This study used Omija extract as a natural congelation to compare and analyze soybean curd's physicochemical and sensory quality characteristics in order to improve functional benefits and taste of soybean curd. When Omija extract concentration increased, protein content went up considerably while crude fat and yield significantly decreased. In the pH change, the group with Omija extract were lower than control and the change was not much noticeable but slightly checked as the storage period was extended. The turbidity tended to increase as the storage period was longer. In the acidity change, the group with 0.5% Omija extract showed rapid increase on the 4th day after starting storage, and it can be interpreted that decomposition started at the moment. As the storage period was extended, brightness and yellowness remarkably decreased and redness considerably enhanced: higher concentration Omija extract worked to decreased brightness and to increase yellowness and redness. In accordance with the storage period, hardness, brittleness and gumminess increased and springness decreased, but there was no considerable change in cohesiveness: in accordance with the concentration, hardness, brittleness and gumminess significantly increased, but there was no considerable change in cohesiveness. In terms of sensory quality, the group with 1% of Omija extract showed the best appearance, flavor, taste and after swallowing results. The group with 1% Omija extract was the most preferred, $4.89{\pm}0.32$ in the overall preference. In conclusion, adding Omija extract can improve soybean curd's physicochemical and sensory quality characteristics. Moreover, the extracts can be expected to play an important role in encouraging Omija's value and widening its appliances to various food.

Freeze-dried 3rd day of 5th instar silkworm powder (FDSP) has been produced and consumed as functional food ingredient in Korea. Generally, FDSP is distributed in the dehumidification state. In this study, the effect of humid condition (30%, 50%, 70%, and 90% RH) on the quality characteristics of FDSP was examined. The color of FDSP, greenish yellow, becomes dark with the change of redness and yellowness. When FDSP is exposed for 4 h at 90% RH, the lightness was changed from 56 to 51, redness from -0.8 to 3.7, and yellowness from 26.5 to 21.6. The proximate composition of FDSP was not significantly changed except 90% RH condition. At that condition, moisture content (5.7%) was increased to 26.8% and crude fat (11.3%) decreased to 1.9% (3 wk 90% RH). Mineral content change during storage can be classified to 3 types; sulfur rapidly decreased, potassium mostly stable with some decreased with humidity, and sodium increased with high humid condition. Vitamins were not significantly affected. However, DNJ was abruptly decreased to 0.03 g/100g in humid condition.
The purpose of this study was to investigate the physicochemical and sensory properties of different almond gruels according to the concentration and pretreatment of the almonds. For the physicochemical parameters, pH, sweetness and viscosity decreased with an increasing almond content, while spreadability, lightness, redness, and yellowness increased. In addition, pH, sweetness, spreadability and viscosity decreased by using baked almonds. Also the L(lightness) and a(redness) color values increased by using baked almonds, whereas the b-value (yellowness) decreased. In the sensory evaluation flavor and nutty taste were significantly different(p<.001) among the samples. The overall preference scores also showed significant differences(p<.001) between the different concentrations of almond. The almond gruels containing 40%, 60%, and 80% almond showed higher preferences than the 0 and 20% concentrations.
This study was designed to investigate the possible utilization of mugwort as a source of functional ingredients. The approximate composition for mugwort powder was 5.06% moisture, 1.98% crude protein, 4.65% crude fat, 5.85% ash and 82.46% carbohydrate. The highest mineral content was potassium. The contents of total phenolic compounds and condensed tannin were 114 mg% and 11,000 mg%, respectively. The highest electron donating ability(EDA) was observed from the ethyl acetate and butanol fractions of mugwort powder but the lowest was shown by the hexane fraction. In color values, with increasing mugwort powder content, the 'lightness', 'redness' and 'yellowness' decreased in the crust, while in the crumb bread the 'lightness' decreased and the 'redness', and 'yellowness' increased. With the addition of mugwort powder as a substitute for strong flour over the range from 2.5% to 10.0%, the ratio of the volume and specific volume of white bread decreased while its weight increased. In the texture measurements for white breads, the hardness decreased slightly with the addition of 2.5% mugwort powder, but then increased with further additions of mugwort up to 10.0%. The addition of 2.5% mugwort powder increased the springiness and gumminess of white bread. The highest sensory scores for color, flavor, taste, texture and overall acceptance as evaluated by a student sensory panel were obtained from white bread with 2.5% mugwort powder and from the control. The highest sensory scores as evaluated by a baker sensory panel were obtained from white bread with 2.5% mugwort powder. In ranking test, overall acceptability of white bread was the highest in the control. Overall acceptance scores by sensory evaluation of white bread with 2.5% mugwort powder were not significantly different from those of control.
The purpose of this study was to study accumlated residual soils which may be one of the causes for yellowing of worn cloths. Wear and wash tests of white cotton undershirts were repeated at 30 households sellected at random over a period of 60 days. Laundry conditions were similar to home laundry habits in a fact-finding survey, using a powdery heavy duty detergent containing no enzymes or enzymes. The subjects in this study were survey of laundry actual condition, the undershirts from prior to and after the final washing was measured residual soils, $L^*a^*b^*$ value and mellowness index of CIE system. D3ta were analysed by simple correlation analysis of wear and wash cycle, residual soils, whiteness The results obtained were summarized as follows: 1. Using pattern of washing machine, Presoaking was no singinificant differnece in general characteristics of survey respondent. Laundry frequency was significant difference in income level, occupation of housewives whether or not. Use of cold and hot water was significant difference in residence shape. 2. The analyzed consequences of recognition and actual behavior in connection with laundry were found variables each other to have independence or not. 3. Amount of residual sebum soils is using non-enzyme detergent were much more than in using enzyme detergent, increased linearly with increase of the number of wear and wash cycles. 4. Residual protein soils with increase of the number wear and wash cycles less than in laundering more easy than sebum soils. Since accumulated residual sebum soils were much more than residual protein soils. 5. Increase of residual soils was raised mellowness index and diminshed whiteness. yellowness index of residual sebum soils was higher than protein soils. If increase of whiteness will be incresed, amount of residual sebum soils will be decreased sebum soils. Because amount of residual sebum soils much more than protein soils, yellowness index of residual sebum soils was more higher than that of protein soils.
음청류에 이용할 수 있는 오미자 추출액을 얻기 위해 증류수, 수돗물과 Ca, Mg 등의 미네랄이 풍부한 청송약수를 이용하여 오미자 추출액을 제조하고 이화화적 특성을 측정하였다. 오미자 추출조건으로는 25배의 용매비로써 실온에서 6, 9, 12, 15시간, $65^{\circ}C$에서 2, 3, 6, 9시간 동안 추출하였다. 추출용액의 명도(L, Lightness), 적색도(a, redness), 황색도(b, yellowness), 가용성 고형분(solid content), 산도(acidity), pH, DPPH 라디칼을 소거능을 이용한 전자 공여능(Electron Donating Ability, EDA)으로부터 전반적으로 양호한 추출조건을 구한 결과는 다음과 같다. 실온에서는 물의 종류에 상관없이 12시간 추출하는 것이 적당하였으며, $65^{\circ}C$ 가온 상태에서는 6시간 추출함이 적합함을 알 수 있었다. 가온 상태에서 약수의 경우 증류수, 수돗물에 비해 빠른 추출이 가능하였으며, 추출 시간이 증가함에 따라 산도는 낮아지나, 고형분의 양과 DPPH 라디칼을 소거능은 증가하였다. 전반적으로 고려할 때에 오미자 추출을 위한 가장 적합한 물로는 미네랄이 풍부한 약수이며, 다음으로 수돗물 그리고 증류수 순서임을 알 수 있다.
The loquat (Eriobotrya japonica) is a plant belonging to the Rosaceae family, native to south-central China. It is cultivated in relatively warm areas such as Spain, Japan and South Korea. It is used commercially as an ornamental plant and for its yellow fruit, which contains much carotenoid, sugar and a little organic acid. In this study, chiffon cakes were prepared with the addition of 3%, 6%, 9% and 12% loquat fruit powder (LFP) in order to invest the mixing conditions. When more LFP was added to the dough, the pH level of the dough became lower. Specific gravity and viscosity of the dough significantly increased as higher amounts of LFP were added. In baked cakes, the weight and baking loss rate of LFP were not significantly different between samples, and the height of the risen test samples were lower than that of the controls. Moisture content was 33.58% in the 12% LFP sample (12% LFPS), which was the highest of all the samples. With respect to crust color, lightness, redness and, yellowness, these significantly decreased as the amount of LFP was increased, the 12% LFP being the lowest of all the samples. Lightness and yellowness of crumbs significantly decreased as the amount of LFP was increased, whereas redness showed the reverse effect. When looking at hardness and adhesiveness, the 12% LFPS was the highest of all the samples, nevertheless a difference in resilience was not significant among the samples. According to consumer perception, bitterness was significantly increased as amounts of LFP increased, however a difference in salty, astringency and oily tastes were not significant among the samples. The 12% LFPS showed the lowest score with respect to softness and overall acceptability. In conclusion, LFP could be considered a functional material, with the optimum amount of LFP for a chiffon cake of 3~9%.
To determine the effects of grape skin and seed pomace (GSP) additions on the lipid oxidation susceptibility and the color change of cooked pork sausages, the chemical characteristics of GSP itself and the addition for two different levels of GSP (0.5 and 1.0% GSP, respectively) to sausages were examined. Both the redness and blueness of the GSP were significantly reduced as the pH level was increased from 5 to 7, but a reverse result was determined in the color tint and yellowness (p<0.05). The GSP polyphenol and flavonoid contents were influenced by the percentages of methanol solvents, and more flavonoids were established when 100% of methanol was applied as a solvent to the GSP. But, similar results were not observed in the polyphenol of GSP. In cooked pork sausages, significant decreases in the lightness and redness were found in both the 0.5% and 1.0% of GSP sausages during the storage period (p<0.05). However, an incompatible effect was observed in terms of yellowness, which increased as compared to the control sausage after 6 days of storage. The 0.5% addition of GSP decreased the levels of TBARS (p<0.05), but the ability of GSP to minimize lipid oxidation was not dose dependent. Therefore, the results indicated that the GSP is an efficient suppressor of lipid oxidation and has latent effects as a natural antioxidant when 0.5% of GSP is added to the cooked pork sausages.
This study investigates the utilization of an electric-field-induced super cooling system in long-term dry aging of beef loin. Analyzed quality properties of dry-aged beef loin applied with electric field refrigeration (EFR) versus commercial refrigeration (CR). Quality properties was including aging loss, pH, water holding capacity (WHC), cooking loss, color, warner-bractzler shear force (WBSF), total plate count (TPC), and thiobarbituric acid reactive substances (TBARS). Aging loss of wk 1 EFR was significantly lower than CR (p<0.05). pH of EFR was slow change tendency compared CR. WHC of both aging methods were higher with increase in aging duration. Cooking loss of wk 1, 2, 4, and 10 EFR were significantly lower than CR (p<0.05). Lightness and redness of EFR was slow change tendency compared CR. However, yellowness of EFR was increased until wk 2, 3, and significantly decreased at wk 10 (p<0.05), but yellowness of CR was decreased until wk 3 and significantly increased with an increasing aging weeks (p<0.05). Both aging methods of WBSF was decreased with increase in aging weeks; however, wk 10 of CR was significantly lower than EFR (p<0.05). TPC after wk 3 EFR groups were significantly lower than CR groups (p<0.05), and TBARS of EFR groups were significantly lower than CR (p<0.05). The present results show that application of the EFR system for dry aging beef loin can extends its shelf life and induce changes of several aging properties in similar to commercial aging.
Skin colors of females between the ages of 25-35 from Korea, China, and Vietnam were measured in Seoul, Beijing, and Hanoi using the Minolta CM-600d spectrophotometer. CIE Lab and Munsell HVC data of the face (forehead and both cheeks) and body (neck and arm) were analyzed using t-test, Analysis of Variance (ANOVA), Duncan's Multiple Range Test, Linear Regression Analysis, and K-Means Cluster Analysis using SPSS software. Korean females showed the highest L and V values for the face and body; Vietnamese females showed the highest b value in the face and the highest a value in the body. Higher L and b values for the face were related to higher L and b values of the body; this relationship was more prominent in Korean females. The younger age group (25-29) showed higher L values and lower b values than the older age group (30-35). Females from Korea, China, and Vietnam were grouped into Type 1 and Type 2 based on skin color. Type 1 had darker skin with more redness and yellowness and Type 2 had lighter skin with less redness and yellowness. A total of 88.2% of Korean females belonged to Type 2, 80.4% of Vietnamese females were Type 1, and Chinese females indicated an even distribution of Type 1 and Type 2.
