천년초 열매 분말을 첨가하여 제조한 생면의 품질특성과 저장성 (Quality Characteristics and Storage Properties of Wet Noodle with Added Cheonnyuncho Fruit Powder)

  • This study was carried out to investigate the quality characteristics and storage of wet noodle with added Cheonnyuncho powder. Wet noodles were prepared at concentration of 1, 3, and 5%(w/w) of the fruit based on flour weight. Moisture content of the noodles with or without Cheonnyuncho powder was 34~36%. Ca, K, Mg, Fe, Mn and Zn contents of Cheonnyuncho noodle were increased at increasing concentrations of Cheonnyuncho powder. Cooked weight, volume, and water absorption decreased with increased fruit powder, whereas turbidity increased. For hunter's color values of noodles, L(lightness) and b(yellowness) values decreased with increasing concentration of Cheonnyuncho powder, whereas a(redness) value increased. For mechanical characteristics of the noodles, adhesiveness, cohesiveness, chewiness, elasticity, and brittleness of cooked noodle with Cheonnyuncho powder were lower than those of control. The pH of Cheonnyuncho noodle was lower than that of control during storage. Bacterial counts of wet noodle with 1% and 3% fruit powders were lower than those of the control and 5% fruit powder on the 8th day of storage at $5^{\circ}C$. From the sensory evaluation, texture, taste, and overall preference were not significantly different between the control and fruit group, but the color of 5% Cheonnyuncho noodle was significantly higher than that of control (p<0.05). In conclusion, the results of this study suggest that the addition of 1% and 3% Cheonnyuncho powder in combination with flour tended to improve antimicrobial effects during storage when compared to control.

죽순의 영양성분 및 죽순의 식이섬유가 장내미생물에 미치는 영향 (The Nutritional Composition of Bamboo Shoots and the Effects of its Fiber on Intestinal Microorganisms)

  • This study evaluated the composition two popular species of edible bamboo shoots in Korea (Phyllostachyspubescens and Sinoarundinarianigra) and the effect of their abundant dietary fiber on intestinal microorganisms in healthy young women. The ranges of total moisture, crude protein, crude lipid, crude ash, and dietary fiber content were 87.190.8, 2.943.5, 0.150.39, 0.411.05, and 4.206.15% (wet weight basis), respectively. Moisture and crude ash content increased after heat treatment; however, crude protein, crude lipid, and dietary fiber content were reduced after heating. The major minerals found in bamboo shoots were potassium, phosphorous, sulfur, magnesium, and calcium. In addition, glucose and fructose were abundant free sugars, while asparagine and tyrosine were the most abundant free amino acids. Approximately 70% of the total free fatty acids found in bamboo shoots were linoleic acid and linolenic acid. The ascorbic acid content was 6.60~17.56 mg/100 g (wet weight basis), and one phenolic compound, p-hydroxy benzoic acid, was 0.10.2% (wet weight basis) and detected by HPLC analysis. The intake of bamboo shoots for seven days significantly increased viable cell counts of Lactobacillus spp. and reduced viable cell counts of Bacteriodes spp. in feces (p<0.05). In our data, bamboo shoots may be useful in the food industry as high dietary fiber ingredients.

근위축 발생전의 지구력 운동이 쥐의 위축뒷다리근의 질량, 근원섬유 단백질 함량 및 근섬유 단면적에 미치는 영향 (Effect of Endurance Exercise Prior to Occurrence of Muscle Atrophy on the Mass, Myofibrillar Protein Content and Fiber Crossectional Area of Atrophied Hindlimb Muscles of Rats)

  • The purpose of this study was to determine the effect of endurance training prior to occurrence of muscle atrophy on the mass, myofibrillar protein content and fiber crossectional area of atrophied hindlimb muscles of rats. Adult female Wistar rats were trained prior to occurrence of muscle atrophy induced by hindlimb suspension. Training began on the 1st day for 10min /day at 15m /min on a 0% grade, training exercise increased daily in time and intensity so that by the 4th week rats were running 60min /day, at 34m /min on a i3.5% grade. Wet weight and relative weight of soleus, plantaris and gastrocnemius muscle decreased significantly after seven days of hindlimb suspension. Wet weight and relative weight of soleus tended to increase and that of plantaris and gastrocnemius tended to decrease in the exercise group as compared to the control group. Myofibrillar protein content of soleus and gastrocnemius tended to increase and that of plantaris tended to decrease in the endurance trained group as compared to the control group. Fiber crossectional area of Type I, II fiber in soleus and plantaris muscle tended to increase in the exercise group as compared to the control group. Wet weight and relative weight of soleus. plantaris and gastrocnemius decreased significantly, myofibrillar protein content of soleus, plantaris and gastrocnemius increased in hindlimb suspended rats following endurance training as compared to the control group. There was no change in fiber type percentage and crossectional area of type I and II fiber in soleus muscle and that of type I and IIfiber in plantaris muscle decreased in the hindlimb suspended rats following endurance training as compared to the control group. Wet weight and relative weight of soleus and plantaris tended to increase, that of gastrocnemius increased significantly, myofibrillar protein content of soleus and plantaris muscle increased significantly and that of gastrocnemius tended to increase in the hindlimb suspended rats following endurance training as compared to sedentary rats following endurance training. Crossectional area of type I fiber of soleus muscle tended to increase. that of type I fiber of plantaris muscle increased significantly and that of type II fiber tended to increase in hindlimb suspended rats following endurance training as compared to sedentary rats following endurance training. The results suggest that endurance training prior to occurrence of muscle atrophy can attenuate the decrease of mass, myofibrillar protein content and fiber crossectional area induced by hindlimb suspension.

형질전환된 식물세포에서 hGM-CSF 생산과 안정성에 대한 다양한 탄소원의 효과 (Effect of Various Carbon Sources on the Production and Stabilization of hGM-CSF in Transgenic Plant Suspension Culture)

  • 다양한 탄소원을 사용하였을 시, 세포성장에 미치는 영향은 배양 5일제 glucose를 사용한 배양세포에서 dry cell weight가 11.2 g/L, wet cell weight가 310.8 g/L로 가장 높았다. 이후 배양 10일차에는 오히려 sucrose를 탄소원으로 사용한 배양세포에서 dry cell weight가 13.4 g/L, wet cell weight가 480 g/L로 가장 높이 성장한 것을 확인할 수 있었다. Total secreted protein의 경우는 배양 10일차에 sucrose를 기본 탄소원으로 사용하였을 때 110.3 mg/L로 가장 높게 나왔다. Total secreted protease 역시, 배양 10일차에 sucrose를 기본 탄소원으로 사용한 배양씩에서 3950 U/L로 가장 많은 양이 측정되었다. 최종적으로 재조합된 단백질인 hGM-CSF의 생산량에 대한 측정결과, sucrose를 기본 탄소원로 사용한 배지에서 배양 10일차에 56 mg/L로 가장 높게 측정됨을 확인할 수 있었다. 이 외에 다양한 탄소원 농도변화에 따른 total secreted protein과 hGM-CSF의 안정성 평가를 확인해본 결과, total secreted protein의 경우, 비교대상으로 사용한 sucrose에서는 농도변화에도 큰 손실률을 보이지는 않았으나, sorbitol, mannitol, fructose, glucose의 경우에는 농도가 높아질수록 배양액내의 protein의 손실률이 증가 하였다. 총 분비된 hGM-CSF 역시 sucrose에 비해 sorbitol, mannitol, fructose, glucose에서는 분비된 hGM-CSF의 양이 크게 감소하는 것을 확인할 수 있었고, 탄소원의 농도가 높아질수록 hGM-CSF의 양이 감소하는 경향이 크게 나타났다.

Analysis of Quality after Sous Vide of Pork Loin Wet-Aged using Pulsed Electric Field System

  • The effects of wet-aging using a commercial refrigerator (CR, 4℃) and a pulsed electric field refrigerator (PEFR, 0℃ and -1℃) on the quality of sous vide pork loin were analyzed. The moisture and fat contents, pH, CIE L*, CIE b*, chroma, and shear force of the wet-aged samples were lower than those of the raw meat samples, whereas the water holding capacity (WHC) was higher. The PEFR group showed higher pH, CIE b*, chroma, and WHC and lower weight loss than the CR samples. Electronic nose analysis indicated that positive flavor compounds were induced whereas negative flavor compounds were inhibited in the PEFR group. Wet-aging increased the sourness, saltiness, and umami of sous vide pork loin; the PEFR 0℃ samples showed the highest umami. Sensory evaluation indicated that wet-aging improved the color of sous vide pork loin. The PEFR 0℃ samples were rated higher than the raw meat and CR samples for all sensory traits. In conclusion, sous vide after wet-aging using a PEFR improved the quality of pork loin.

FERMENTATION QUALITY AND NUTRITIVE VALUE OF BARLEY STRAW AND WET BREWERS' GRAINS SILAGE

  • Three experiments were carried out to evaluate the fermentation process and subsequent nutritional quality of silage made from dried and fresh barley straw with and without the addition of wet brewers' grains. The treatments were: 1 kg of dried straw with 600 g of water but no wet brewers' grains (I - 0) as a control, and the same straw mixed with 2 kg (I - 2), 3 kg (I - 3), 4 kg (I - 4), or 5 kg (I - 5) of wet brewers' grains as treatments in Experiment I; and 2 kg of fresh straw without wet brewers' grains (II - 0) as a control, and the same fresh straw mixed with 2 kg (II - 1), 4 kg (II - 2), 6 kg (II - 3), or 8 kg (II - 4) of wet brewers' grains as treatments in Experiment II. Each material prepared was ensiled in 5 L (vinyl) bag silos, and the silos placed in a chamber of $21^{\circ}C$ for 10 (Exp. I) or 7 (Exp. II) months. The fermentation quality and nutritive value of the barley straw silages produced were markedly improved by mixing them with wet brewers' grains. Increasing levels of wet brewers' grains caused on increase in fermentation quality. The in vitro dry matter digestibility of silages was also increased by adding wet brewers' grains. Two semi scale pilot silages, experiment III, prepared from dried and fresh barley straw mixed with wet brewers' grains were fed to wether sheep. These silages, which contained 50% barley straw and 50% wet brewers' grains by dry weight, were moderate apparent digestibility and supplied of about 50% TDN and DCP.

  • The age growth pattern of Myagropsis mygroides (Cystoseiraceae, Phaeophyta)population were investigated at Tongyeong (128$^{\circ}$ 25' E and 34$^{\circ}$ 45' N) in South coast of Korea, from September 1998 to August 1999. Water temperatures varied from 7.7${^{\circ}C}$ to 26${^{\circ}C}$ during the survey period. Distinct seasonal changes were found in the plant legth and wet weight of plant, and their maximum length and wet weight were attained 70.5(${\pm}$ 20.9) cm and 191.8(${\pm}$ 135.0) g during April and May. The growth patterns were divided into four periods of slow growth (September-November), fast growth (December-February), maturing growth (March-May) and declining period (June-August). The Tongyeong population of M. myagroides was dominated by less than three-year old small plants with slower growth rates, shorter plant length, lighter plant weight than those of other locations in Korea.

식이 중 칼슘수준과 톳 첨가가 난소절제한 흰쥐의 골지표와 혈청 지질 함량에 미치는 영향 (Effects of Dietary Calcium Level and Hijikia fusiforme Supplementation on Bone Indices and Serum Lipid Levels in Ovariectomized Rats)

  • This study explored the effects of dietary calcium level and Hijikia fusiforme supplementation on bone indices and serum lipid levels using 36 female Sprague-Dawley rats as a model. Rats received low Ca diet for 3 weeks after ovariectomy. The rats were then divided into six dietary groups and fed low (0.1% Ca), normal (0.5% Ca) and high (1.5% Ca) Ca diets (CaL, CaN, CaH) and low, normal, high Ca diets with Hijikia fusiforme supplementation (CaLH, CaNH, CaHH) for 3 weeks. After each experimental periods, 24 hour urine and/or blood samples, left and right femurs were collected for analysis. Serum Ca concentration showed no significant difference by dietary Ca levels and Hijikia fusiforme supplementation. Alkaline phosphatase activity was significantly higher in normal and high Ca group compared to low Ca group. Serum total cholesterol, triglyceride and total lipid were not significantly different among groups. HDL-cholesterol showed no significant difference by Hijikia fusiforme supplementation. However, the normal and high Ca groups showed significantly higher HDL-cholesterol compared to the low Ca group. Urinary hydroxyproline and hydroxyproline/creatinine ratio were not significantly different among groups. The wet weight of the femur was significantly higher in low Ca group compared to normal or high Ca group. The dry weight, wet weight/body weight, length and breaking force of the femur were not significantly different among groups. Ash contents/wet weight of the femur was significantly increased as dietary Ca levels up and significantly higher in Hijikia fusiforme supplementation groups. The Ca content of the femur were significantly higher in the normal and high Ca groups than the low Ca group. However, there was no significant difference in Ca content by Hijikia fusiforme supplementation.

한국 동남해안에서 다시마(Laminaria japonica Areschoug)의 성장, 성숙, 사망률 및 생산 (Growth, Reproduction, Mortality, and Production of Laminaria japonica Areschoug on the Southeastern Coast of Korea)

  • 대규모 다시마 양식장이 존재하는 동남해 일광 연안에서 다시마의 성장, 성숙, 사망 그리고 생산을 조사하였다. 실험을 위해 실험실에서 배양한 어린 포자체를 수심 3 m에 양성하였고, 1995년 12월부터 1996년 8월까지 조사하였다. 양성한 포자체는 이듬해 8월까지 모두 사망하였다. 엽폭, 엽두께, 그리고 습중량은 7월에 최대에 이르렀고, 모두 유사한 계절변화를 보였다. 반면 엽장은 5월에 가장 컸으나, 이후로는 감소하였다. 엽장과 중량의 평균치는 최대 199.8 cm와 333.0 g wet wt였다. 생장점에서 자라나는 조직의 총길이와 중량은 각각 384.0 cm와 393.6 g wet wt였다. 이 값을 토대로 계산한 길이와 중량의 절대성장률은 계절에 따라 변화하였다. 길이와 중량의 절대성장률은 3월(3.6 $cm{\cdot}d^{-1}$)과 5월 (3.8 g wet $wt{\cdot}d^{-1}$)에 각각 최대에 이르렀다. 절대유실률은 2월부터 7월까지 지속적으로 증가하였다. 성장률과 유실률의 시간변화는 수온과 해수중의 질소농도와 상관이 있었다. 포자낭군을 지닌 성숙한 포자체는 4월부터 출현하기 시작하였고, 성숙률은 7월에 최대에 이르렀다. 생존율은 시간경과에 따라 지수함수적으로 감소하였고, 90% 이상의 개체들이 양성 후 56일 이내에 사망하였다 2월 이후의 사망률은 엽장 30 cm 이하인 개체들을 중심으로 일어나는 크기 종속적 특성을 보였다. 생물량은 7월에 최대(285.6 kg wet $wt{\cdot}m^{-2}$)에 이르렀고, 이 해역에서 다시마의 연간생산량은 758.7 kg wet $wt{\cdot}m^{-2}$였다.

  • Inpatients are mostly occupied in bed with restricted activity, nearly all patient populations are at risk for the occurrence of skeletal muscle atrophy due to decreased level of activity. Restriction of mobility is far greater in pediatric patients compared with adult patients since almost all the activities of daily living is performed by parents or caregivers. It could be assumed that pediatric patients are more vulnerable to skeletal muscle atrophy than adult patients, however, there have been no attempts to reduce the atrophy of developing muscle. Therefore it is important to determine the effect of exercise in developing muscle during decreased activity. The purpose of this study was to determine the effect of periodic weight support during hindlimb suspension on the mass and cross-sectional area of Type I and II fibers in developing soleus(Type I ) muscle. To examine the effectiveness of periodic weight support activity in maintaining mass and fiber size. the hindlimb of young female Wistar rats was suspended(HS) and half of these rats walked on a treadmill for 45min / day(15min every 4h) at 5m / min at a 15 grade(HS-WS). After 7days of hindlimb suspension, soleus wet weight was 28. 57% smaller and relative soleus weight was 28. 21% smaller in comparison with con-trol rats (p〈0.05) Soleus wet weight and relative soleus weight increased by 67.72% and 71.43% each with periodic weight support activity during hindlimb suspension (p〈0.01, p〈0.005), moreover soleus wet weight and relative soleus weight of the HS -WS rats were greater than those of the control group. No change was observed in fiber type percentage of the developing soleus muscle after 1 week of hindlimb suspension plus weight support activity. Type I and II fiber cross-sectional areas of the developing soleus muscle were 50.45% and 43.39% lower in the HS group than in the control group (p〈0.0001), type I and II fiber cross-sectional areas of the developing soleus were 24.49% and 29.93% greater in the HS - WS group than in the HS rats (p〈0.0001), whereas Type I and II fiber cross-sectional areas of HS - WS group were less than those of the control group, The results suggest that periodic weight support activity can ameliorate developing soleus muscle atrophy induced by hindlimb suspension, even in type II fibers that would not have been expected to be recruited by this type of neuromuscular demand. Clinical experimental study is needed to deter-mine the effect of periodic weight bearing exercise on developing atrophied leg muscle based on these results.
