Characteristics and Application of Soybean Hull Fractions Obtained by Microparticulation/Air-Classification (초미세분쇄/공기분급을 이용한 대두피 분획물의 특성과 응용)

  • Soybean hull was microparticulated at cut-off wheel speed of 9,000 rpm and air-classified into fine and coarse fraction at air classifying wheel speeds (ACWS) of 10.000, 15,000 and 20,000 rpm. respectively. Proximate analysis of the coarse and fine fractions of the microparticulated/air-classified soybean hull showed that ash, protein and lipid were enriched in the coarse fractions and carbohydrates in the fine fraction. Dietary fiber were enriched in coarse fractions and dietary fiber and dietary fiber content increased with decreasing ACWS. Mean particle size of fine fractions ranged from $3.1{\mu}m\;to\;5.5{\mu}m$ that of coarse fractions ranged from $9.9{\mu}m\;to\;20.0{\mu}m$ and both increased with decreasing ACWS. The particles were mostly oval-shaped regardless of the fractions. Generally the fraction of low ACWS showed higher viscosity. In water holding capacity, oil absorption and emulsion capacity, there was significant difference between coarse and fine fractions while there was no significant difference as a function of different ACWS. Oil absorption of flying batter was decreased significantly in the fraction of ACWS 15,000. when cakes and cooking were prepared partially substituted with soybean hull fraction, there was no significant changes on their physical and sensory properties up to 10% substitution.

  • Partial hydrolyzing condition for low-molecularized alginate and rheological properties such as viscosity, solubility, emulsitying ability, oil absorption capacity, bile acids binding and metal ion binding of the low-molecularized alginates from the sea mustard ( Undaria pinnatifida) and giant kelp (Macrocystis pyrifera) were investigated. Alginate from sea mustard was regularly hydrolyzed with the increase of HCl concentration in the range of 0.2 N to 0.5 N and with the prolonged reaction time at $100^{\circ}C$. The molecular weight of alginate was decreased to a part of 100 after hydrolysis for 50 min with 0.3 N HCl. The ratio of mannuronate to guluronate was increased with the acid hydrolysis and total yield was estimated to be $75\%\~80\%$. Low-molecularization of alginate was featured in the apparent decrease of viscosity, whereas solubility, emulsifying ability, and bile acids binding ability were increased with the low-molecularization. Oil absorption capacity of the acid$\cdot$alkali soluble alginate was slightly higher than that of the water soluble alginate. Metal ion binding capacity was the highest in acid$\cdot$alkali soluble alginate, and decreased with the low-molecularization.

  • Silkworm larvae protein concentrate was partially hydrolyzed at $50^{\circ}C$ by papain at pH 2.0 and pepsin at pH 7.0 for 10min and 60min and the effect of enzymatic modification on the functional properties of silkworm larvae protein concentrate was examined. The degrees of hydrolysis measured by TCA-soluble nitrogen content were 10.2% and 19.2% when hydrolyzed by pepsin for 10min and 60min. The nitrogen solubility in water and 0.03M $CaCl_2$ was increased with increasing the degree of hydrolysis, and bulk density, water and oil absorption were also enhanced by enzymatic hydrolysis when compared with the control.

  • This study is expected to present instructions and analysis of Modern Dancheong pigments by its physical characteristics. Search pigments currently used and experiments proper mixing ratio of Jangdanyuksaek(Incarnadine). Samples are made by based on presented a mixture ratio which is less exfoliation, cracks and color change. And put into accelerated weathering test and ultraviolet ray degradation test. As a result in case of Jidang($TiO_2$) Rutile type is superior in discoloration and durability. Rutile type makes color difference remarkably because of oil absorption difference while mixing with Jangdan. Water paints which are used as a alternative present yellowness which means water paints lack in durability. whiting should be taken carefully as it has high brightness after degradation.

  • Among various water contaminents, organic compounds like phenol are difficult to be removed or destroyed by conventional methods under the unusual discharge conditions. The separation of phenol from aqueous solution has been carried out by several methods recently: absorption by an activated carbon, solvent extraction and liquid membrane technology. The liquid membrane based on water-oil emulsification has been tested as an alternative technology of the conventional technology. In this work, tri-n-butyl phosphate(TBP) and liquid polymers were examined as a liquid membrane in the supported liquid membrane(SLM). The feed concentration of phenol was varied and various types of liquid membranes were used to examine their effects on separation of phenol. It was found that TBP, polypropylene glycol 4000(PPG 4000) and polybutytene glycol 500(PBG 500) were proper carriers because mass transfer rates through them were much higher than or similar to that through methyl isobutyl ketone(MIBK) which was used as a conventional solvent in a solvent extraction process.

Effects of Reaction Temperature, Time and Particle Size on the Physicochemical Properties of Chitosans (키토산 제조시 반응 온도와 시간 및 입자크기가 키토산의 물리화학적 특성에 미치는 영향)

  • In order to study the effects of reaction temperature, time and particle size on the physicochemical properties of chitosan, commercially available chitin was treated with 50%(w/w) NaOH. To obtain 78% of deacetylation, a treatment of 6 hours at $100^{\circ}C$(Ch-100), 20 minutes at $120^{\circ}C$(Ch-120) or 10 minutes at $140^{\circ}C$(Ch-140) was necessary. The resulting chitosans showed a different viscosity; 180cps for Ch-100, 130cps for Ch-120, 30cps for Ch-140. The residence time at $80^{\circ}C$ also decreased the viscosity of the chitosan but the reduction in the particle size of chitin largely favored deacetylation and resulted in a higher viscosity of the chitosan. Compared with chitin, the capacity of water and oil absorption of chitosan was not significantly improved. However, the capacity of dye absorption was increased by 4 times by the deacetylation. In addition the IR spectra of chitosans showed less sharp absorption bands than that of chitin.

Variation of Copper Content in Paddy Soil and Rice from Mangyeong River Area (만경강 유역의 논토양과 수도체중 Cu 함량의 변화)

  • To investigate differences with the polluted sources on Cu contents in soils and paddy rices under water pollutions, soils with the distance, the surface(0-15㎝ depth) and subsurface(15-30㎝ depth) in 1982 and 1990, and rice plants at the soil sampling sites in 1990 were separately sample at Mangyeong River area under the influence of municipal and industrial waste water from Jeonju city. Soil samples were extracted with $4M-HNO_3$ and plant samples were digested with mixture of $HNO_3$ and $HClO_4$ for analyzing Cu, Cd, Zn, Pb by atomic absorption spectrophotometry. Cu contents in soils ranged from 5.20 to 71.70 mg $kg^{-1}$. Average Cu level in 1990 was higher than that in 1982. Variation of Cu content with the distances from the source of waste water in 1990 was more regularly decreased than that in 1982. A significant correlation was observed between Cu contents in leaf sheath of rice plant and Cu, Zn and Pb contents in soils. Cu contents in soil was correlated with Zn and Pb in soil at area affected by waste water, regardless of years and soil depths. Cu contents in brown rice ranged from 0.4 to 10 mg $kg^{-1}$, and it was the lowest in parts of rice plant, and Cu content in panicle axis was 2.3 times higher than that in brown rice.

Effects of Various Thermal Treatments on Physicochemical Properties of Wheat Bran (밀기울에 대한 열처리가 이화학적 특성에 미치는 영향)

  • Various thermal treatments such as toasting, roasting, drum drying, autoclaving+drum drying, microwaving+drum drying and extrusion were attempted to investigate their effects on chemical composition (proximate composition, Klason lignin, neutral sugar, uronic acid, starch, free sugar, dietary fiber, phytic acid, etc) and functional properties (water solubility index, water absorption index, water holding capacity, oil holding capacity, bulk density, swelling, etc) of wheat bran. Thermal treatments on wheat bran increased soluble dietary fiber (SDF) content from 2.7% (raw sample) to 4.6% (toasted), 4.5% (roasted), 4.6% (drum dried), 5.2% (autoclaved), 3.7% (microwaved), 5.6% (extruded). In contrast, total dietary fiber (TDF) content remained nearly constant regardless of thermal treatments, reflecting the concomitant decrease in insoluble dietary fiber (IDF). It was also found that water holding capacity (WHC) increased $20{\sim}75%$ due to thermal treatments employed in this research. Both bulk density and swelling were not directly relevant to WHC, but thier multiplication exhibited good correlation $(R^2=0.94)$ with WHC. Scanning elctron microscopy (SEM) exhibited that structure of raw wheat bran was significantly modified, whose degree and shape well reflected the types of thermal treatments.

Nutritional Quality and Physicochemical Characteristics of Defatted Bovine Liver Treated by Supercritical Carbon Dioxide and Organic Solvent

  • Defatted bovine liver (DBL) is a potential source of protein and minerals. Supercritical carbon dioxide ($SC-CO_2$) and a traditional organic solvent method were used to remove lipid from bovine liver, and the quality characteristics of a control bovine liver (CBL), bovine liver defatted by $SC-CO_2$ ($DBLSC-CO_2$) at different pressures, and bovine liver defatted by organic solvent (DBL-OS) were compared. The $DBLSC-CO_2$ samples had significantly higher (p<0.05) protein, amino acid, carbohydrate, and fiber contents than CBL and DBL-OS. There was a higher yield of lipid from CBL when using $SC-CO_2$ than the organic solvent method. SDS-PAGE analysis demonstrated that the CBL and $DBLSC-CO_2$ had protein bands of a similar intensity and area, whereas DBL-OS appeared extremely poor bands or no bands due to the degradation of proteins, particularly in the 50 to 75 kDa and 20 to 25 kDa molecular weight ranges. In addition, $DBLSC-CO_2$ was shown to have superior functional properties in terms of total soluble content, water and oil absorption, and foaming and emulsification properties. Therefore, $SC-CO_2$ treatment offers a nutritionally and environmentally friendly approach for the removal of lipid from high protein food sources. In addition, $SC-CO_2$ may be a better substitute of traditional organic solvent extraction for producing more stable and high quality foods with high-protein, fat-free, and low calorie contents.

Current Achievement and Perspectives of Seed Quality Evaluation in Soybean (콩 품질평가 현황과 전망)

  • Soybean is one of the most important sources of protein and oil in the world. Recently, emphasis has been laid on the chemical composition of soybean seeds for the processing soybean foods. Improvement of soybean components has been expected to improve food-processing quality for the processed soybean products such as soymilk and various edible ingredients as well as fur the traditional soyfoods. In Korea, soybean breeding research programmes have been focused on the quality of the products derived from soybean with yield stability, and some new modified soybean varieties haying good food-processing quality were developed recently. So the efforts of establishing standard and standardization of products in soybean are important. Three main categories should be considered in view of soybean seed quality; the marketing value such as grain size, shape, and appearance; the eating and processing value such as dehulled ratio, water absorption rate, and benny flavor; the nutritional value such as protein, lipid, and carbohydrate contents. And the new frontiers in research are looking at the functional nutrients in soybeans and how to improve them. In case marketing value, mainly the appearance is evaluated, therefore, each country has an application of standard related to quality. Each determination of standard class, heat-damaged kernels, splits, and soybeans of other colors is made on the basis of the grain when free from foreign materials. But processing value and nutritional value for standardization were not studied in detail till now. In addition, soybean has potential roles in the prevention and treatment of chronic diseases, most notably cancer, osteoporosis, and heart disease. The functional nutrients include a protease inhibitor, phytic acid, saponins, and isoflavones, etc.. It is believed that standardization of soybean quality should perform to overcome the difficulties, relatively high price of domestic soybean products has weakened the competitive power, in the market related to WTO. So, we should focus on further research into the evaluation and establishment of quality-standard in soybean.
