Abstract
To clarify the effects of killing methods on biochemical changes of plaice, Paralichthys olivaceus muscle at early period after death, cultured plaices were killed by the following four different methods; 1. spiking at the brain instantly. 2. letting them to die in the air. 3. dipping in sea water including anesthetic. 4. electrifying in sea water.
