곤약감자 분말에서 추출한 글루코만난을 원료로 제조된 필름의 물리적 성질 (Physical Properties of the Films Prepared with Glucomannan Extracted from Amorphophallus konjac)

  • 이상의 결과에서 글루코만난 필름은 다른 천연 탄수화물고분자들의 필름들에 비해 비교적 우수한 인장 강도와 신장력을 가지며 높은 수분차단력을 보이나, 친수성 필름이 가지는 수분에 대한 민감성 때문에 수분을 직접 접촉할 때 높은 용해도를 보임을 알 수 있었다. 그리고 가소제의 함량의 증가에 따라 인장강도가 낮아지는 대신에 높은 신장력을 나타내었다. 글루코만난 필름은 적절한 여러 조건에 따라 넓은 범위의 물성변화를 가지는 친수성 필름으로서 식품포장산업에서의 다양한 이용가능성이 제시되었으며, 앞으로 적절한 가소제 및 첨가제의 이용, 수분에 대한 내성의 향상등의 연구가 더 필요하리라 사료된다.

  • 콩우유 비지를 acetone과 ethyl alcohol로 세척한뒤 $60^{\circ}C$에서 건조시킨 건조비지의 흡습특성(吸濕特性)과 건조비지를 밀가루에 혼합하였을때 수분함량과 수분활성도 간의 관계를 밝히고져 본 연구를 시행하였다. 건조비지는 상대습도(相對濕度)(RH)별(別)로 $20^{\circ}C$에서 저장중 평형 수분함량에 도달하기 전에 과흡습(過吸濕) 경향을 보였으며 저장중의 흡습농도(吸濕溫度)는 모든 RH에서 높은 상관계수를 갖는 log(dw/dt)=b log t+log a의 관계식으로 계산이 가능하였다. 또한 건조비지를 밀가루와 혼합하였을때 등온흡습곡선(等溫吸濕曲線)으로부터 얻어지는 수분함량(Mi)과 수분활성도(Aw)간의 관계는 Mi=b Aw+ a의 직선 관계식을 보여 주었다. 이 식(式)을 타연구자(他硏究者)들이 제안한 식(式)들과 비교할때 실측치(實測値)에 더 유사한 계산값을 보여 본 연구에서 제안한 식(式)이 건조 비지와 밀가루의 혼합물(混合物)에는 적합(適合)한 관계식이라 할 수 있었다.

이상 혐기성 공정을 이용한 음식물류폐기물폐수와 양돈폐수의 혼합액으로부터 수소 및 메탄 생산 (Hydrogen and Methane Production from Mixture of Food Wastewater and Swine Wastewater using Two-Phase Anaerobic Process)

  • This study has been conducted to derive the bio-energy, hydrogen and methane production, from mixture of food wastewater and swine wastewater, the high strength organic wastewater and to increase effluent quality. To overcome this limitation in one-phase anaerobic process, two-phase anaerobic process combining hydrogen fermenter and methane fermenter was applied. In this system $2,323ml\;H_2/L$ was produced daily from Run II where 500 ml of heattreated sludge in methane fermenter was injected, and methane produced from methane fermenter did not show big difference regardless of the amount of returning sludge at each Run. It was concluded that the two-phase anaerobic process was the appropriat process to produce hydrogen and methane simultaneously and stably. Influent $TCOD_{Cr}$ to two-phase anaerobic process showed the range of 132~145 g/L(average 140 g/L), and effluent $TCOD_{Cr}$ range was 25~40 g/L(average 32 g/L), and organic removal efficiency showed 71~82%(average 76.3%).

  • The feasibility of enhancing biological nutrient removal from an industrial wastewater was tested with food waste leachate and sugar liquid waste as external carbon sources. Long term influences of adding external carbon sources were investigated to see how the biological nutrient removal process worked in terms of the removal efficiency. The addition of the external carbons led to a significant improvement in the removal efficiency of nutrients: from 49% to approximately 76% for nitrogen and from 64% to around 80% for phosphorus. Approximately, 20% of the removal nitrogen was synthesized into biomass, while the remaining 80% was denitrified. Though the addition of external carbon sources improved nutrient removal, it also increased the waste sludge production substantially. The optimal observed BOD/TN ratio, based on nitrogen removal and sludge production, was around 4.0 in this study.

참취(Aster scaber) 추출물의 생리활성 (Biological activities of Aster scaber extracts)

  • 참취로부터 phenolic compounds를 추출 후 항산화 효과, 건강 기능성 식품 및 미용식품 활성을 검정하여 기능성 소재로 활용 가능성을 살펴보았다. 참취에 함유되어 있는 페놀성 물질은 물과 60% ethanol을 용매로 하여 추출하였을 때 각각 11.1 mg/g, 4.18 mg/g 함량을 나타내었다. 추출물의 phenolic 농도를 $50{\sim}200{\mu}g/mL$로 조절하여 DPPH를 측정한 결과, 물 추출물과 ethanol 추출물 $50{\mu}g/mL$ phenolics 농도에서 각각 87%, 91%였고, ABTS radical decolorization도 $50{\mu}g/mL$ phenolics 농도에서 각각 99%, 99%였다. Antioxidant protection factor는 $200{\mu}g/mL$ phenolics 농도에서 물 추출물과 ethanol 추출물에서 각각 1.87 PF와 2.22 PF로 측정되었으며, TBARs값은 $50{\mu}g/mL$ phenolics농도에서 물 추출물이 95%, ethanol 추출물에서 97%를 나타내었다. Angiotensin converting enzyme(ACE) 저해능은 물 추출물에서 50.8%, ethanol 추출물에서 69.4%의 저해율을 나타내었으며, xanthine oxidase 저해능은 물 추출물은 $50{\mu}g/mL$ phenolics농도에서 91%, ethanol 추출물은 $200{\mu}g/mL$ phenolics농도에서 80%의 높은 효능을 보였다. ${\alpha}$-Amylase 저해능은 물 추출물과 ethanol 추출물에서 각각 24%, 89%로 ethanol 추출물에서 높은 효능을 보였다. Tyrosinase 저해능을 측정한 결과 물 추출물과 ethanol 추출물에서 각각 47%, 25%의 미백 효과를 나타내었다. Elastase 저해능 측정 결과 물 추출물과 ethanol 추출물에서 각각 46%, 14%로 물 추출물에서 주름 개선 효과가 상대적으로 높게 나타내었다. 이러한 결과로 보아 참취 추출물은 항산화 고혈압억제, 통풍억제, 당분해억제, 미백효과, 주름개선효과 등의 건강 기능성 식품 및 미용식품 활성 소재로서 활용 가능성이 큰 것으로 판단되었다.

저식염 속성 멸치 발효액화물 가공에 관한 연구(II) - 숙성 중 oligopeptide 아미노산 함량변화 - (Studies on the Processing of Rapid- and low Salt-Fermented Liquefaction of Anchovy(Engrulis japonica) (II) - Changes in the Amino Acids from Oligopeptides during Fermentation -)

  • In order to establish the processing conditions for salt-fermented liquefaction of anchovy(Engrulis japonica), changes in the amino acid composition from oligopeptides during fermentation periods were analyzed. Experimental sample A: chopped whole anchovy, adding 20% water, heating at $50^{\circ}C$ for 9 hrs and then adding 10% NaCl. Sample B: chopped whole anchovy, adding 20% water, heating at $50^{\circ}C$ for 9 hrs and then adding 13% NaCl. Sample C: chopped whole anchovy adding 13% NaCl. Sample D: whole anchovy adding 17% NaCl. The total amino acids from oligopeptides in fermented liquefaction of anchovy increased in early fermentation period and reached highest level, and then they declined irregularly during fermentation. Their maximum amounts were just after heating at $50^{\circ}C$ for 9 hrs in sample A, after 15 days in sample B, and after 60 days in samples C and D. The fermented liquefaction of anchovy extracts were rich in glutamic acid, aspartic acid, proline, glycine, alanine, lysine and valine. However, the contents of most amino acids fluctuated by the experimental specimens and fermenting periods. Among them glutamic acid was the most abundant amino acid which was occupied $0.6{\sim}27.7%$(average 24.0%) in the content of total amino acids from oligopeptides. The contribution of the amino acid composition from oligopeptides to extractive nitrogen was occupying average 20.8 and 17.5% in rapid- and low salt-fermented liquefaction(sample A, B and C) and traditional fermented liquefaction(sample D), respectively.

니코틴 패취제로부터 니코틴의 피부투과를 반영하는 방출시험법의 설정 (Establishment of a Release Test Reflecting in vitro Skin Permeation of Nicotine from Commercial Patches)

  • Various release test methods have been applied for the evaluation of nicotine release in vitro from commercial patches. However, whether and how the release data reflect the permeation of nicotine across the skin, is not fully elucidated. To predict in vivo bioavailability from in vitro release tests, correlation between in vitro release and in vitro skin permeation was assessed in the present study. Release of nicotine from three commercial patches was measured for 24 hours under nine experimental conditions which were classified depending on the apparatus (i.e., paddle over disk, cylinder and reciprocating holder) and dissolution media (i.e., phosphate buffer pH 7.4, water and the 1 % phosphoric acid pH 1.5). In vitro permeation of nicotine from the patches across the human cadaver skin was also measured using a diffusion cell. The release of nicotine was better explained by the Higuchi's equation rather than by the first order rate equation. Correlation between the release rate and the in vitro skin permeation differed among the patches. However, in general, the cylinder method, in which water is used as a dissolution medium, showed the highest correlation among the nine release test conditions.

음식물쓰레기 탈리액을 이용한 산업폐수의 생물학적 고도처리 실증실험 (Advanced Biological Treatment of Industrial Wastewater using Food Waste Leachate as an External Carbon Source: Full-Scale Experiment)

  • The feasibility of utilizing food waste leachate as an external carbon source was tested to enhance biological nutrient removal from an industrial wastewater with an average flow rate of $164,800m^3/d$ and a low carbon/nitrogen ratio of 2.8. A considerable improvement in the removal of nitrogen and phosphorus was observed when a certain amount of the leachate, ranging from 70 to $142m^3/d$, was supplemented to the biological industrial wastewater treatment process. The addition of the leachate led to an increase in the BOD/N ratio (4.5) and the removal efficiency of nutritents from 29.7% to 71.7% for nitrogen and from 34.8% to 65.6% for phosphorus. However, an excessive dose of the leachate that significantly exceeded $120m^3/d$ caused serious operational problems, like oil-layer formation in the grit chamber and scum layer in the primary clarifier. Thus, an supplement of food waste leachate at a dose acceptable to an existing facilities can be a practical and effective means to enhance the nutrient removal from industrial wastewater and to dispose of the food waste leachate.

Qualitative attributes of meat from Teramana goat kids, an Italian native breed of the Abruzzo region

  • Objective: The aim of this work was the characterization of the qualitative aspects of meat obtained from Teramana goats, an Italian indigenous breed of the Abruzzo region. Specifically, the study included a comparison with meat samples deriving from Saanen goat kids reared in the same environment and applying the same feeding protocol. Methods: Upon reaching about 7 months of age the animals were slaughtered and samples of muscle tissue were collected to be analyzed. Specifically, meat samples were subjected to evaluations of the physical parameters, including color and the meat ability to retain water, in addition to chemical evaluations that were focused to the determination of the total lipids amount, fatty acids composition, lipid oxidation, and volatile profile. Results: The meat samples obtained from the indigenous breed showed a less intense reddish color and no significant variations for the muscle tissue tendency to retain water, both regarding fresh and cooked meat. Several differences were instead observed in the fatty acid profile. The Teramana samples were richer in saturated fatty acids (p<0.01) and interestingly showed higher concentrations of rumenic acid (p<0.05), a conjugate of linoleic acid that has been associated with important health benefits for the consumers. Another important finding for these meat samples was the marked resistance to oxidative events, as evidenced by the thiobarbituric acid reactive substances-test (p<0.05) and by the characterization of the volatile profile that highlighted a strong reduction in the relative percentage of hexanal (p<0.05), commonly associated to lipid oxidation and the development of unpleasant aromatic notes. Conclusion: The collected data, therefore appeared useful for the valorization of the food product derived from the Teramana goat, although no sensory information has been collected to define the degree of acceptability by the consumers.

포공영의 열수 및 에탄올 추출물의 기능적 생리활성 (Functional Biological Activity of Hot Water and Ethanol Extracts from Taraxaci Herba)

  • 포공영의 총 페놀함량에서는 열수 추출물 7.80$\pm$0.97 mg/g, 에탄올 추출물 9.12$\pm$0.51 mg/g으로 나타났다. 플라보노이드함량은 열수 추출물 54.20$\pm$1.95 mg/g, 에탄올 추출물 79.43$\pm$4.44 mg/g으로 항산화 활성에 관련된 페놀 및 플라보노이드 화합물들이 에탄올 추출물에 많이 존재함을 확인할 수 있었다. 전자공여능에 있어서도 포공영 에탄올 추출물이 열수 추출물 $IC_{50}$값에 비해 3배 정도의 뛰어난 활성을 보였다. 아질산염 소거능은 모든 pH 조건하에서 에탄올 추출물이 열수 추출물보다 높은 아질산염 소거능을 나타내었으며, pH가 증가할수록 감소하였다. SOD 유사활성을 측정한 결과 열수 추출물에서는 18.34$\sim$37.26 $\mu$g/mL, 에탄올 추출물에서는 16.60$\sim$49.03 $\mu$g/mL의 범위로 분석되었으며, 농도에 따른 유의적 증가현상을 나타내었다. Tyrosinase 및 elastase 저해활성은 모든 추출물에서 대조구에 비해 다소 약한 활성을 나타내었다. 포공영 추출물은 뛰어난 항산화 활성을 나타나 기능성 식품 및 화장품 소재로 개발 가능성이 높을 것으로 사료된다.
