Effect of Alcoholic Drinks in Dough on the Structure and Quality of Yackwa (약과반죽에 사용된 주류의 종류가 약과의 조직과 품질에 미치는 영향)

  • This study was performed to examine the effect of various alcoholic drinks used for the preparation of Yakwa dough on the quality characteristics of Yakwa. The effects were compared with the ones prepared with water in terms of expansion ratio, micro-structure, mechanical and sensory characteristics. The dough with alcoholic drinks produced Yakwa samples with increased volume and pores compared with the dough of water. The cohesiveness, springiness, and gumminess were decreased in the samples with alcoholic drinks, but the brittleness was increased. The Yakwa samples with alcoholic drinks were evaluated better in sensory characteristics of nice-smelling, softness, and acceptability compared with the ones of water. There were no differences in the quality of Yakwa among the alcoholic drinks used.

A Survey on the Korea Traditional Cookies of Housewives in Seoul Area (서울지역 주부들의 한과에 대한 인지도 조사)

  • A self completed survey of 250 housewivies living in the Seoul. The aim of this study was to investigate the perceptions and preferences of 20's, 50s housewives to Korean traditional cookies. The result is as follows. As to the preference of Korean traditional cookies, 86.0% answered they liked it. The frequency rate or eating Korean traditional cookies showed that 2 times a year reached the highest 45.6%. They usually purchase Korean cookies on the market rather than making them by themselves. The study showed that 50s housewives preferred Korean cookies are yakwa(74.3%), maejackwa(35.7%) and kangjung(34.3%) otherwise 20s housewives preferred Korean traditional cookies are yakwa(79.4%), hanging(60.0%) and yeat gangiung(39.4%) This survey study may contribute to the improvement of Korean traditional cookies.

A Study on the Consumption Patterns and Preferences of Korean Cookies of Housewives in Daegu Province (한과에 대한 주부들의 이용실태 및 기호도 조사 -대구지역을 중심으로-)

  • The purpose of this study is finding a solution to increase the consumption of Korean cookies by investigating and analyzing the actual consumption patterns, suggestions fur improvement and preferences for Korean cookies. The data fer this study was collected from 358 housewives living in Daegu province. Results show that 77.4% of housewives in this locale eat Korean cookies on a special day such as memorial service day of ancestors, festive day or party. The frequency of having Korean cookies were significantly different due to the income (p<.05): the higher the income, the more often people had Korean cookies. They usually purchase Korean cookies on the market rather than making them by themselves. The percentile of housewives who have never made Korean cookies before was up to 51.7% Only the housewives over fifty had some experience making the Korean cookies. The number of people who teamed the method fur making Korean cookies from their family elders increased according to their age. The reasons why they buy Korean cookies on the market are as follows: the most frequent answer (45.5%) was the price. 34.5% of the responder리s did not know how to make them. 32.1% replied that the process is too complex and troublesome. The most frequent requests for the market was expanding the diversity and improving the quality. In response to why they want the Korean cookies to be inherited. 68.8% of respondents answered that it is traditional culture. 4.01% of respondents replied that `ssalyeatgangung' is their favorite Korean cookie. 3.90% of them like 'sanja' the best and 3.91% of the housewives preferred yakwa to other Korean cookies. Quality Characteristics of Yakwa Produced with Rice Flour Developed as Rice Powder (쌀가루 전용 품종으로 제조한 약과의 품질 특성)

  • For the purpose of promoting the consumption of rice powder, 5 cultivars were applied differently to establish the optimal manufacturing conditions and measured Hunter color values, hardness and expansion rate of Yakgwa for the optimal conditions. Looking into the optimal manufacturing conditions of Yakgwa, the commercial flour-facilitating Yakgwa is shown to have a great shape when the mold is made with a thick paste for C-2 manufacturing method, Hangaru 100 mesh for H100-2 manufacturing method, Hangaru 200 mesh for H200-2 manufacturing method, Shingil 100 mesh for S100-2 manufacturing method, and Shingil 200 mesh for S200-1 manufacturing method. It also showed a trend of chewy taste after frying without cracks. Hunter color values (L) and red chromaticity and value b of yellow chromaticity indicated a lower value for the commercial flour and Hangaru 200 mesh in its entirety. The hardness of Yakgwa is within the range of 1,981.41~3,756.45 g and the degree of hardness is shown differently for each rice powder exclusive cultivars. Rice flour developed as rice powder 5 cultivars, and as a result of measuring chromaticity, hardness and expansion rate of Yakgwa for the quality characteristics, the item of hangaru 200 mesh had outstanding quality characteristics for Yakgwa.
