Abstract

Standard procedure for development of food list was established based on food intake data of 2001 National Health and Nutrition Survey and 2002 Seasonal Nutrition Survey for Total Diet Study. Foods were sorted in descending order of mean intake, and 54 items within cumulative percentage of 80 were selected, followed by selection of 16 additional items with consumption frequency of 10% or higher. Based on higher consumption in certain seasons, regions, sexes, and age classes, 14 additional items were added. Additional 17 items with probable high contents of heavy metals or 23 items with probable high pesticide residues were added. Altogether, 101 and 107 individual food items were included for heavy metal and pesticide residue lists, accounting for 84.9 and 83.3% mean energy intakes of Korean population, respectively.

본 연구에서는 식품으로부터의 중금속 및 잔류농약 섭취량 평가를 위하여 가장 근본적으로 요구되는 분석대상 식품을 선정하고자 하였다. 이에 따라 2001년도 11월 1일부터 12월 30일까지 실시한 [2001년 국민건강 영양조사 (영양조사부문)]에서 조사된 식품섭취량 자료와 2002년 3월, 6월, 9월의 세 차례에 걸쳐 조사된 [2002년 계절별 국민영양조사]의 식품섭취량 자료를 기초로 하여 우리 국민이 많이 섭취하는 식품, 자주 섭취하는 식품, 에너지 공급비율, 지역별, 성별, 계절 및 연령층별 섭취패턴, 중금속과 잔류농약 함량이 높을 것으로 추정되는 식품을 고려하여 대표식품을 선정하였다. 대표 식품은 우리 국민의 식품별 섭취량 누적비율 80%까지 포함된 식품 54종에 자주 섭취되는 식품 16종, 계절별/지역별/성별/연령별 식품섭취량이 고려된 11종, 에너지 공급비율이 반영된 3종이 추가된 84종을 기본목록으로 하였고, 여기에 중금속과 잔류농약 함량이 높은 것으로 알려진 식품 각각 17종과 23종이 추가됨으로써 중금속 분석품목은 101종, 잔류농약 분석품목은 107종이 최종 선정되었다. 중금속과 잔류농약 섭취량 분석을 위한 대표식품 목록에서의 식품군별 섭취량은 곡류가 각각 259.7g과 261.1g, 채소류는 중금속과 잔류농약이 각각 245g과 258g, 과일류에서도 중금속은 143.6g, 잔류농약은 148.7g 등으로서 각 식품군의 섭취비율은 전체자료로부터 산출된 식품군별 섭취비율과 비슷하게 선정되었다. 본 연구에서 분석대상으로 선정된 식품의 총량은 기본목록 84종 1,014.6g으로 전체 섭취량 1,215.3g의 83.5% 수준이었으며, 중금속 분석대상 식품은 1,040.9g, 잔류농약 분석대상 식품은 1,035.9g으로 각각 전체 평균섭취량의 85.6%와 85.2% 수준을 나타냈다. 이를 에너지 섭취량으로 환산하여 비교해 보면 선정된 대표식품의 기본목록은 1,541.5kcal로 전체 평균 에너지 섭취량 1,869.9kcal의 82.4%이며, 중금속과 잔류농약의 대표식품은 각각 1,586.9kcal와 1,558.0kcal로 전체 평균 에너지 섭취량의 84.9%와 83.3%수줄이었다.
