased by 1.4 and 3.3 log cycles at 0.3 and 0.5% clove, respectively. Growth of S. typhimurium occured at the presence of 0∼0.5% clove after a longer lag period with increasing concentration of clove at 35$^{\circ}C$. During refrigerated storage at 5$^{\circ}C$, the growth of L. monocytogenes occured after 6 days of lag period at 0.1% clove while viability of the cells were decreased during 24 days of storage. During frozen storage at -20$^{\circ}C$, the viability of L. monocytogenes and S. typhimurium decreased about 4 log cycles during 3 days of early period of storage at 0.1% clove. There were no major changes in the population of L. monocytogenes and S. typhimurium in TSB with different concentrations of clove during frozen storage.
To examine the quality changes of three typical fishes under usual storage conditions during marketing, we determined the total bacterial counts and pH values during storage of mackerel, croaker, and saury. Mackerels were stored at 0$^{\circ}C$ and on ice at 19$^{\circ}C$, which is the usual storage condition in a local market and croakers and saury were stored at 0$^{\circ}C$ and 4$^{\circ}C$. Total bacterial counts of mackerel, croaker, and saury were 3,2${\times}$10$^3$, 2.9${\times}$10$^3$, and 2.8 x 10$^4$CFU/g at the time of storage respectively. Total bacterial counts of mackerel stored on ice at 19$^{\circ}C$ increased during storage and reached to 8.4 x 10$\^$6/ CFU/g at day 6, while those stored at 0$^{\circ}C$ decreased up to 2 days of storage and increased to 5.6 ${\times}$ 10$^4$CFU/g. For croaker and saury, total bacterial counts at 0$^{\circ}C$ were 2.5 ${\times}$ 10$\^$5/ and 2.1 x 10$\^$5/ CFU/g at day 6, respectively, while those stored at 4$^{\circ}C$ had 3.6 x 10$\^$6/ and 2.6 ${\times}$ 10$\^$5/ CFU/g. the pH value or mackerel was 5.56 at the time or storage, yet it increased to 6.04. The pH changes of croaker and saury had a similar pattern with that of mackerel, which increased with time of storage. These results suggest that storage of fishes at 0$^{\circ}C$ should be better than those at 4$^{\circ}C$ or on ice at 19$^{\circ}C$ in terms of microbial safety as well as quality and shelf-life of fishes.

In an attempt to improve the quality stability of dried layer (Porphyra yezoensis Ueda), during longterm storage and distribution, a 6 months storage trial at different temperature and packaging condition was conducted. Dried layer samples were prepared by conventional procedure with different washing condition and $5^{\circ}C$ and $30^{\circ}C$ were employed as storage temperature. The moisture sorption isotherm was drawn at $5^{\circ}C$ and $25^{\circ}C$ and BET equation was prepared from the moisture sorption isotherm. The monolayer moisture contents of dried layer were 7.4% at $5^{\circ}C$ and 6.4% at $25^{\circ}C$, respectively. It was also found that the changes in comprehensive quality of dried layer during storage was much less at low temperature and the degree of washing before drying process as far as its moisture contents are lower than monolayer moisture contents. With regard to the packing methods, vaccum packing was superior to air containing packaging for the maintainance of quality during storage.
Raw adlay powder(RAP) and processed adlay powder(PAP) were prepared and the changes of lipids in RAP and PAP during storage at $5^{\circ}C$ and $35^{\circ}C$ for six months were studied. The typical patterns of lipid oxidation were observed during the storage; the values of acid, peroxide and carbonyl in the lipids were increased and the iodine value was decreased. These changes were especially significant(P<0.05) at higher temperature($35^{\circ}C$) and were more notable in the lipids from RAP than those from PAP during storage. The contents of neutral lipid, glycolipid and phospholipid were changed appreciably at $35^{\circ}C$, however, the changes were not significant(P<0.05) at $5^{\circ}C$. Further more, triglyceride in neutral lipid, digalactosyl diglyceride in glycolipid and phosphatidyl choline in phospholipid showed respectively a tendency of decrease during storage as compared with the other contents of lipid class.
