패밀리 레스토랑은 서비스 산업이라 해도 과언이 아니다. 서비스 운영자 혹은 서비스 제공자의 역할은 고객과의 접촉순간(MOT : Moment Of Truth)에 고객의 요구 및 욕구를 충족시켜 고객에게 제공하는 가치를 극대화하여 서비스 상품의 판매 향상을 도모하고자 하는 것이다. 향후 패밀리 레스토랑은 하드웨어(hard ware)측면보다 내적으로 어떤 서비스를 질적으로 나타낼 수 있느냐 하는 소프트웨어(soft ware)가 더욱 강조될 추세이다. 따라서 본 연구의 목적은 패밀리레스토랑 종사원들의 직무만족이 서비스품질에 어떠한 영향을 미치는지 연구하고자 하는 것이다. 본 연구의 대상은 대구전역에 위치하고 있는 패밀리 레스토랑에 근무하는 종사원을 연구대상으로 하였다. 조사기간은 2004년 4월 1일부터 5월 20일까지 50일간에 걸쳐 실시하였다. 실증분석 결과, 본 연구에서 제시한 7개의 가설 가운데 4개가 유의한 것으로 검증되었다.

This study investigated of the differences of the image between the domestic and china tourist of the visiting in busan metropolitan city and their image evaluation were different according to the nationality. The attribute for the destination image types were measured using 27 items. The factors involved in the destination image were analysis and 7 factors emerged. The result are as follows. First, Between the domestic and china tourist of living appeared to statistical different of the destination image. Second, Between destination image and revisiting preference appeared to statistical difference. Third, Between destination image and revisiting preference appeared to statistical difference according to the nationality. Forth, Between destination image and revisiting preference appeared to statistical partially difference according to the nationality. Finally it is also appeared to the statistical difference on the job. ANOVA, t-test was utilized for the above analysis which revealed that a statistic partially difference exited between domestic and china tourist.

Recently, hotel industry has realized the importance of food and beverage sales for the profit maximization, and the focuses on restaurant management has been growing. Accordingly, menu management in the F/B department is one of the most key factors determining the success or failure of business. Therefore, in this study, entree menu items of french restaurant in the deluxe hotel was analysed with presently theorized model of menu analysis, classified into four menu items. Also it was analyzed how those classified menu items influence on sales, number of sold, food cost percentage, contribution margin And, proper ways was presented to make restaurant managers and menu planner in order to increase food operation sales through proper modifications and methods on various menu analysis matrix. In Pavesic's menu analysis method, all of menu items have impact on the sales, number of sold, contribution margin and Primes, Sleepers do so on the food cost. The finding of this study was that Pavesic's menu analysis is superior to menu analysis in terms of the sales, number of sold, food cost percentage, contribution margin. Therefore, Pavesic's menu analysis is useful and efficient method in order to conduct menu engineering.

The purpose of a study was the present condition comparative analysis by the case of Bakery in Hotels. The sample was selected first grade hotels in seoul. The method of research was In-depth interview. The questionee were mamagers and chefs each hotel bakery. Interview was accomplished average 45minutes. The period of the research was from 1th of Februrary, 2002 to 28th of February, 2002. The survay was composed of product operation, employee operation, equipment operation, customer operation, sales and bakery characteristics. the data was analyized by SPSS10.0 mean, maximum value and minimum value were salected. Recently, as it is getting higher of importance of bakery in the food service market and many major companies run into a bakery industry, the researches about bakery have advanced, however in fact, materials or researches about hotel bakery are fewer than franchise. in-store bakery and mass production enterprise. Especially, each hotel exchanges their information through benchmarking but data analysis - accurate materials, sales, the present condition equipment is not easy to perform. The purpose of this study was to be helpful for studying hotel bakery for others by analysis. The data was analyzed by each hotel characteristics, employee, equipment, sales, productions and the present condition sales.

A Study of Activation plan for Korean restaurant business -Based on Literature of Preceding Studies-In accordance with changes in life style, people's desire to eat out is getting changed in their preferring factors from whether they can buy food they want to eat fast and easily to mood of the dining space, content and quality of service, hygiene condition of restaurant, quiet location and surrounding circumstance, and discount coupon and price destruction. In addition, consumers who begin to recognize the seriousness of environmental pollution prefer health-oriented food. On the other hand, excessive presence of competitors, growing personnel expense, increasing expenditure in accordance with swelling price of rent and material expenditure, increase of tax burden, decrease of income because of credit card service charge and high expected level by consumers make it difficult for restaurant's owners to manage restaurant business. Therefore, this study purposes to establish development of menu from the consumer's and the supplier's point of view and propose how to develop menu aiming at convenience, health and diversity.

We live seeing, touching, or throwing on considerable textile in our life consciously and unconsciously. Since a Korean-style house is a dwelling space in life style of sitting on the floor with ondol(Korean floor heater), use of textile is limited to bedding goods. However, as western life style takes firm root, use of textile for interior design is increasing. As well, as apartments and foreign style houses have gotten lodgment since 1980, life style is being changed rapidly. So, textile became required factors in dining space where little textile existed. Through literature, history of textile is considered and design image concept is created based on the consideration. In addition, the created concept can be applied to various textile design, which can be a good tool to express eating culture of the country as well as the country's image.

우리나라에서 생산되는 우리밀을 이용하여 한국형 사워종을 제조하며, 동시에 각각의 글루텐 함량, pH, TTA, 발효율과 mixograph를 측정하고 분석하여 그 중 가장 우수한 sourdough starter를 추출하였다. 그리고 그 starter를 이용한 sourdough bread를 제조하였을 때 나타나는 제품의 특성을 CrumbScan을 통하여 비교 분석하여 우리밀을 이용한 한국형 사워빵의 특성을 알아보았고, 이용할 수 있는 가능성을 알아보고자 하였다. 글루텐 함량분석 결과 강력밀가루와 우리밀 중에서는 KWF 5와 KWF 6이 제빵에 적합한 글루텐 함량을 가지고 있었다. 전반적으로 sourdough starter의 pH 범위는
$4.0{\sim}4.5$ 사이로 사용하기에 적당하였고, TTA값은 대조구와 비교해 봤을 때, 비슷하거나 높게 나타났다. 발효율은 24시간 후 가장 많이 팽창한 것은 KWF 5와 KWF 6이었고 48시간 후에는 반죽의 산성화로 인하여 오히려 감소하는 것이라 사료되었다. mixogram의 분석결과는 강력밀가루가 제빵적성에 적합한 것으로 나타난 반면에 우리밀의 경우는 반죽내구성이 낮고 단백질함량이 적어 빵을 만들기에는 적합하지 않았다. CrumbScan을 통한 영상분석의 결과 강력밀가루와 우리밀 7가지 중에서 기공의 조밀도가 크고 찌그러짐이 적은 KWF 5와 KWF 6이 sourdough starter로 사용하기에 적합한 것으로 나타났다.
