Enteric colibacillosis has economically become an important disease of young animals as a result of increasing intensification of farrowing management. The objective of this experiment is to isolate fimbrial antigen from enterotoxigenic E. coli F41, to develop specific polyclonal IgY which can effectively neutralize or reduce the proliferation of pathogens in feed or living animal system, and to apply IgY technologies to animal industry. The results obtained were as follows: The molecular weight of the purified F41 antigen was 29,500 dalton on sodium dodecyl sulfate-polyacrylamide gels. Fimbrial antigen was confirmed by the western blot method. It was observed that after immunization the level of serum antibody titer of laying hen was shown in two weeks and gradually increased. The antibody titer in egg yolk appeared two weeks after it was shown in serum antibody. The titers of egg yolk antibody were gradually increased to the maximum level of 320,000 (antigen 50${\mu}g$/$m\ell$), 450,000 (antigen 200${\mu}g$/$m\ell$), and 320,000 (antigen 600${\mu}g$/$m\ell$). According to the results of specificity test by ELISA, the anti-F41 antibodies from chicken serum and egg yolk reacted only with ETEC F41 antigen. There was no cross reaction with other ETEC strains (K88, K99, and 987P). In vitro condition, as a result of antigen binding ability of yolk antibodies, bacterial concentration was rapidly decreased to $10^5$ CFU/$m\ell$ from $10^9$ CFU/$m\ell$ when 2${\sim}$4 mg/$m\ell$ of freeze dried WSF (water soluble fraction) was added.

A study was conducted to determine the effect of live weight of pheasants on egg production and egg quality characteristics. A total of 48 ring-necked pheasants were divided into control, heavy, middle and light BW groups. Live weights of the control were 1,187 g, 1,352.92 g for heavy group, 1,247.92 g for middle group and 1,003.33 g for light group. Egg production of groups were found as 47.32, 42.82, 45.79 and 46.51% respectively, in 10 weeks of period. There were no statistical differences on egg production among the groups. The effect of live weight on egg weight, shape index, specific gravity, shell weight, shell thickness, Haugh Unit, yolk weight and albumen weight were found statistically significant (p<0.05). The effect of live weight on albumen index, membrane weight and membrane thickness were found not important (p>0.05). On the other hand, other important factors to be effective on the egg quality of pheasants should be investigated. As a result of this study, live weight of pheasant hens is not an important factor to obtain high egg production in pheasants. But, body conformation of breeding materials should be in good conditions.
The aim of this study was to compare the quality and physicochemical characteristics of blue-shelled eggs (BE) and conventional eggs (CE). Proximate composition, quality, pH value, shell color, collagen content, fatty acid composition, total cholesterol, ${\alpha}$-glucosidase inhibition activity, and antioxidation activity were determined. The proximate composition, general qualities, and pH values of CE and BE showed no significant differences, except in moisture composition, weight, and shell thickness. Moisture content and weight of BE were significantly lower than those of CE. However, shell thickness and weight of BE were higher than those of CE (p<0.05). Lightness of BE was significantly higher than that of CE (85.20 vs. 58.80), while redness ($a^*$) and yellowness ($b^*$) of BE were lower than those of CE ($a^*$: -4.75 vs. 14.20; $b*$: 10.45 vs. 30.63). The fatty acid [C18:1n7 (cis-vaccenic acid) and C18:3n6 (gamma-linolenic acid)] contents of BE were significantly higher than those of CE. The total cholesterol contents of BE and CE were similar. DPPH radical scavenging activity of BE was significantly higher than that of CE (40.78 vs. 35.35). Interestingly, ${\alpha}$-glucosidase inhibition activity of whole egg and egg yolk in BE (19.27 and 36.06) was significantly higher than that of whole egg and egg yolk in CE (13.95 and 32.46). This result indicated that BE could potentially be used as a functional food material. Further studies are required to evaluate the specific compounds that affect functional activity.
Eggs used in this study were obtained from Saudi Arabian Baladi laying hens which were divided into four experimental groups and subjected to the following treatments: Commercial laying ration (17% CP, 3.6% Ca and 0.343%, available P) fed ad libitum as a control (C); Conventional force molting, feed removal for 10 days followed by 18 days full-feed of cracked corn (F); 15 days ad libitum intake of the control ration supplemented, to initiate forced-molt, with 0.35% aluminum as the sulfate (ALS) or the chloride (ALC). The hens were in production for 52 weeks and 17 months of age at the start of the trial and the post-treatment period lasted 36 weeks. During the treatment period F and AL treated groups had similar egg and shell weight, egg surface area, shell thickness and shell weight per unit of surface area but significantly (p<0.05) lower than the control. F had significantly (p<0.05) the highest and the control the lowest Haugh unit values whereas AL fed groups had significantly (p<0.05) lower meat spot incidence compared with the control which tended to have higher value than F group. ALC and F had significantly (p<0.05) the lowest yolk color grade whereas ALC had significantly (p<0.05) lower egg index than ALS and the control. During the post-treatment period the control had significantly (p<0.05) the highest egg index and blood spots incidence and ALS the lowest shell diensity compared with other groups. ALS had significantly (p<0.05) lower shell weight than ALC and the control whereas F and AL treated hens had significantly (p<0.05) the highest Haugh unit values and yolk color grades respectively. F had significantly (p<0.05) lower meat spots incidence than ALC and the control. The same results were observed for ALS compared with the control.
This study was performed to investigate the effects of lotus leaf hot water extracts treatment on the quality and stability of eggs using impregnation treatment through ultrasonication during storage. A total of 480 eggs were categorized into four treatment groups (n=30 each)-non-treated (CON), soaked for 30 min in lotus leaf hot water extracts without ultrasonication (T1), sonicated in distilled water (T2), and sonicated in lotus leaf hot water extracts (T3)-and stored for 15 d at 30℃. The egg weight, Haugh unit (HU), egg grade, albumen height, yolk color, eggshell thickness, eggshell breaking strength, and weight loss were measured for egg quality assessment. 2-Thiobarbituric acid reactive substance (TBARS) and volatile basic nitrogen (VBN) contents were measured as stability indicators. Additionally, total phenolic contents (TPC), total flavonoid contents (TFC), and 1,1-diphenyl-2-picrylhydrazyl (DPPH) radical scavenging activity were evaluated. The HU, egg grade, albumen height, and yolk color of T3 were significantly higher than those of CON (p<0.05). No significant differences in eggshell thickness and eggshell breaking strength are observed among the groups. The weight loss of T3 was significantly lower than that of the other groups during storage (p<0.05). The application of lotus leaf hot water extracts also significantly reduced TBARS and VBN (p<0.05). The TPC, TFC, and DPPH radical scavenging activity of T3 were significantly higher than those of the other groups (p<0.05). These results suggest that lotus leaf hot water extracts may be useful as a natural ingredient for improving the quality and stability of eggs during storage.
The objective of this study was to investigate the line-by-feed additive interaction on egg traits and yolk cholesterol level in laying hens. Hy-line W-98 (white shell line) and Hy-line Brown (brown shell line) were used as experimental stocks and three groups were assigned in each line. The age of hens used in this study were from 40- to 46-wk-old. Two different levels of chitosan were also used as additive in chicken diet. The first (CH$_{30}$) and second (CH$_{60}$) experimental groups were fed basal diet added 30mg and 60mg chitosan/kg feed, respectively. And the control group (CON) hens were fed with basal diet only. The eggs were collected and analyzed at the end of 40, 42, 44, and 46-wk-old. In the mean egg weight, the CH$_{30}$ in Hy-line Brown was significantly heavier (P<0.05) than CON, but the CH$_{30}$ in Hy-line W-98 was significantly lighter (P<0.05) than CON. Whereas, the mean egg weight did not significantly differ between CH$_{60}$ and CON in both line. The mean albumen percentage in Hy-line Brown did not show significant between experimental groups and control group. On the other hand, the mean albumen percentage of CH$_{60}$ in Hy-line W-98 was significantly lower (P < 0.05) than that of CON, but there was no significantly different between CH$_{30}$ and CON. In the mean yolk percentage, it showed a reverse trend as shown in the mean albumen percentage; there were significantly higher (P<0.05) in CH$_{60}$ than in CON fur the Hy-line W-98, and higher in CH$_{30}$ than in CON for the Hy-line Brown. However, the mean shell percentages did not significantly differ between experimental groups and control group in both lines. In the mean yolk cholesterol levels, the CH$_{30}$ and CH$_{60}$ in both lines were lower by 0.46 mg ∼2.80 mg per gram yolk than CON. Although the interaction effect of line-by-supplementing level of chitosan in hens diet on the pooled mean of yolk cholesterol level was no significant, it showed a highly significant interaction (P<0.01) at three of four experimental ages.
To determine the quality change of the irradiated eggs during storage, fresh shell eggs were irradiated using $^{60}Co$ at 0, 1, 5, 10, 30 kGy and stored for 30 days. The york index, color, pH, viscosity, egg weight, and SDS-PAGE profile of the irradiated eggs were examined. During storage, york index values of the irradiated eggs and the control were decreased and the increase of dose decreased yolk index. However, the yolk index values were increased temporarily at 10 kGy and 30 kGy. The yolk color had a bright yellow with increases in dose level and there was no significant change during storage. The albumen viscosities were decreased with increases in dosage and were decreased during storage. Also, the albumen pH values of the irradiated eggs were higher than that of the control and were increased during storage. The weight losses of eggs were increased during storage and there were no significant changes by dose level. SDS-PAGE profile of the egg white proteins of the shell eggs showed the change in molecular weight distribution and had aggregation pattern as well as degradation. CD and fluorescence spectroscopy study showed changes in the secondary and tertiary structure of egg white proteins by ${\gamma}-irradiation$. Therefore, this study clearly indicates that irradiation dose of eggs should be appropriate to prevent the loss of egg qualities.
This study was conducted to investigate changes of egg characteristics according to feeding of far infrared irradiated rice. The feeding of rice irradiated by far infrared rays did not affect the body weight of laying hens, but egg weight (3.6∼7.6%), yolk weight (3.9∼30.2%) and thickness of egg shell (5.4∼13.5%) together with the rate of laying eggs (5.4%) were positively increased than normal rice.
A study was conducted to investigate the effect of supplementing earthworm meal (EWM) on the performance of laying hens and fatty acid composition in egg yolks. A total of 360 laying hens at 55 weeks of age were fed the experimental diets containing 0.0% (Control), 0.1% and 0.2% of EWM for 5 weeks. Eggs were collected and weighted every day and egg production and feed conversion were recorded every weeks during the experimental period. However fatty acid composition of egg yolk were measured at last week of experimental period. Amount of feed intake tended to increase by supplemental EMW, but feed conversion ratio of birds fed EWM was not different among three groups. Average egg production seemed to increase and significantly improved (P<0.05) when fed a 0.1% EWM and 0.2% EWM, respectively. Average egg weight was prone to decrease when fed a 0.1% EWM compared to that fed a 0% (control) or 0.2% EWM. Average daily egg mass tended to improve by the addition of EWM. It was more increased in 0.2% EWM treatment than 0.1% EWM. The ratio of egg yolk n-6/ n-3 fatty acids contents was 5:1 fed a 0.1% and 0.2% EWM. But these ratio was 10:1 in control group. It is concluded that 0.2% earthworm meal supplementation in the 55 weeks old laying hens diet, improves the laying performance and ratio of egg yolk n-6/ n-3 fatty acids contents (P<0.05).

This experiment was aimed at investigating the effects of dietary supplementation with fermented rice bran (FRB) or fermented broken rice (FBR) on egg-laying performance, egg quality, blood parameters, and cholesterol level in egg yolk of Hy-Line Brown egg-laying hens. Altogether, 144 Hy-Line Brown egg-laying hens (32-week-old) were randomly allocated to one of 4 dietary treatment groups, with 4 replicates per treatment. Of them, 3 treatments diets were prepared by supplementing the basal diet with 0.1% probiotics (PRO), 1% fermented rice bran (FRB), or 1% fermented broken rice (FBR) at the expense of corn. Hen-day egg production was higher (P<0.05) in PRO and FRB treatment groups than in the basal treatment groups. However, feed intake, egg weight, egg mass, and feed conversion ratio did not differ among the treatment groups. Additionally, supplementation with FRB or FBR did not affect eggshell strength, eggshell thickness, egg yolk color, and Haugh unit during the feeding trial. There was no significant difference in leukocyte count. Total cholesterol level was lower (P<0.05) in the FRB treatment group than in the basal treatment groups. Asparate aminotransferase, alanine transferase, glucose, and albumin levels were unaffected by dietary supplementation with FRB or FBR. Egg yolk cholesterol level was lower (P<0.05) in the FRB and FBR treatment groups than in the basal treatment groups. In conclusion, dietary supplementation with FRB or FBR improved egg-laying performance, and reduced the levels of total serum cholesterol and cholesterol in egg yolk of Hy-Line Brown egg-laying hens.
